The phase separation behavior of mixed solution of caseinate (Cas) and alginate (Alg) was investigated. Lactobacillus plantarum FZU3013 was encapsulated using 4 % Cas/1 % Alg gel beads with a phase-separated structure. The bacteria were predominantly distributed in the Alg-rich continuous phase. The use of 4 % Cas/1 % Alg beads resulted in higher encapsulation efficiency for L. plantarum FZU3013 compared to 1 % Alg beads. After 5 weeks of storage at 4 °C, the viable count in 4 % Cas/1 % Alg beads was 8.3 log CFU/g, which was 1.1 log CFU/g higher than that of the 1 % Alg beads. When 1 % Alg beads of the smallest size were subjected to in vitro digestion, no viable bacteria could be detected at the end of the digestion, whereas the 4 % Cas/1 % Alg beads of the smallest size had a viable count of 3.9 log CFU/g. When the size of the 4 % Cas/1 % Alg beads was increased to 1000 μm, the viable count was 7.0 log CFU/g after digestion. The results of infrared spectroscopy and zeta potential indicated that hydrogen bonding and electrostatic interactions between caseinate and alginate reinforced the structure of the gel beads and improved the protection for L. plantarum FZU 3013.

Staphylococcus aureus ( S. aureus ), a prevalent foodborne pathogen, poses a significant threat to public health. Rapid, specific, and sensitive on-site pathogen detection methods are crucial for food safety. In this study, a ternary MXene/WS 2 /Au NPs composite was synthesized via a solvothermal and in situ growth method. This composite serves dual purposes as a photoactive material for photoelectrochemical (PEC) aptasensing and as an effective antibacterial catalyst. A PEC aptasensor was developed using MXene/WS 2 /Au NPs as the substrate and a ferrocene-modified aptamer as the recognition probe, enabling quantitative detection of S. aureus . The sensor exhibits a wide linear range (1.0 × 10–1.0 × 10 7 CFU/mL) and an ultra-low detection limit (3.0 CFU/mL). Additionally, the nanocomposite demonstrates strong peroxidase-like activity, efficiently catalyzing H 2 O 2 to generate ·OH, offering broad-spectrum antibacterial properties for pathogen control in food safety monitoring.

Amyloid fibrils have garnered significant attention in the food industry as functional materials due to their high specific surface area and excellent mechanical resilience. Although their safety has been demonstrated in adults, differences in protein origin and digestive physiology may lead to distinct degradation behaviors. Particularly in populations with immature or impaired digestive systems, such as children, the digestibility and biosafety of dietary amyloid fibrils remain largely unknown. In this study, we simulated pediatric gastrointestinal conditions to characterize molecular size and structural changes during the digestion of amyloid fibrils formed from three major dairy proteins-α-lactalbumin, β-lactoglobulin, and casein-and to evaluate the safety of their digestive products. The formation of amyloid fibrils was confirmed by Thioflavin T (ThT) fluorescence and transmission electron microscopy (TEM). Upon simulated digestion, all three types of fibrils were degraded into short peptides (<10 kDa); ThT fluorescence returned to baseline, β-sheet structures were lost, and particle sizes dropped below 50 nm. Further seeding assays revealed no detectable seeding activity, and cell viability assays demonstrated survival rates above 82% even at 1000 μg/mL, confirming their in vitro safety. This study establishes Ia safety evaluation framework based on pediatric digestive physiology, offering a valuable reference for the risk assessment of dietary amyloid proteins.

The high osmotic pressure in sweetened condensed milk severely inhibits probiotic viability, resulting in its insufficient use in probiotic applications. In this study, we systematically evaluated casein (CS), sodium hyaluronate (SH), and sodium alginate (SA) as microencapsulants for Lactobacillus helveticus in sweetened condensed milk, and assessed various CS:SA and CS:SH ratios to optimize both microbial viability and product quality. Through multimodal analysis of rheological properties (dynamic modulus and viscosity), thermal stability, physicochemical parameters (water activity and sugar/acid content), and color evolution, the CS:SH (1:1) formulation demonstrated stable microstructural integrity, enhanced volatile flavors, and preserved sensory characteristics while maintaining probiotic viability, which proved to be optimal for L. helveticus microencapsulation. Our findings establish a viable microencapsulation approach for hypertonic food applications that effectively balances probiotic viability and product shelf stability.

In recent years, with the advancement in the consumer market and industrial trends, wool has shown new vitality in the fields of outdoor sports apparel and smart wearable textiles due to its unique properties. However, the inherent felting characteristic of wool leads to undesirable dimensional shrinkage after machine washing, which necessitates that wool products be dry-cleaned. Conventional dry cleaning solvents like perchloroethylene are considered to be carcinogenic and detrimental to the environment. Factories usually adopt the chlorination process to manufacture machine-washable wool textiles, which may release harmful adsorbable organic halides (AOX) to the environment. Herein, we developed a “valley-filling and peak-shaving” dual-effect enzymatic anti-felting strategy as an ideal sustainable alternative. The pre-filling not only inhibits the protease from penetrating the fiber interior but also enhances its adsorption on the fiber surface. Hence, the compound proteases, possessing efficacy in degrading keratin-rich scales, primarily hydrolyze the fiber surface. This selective hydrolysis endows these textiles with machine-washability while preserving their original mechanical properties and color attributes, achieving a felting shrinkage of 5.06 % and an increase in tensile strength of 0.27 % for wool fabric. In summary, we present a green and feasible enzymatic approach to eliminate shrinkage, thereby facilitating the diversified application of wool products.

Amid surging demand for intelligent health monitoring, developing flexible pressure sensors with high sensitivity, broad range pressure sensing, and mechanical robustness for all-scale physiological monitoring remains challenging. In this study, microfibrillated cellulose (MFC) featuring an octopus neuron-mimic structure was first obtained by dissociating CMF utilizing ultrahigh-speed vortex technology. Subsequently, graphene nanoplatelets (GNPs) were electrostatically anchored onto MFC to form octopus neuron-inspired highly sensitive GNPs@MFC conductive fibers. This distinctive bioinspired fiber was ingeniously employed to construct a GNPs@MFC/NR (natural rubber) conductive sponge with an octopus-mimic distributed neural network and pressure-dissipation modes through the combined technology of ice templating and hydrothermal vulcanization. Leveraging the fibrillated structure of MFC, polygonal pore structure, and Y-shaped nodes, this sponge achieved ultra-fast responsive speed (35/70 ms), high sensitivity (21.94 kPa − 1 , < 0.7 kPa), broad range sensing (0.001% micro-strain, 1015 kPa), and exceptional mechanical robustness (> 96% water recovery after 90% strain compression). GNPs@MFC/NR sponge-based flexible pressure sensor successfully identified subtle pressure signals (e.g., pulse, airflow), medium pressure signals (e.g., joint movement), and high-pressure signals (e.g., plantar pressure). This bioinspired strategy, inspired by octopus neurons, distributed neural networks, and high-pressure dissipation modes in NR sponges, provides rich possibilities for developing multifunctional pressure-sensing materials.

To enhance the stability and intestinal delivery of the probiotic Lactobacillus sakei J15, a multilayer microencapsulation system was developed using layer-by-layer (LBL) technology, using milk protein-hyaluronic acid (HA) conjugates (casein–HA or β-lactoglobulin–HA) and chitosan (CHI). The microcapsules exhibited high encapsulation efficiency (up to 98.65%) and significantly improved probiotic viability under harsh conditions, including acid, bile salt, simulated gastrointestinal digestion, and heat. Electrostatic interaction was confirmed as the main force binding the amino groups in the conjugate to the carboxyl groups of CHI, and the surface charge of the samples reversed as a zigzag pattern whenever another outermost layer was added. The (CHI/CN–HA/CHI)3 and (CHI/β-Lg–HA/CHI)3 microcapsules exhibited the best adhesion to Caco-2 cells, reaching 24.47 and 26.71 CFU/cell, respectively. Microcapsules with two or four layers (milk protein-HA as the outer layer) showed superior resistance to environmental stresses, while three-layer capsules (chitosan as the outer layer) exhibited the strongest adhesion to Caco-2 cells.

This study modified cellulose nanocrystals (CNC) with casein (CA) using ultrasound (U). Ultrasound treatment (U-CA-CNC) reduced particle size and created uniform filamentous networks compared to just CA-CNC. Analysis showed enhanced hydrogen bonding between CA and CNC due to ultrasound. U-CA-CNC and CA-CNC significantly improved interfacial properties: contact angle increased while interfacial tension decreased sharply. Consequently, high internal phase emulsions (HIPEs) stabilized by these modified particles, especially at CA:CNC ratios of 1:1.5 or 1:2, had smaller droplet sizes, higher elasticity (G'), and higher viscosity. These HIPEs remained stable without delamination after 15 days at 4 °C when inverted and showed lower oxidation (TBARS). Ultrasound effectively improved the CA-CNC interfacial properties, enabling stable HIPEs with enhanced rheology.

Developing bifunctional electrocatalysts with high activity and durability is critical for efficient electrochemical water splitting. In this study, using three-dimensional graphene (3DG) as the scaffold, trace Pt-doped FeCoNiMnCr high-entropy alloy (HEA) nanoparticles (≈ 4.4 nm) were in situ dispersed and anchored onto the pore walls of 3DG via impregnation adsorption followed by ultrafast Joule heating. The porous 3DG scaffold provides adsorption and anchoring sites for the metal precursors, enabling a uniform nanoparticle distribution after ultrafast Joule heating. The resulting composite exhibited bifunctional hydrogen evolution reaction (HER) and oxygen evolution reaction (OER) activity in both alkaline and alkaline NaCl electrolytes. In an alkaline NaCl electrolyte (1.0 M KOH + 0.5 M NaCl), the catalyst required overpotentials of only 82.4 mV for the HER and 256.1 mV for the OER to achieve a current density of 10 mA cm −2 . A symmetric two-electrode electrolyzer assembled with FeCoNiMnCr/Pt@3DG electrodes showed no significant performance degradation after 50 h of continuous operation at 100 mA cm −2 . Notably, this synthetic strategy offers a new approach to enhancing the electrocatalytic performance of nanostructured high-entropy materials. These results establish ultrafast Joule heating of precursors supported on 3DG as a viable route for preparing low-Pt multicomponent electrocatalysts.

Wool fabrics are susceptible to issues related to felting as a result of their surface scales, which significantly impact their usability. Traditional chlorinated shrink-proof finishing is effective but it produces organic halogen pollutants, which cause significant environmental risks. This study aimed to develop an effective and eco-friendly wool shrink-proof finishing process with an innovative combination of lithium bromide (LiBr), glycerol monomercaptoacetate (GMT), and protease (Savinase Ultra 16 XL). These ingredients work synergistically to precisely remove wool scales through a two-stage ″steam-batch″ process. The study systematically investigated the synergistic mechanisms of LiBr-induced microexpansion of fiber cortex, GMT cleavage of disulfide bonds, and hydrolysis of scale keratins by proteases. The combined use of 10 g/L LiBr, 10g/L GMT, and 6 U/mL protease endowed the wool fabric with a promising shrink-resistance property, achieving a felting shrinkage from 11.58 to 2.88% and a fabric strength retention rate of 95%. Compared to the traditional maceration method, this treatment system significantly reduces water and energy consumption while meeting the standards of machine washing. This innovative steam-batch system reduces water use by around 80% compared to traditional maceration. By molecular-level synergy of swelling-reduction-hydrolysis, it overcomes the contradiction between efficiency, environmental protection, and cost inherent in the traditional protease shrinkage prevention process.

Introduction Anthocyanins have various health benefits but are limited by fast elimination and low bioavailability. Many studies have shown that nano delivery systems are effective in improving the intestinal absorption and bioavailability of anthocyanins. However, in the process of selecting anthocyanin nanomaterials, a dilemma is faced: numerous functional nanomaterials lack edible properties, it is difficult to meet the edible and functional requirements of nanomaterials simultaneously. Therefore, it is necessary and inevitable to select nano-anthocyanin carriers that are edible and have certain functional and morphological characteristics. Objectives We aim to provide an efficient, sustained-release and easy to industrialize nanosystem method to solve the problem of low bioavailability of anthocyanins. Methods A succinylated casein-phospholipid-anthocyanin nanosystem (CLS) was designed via computational chemistry-guided one-step self-assembly. Morphological, in vitro/in vivo digestion, pharmacokinetic were conducted. Furthermore, the effects of CLS on intestinal microecology were verified by using enteritis model animals, and the lung-targeting effect of CLS on lung health was verified by using lung injury model animals. Results CLS exhibited 24-hour intestinal sustained release and lung-targeted enrichment. Pharmacokinetic studies showed 25.7-fold higher lung AUC (0-t) and 13.1-fold higher blood AUC (0-t) compared to free anthocyanins. CLS significantly alleviated lung injury and colitis in model rats via the gut-lung axis. Conclusion This study significantly improved the bioavailability of anthocyanins and demonstrated the oral lung-targeting function of anthocyanins for the first time, paving the way for utilizing anthocyanins as dietary supplements and precision nutrition.

The well-known phenomenon of felt shrinkage that occurs during home laundry of wool textiles has long bothered consumers. Currently, to address this issue, factories have no choice but to employ the chlorination-Hercosett process, which predominates in the production of machine-washable wool fabrics. However, this method often results in color alternations in dyed fabrics and generates absorbable organic halides (AOX), thereby significantly exacerbating environmental challenges. Enzymatic processing has been consistently recognized as a promising alternative, while most necessitate the assistance of chemical reagents. To accomplish fully green manufacturing of machine-washable wool fabrics, this study has innovatively developed a compound-protease system based on a "wave-riding" enzymatic mechanism, reaching localized surface modification of wool fibers. The results demonstrated that dyed wool fabrics treated exclusively with proteases exhibited excellent dimensional stability (3.90% ± 0.12%) and controllable strength loss (11.39% ± 0.61%). Additionally, the wearability of the fabrics, which was quantified through assessing factors such as air and moisture permeability, the hand feeling, and the wettability, was improved. The original color properties of dyed wool fabrics were also preserved; specifically, there was no adverse effect on color fastness and minimal color difference (∆ECMC < 1.00). This approach further fills the technical gap in the field of genuinely green anti-felting solutions for dyed wool fabrics, offering a new pathway toward sustainable textile manufacturing.
