This study investigated and determined the changes in various qualities of tuna samples that were glazed with rosmarinic acid, a bamboo leaf antioxidant, and sodium lactate and stored at −18 °C for 180 days. The water-holding capacity, cooking loss, color, texture, protein content, and total volatile basic nitrogen (TVB-N) were monitored, to study the effect of tuna glazed with different materials on the quality every 30 days. Low-field nuclear magnetic resonance (LF-NMR) was used to measure the water distribution of tuna in this paper. The results showed that the quality of unglazed tuna decreased significantly after 180 days of frozen storage. During frozen storage, the hardness anda* values of RG (glazed with the rosmarinic acid group), SG (glazed with the sodium lactate group), and CG (glazed with the composite of rosmarinic acid, sodium lactate, and the antioxidant of bamboo leaf) tuna decreased slowly, while the malondialdehyde (MDA) value of AG (glazed with the antioxidant of bamboo leaf group) tuna increased slowly. After 180 days of frozen storage, CG tuna had the highest protein content and the lowest TVB-N value, which may have been due to the synergistic effect of glazing materials. The tuna with CG also had the best freshness and quality after frozen storage. Considering the results, a composite of rosemary (0.3%), sodium lactate (3.4%), and antioxidants of bamboo leaves (0.12%) is the best material for glazing tuna. Keywords:glazed tuna;rosmarinic acid;sodium lactate;antioxidant of bamboo leaf;frozen storage

Type 3 resistant starch (RS3) regulates diet-related metabolic diseases by promoting intestinal short-chain fatty acids (SCFAs) and lactate production, and facilitating microbial lactate-to-butyrate fermentation. However, its precise in vivo mechanism remains unclear. Therefore, we studied the effects of type 3 lotus seed resistant starch (LRS3) and sodium lactate (SL) on colonic microbiota composition, metabolism, and lipid parameters. This study aimed to elucidate the mechanism by which LRS3 and SL modulate colonic microbiota and metabolism to mitigate hyperlipidemia in rats induced by a high-fat diet. Results showed LRS3 increased colonic microbial diversity, shifting the composition towards that of healthy rats. LRS3 intake reduced lactic acid-producing bacteria such as Allobaculum, Collinsella , and Blautia in the colon while promoting SCFAs-producing Ruminococcaceae. SL alone stimulated Lachnospiraceae growth. When both were administered, there was a significant increase in Treponema and Ruminococcaceae. The co-intervention of LRS3 and SL significantly affected lipid metabolism-related metabolites, up-regulating palmitic acid while down-regulating androsterone and phosphatidylcholine (PC) substances PC (14:0/20:4(8Z,11Z,14Z,17Z)), influencing unsaturated fatty acid biosynthesis pathways and inhibiting steroid hormone biosynthesis. Finally, via the microbial-metabolism-lipid correlation network, we identified that LRS3 and SL increased SCFAs production through Treponema and Ruminococcaceae metabolism, influencing organic acid and lipid composition in the colon. This indirectly reduced blood lipid levels in hyperlipidemic rats by modulating intestinal microecology.

The synergistic effects of lotus seed resistant starch (LRS3) and sodium lactate (SL; a postbiotics of RS3) on hypolipidemic function and serum nontargeted metabolites of hyperlipidemia rats were investegated. Rats fed a high-fat diet were orally administered with LRS3 (HLRS group) or SL (HSL group) either alone or in combination (HLRSSL group) for consecutive 4 weeks. HLRSSL was found to control weight gain, regulate blood lipid levels, reduce accumulation of fat in liver cells, and improve lesions in rat cardiac arteries, liver, small intestine, and colon tissues more effectively compared to HLRS or HSL group alone. Compared to the high-fat control group (HMC), l-phenylalanine and LysoPC(22:6(4Z,7Z,10Z,13Z,16Z,19Z)) in serum were upregulated in HLRSSL rats, while aconitic acid and suberic acid were decreased. Correlation analysis showed that SM(d18:0/16:1(9Z)), taurochenodeoxycholic acid, LysoPC(22:6(4Z,7Z,10Z,13Z,16Z,19Z)), oleic acid, and retinol were negatively correlated with total cholesterol (TCHO), triglyceride (TG), and low-density lipoprotein cholesterol (LDL-C) and positively correlated with high-density lipoprotein cholesterol (HDL-C). Moreover, glutamic acid and serine showed a significant positive correlation with LDL-C and negative correlation with HDL-C. These differential metabolites were associated with reducing serum lipid levels in hyperlipidemia rats potentially through metabolic pathways such as linoleic acid, glutamine and glutamate, pyruvate, citric acid cycle, and glycerophospholipid.

Sulfur dioxide (SO2) is the main component of air pollution. Recently, sodium lactate (NaLa) aqueous solution (aq) was demonstrated as a highly efficient, renewable, and stable absorbent for SO2 absorption from flue gas. However, sulfuric acid (H2SO4) accumulated during long-term SO2 absorption and desorption cycles. To remove H2SO4 from NaLa (aq) efficiently, a method based on the common-ion effect was proposed in this work. The results indicated that the residual concentration of sulfate anion (SO42–) decreased with decreasing the water content. Residual SO2 in NaLa (aq) did not influence the removal of H2SO4. After the removal, the content of residual SO42– was 0.47 wt % and the removal rate of H2SO4 was 95.6%, with a water content of 34 wt % at 20 °C. In comparison to other reported methods, our method to remove H2SO4 in absorbents did not introduce other ions and block the absorption tower. It was noted that the evaporation of water to decrease the water content was combined with the regeneration of NaLa (aq), without any extra evaporation energy. NaLa (aq) was not changed during the removal process. Moreover, the SO2 absorption capacity in H2SO4-removed NaLa (aq) was comparable to the capacity of virgin NaLa (aq), and no obvious change could be found after 5 cycles of H2SO4 removal. The mechanism of removing H2SO4 from NaLa (aq) studied with Fourier transform infrared spectroscopy indicated that H2SO4 was removed in the form of Na2SO4 without crystal water as a result of the common-ion effect. Furthermore, a new process for SO2 absorption with H2SO4 removal from NaLa (aq) was proposed.

Abstract The use of 2,2,6,6-tetramethylpiperidine-1-oxyl (TEMPO) and 4-acetamido-TEMPO (ACT) for electrochemical oxidation of L-sodium lactate (SL) was comparatively investigated by cyclic voltammetry, and it was proved that ACT is more effective as a mediator in these electrocatalytic reactions. A comprehensive investigation of electrooxidation performance of ACT toward SL through investigating the effect of pH, concentration of SL, the sensitivity of SL using this electroanalytical method was calculated to be 2.78 μA cm –2 /mM, the catalytic rate constant was determined to be 51.7 L/(mol s) by using chronoamperometry.

China is the world’s largest producer and exporter of concentrated apple juice (CAJ). However, traditional concentration methods such as vacuum evaporation (VE) and freeze concentration cause the loss of essential nutrients and heat-sensitive components with high energy consumption. A green and effective technique is thus desired for juice concentration to improve product quality and sustainability. In this study, a hybrid forward osmosis–membrane distillation (FO–MD) process was explored for the concentration of apple juice using sodium lactate (L-NaLa) as a renewable draw solute. As a result, commercial apple juice could be concentrated up to 65 °Brix by the FO process with an average flux of 2.5 L·m−2·h−1. Most of the nutritional and volatile compounds were well retained in this process, while a significant deterioration in product quality was observed in products obtained by VE concentration. It was also found that membrane fouling in the FO concentration process was reversible, and a periodical UP water flush could remove most of the contaminants on the membrane surface to achieve a flux restoration of more than 95%. In addition, the L-NaLa draw solution could be regenerated by a vacuum membrane distillation (VMD) process with an average flux of around 7.87 L∙m−2∙h−1for multiple reuse, which further enhanced the long-term sustainability of the hybrid process.
