The influence of the quaternization and butyrylation on the sizing properties of biological starch macromolecule was evaluated for acquiring a new starch bio-based size [quaternized-butyrylated starch (QBS)]. The sizing properties of granular QBS samples were investigated in comparison with acid-thinned starch (ATS) and quaternized starch (QS). The QBS samples with a DS range of 0.029–0.0779 exhibited bonding strengths of 17.0–18.3 cN/tex to cotton fibers [15.5 cN/tex (ATS, DS = 0) and 16.6 cN/tex (QS, DS = 0.0240)] and 31.0–34.3 cN/tex to polyester fibers [28.0 cN/tex (ATS) and 30.1 cN/tex (QS)], and their films showed breaking elongations of 2.99–3.51% [2.59% (ATS) and 2.81% (QS)] and tensile strengths of 36.5–32.1 MPa [38.1 MPa (ATS) and 37.3 MPa (QS)]. Compared with QS, significantly increased bonding strengths as well as obviously decreased strengths and increased elongations of the films for the QBS samples with the total DS ≥ 0.0635 were exhibited. As increasing the modification levels from 0.029 to 0.0779, QBS presented paste stabilities from 90.4% to 85.7% which met with the requirement in warp sizing, and displayed higher desizing efficiencies (93.2–93.8%) than ATS (91.5%) and QS (90.2%). Based on these results, the amphiphilic quaternization-butyrylation was a good means for starch to acquire good sizing properties.

Butyrylated normal maize starch (BNMS) is a butyrate-carrying and resistant starch (RS). BNMS is fermented by the gut microbiota to produce large amounts of short-chain fatty acids (SCFAs), particularly butyrate, which are beneficial for intestinal health. However, the effects of BNMS on gut microbiota and metabolites, and its advantages over exogenous butyrate and RS, are unclear. The specific effects of BNMS were investigated via in vitro fermentation using sodium butyrate (SB) and high-amylose maize starch (HAMS) as controls. Compared to SB and HAMS, BNMS enhanced gas production, lowered pH, and produced numerous SCFAs. Additionally, BNMS effectively stimulated beneficial bacteria proliferation, including Coprococcus , Faecalibacterium , Megamonas , Collinsella , Blautia , and Bifidobacterium , and suppressed harmful bacteria proliferation, including Escherichia-shigella and Desulfovibrio , resulting in a healthier colony structure. Similarly, BNMS modulated many amino acids, neurotransmitters, vitamins, sphingolipids, carbohydrates, hormones levels, and multiple metabolic pathways, including arginine and proline metabolism, tryptophan metabolism, synaptic vesicle cycle, sphingolipid metabolism, riboflavin metabolism, amino sugar and nucleotide sugar metabolism, and steroid hormone biosynthesis. Overall, BNMS positively affected gut microbiota and metabolites, exhibiting advantages over exogenous butyrate and RS. These results provide some theoretical basis for the BNMS development and application as a functional food.

In present study, bilayer emulsions with different interfacial structures stabilized by casein/butyrylated dextrin nanoparticles (CDNP), chitosan (CS) and chitosan nanoparticles (CSNP) were prepared to overcome the limitations of conventional emulsions. The effects of chitosan morphology and incorporation sequences on the bilayer emulsions were examined. Bilayer emulsions prepared with CDNP as the inner layer and CS/CSNP as the outer layer were observed to have smaller droplet sizes (1.39 ± 86.74 um and 1.45 ± 7.87 um). Bilayer emulsions prepared with CDNP as the inner layer and CS as the outer layer exhibited the lowest creaming index (2.38 %) after 14 days of storage, indicating excellent stability. Furthermore, bilayer emulsion prepared with CDNP as the inner layer and CS as the outer layer also exhibited a uniform water distribution, excellent protein oxidative stability, and uniformly distributed droplets by the measurement of Low-field NMR, intrinsic tryptophan fluorescence and laser confocal laser scanning microscopy. These results indicated that the study provided a theoretical basis for the development and design of bilayer emulsions with different interfacial structures. This study also provides a new material for the preparation of delivery systems that protect biologically active compounds. Bilayer emulsions are promising for applications in traditional and manufactured food products.

This study was conducted to elucidate the effects of different degrees of substitution (DS) on the properties of propionylated and butyrylated starches and to investigate their efficacy and mechanisms in ameliorating autism-like phenotypes. Fourier transform infrared spectra of propionylated and butyrylated starches revealed the presence of the C O absorption peak at 1730 cm −1 . Additionally, as the DS increased, the surface of the starch granules became rougher, and the crystallinity decreased. Moreover, in vitro digestion tests demonstrated that propionylated and butyrylated starches with a DS of approximately 0.25 exhibited enhanced resistance to digestion. Animal experiments indicated that butyrylated starch significantly improved abnormal behaviors in autism-like rats and increased butyrate accumulation in the colon. Furthermore, butyrylated starch normalized aberrant expression of G protein-coupled receptor 41 and tryptophan hydroxylase 1 in the colon, promoting 5-hydroxytryptamine metabolism and suppressing the expression of ionized calcium binding adaptor molecule 1 and glial fibrillary acidic protein in the gut and brain. These findings demonstrate that butyrylated starch effectively alleviates autism-like phenotypes in rats, supporting strategies to mitigate autism and develop new applications for natural corn starch.

ABSTRACT Green hydrophobically modified butyrylated dextrin (BD) was used to modulate casein (CN). The CN/BD complex nanoparticles were formed at different CN-to-BD mass ratios based on a pH-driven technology. The interaction force, stability, and emulsifying properties of complex nanoparticles were investigated. The nanoparticles had a negative charge and a small particle size (160.03, 152.6, 155.9, 206.13, and 231.67 nm) as well as excellent thermal stability and environmental stability (pH 4.5, 5.5, 6.6, 7.5, 8.5, and 9.5; ionic strength, 50, 100, 200, and 500 m M ). Transmission electron microscopy demonstrated the successful preparation of complex nanoparticles and their spherical shape. Fourier transform infrared spectroscopy, fluorescence spectroscopy, and dissociation analysis results showed that the main driving forces of formed CN/BD nanoparticles were hydrogen bonding and hydrophobic interaction. Furthermore, the CN/BD nanoparticles (CN/BD mass ratio, 1:1; weight/weight) exhibited the lowest creaming index, and optical microscopy showed that it has the most evenly dispersed droplets after 7 d of storage, which indicates that the CN/BD nanoparticles had excellent emulsifying properties. Butyrylated dextrin forms complex nanoparticles with CN through hydrogen bonding and hydrophobic interaction to endow CN with superior properties. The results showed that it is possible to use pH-driven technology to form protein–polysaccharide complex nanoparticles, which provides some information on the development of novel food emulsifiers based on protein–polysaccharide nanoparticles. The study provided significant information on the improvement of CN properties and the development of emulsions based on CN.

Microbial degradation of chloramphenicol (CAP) has become important for reducing the adverse impact of environmental pollution with antibiotics. Although several pathways for CAP degradation have been identified in various bacteria, multiple metabolic pathways and their respective intermediate metabolites within a single strain are rarely reported. Here, Raoultella ornithinolytica CT3 was first isolated from silkworm excrement using CAP as the sole carbon source, and 100 mg/L CAP was almost completely degraded within 48 h. The biodegradation type of CAP followed first-order kinetics. Twenty-two CAP biotransformation products were identified using high-performance liquid chromatography and ultra-high-performance liquid chromatography coupled with high-resolution mass spectrometry. The CAP biotransformation pathways were predicted mainly in the acetylation and auxiliary pathways of propionylation and butyrylation. The toxicity of CAP biotransformation products was evaluated using the ecological structure-activity relationship (ECOSAR) model and biological indicators. The results showed that the toxicity of the intermediate metabolites changed slightly, but the final metabolite was harmless to the environment. Genomic analysis predicted that genes encoding acetyltransferase, amido-linkage hydrolase, nitroreductase, haloacetate dehalogenase, and protocatechuate 3,4-dioxygenase were associated with CAP biodegradation. This study provides new insights into the microbial degradation pathway of CAP and constitutes an ecological safety assessment for CAP-contaminated environments.

In this study, microcrystalline butyrylated pea starch (MBPS) with higher contents of resistant starch (RS) was synthesized via esterification with butyric anhydride (BA) using microcrystalline pea starch (MPS) as the raw material. With the addition of BA, the new characteristic peaks appeared at 1739 cm −1 and 0.85 ppm obtained from FTIR and 1 H NMR, respectively, and increased with the higher degree of BA substitution. Moreover, an irregular shape of MBPS, such as condensed particles and more cracks or fragments, had been observed by SEM. Further, the relative crystallinity of MPS increased then native pea starch and decreased with the reaction of esterification. MBPS had higher decomposition onset temperature (T o ) and temperature of maximum decomposition (T max ) with increasing DS values. Simultaneously, an increasing trend RS content from 63.04 % to 94.11 % and a decreasing trends in rapidly digestible starch (RDS) and slowly digestible starch (SDS) contents of MBPS were recorded with increasing DS values. MBPS samples showed higher production capacity of butyric acid ranging from 553.82 μmol/L to 892.64 μmol/L during the fermentation process . Compared with MPS, the functional properties of MBPS were significantly improved.

In the work, bilayer emulsions stabilized by casein/butyrylated dextrin nanoparticles (CDNP) and chitosan (CS) were prepared based on ultrasound-assisted homogenization. The effects of different homogeneous pressures and various CS concentrations on physical properties and microstructures of bilayer emulsions were investigated. The homogenization condition of 80 MPa was selected to prepare emulsions due to the fact that the emulsion showed the best stability under this condition. Compared with the monolayer emulsion, the bilayer emulsions showed excellent stability (storage, pH, and freeze-thaw cycle) due to the unique interface structure based on composite bilayer interface of CDNP and CS. Meanwhile, the results of optical microscopy, transmission electron microscopy , and confocal laser scanning microscopy showed that emulsion droplets evenly distributed and were cross-linked by CS chains to form a network structure in bilayer emulsions. These results would provide a new insight for the development of bilayer emulsions based on composite interface and bilayer interface.

A generalizable strategy with programmable site specificity for in situ profiling of histone modifications on unperturbed chromatin remains highly desirable but challenging. We herein developed a single-site-resolved multi-omics (SiTomics) strategy for systematic mapping of dynamic modifications and subsequent profiling of chromatinized proteome and genome defined by specific chromatin acylations in living cells. By leveraging the genetic code expansion strategy, our SiTomics toolkit revealed distinct crotonylation (e.g., H3K56cr) and β -hydroxybutyrylation (e.g., H3K56bhb) upon short chain fatty acids stimulation and established linkages for chromatin acylation mark-defined proteome, genome, and functions. This led to the identification of GLYR1 as a distinct interacting protein in modulating H3K56cr′s gene body localization as well as the discovery of an elevated super-enhancer repertoire underlying bhb-mediated chromatin modulations. SiTomics offers a platform technology for elucidating the “metabolites-modification-regulation” axis, which is widely applicable for multi-omics profiling and functional dissection of modifications beyond acylations and proteins beyond histones.
