This study aims to enhance gelatin film performance in the food industry by incorporating polyphenol–titanium complexes (PTCs) as crosslinkers. PTCs introduce multiple linkages with gelatin, including coordination and hydrogen bonds, resulting in synergistic crosslinking effects. This leads to an increased hydrodynamic volume, particle size, and thermal stability of the gelatin films. Compared to films crosslinked solely by polyphenols or titanium, PTC-crosslinked gelatin films exhibit significant improvements. They show enhanced mechanical properties with a tensile strength that is 1.7 to 2.6 times higher than neat gelatin films. Moreover, these films effectively shield UV light (from 82% to 99%), providing better protection for light-sensitive food ingredients and preserving lutein content (from 74.2% to 78.1%) under light exposure. The incorporation of PTCs also improves film hydrophobicity, as indicated by water contact angles ranging from 115.3° to 131.9° and a water solubility ranging from 31.5% to 33.6%. Additionally, PTC-enhanced films demonstrate a superior antioxidant ability, with a prolonged polyphenol release (up to 18 days in immersed water) and a higher free radical scavenging ability (from 22% to 25.2%). Overall, the improved characteristics of gelatin films enabled by PTCs enhance their performance, making them suitable for various food packaging applications. Keywords:gelatin film;polyphenol–titanium complexes;synergistic effect

A new starch-based ester Starch-EDTAD-NHS (SEN) was successful prepared firstly and used to modify gelatin films by amidation . 1 H NMR, FTIR spectra, XRD curves, elemental analysis and Van Slyke method verified the synthesis and confirmed the crosslinking procedure. The properties of the composite SEN-Gel film, such as mechanical test , surface hydrophobicity , light barrier performance, water uptake studies, morphology and solubility behavior were studied. The results of water contact angle showed the hydrophobicity of the films, and the obtained transparency values indicated that the films were opaque. Finally, the modified films with better surface hydrophobicity, more flexible and pliable, improved light barrier performances and low solubility were obtained. All the results above illustrated that the composite films obtained in this work maybe have potential applications in many fields.

The development of safe, non-toxic, multifunctional nano preserved materials with excellent performance has become a hot research topic. Multifunctional Sophora Japonica extract (95% rutin)-derived carbon dots (R-CDs) were prepared by hydrothermal method. The π-π conjugation structure of R-CDs enabled them UV broadband absorption properties. The excellent antioxidant properties of R-CDs were attributed to the presence of the sp 2 carbon in core and a large number of hydroxyl groups at the edges, and their degradation rate of potassium permanganate and scavenging activity of superoxide anion radical were better than that of ascorbic acid . The presence of C O bond may be the site for the generation of reactive oxygen species (ROS) and thus they could kill Staphylococcus aureus ( S. aureus ), Bacillus subtilis (B. subtilis) and Listeria monocytogenes (L. monocytogenes) at a concentration of 2 mg/mL and inhibited the growth of fungi ( Botrytis cinerea ). Then R-CDs were uniformly dispersed in gelatin-based solution, and the as-prepared films had smooth surface, good hydrophilicity, strong mechanical properties and good biocompatibility. With the increase of R-CDs addition, the tensile strength increased and then decreased, and the elongation at break rose to 358%. The film inherited the broadband UV absorption, antioxidant and antibacterial properties of R-CDs. The storage period of strawberries was prolonged after coating. The variety and abundance of microorganisms on the surface of strawberries was reduced and the growth of harmful bacteria was inhibited. This work provides more possibilities for the application of nanomaterials in fruit preservation.

Paper, for writing and printing, is consumed a lot in modern life. However, the production of conventional paper could cause many problems, such as deforestation and environmental pollution. Therefore, it is necessary and urgent to explore novel strategies to solve these problems. In this work, a polyoxometalate-doped gelatin film with high strength, excellent transparency, and fast photochromic properties is designed and prepared. The film can display different colors by using a variety of reagents, exhibiting its potential application as a paper medium. Its rapid photochromic properties allow complex high-resolution images to be displayed by UV light printing. It is found that the mechanical and photochromic properties could be regulated by the introduction of triethylene glycol, and the fading process could be controlled by changing the temperature and humidity. Moreover, it is rewritable, self-repairable, and recyclable, and can also achieve long-term preservation without fading. It is envisioned that the environmentally friendly films with low cost, ease of preparation, and recycling advantages have the potential to be an alternative to conventional paper for writing and printing.

In this study, three-layer films based on gelatin/gelatin-dextran/gelatin with different concentrations of functional fillers (cinnamaldehyde and α-tocopherol) were fabricated by using the layer-by-layer casting method to preserve refrigerated scallop adductor muscle. The films demonstrated excellent bonding, with functional fillers creating a porous cross-section, a slightly rough surface, and increased hydrophobicity while maintaining thermal stability. The crystallinity, water contact angle, thickness, opacity, antioxidant activity, and antibacterial activity of the films were increased, while the water vapor permeability and mechanical properties were decreased with increasing concentrations of the functional fillers. The film with 1.2% active fillers showed over 82% free radical scavenging activity and significant inhibition zones (24.7 ± 1.2 to 43.9 ± 1.8 mm) against five foodborne pathogens and spoilage bacteria. Both cinnamaldehyde and α-tocopherol demonstrated controlled release properties in four food simulants, with the maximum release and minimum release times observed in 95% ethanol (9.0 h) and distilled water (2.0 h), respectively. Overall, the introduction of 1.2% of active fillers into the films significantly enhanced the chemical and microbiological stability of refrigerated scallops and prolonged their shelf life by 6 days. Furthermore, the developed films showed excellent controlled release, antibacterial, and antioxidant properties, making them potential candidates for preserving seafood.

Implantable flexible electronic has attracted significant research interest in various fields. However, it still faces the challenge of simultaneously achieving tight adhesion to tissues in a mildly wet environment and possessing excellent biocompatibility to reduce immune rejection reactions after implantation. Here, a degradable wet-adhesive flexible electronic device based on liquid metal and ultrathin gelatin film is developed. The ultrathin gelatin film forms numerous hydrogen bonds with tissue in a slightly humid environment, rapidly constructing a wet-adhesive interface without damaging tissue structure. Inkjet printing is utilized to pattern the mixture of liquid metal and PVP on the surface of the ultrathin gelatin to create flexible patch. With the excellent conductivity of liquid metal, low toxicity, and similarity to natural tissue components of gelatin, flexible patch exhibits outstanding biocompatibility and fatigue resistance. It can be implanted in the body for up to 6 weeks, retaining monitoring capabilities and resisting 1 000 000 cycles of bending fatigue. This study provides a novel strategy for the future development of implantable flexible electronics.

Here, we tailored the multi-level structural and practical (mechanical/hydrophilic) features of gelatin films by varying the konjac glucomannan (KGM) content and the film-forming temperatures (25 and 40 °C). The addition of KGM apparently improved the mechanical properties and properly increased the hydrophilicity. With the lower temperature (25 °C), the increase in KGM reduced the gelatin crystallites of films, with detectable KGM–gelatin interactions, nanostructures, and micron-scale cracks. These structural features, with increased KGM and negligibly-occurred derivatizations, caused initially an insignificant decrease and then an increase in the strength, with a generally-increased elongation. The higher temperature (40 °C) could reduce the strength and slightly increase the elongation, related to the reduced crystallites of especially gelatin. With this higher temperature, the increase in KGM concurrently increased the strength and the elongation, mainly associated with the increased KGM and crystallites. Additionally, the increase in KGM made the film more hydrophilic; the multi-scale structural changes of films did not dominantly affect the changing trend of hydrophilicity. Keywords:konjac glucomannan/gelatin film;multi-level structure;practical features

Smart packages based on natural pigment and macromolecular exhibited great potential in fresh meat but were limited by their poor stability and hydrophobic properties. Herein, we designed a stable smart packaging consisting of a series of preservation films (GPEF series) and smart labels (GPEF-C series), through emulsification and polyelectrolyte complexation. Cinnamic acid-chitosan nanoparticles (CC NPs) were used to prepare gallic acid-garlic essential oil W/O/W emulsions (EC) and emulsions loaded with curcumin (EC-Cur). The added emulsions and in-situ generated calcium CaHPO 4 nanoparticles significantly improved the hydrophobicity of films (WCA 111.3°–124.8°). As the emulsion concentration increased, films exhibited significant enhancement in antioxidant activity (50.2%–97.6%), antimicrobial properties (12.4%–99.8% against E. coli , 89.9%–100% against S. aureus ) and UV shielding properties (transmittance 0.7%–5.1%). Moreover, these films were environmentally friendly and degraded in soil after 10 days. GPEF-C 3 and GPEF-C 5 showed excellent color and fluorescence stability after 4.5 months, as well as pH response between pH 8–13. Compared with PE, GPE 5 F extended the shelf life of fish at 4 °C from 3 days to 5 days, and the color/fluorescence response of GPEF-C 3 exhibited consistency with TVB-N and CFU, which could accurately reflect the freshness of fish in real-time. Smart packaging based on GPE 3 F and GPEF-C 3 was a prospective option for preserving and monitoring fresh meat.

In order to study the impact of starch in film performance, high amylose corn starch was composited in gelatin films under different gelatinization conditions and, in high and low concentrations (10 and 50 wt.%). It was found that hot water gelatinized starch (Gel-Shw) increased film mechanical strength and was dependent upon the starch concentration. The addition of an alkali component to the starch significantly enhanced the swelling of the starch granules and expedited the gelatinization process. Incorporation of starch, especially the alkalized starch (Sha), into the gelatin films decreased film solubility which improved its water resistance and water vapor permeability (WVP). Multiple techniques (DSC, TGA , FT-IR, and XRD) were used to characterize the process and results, including the crosslinking of the dissolved starch molecules and the particles formed from gelatinized starch during retrogradation process, which played an important role in improving the thermal stability of the composited gelatin films. Overall, the starch-gelatin composition provides a potential approach to improve gelatin film performance and benefit its applications in the food industry.

In this study, we developed composite films by crosslinking gelatin with oxidized alginate and anthocyanin through Schiff base linkage, electrostatic interaction and hydrogen bonds. Physicochemical properties of the films can be adjusted by changing the concentration of oxidized alginate. The tensile strength of the film containing 10 wt% oxidized alginate reached 45 MPa, surpassing that of films with 1 wt% and 3 wt% oxidized alginate. As the concentration of oxidized alginate increased, the swelling ratio of the films decreased. The release rate of anthocyanin from the film with 10 wt% oxidized alginate in pH 7.0 water was 15.3%, significantly lower than that of the film lacking oxidized alginate (release rate 42.1%). The antioxidant properties of the composite gelatin films with anthocyanin were about 40% in DPPH radical scavenging activity. Additionally, the color of film with 3 wt% oxidized alginate changed from light pink to green in a solution with a pH range from 3 to 11 and the film was sensitive to acidic or basic vapors. This color-changing capability makes the film a potential indicator for detecting spoilage in fish, pork, and chicken, manifesting color changes from light pink to light green. Furthermore, the composite films exhibited biodegradable characteristics in soil, lakes, and simulated seawater. Notably, the film containing 10 wt% oxidized alginate demonstrated greater stability compared to the film without oxidized alginate. The gelatin film with pH responsive and biodegradable properties can be potentially used in the field of intelligent food packaging.

Biodegradable gelatin (G) food packaging films are in increasing demand as the substitution of petroleum-based preservative materials. However, G packaging films universally suffer from weak hydrophobicity in practical applications. Constructing a hydrophobic micro/nanocoating with low surface energy is an effective countermeasure. However, the poor compatibility with the hydrophilic G substrate often leads to the weak interfacial adhesion and poor durability of the hydrophobic coating. To overcome this obstacle, we used (3-aminopropyl) triethoxysilane (APS) as an interfacial bridging agent to prepare a highly hydrophobic, versatile G nanocomposite film. Specifically, tannic acid (TA)-modified nanohydroxyapatite (n-HA) particles (THA) were introduced in G matrix (G-THA) to improve the mechanical properties. Micro/nanostructure with low surface energy composed of nanozinc oxide (Nano-ZnO)/APS/stearic acid (SA) (NAS) was constructed on the surface of G-THA film (G-THA/NAS) through one-step spray treatment. Consequently, as-prepared G-THA/NAS film presented excellent mechanics (tensile strength: 7.6 MPa, elongation at break: 292.7%), water resistance ability (water contact angle: 150.4°), high UV-shielding (0% transmittance at 200 nm), degradability (100% degradation rate after buried in the natural soil for 15 days), antioxidant (78.8% of 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity), and antimicrobial (inhibition zone against Escherichia coli: 15.0 mm and Staphylococcus aureus: 16.5 mm) properties. It should be emphasized that the bridging function of APS significantly improves the interfacial adhesion ability of the NAS coating with more than 95% remaining area after the cross-cut adhesion test. Meanwhile, the G-THA/NAS film could maintain stable and long-lasting hydrophobic surfaces against UV radiation, high temperature, and abrasion. Based on these multifunctional properties, the G-THA/NAS film was successfully applied as a liquid packaging material. To sum up, we provide a feasible and effective method to prepare high-performance green packaging films.

In order to improve the functionality of natural gelatin films for active food packaging applications, a combined strategy of crosslinking via Maillard reaction and blending enhancement incorporated with poly(vinyl alcohol) (PVA) was explored. In this study, when the mass ratio of gelatin to glucose was 10:1, Maillard reaction of crosslinked gelatin films was the highest, UV absorption and browning index reached the maximum. Infrared analysis showed that PVA could form strong interfacial interactions with gelatin matrix. The presence of PVA could significantly improve the toughness, water absorption, transparency, and oxygen barrier properties of crosslinked gelatin films. When the amount of PVA reached 5 %, elongation at break and oxygen barrier properties of crosslinked gelatin films were improved by 76.7 % and 47.9 % compared with pure crosslinked gelatin film. Even when the amount of PVA reached 10 %, UV absorption (at 315 nm) of crosslinked gelatin films still exceeded 98.7 %. The addition of PVA could accelerate the dissolution and swelling of crosslinked gelatin films, promoting the migration and release of active substances (Maillard reaction products (MRPs)). The two antioxidant activities tests (DPPH and ABTS method) achieved the highest radical scavenging rates of 71.6 % and 91.2 %, respectively, with corresponding PVA addition of 5 % and 7.5 %. After continuing to add PVA, antioxidant activities began to significantly decrease, which was directly related to the decrease in the generation of MRPs. Therefore, crosslinked gelatin films reinforced with appropriate amount of PVA can be considerable potential as active films for renewable food packaging applications.
