To explore a novel producing strategy for enhancing antioxidant activity and aroma of low-ethanol kiwi wine, kiwifruit juice was sequential fermentation with indigenous Zygosaccharomyces rouxii (Zr) and Saccharomyces cerevisiae (Sc) without adding sugars. The organic acids, bioactive compounds , volatile constituents, antioxidant capacities and sensory profiles were measured to evaluate the performance of different inoculation ratios. The results indicated that compared with pure fermentation of Sc, the sequential fermentations significantly increased the total flavonoids , total phenols , some mono-phenols and antioxidant activities of the low-ethanol kiwi wines, and resulted in a positive effect on organic acids mainly by reducing the content of malic acid . At the same time, sequential fermentations significantly enhanced the aroma profile of the low-ethanol kiwi wines. The higher inoculation ratio of Zr greatly increased the complexity of the volatiles, improving sweet odor of the wines. While the similar inoculation ratio of Zr and Sc significantly increased the volatile contents, intensifying the tropical fruity and kernel fruity. In addition, the partial least-squares regression analysis showed that aldehydes resulted in sourness, ethyl esters and acetate esters possessed a positive impact on tropical fruity and kernel fruity.

Matured coconut water (MCW) is a by-product in the coconut milk industry that is usually discarded due to its unpleasant flavor. In this study, low-alcohol coconut water (LACW) was fermented with Saccharomyces cerevisiae to improve the quality of MCW. Volatile components and nonvolatile flavor-related elements were estimated to compare the qualities of the MCW and LACW. Besides measuring the kinetic changes, the levels of fructose, glucose, sucrose and ethanol contents were also determined. The results of the organic acid assays showed that tartaric, pyruvic and succinic acids were the primary organic acids present in LACW and increased significantly with fermentation. The resulting volatile composition assay indicated that esters, alcohols and fatty acids were significantly influenced by fermentation and yeast strains. Moreover, 1,1-diphenyl-2-picrylhydrazyl (DPPH), 2,2′-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), cupric ion reducing antioxidant capacity and ferric reducing antioxidant power values increased significantly throughout the process, correlating with the enhancement of total phenolic content.

To create the low-alcoholic beverages with excellent nutritional properties and flavor qualities, pomegranate juice was fermented with 16 strains of non- Saccharomyces yeasts from 9 species without added sugar. The effects of different yeasts on the non-volatile constituents (vitamins, organic acids, polyphenols), volatile compounds and sensory characteristics of the fermented beverages were comprehensively evaluated. The study revealed that non- Saccharomyces fermentations resulted in a higher abundance of polyphenols compared to the pomegranate juice and S. cerevisiae WLS21 (Sc21). The monomer phenols in Meyerozyma guilliermondii 12 (Mg12) were approximately twice the total of CK and 1.3 times of Sc21. Moreover, they led to a higher concentration of volatile compounds than the pomegranate juice. A total of 94 volatile compounds were identified in the pomegranate fermented beverages. In contrast to S. cerevisiae , Wickerhamomyces anomalus 1-1 and 10 (Wa1-1, Wa10), Pichia kudriavzevii 8 (Pk8) and Mg12 resulted in more acetate esters, and Zygosaccharomyces rouxii IFO 1130 and 53 (Zr1130, Zr53) yield higher levels of ethyl esters. A total of 40 volatiles with a relative odour activity value (rOAV) of ≥ 0.1 were identified, of which 14 were selected for principal component analysis (PCA). The sensory analysis confirmed that Zr1130, Zr53, Wa1-1, Wa10 and Pk8 strains exhibited superior aroma generation compared to Sc21. Furthermore, the partial least-squares regression (PLSR) analysis revealed that cherry, red fruits, black currant, citrus fruits, raspberry, black berry, pineapple, floral, sour and alcoholic odours had a significantly positive impact on the overall acceptability of the fermented beverages.
