Shaken Hunan black tea is an innovative Hunan black tea processed by adding shaking to the traditional Hunan black tea. The quality of shaken black tea is influenced by leaf grades of different maturity. In this study, the taste and aroma quality of shaken Hunan black tea processed with different grades were analyzed by sensory evaluation (SP, HPLC, and HS-SPME/GC-MS). The results showed that shaken Hunan black tea processed with one bud and two leaves has the best quality, which has a sweet, mellow, and slightly floral taste, as well as a floral, honey, and sweet aroma. Moreover, caffeine and EGCG were identified as the most important bitter and astringent substances in shaken Hunan black. Combined with the analysis of GC-MS and OAV analysis, geraniol, jasmone, β-myrcene, citral, and trans-β-ocimene might be the most important components that affect the sweet aroma, while methyl jasmonate, indole, and nerolidol were the key components that affect the floral aroma of shaken Hunan black tea. This study lays a foundation for this study of the taste and aroma characteristics of shaken Hunan black tea and guides enterprises to improve shaken black tea processing technology. Keywords:shaken Hunan black tea;leaves grade;taste;aroma;HS-SPME/GC-MS

Arsenic contaminations have been evaluated in rice grains from Hunan Province, China. Forty-three locally grown rice samples were collected from 40 counties. Arsenic species including As(III), As(V), MMA and DMA were separated and determined by HPLC-ICP-MS method. The mean concentration of total arsenic in rice samples was 129.4 ± 49.2 μg/kg, lower than the Chinese maximum contaminant levels of inorganic arsenic in rice (200 μg/kg). The dominant species detected in rice samples was As(III), following DMA, As(V) and MMA. The Pearson's correlation analysis indicated significant positive relationships between As(III) and total arsenic ( r = 0.939, p < 0.01), and DMA and total arsenic ( r = 0.761, p < 0.01). However, the percentage of As(III) decreased with the total arsenic concentration in rice ( r = − 0.515, p < 0.01). Spatial distribution map of total arsenic concentration in rice samples from Hunan Province was obtained using kriging interpolation. High levels of total arsenic in rice grains were observed in south and east regions associated with mining activities and urbanization process. The cancer risk and hazard quotient were employed to estimate the potential human health risk. The results suggested great carcinogenic risk and high potential non-carcinogenic risk to people consuming local rice in Hunan Province.

Rice and rice products are the main sources of Cd contamination in humans. The total and bioaccessible concentrations of Cd and three divalent nutrients, Mn, Cu, and Zn, in locally grown rice grains from Hunan and Guangdong Provinces in China were investigated. An in vitro physiologically based extraction test method was introduced to evaluate the bioaccessibility of the target metals in the rice grains. The mean concentrations of Cd in the rice grains were 0.245 mg/kg and 0.235 mg/kg from Hunan and Guangdong Provinces, respectively. Large variations were observed in the Cd concentrations, indicating a heterogeneous distribution of Cd contamination throughout the study areas. The bioaccessibility of Cd, Mn, and Zn in the gastrointestinal fractions was significantly lower than that in the gastric fractions. In contrast, the bioaccessibility of Cu at the intestinal phase was detected in the rice grains from both provinces. The correlation analysis showed significant relationships between total Cd concentrations and bioaccessible Cd fractions, indicating that higher total Cd in rice grains always resulted in higher bioaccessible Cd. Consistent correlations in the rice grains were observed between Zn and Mn. However, a lack of correlation was found between Cd and Zn in the current study. Risk assessment according to bioaccessible Cd would significantly reduce the exposure risk to Cd from rice consumption.

Hunan black tea is well-known for its floral-honey aroma, but the volatile components responsible for the fragrance have not been elucidated yet. In this study, the volatile compounds in Hunan black tea were identified and quantified by the headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry (HS-SPME-GC-MS). The results showed that 88 compounds were extracted and determined in Hunan black tea, including the dominant components Geraniol, phenethyl alcohol, phenylacetaldehyde, linalool, nonanal and other 5 aromatic compounds. Furthermore, the aroma-active compounds were identified by odor activity value (OAV). It was found that 24 aroma compounds, including geraniol with an OAV≥1 were regarded as the primary active aromatic compounds in Hunan black tea. Finally, partial least squares (PLS) regression analysis was employed and results revealed that Nonanal, trans -nerolidol, benzyl alcohol, and phenylethanol exhibit a positive correlation with the intensity of floral and sweet honey aromas. Overall, this study identified the volatile compounds responsible for the dominant floral-honey aroma in Hunan black tea.
