This work is focused on the modification of insoluble dietary fiber from pomelo ( Citrus grandis ) peel (PP-IDF) by ball milling. Ball milling intensified water and oil holding capacity and water swelling capacity by 43.7%, 65.1%, and 107.5%, respectively. Besides, 97.1% of taurocholic acid, 45.3% of glucose, and 9.3 μg/mg of NO 2 − were bound by milled insoluble dietary fibers (IDFs). The oil-in-water Pickering emulsions were successfully emulsified by ball-milled PP-IDFs. The ball-milled PP-IDF for 2.0 hr (PP-IDF-BM2h) exhibited higher stability after storage owing to its relative strong electrostatic and steric repulsions intensified by milling process. A simulated three-stage gastrointestinal tract (GIT) model was employed to explore the physical stability of emulsion in the digestive system. Ball milling contributed promotion on stability emulsion but ion strength in simulated liquids predominated in affecting ζ potential. Overall, ball milling extended green protocols for modification of properties for dietary fiber, providing a promising application in food industry. Practical applications For safety consideration, materials used for food processing should be in low toxicity with less employment of chemicals. Hence, it is essential to develop a green and renewable strategy to modify properties of dietary fiber (DF) in food applications. Ball milling is a simple and low cost strategy that can effectively improve or modify physicochemical properties including crystallinity, surface potential, water and oil holding capacities, and hydrophilic and hydrophobic properties. Importantly, ball milling can treat dietary fiber in batch processing with no waste and chemicals, which is suitable for industrial applications.

Impacts of ball milling (BM) (4, 6, 8, 10 h) combined with high-pressure homogenization (HPH) (60 and 100 MPa, 4 cycles) on structure, physicochemical and rheological properties of citrus fiber were investigated. Compared with single BM treatment, particle size of combined treatment citrus fiber significantly reduced. Scanning electron microscope (SEM) demonstrated that BM combined with HPH unfolded flaky structure of citrus fiber and caused more pores occurred. Fourier transform infrared spectroscopy analysis (FTIR) indicated that combined treatment increased its hydroxyl. At BM 4 h combined with HPH 100 MPa, water holding capacity (WHC), oil holding capacity (OHC), water swelling capacity (WSC), DPPH, ABTS + -radical scavenging capacity and apparent viscosity of citrus fiber increased by 144.74%, 884.52%, 109.56%, 43.90%, 56.80% and 180.49%, respectively, whereas median particle size (D 50 ) decreased by 65.24%, compared with single BM treatment. Therefore, BM combined with HPH was an effective physical treatment to modify citrus fiber, remarkably changing its spatial structure and improving its physicochemical properties and apparent viscosity, thus providing a theoretical basis for food industry to obtain excellent citrus fibers.

The objective of this study was to investigate the effects of different enzymolysis conditions on the NO inhibition rate and DH (degree of hydrolysis) of sturgeon hydrolysates (SH) prepared by Alcalase. The NO inhibition rate of 60.23% was attained under the optimum enzymolysis conditions as follows: pH 9.0, enzymolysis time of 4.92 h, enzymolysis temperature of 55°C, solid/liquid ratio of 1 : 20, and enzyme additive amount of 7674.22 U/g protein, which was well matched with the predicted value 61.44% of the Box–Behnken design model. After the ultrafiltration of SH, SH-3 (SH < 3 kDa) could significantly decrease the levels of NO and proinflammatory cytokine level IL-6. Also, we found that the obtained SH-3 contained good properties of emulsification and possessed good WHC and OHC. SH-3 demonstrated appreciable antioxidant potential on DPPH and ABTS radical scavenging activities. These results suggested that SH-3 derived from sturgeon muscles could potentially be used as a promising ingredient against inflammatory and oxidative stress-associated diseases.
