A new starch-based ester Starch-EDTAD-NHS (SEN) was successful prepared firstly and used to modify gelatin films by amidation . 1 H NMR, FTIR spectra, XRD curves, elemental analysis and Van Slyke method verified the synthesis and confirmed the crosslinking procedure. The properties of the composite SEN-Gel film, such as mechanical test , surface hydrophobicity , light barrier performance, water uptake studies, morphology and solubility behavior were studied. The results of water contact angle showed the hydrophobicity of the films, and the obtained transparency values indicated that the films were opaque. Finally, the modified films with better surface hydrophobicity, more flexible and pliable, improved light barrier performances and low solubility were obtained. All the results above illustrated that the composite films obtained in this work maybe have potential applications in many fields.

In this study, starch ferulate was synthesized employing a mechanoenzymatic method, specifically based on the twin screw extrusion technique and lipase catalysis. The research then primarily centered on optimizing process parameters and conducting structural analysis. Optimal conditions were determined to be 8.2% ferulic acid addition, 66 °C extrusion temperature, and 3.2% lipase (N435) addition. The enzyme-catalyzed time was 30 s. The degree of substitution for starch ferulate was quantified at 0.005581 under these specific conditions. The presence of C=O bonds in the synthesized starch ferulate proved that the synthesis process was efficient. Additionally, the crystal structure underwent reconstruction. Observations through Scanning Electron Microscopy (SEM) and Confocal Laser Scanning Microscopy (CLSM) demonstrated that the mechanoenzymatic method led to an augmentation in the specific surface area of starch molecules, thereby facilitating the exposure of active sites. This breakthrough underscores the vast potential of mechanoenzymatic techniques to revolutionize the rapid and sustainable synthesis of starch ferulate, marking a pioneering stride in ester synthesis. The insights garnered from this study transcend theory, offering a visionary roadmap for the development and real-world deployment of advanced modified starch esters.

The controlled release formulations (CRFs) are considered an effective way to solve damage to the environment caused by traditional pesticide formulations. To change the defects of traditional neonicotinoid formulations that dissolve quickly in soil, three types of thiamethoxam (TM) CRFs microspheres with content of 20% TM were prepared using microcrystalline wax (MK) as the matrix, laurate acid tapioca starch ester (MSK) and stearyl dehydroabietic acid ester (MDK) as the regulators of ingredient release. The release behavior of CRFs microspheres in water and soil showed that the microspheres had superior stability and different TM sustained-release periods, and TM release of the microspheres in soil was faster than that in water. The release rate is TM/MDK > TM/MSK > TM/MK. In water, the release of thiamethoxam technical was finished after 38 hours. However, for TM/MK, the release rate was 94% after 240 hours, and the release time was extended by 6 times. Meanwhile, TM/MDK has a particular pH-responsive release. Research shows that using microcrystalline wax as the matrix, by adding MSK or MDK to adjust the release of ingredients, pesticide CRFs microspheres with different release periods can be prepared to achieve the purpose of controlling the release of pesticides.

The aim of this work was to evaluate the plasticizing effect of triacetin on the structure and properties of starch ester film and further establish the structure–property relationships. The presence of triacetin resulted in multiple structure changes of the film. The mobility of macromolecular chain was increased to form scattered crystallite during the film formation process. The amorphous region was enlarged to contain more triacetin squeezed from crystalline region. The plasticization of triacetin and restriction of crystallite oppositely influenced the mobility of macromolecular chains in different regions. The thermal stability of triacetin changed along with its fluctuant interaction with macromolecules. Comparatively, the enhanced ether bond and the restriction from crystalline regions on the mobility of the amorphous chain consequently improved the thermal stability of the film matrix. The interaction between triacetin and starch ester was essential to film forming but unexpectedly lowered the triacetin stability.

This work revealed the influence of thermal processing on the microstructural, mesoscopic and molecular scale structures and thus the plasticizer migration of the starch ester films. Thermal processing promoted the permeation of water molecules to hinder the shrink of the amorphous macromolecules. That is, the swelling of the amorphous macromolecules diminished the ordered regions to a certain degree, resulting in the enlarged amorphous regions. Along with slight degradation of the macromolecules, the crystallites were partially disorganized, as indicated by a reduced relative crystallinity. These multi-scale structural changes of the films and the thermally enhanced mobility of plasticizer molecules synergistically enhanced the plasticizer migration. This study not only enables a well understanding of how thermal treatment alters the plasticizer migration of starch-based films from a multi-scale structural view, but also hints to our future work that rationally modulating the structural features of starch-based film may effectively control the migration of chemicals.

To develop a promising selenium supplement that overcomes the instability and poor water dispersibility of selenium nanoparticles (SeNPs), we synthesized a series of amphiphilic octenyl succinic anhydride starch (OSAS) through esterification. As the degree of substitution ( DS ) increased, the particle size of OSAS micelles and the critical micelle concentration (CMC) decreased. FTIR and XRD analysis confirmed the successful introduction of octenyl succinic anhydride groups onto starch. Subsequently, OSAS micelles were used as carriers to synthesize SeNPs via in situ chemical reduction, forming SeNPs-loaded self-assembled starch nano-micelles (OSAS-SeNPs). The OSAS-SeNPs exhibited spherical dispersion in water with an average diameter of 116.1 ± 2.3 nm, contributed to enhanced hydrophobic interactions. TEM images showed a core-shell structure with SeNPs as the core and OSAS as the shell. FTIR results indicated hydrogen bonding interactions between OSAS and SeNPs. Due to the negatively charged OSAS shell and hydrogen bonding (O H⋯Se), OSAS-SeNPs remained non-aggregated for one month at room temperature, demonstrating remarkable stability. This study suggests that using OSAS can address the synthesis and stability issues of SeNPs, making it a potential selenium supplement candidate for further evaluation as an anticancer agent.

The effect of microwave treatment on the plasticizer migration and the changes in multi-scale structures of starch ester films for food packaging were evaluated, and the relationship between these structural changes and plasticizer migration was revealed. The plasticizer migration from the starch ester film to the milk system was accelerated during microwave heating compared with during simple immersion at 30 °C without microwave. After microwave heating, the water and/or fat molecules of the milk system rapidly permeated the film interface to enlarge the interchain spaces. The plasticizer molecules distributed near the boundary more readily migrated out than those located in the matrix interior. The changes in the plasticizer/starch ester interaction and film structures weakened the stability of the ether bond both in the plasticizer and starch ester molecules. The crystalline structure of the film was changed with a certain degree of destruction and the relevant interplanar spacing was decreased. The milk permeation into the amorphous region of the film impeded the shrinkage and aggregation of amorphous starch ester chains and even enlarged the inter-chain distances in this region. However, the ordered microaggregations were shrunk with reduced polydisperse size distribution. In consequence, the aggregation structure showed less restriction to the activated plasticizer molecules as a result of microwave treatment. These structural changes, including the expanded amorphous region and shrunk ordered microregions, could be the reason for the greater plasticizer migration during the microwave treatment. This knowledge will help us in further designing the starch-based materials with restrained plasticizer migration by controlling the molecular interaction, crystalline structure and ordered aggregation structure within the film matrix for safe and reasonable application of this type of packaging materials.

Migration is an important issue for the security in food packaging. In this work, the migration mechanism of plasticizer in G50 starch ester nanocomposites and accompanying multi-scale structural changes were probed with immersion. Mathematical model manifested that the migration mechanism of plasticizer obeyed the first-order kinetic model, and the migration of plasticizer followed the Fick’s second law in the short-term migration. In the meantime, the interactions between G50 starch ester and nanoparticles (OMMT) were enhanced by the migration, which was in favor of reducing the migration and bringing about a smaller diffusion coefficient ( D ) in the long-term migration compared with short-term ones. Meanwhile, the strengthened interactions conduced to accelerating the motion of starch ester, and altering the dispersion of OMMT, which resulted in the transformation from intercalation to exfoliation with the vanish of small inter-planar spaces for crystals. Simultaneously, these conversions increased the electron density contrast in amorphous and ordered regions, showing an increment of the roughness with wrinkles in the cross-sections. Based on above researches, the migration behaviors of plasticizer in starch ester nanocomposites were well expounded, while it is still necessary to explore new ways to inhibiting the migration of plasticizer in food packaging materials.

The effect of modification treatments on the structure and function of starch-polyphenol complexes has become a hot research topic. Therefore, this study aims to systematically investigate the structural reorganization and digestibility modulation of octenyl succinic anhydride modified rice starch (OR)-caffeic acid complexes (ORCA) under gradient high pressure homogenization (HPH) pressures (50, 80, and 110 MPa). HPH promoted the interaction between starch and CA compared to the non-HPH-treated samples. Among the HPH-treated samples, ORCA exhibited more complete granular structures and higher thermal stability (311.65 °C) than the rice starch-CA complexes (RCA). Dual modification significantly improved resistant starch content. The underlying mechanism by which ORCA and HPH treatments regulated starch digestibility involved HPH-driven structural reorganization, which promoted the formation of a new densely ordered structure and crystalline barrier. This study provides theoretical support for the design of starch-based functional foods with anti-digestive properties.
