The oil-in-water (O/W) emulsions, especially oily wastewater from EOR oilfield, generally contain small oil droplets in the continuous water phase, which is difficult to be removed with conventional oil separation process such as precipitation, flotation. The electrostatic coalescence is a promising pretreatment step to induce the oil droplets coalescence and promote the oil separation efficiency of conventional methods. In order to explore the feasibility of electrostatic demulsification for O/W emulsions, the influence of operating parameters including electric voltage, pulsatile frequency, water content of emulsions and hydraulic retention time (HRT) on oil diameter distribution of the emulsions were studied using dynamic demulsification experiment. The volume percentage of oil droplets with a diameter exceeding 40 μm (denoted as DG40) was adopted as the main indicator of demulsification results, it increased from 0 (the original emulsions) to 65.62% (the treated emulsions) at the optimal operation parameters including water content of emulsions 90 vol%, electric voltage 150 V, pulsatile frequency 1000 Hz, duty cycle ratio 0.5, hydraulic retention time (HRT) 60 s. Furthermore, the water separation efficiency for emulsions reached 82.5% at 11 min of the dynamic experiment duration. The results of this study showed that applying pulsatile electric field could be a feasible and effective technology for emulsified oil droplets coalescence in O/W emulsions.

Evolutions of drop/particle size and size distribution in liquid–liquid dispersions and suspension polymerizations of methyl methacrylate (MMA) were monitored by using an online optical reflectance measurement (ORM), and effects of operating parameters such as the agitation rate, concentration of poly(vinyl alcohol) (PVA) dispersant, and initial concentration of poly(methyl methacrylate) (PMMA) in MMA monomer on the Sauter mean diameter ( d 32 ) and size distribution of drop/particle were investigated. According to the variations of d 32 of drops/particles with time, four characteristic particle formation stages can be identified for suspension polymerization process. The factors that lead to increase the rate of drop break up, such as increasing of concentration of PVA and decreasing of viscosity of dispersed phase, would postpone the particle growth stage. The d 32 and size distribution breadth of drops/particles were significant increased when the liquid–liquid dispersions or suspension polymerizations were conducted at low PVA concentrations or MMA/PMMA solutions with high PMMA contents were used as the dispersed phase, in consistent with the scanning electron micrograph observation on final PMMA particles. It is clear that ORM can be effectively applied in online monitoring of size and size distribution of drops/particles in the liquid–liquid dispersions and suspension polymerizations. © 2016 Wiley Periodicals, Inc. Moderate non-covalent interaction of protein and polyphenols can improve the emulsifying property of protein itself. The corn protein hydrolysate (CPH) and tannic acid (TA) complex was successfully used to construct nanoemulsion for algal oil delivery. There has been no study on the feasibility of this nanoemulsion delivery system for other food functional components, for example, β-carotene (β-CE). CPH/TA complex-based nanoemulsion system for β-CE delivery was studied, focusing on the effect of β-CE content on the physicochemical stability of the nanoemulsions. The nanoemulsion delivery systems (dia. 150 nm) with low viscosity and good liquidity were easily fabricated by two-step emulsification. The nanoemulsions with high β-CE content (>71.5 μg/mL) significantly increased ( p < .05) the emulsion droplet size. However, there was no significant ( p > .05) effect of β-CE content on polydispersity index (PDI) and zeta potential of the nanoemulsions. The storage (30 days) experiment results demonstrated that the droplet size of the nanoemulsions with varying β-CE content increased slightly during storage. However, the PDI values showed a slightly decreasing trend. Zeta potentials of the nanoemulsions showed no noticeable change during storage. Moreover, after storage of 30 days, the retention ratios of β-CE were found to be up to 90%, which suggests an excellent protective effect for β-CE by the nanoemulsion systems. The CPH/TA complex stabilized nanoemulsions could aggregate in gastric condition, but the β-CE content did not have obvious effect on the digestive stability of the nanoemulsions. The CPH/TA complex could be employed as an emulsifier to construct a physicochemical stable nanoemulsion delivery system for lipophilic active components.

Starchy materials with good antioxidant, emulsification and adsorption properties have potential applications in industry. To improve these properties, a Dual-functional porous starch was prepared through one-pot synthesis. In this case, octenyl succinic anhydride (OSA) and syringic acid (SA) were selected to modify the porous starch (PS) by esterification, with subsequent signals recorded by 1 H NMR at 1.2 ppm and FT-IR at 1743 cm −1 , indicating the formation of Dual-functional porous starch grafted by OSA and SA. N 2 adsorption analysis further proved that the porous structure (2.9 m 2 g −1 ) was still maintained after modification. This was followed by measurements of droplet size distribution (34.18 ± 3.80 μm), zeta potential (−39.62 ± 1.89 mV) and emulsion index (85.10 ± 1.76 %), all of which indicated good emulsifying capacity. Meanwhile, results of radical scavenging assay proved that the Dual-functional porous starch had considerable antioxidant properties due to the introduction of SA groups. Besides, the Dual-functional porous starch also showed good resistance to digestion. These findings not only provide a novel strategy for constructing multi-functionalized starchy materials, but also open up potential applications of starch in the food and pharmaceutical industries.
