Effect of theaflavins on the quality of large yellow croaker (Larimichthys crocea) during refrigerated storage

Jun-long Mao,Jing-jing Fu,Xue-er Qi,Yue-wen Chen,Bin Zhang

BACKGROUND Large yellow croaker ( Larimichthys crocea ) is an economical marine fish consumed in China. Theaflavins have antibacterial and antioxidant properties. However, there is a lack of research into their application in large yellow croakers during refrigerated storage. This study investigated the effect of theaflavins on the quality of large yellow croaker ( Larimichthys crocea ) during 12 days of storage at 4 °C. RESULTS The results showed that theaflavin treatment was able to inhibit microbial growth and reduce the production of total volatile basic nitrogen (TVB-N). Meanwhile, theaflavins were beneficial in reducing the unfolding of myofibrillar proteins, decreasing the degree of protein aggregation, and improving the stability of protein structure. The degree of protein oxidation was lower in a theaflavin-treated group compared with an untreated group. Theaflavin treatment effectively inhibited increases in acid value (AV), peroxide value (PV), and malonaldehyde (MDA) content. The effect of theaflavin was positively correlated with an increase in concentration under refrigeration conditions. This study therefore suggests that the use of theaflavins is a viable method for extending the period for which refrigerated large yellow croaker can be preserved. CONCLUSIONS Adding theaflavins to large yellow croaker can be an effective method for preserving quality during refrigerated storage. © 2023 Society of Chemical Industry.

Chemical and LC–MS-based lipidomics analyses revealed changes in lipid profiles in hairtail (Trichiurus haumela) muscle during chilled storage

Hongbo Yan,Long Jiao,Chuandong Fang,Soottawat Benjakul,Bin Zhang

Chemical and liquid chromatography–mass spectrometry (LC–MS)-based lipidomics techniques were used to investigate the alternations of lipid profiles in hairtail ( Trichiurus haumela ) muscle after chilled storage for six days. The chemical results showed that the peroxide values (PVs) and thiobarbituric acid reactive species (TBARS) content in the muscle increased significantly, from 0.43 meq/kg of lipids and 0.86 mg malondialdehyde (MDA)/kg of muscle to 8.36 meq/kg and 10.69 mg MDA/kg, respectively, after six days of chilled storage. LC–MS-based lipidomics analyses detected 1446 lipids in hairtail muscle tissues assigned to 26 lipid categories, including 257 triglycerides (TGs), 232 phosphatidylcholines (PCs), 149 phosphatidylethanolamines (PEs), and 78 ceramides (Cers), among other classes. In total, 175 and 67 differentially abundant lipids (DALs) accumulating at low and high abundance levels, respectively, were detected in chilled stored hairtail (CSH) compared to fresh (FH) samples. Among the DALs, the PCs, PEs, and TGs/diglycerides (DGs) as predominant lipid components were more prone to oxidation/hydrolysis, likely owing to their highly unsaturated properties. The apparent alterations between the CSH and FH samples might result from lipid lipolysis, modifications of main- and side-chains, backbone cleavage, and/or the decomposition of lipids during chilled storage.

Microencapsulation of Eugenol Through Gelatin-Based Emulgel for Preservation of Refrigerated Meat

Wan Jiawei,Pei Yaqiong,Hu Ying,Ai Tingyang,Sheng Feng,Li Jing,Li Bin

Preservation of refrigerated meat has always been a concern in food industry. In our study, eugenol (Eu) microcapsules were prepared to solve this problem. Eu was embedded into a gelatin-based emulgel with both low-energy and high-energy methods. The emulgel was further spray dried to obtain the Eu microcapsule. The physicochemical properties, microstructure, and thermodynamic properties of the microcapsules were studied. Results showed that the microcapsule powders prepared from the high-energy emulgel (HEG) contained less water and appeared no caking. But the microcapsule prepared from the low-energy emulgel (LEG) showed more regular shape. After dissolution, the reconstructed emulgel was investigated in terms of texture, microstructure, thermal properties, and preservation effects. Reconstructed emulgel from both LEG and HEG showed significantly higher gel strength but similar thermal properties comparing to the fresh one. In addition, meat covered with reconstructed emulgel showed less weight loss and more stable pH and total volatile basic nitrogen (TVB-N) value, as well as stronger resistance to bacterial reproduction, especially against lactic acid bacteria. The results indicated that the microencapsulation of Eu through gelatin-based emulgel might be a convenient and effective technology for refrigerated meat preservation.

Goat Milk Exhibits a Higher Degree of Protein Oxidation and Aggregation than Cow Milk During Cold Storage

Lirong Zhu,Zixuan Fan,Wenhao Li,Yuanyuan Shan

Due to their markedly distinct protein compositions and structures, goat milk and cow milk display substantially different characteristics. In this study, the quality and composition of goat milk and cow milk were studied after being refrigerated at 4 °C for 7 days, with a particular focus on protein oxidation and aggregation states. The results revealed that alongside increases in acidity, microbial colony count, and hydrolysis, there was a significant change in the protein aggregation state beginning on the second day. This change was characterized by increased turbidity, an elevated centrifugal sedimentation rate, and a right-shifted particle size distribution. After seven days of refrigeration, the centrifugal sedimentation rate of goat milk increased from 0.53% to 0.97%, whereas that of cow milk rose from 0.41% to 0.58%. The degree of aggregation was significantly greater in goat milk compared to cow milk. Additionally, both protein and lipids exhibited substantial oxidation, with the degree of oxidation more pronounced in goat milk than in cow milk. The malondialdehyde (MDA) content increased from 0.047 μg/mL to 0.241 μg/mL in goat milk and from 0.058 μg/mL to 0.178 μg/mL in cow milk. The results suggest that goat milk was more prone to oxidation, which further reduced its stability. Therefore, in the storage and transportation of dairy products before processing, it is essential not only to monitor sanitary conditions but also to effectively control protein oxidation to enhance the quality of milk processing.

Gelatin–Tea Tree Essential Oil Coating Improves the Quality, Flavor, and Micromolecular Metabolites of Squid (Illex argentinus) Muscle During Cold Storage

Huijuan Zhou,Jinlin Li,Chengwei Yu,Mingming Hu,Bizhen Zhong,Zongcai Tu,Bin Peng

Squid muscle is delicious and nutritious, but it is highly susceptible to spoilage, severely limiting its market development. This study comprehensively evaluated the effects of gelatin (Gel), essential oil (Ess), and Gel + Ess coating on the quality, flavor, and microorganisms of squid muscle during refrigerated storage (4 °C). The results showed that squid muscle treated with Gel + Ess exhibited higher water-holding capacity and sensory evaluation, but lower pH value, chromaticity, and texture parameters than those treated with sterile water (control) during cold storage. The total volatile basic nitrogen (TVB-N) result demonstrated that the shelf life of squid muscle treated with Gel + Ess coating was extended to 12 days at 4 °C, longer than the control group. The Gel + Ess group had the best inhibitory effect on aldehydes and ketones in refrigerated squid muscle, and it could effectively maintain the flavor quality. In addition, the Gel + Ess coating showed an additive inhibition on the growth ofCockerellaandShiwanellacompared to the individual compounds. The Gel + Ess coating is a novel strategy for improving the quality, flavor, and micromolecular metabolites of squid muscle during cold storage.

Effect of chitosan combined with electrolyzed water on maintaining muscle quality and myofibril proteins of large yellow croaker (Pseudosciaena crocea) during refrigerated storage

Jianyou Zhang,Aodong Yue,Lei Sun,Lifeng Fei,Pengbo Cui,Yue Qiu,Fei Lyu,Yuting Ding

Summary This study aimed to evaluate the effect of chitosan (CHI) combined electrolytic water (EW) cold sterilisation on muscle quality and myofibril proteins (MP) of large yellow croaker ( Pseudosciaena crocea ) during 12 days of refrigerated storage (4 °C). After the storage period, the sample of the EW + CHI group had the highest rate of hardness (36.68%), springiness (16.11%) among the control group without any treatment (CON), CHI group and EW group and similar tendencies were found in chewiness and cohesiveness. The MP content in the CON group decreased sharply from 80.35 mg g −1 to 57.90 mg g −1 , in contrast to the EW + CHI group, which decreased from 81.65 mg g −1 initially to 80.83 mg g −1 . The conformation of MP α-helix and β-sheet was retained to protect the secondary structure, and the exposure of aromatic amino acid residues was constrained to defend the tertiary structure in EW + CHI treatment which effectively delayed the degradation of MP. Based on these outcomes, EW + CHI treatment could significantly maintain the MP of large yellow croakers and prevent corruption during refrigerated storage.

Action of structural proteins in textural deterioration of grass carp (Ctenopharyngodon idellus) fillets during refrigerated storage

Jiandong Shen,Bijiang Zhong,Wenshui Xia,Yanshun Xu

Summary Textural deterioration is a severe problem in fish industry. In order to study the role of structural proteins in refrigerated grass carp, myofibrillar proteins and collagen degradation were investigated at different stages. Results revealed that connective tissues of fish muscle disintegrated from day 1, failing to hold muscle myotomes together, with a decrease of shear force. Meanwhile, collagen solubility increased from day 1 and degradation of nebulin was observed after 3 days, while there was no obvious change in the bands of myosin heavy chain and actin. Furthermore, Pearson coefficient analysis revealed that insoluble collagen (ISC) and nebulin were significantly correlated with shear force. Negative correlation was established between drip loss and contributing factors (ISC, titin and nebulin). All results suggested that textural loss of post-mortem grass carp fillets was mainly mediated by the degradation of collagen and to a lesser extent by myofibrillar proteins at the early storage.

Impact of short-term storage of olive fruits on the quality of virgin olive oil

Hongli Li,Na Zhang,Jie Qiang,Yongsheng Cao,Guoyi Qu,Xiuzhu Yu

Olives are prone to deterioration during storage, and suitable storage conditions must, therefore, be established to maintain the quality of the fruit and oil. This study investigated the effect of storing olives at room temperature (23 ± 2 °C), refrigerated (4 °C), and frozen (−20 °C) conditions for 7 d on the quality of virgin olive oil (VOO). No significant differences ( p  < 0.05) were observed in the fatty acid, squalene, and phytosterol content of VOO across the three storage conditions. Room temperature storage produced the highest oil yield but resulted in ‘fermentation’ and ‘moldy’ off-flavors. Refrigerated VOO retained a more intense ‘grass’ aroma and higher levels of pigments, α-tocopherol, and total phenols. In contrast, freezing led to significant losses in these components and produced the lowest oil yield. For optimal oil quality, olives should be stored at 4 °C if storage exceeds 24 h.

Eugenol nanocapsules embedded with gelatin-chitosan for chilled pork preservation

Qian Wang,Li Zhang,Wu Ding

Chilled pork is widely consumed in China. However, various contaminants during storage directly lead to a decline in the quality of chilled pork products. An extract of natural plant sources, eugenol (Eug) exerts good antibacterial and antioxidant effects. Nanometerization was used in this study to improve the insoluble and volatile characteristics of Eug. Eug nanocapsules embedded with gelatin/chitosan (Eug-Gel-CS NPs) were used to preserve chilled pork. Results indicated that Eug-Gel-CS NPs could effectively inhibit increases in the pH, total volatile basic nitrogen (TVB-N), and thiobarbituric acid-reactive substances (TBARS) of chilled pork than that of the Eug group ( p  < 0.05). The L * and a * values of the Eug-Gel-CS NPs group were significantly higher than those of the Eug and gelatin-chitosan (CS-Gel) groups ( p  < 0.05). The total number of colonies (TBC) showed that the storage period of the Eug-Gel-CS NPs group could be extended to 15 d, which was significantly different from that of the CK group (8 d) ( p  < 0.05). The Eug-Gel-CS NPs also effectively delayed the decline in the water- holding capacity (WHC), springiness, and cohesiveness of the chilled pork. Therefore, Eug-Gel-CS NPs exert good antiseptic, antibacterial, and antioxidative effects on preserved chilled pork.

Synergistic Effect of Combined Treatment with Allicin and Antioxidant of Bamboo Leaves and Preservation of Bullfrogs (Lithobates catesbeiana) during Refrigeration Storage

Weiqing Lan,Bingjie Zhang,Jintao Du,Shengyun Zhu,Xiao Xu,Jing Xie

The effects of allicin and antioxidant of bamboo leaves (AOB) on the quality of bullfrogs (Lithobates catesbeiana) during refrigerated storage (4 °C) were investigated. The quality changes in samples treated with deionized water (CK), allicin solution (All), antioxidant of bamboo leaves (AOB), and allicin solution combined with AOB solution (AA) in microbiological, physicochemical, and sensory evaluation were analyzed, respectively. The results demonstrated that combination treatment inhibited the increase in total viable counts, delayed the decrease in amino acid content, and retarded the sensory deterioration. Preservative treatment has an inhibitory effect on the early storage of PBC, which can reduce PBC by about 1.0 log CFU/g. The reduction in thiobarbituric acid (TBA) content and total volatile basic nitrogen (TVB-N) content indicated that combination treatment could better restrain the lipid oxidation and degradation of protein than the CK group and single-treatment group. In addition, the TVB-N content in the AA group still did not exceed the threshold on the 14th day. As a consequence, combination treatment prolonged the shelf life of bullfrogs for another six days. Therefore, allicin and AOB with excellent antioxidant and antimicrobial activity could be an effective approach to delay the biochemical reaction of refrigerated bullfrogs. This study has provided a potential approach for increasing the shelf life of bullfrogs and preserving their quality during refrigerated storage.

Effects of chitosan coatings combined with resveratrol and lysozyme on the quality of Sciaenops ocellatus during refrigerated storage

Yingchang Li,Qian Zou,Suzhen Song,Tong Sun,Jianrong Li

The effects of combined application of lysozyme and resveratrol with chitosan coatings on the quality of Sciaenops ocellatus during refrigerated storage were studied. Physical and chemical indices were periodically analyzed. The chitosan composite coatings were characterized, and the mechanical properties and gas permeability were also measured. The results showed that chitosan coatings could significantly reduce the total viable count (TVC), maintain tissue hardness, chewiness and sensory quality, slow the rate of fat oxidation, and restrain the increases in pH and total volatile basic nitrogen (TVB-N). Compared with chitosan coatings, the addition of resveratrol and lysozyme had increased the tensile strength and reduced the gas permeability. The lysozyme–resveratrol–chitosan coatings had good preservation properties. The study indicated that the 0.1% lysozyme + 0.2% resveratrol + 1% chitosan group of composite coatings could maintain the quality and extend the shelf life for 8 days compared with the control group during refrigerated storage.

Improving flavor quality in bighead carp (Aristichthys nobilis) fillets during chilled storage with chitosan-EGCG coating: Insights into its underlying regulatory mechanisms

Wangli Dai,Shulai Liu,Yanbo Wang,Yuting Ding,Xuxia Zhou

Maintaining the flavor quality of aquatic products during storage is crucial for their market value and consumer acceptance. This study evaluated the effects of a chitosan-epigallocatechin gallate coating on the flavor profile of bighead carp fillets and explored its underlying regulatory mechanisms. Sensory evaluation, electronic nose, and analysis of volatile and ATP-related compounds revealed that the coating significantly reduced off-flavor compounds, improving flavor quality. The coating suppressed free amino acid and free fatty acid levels, inhibited flavor-converting enzyme activities, and slowed lipid metabolism. Correlation analysis highlighted positive links between key flavor compounds and flavor precursors, enzymes, and metabolites. High-throughput sequencing identified Lactococcus , Serratia , and Aeromonas as key microorganisms affecting flavor characteristics. These findings advance the understanding of flavor deterioration mechanisms and suggest potential strategies for preserving the flavor quality of bighead carp fillets during chilled storage.
