The potential health risks of food-borne nanoparticles are of great concern to public health. In this work, the formation and physicochemical properties of a class of fluorescent nanodots (FNDs) in roasted chicken were investigated. It was found that as the roasting temperature increased from 200 to 300 °C the size of the FNDs decreased significantly, from 17.1 to 2.1 nm. The FNDs, which mainly contain carbon (65%), are strongly fluorescent under ultraviolet light, exhibiting an excitation-dependent emission behavior. The fluorescence quantum yields of the FNDs were determined at 200, 250, and 300 °C, and were found to be 6.71 ± 0.21, 12.85 ± 0.34 and 17.46 ± 0.42%, respectively. These FNDs not only could be taken up by live cells and dispersed within the cytoplasm, but also could pass the blood–brain barrier (BBB) and accumulated in the brains of mice after oral feeding. The results of the fluorescence and Fourier transform infrared (FTIR) spectroscopy analysis clearly indicated that the FNDs can interact with the neurotransmitter dopamine in vitro through the formation of fluorescent conjugates. The relative cell viability decreased by 33% corresponding to FND-300 at a concentration of 4 mg mL−1. These results confirmed the presence of the FNDs in roasted chicken and revealed their potential bioeffects on human health, which calls for more research and evaluation.

In order to guide manufacturers or consumers to choose frozen chicken wings (CWS) reasonably for roasting, the changes of sensory quality and physicochemical properties of CWS with different freezing storage time (0–12 months) after roasting were studied. The results showed that juiciness, fat flavor, meat flavor, and saltiness were the most important dominant attributes of roasted CWS, and their dominance rate gradually decreased from the ninth month. Increased ( P < 0.05) TBARS value and water loss result in poor juiciness. According to the results of GC-IMS, the decrease of the dominant rate of meaty may be related to the decrease of the contents of 2-ethyl-5-methylpyrazine, benzene and thiazole. In addition, the accumulation of 1-octen-3-ol, n-hexanol, and hexanal caused by long-term freezing (> 9 months) give chicken wings a fishy and metallic taste. Therefore, CWS that have been frozen for more than 9 months are not ideal ingredients for roasting.

Plant extracts with antioxidant activity are frequently employed to inhibit acrylamide (AM) production, but there has been limited focus on their inhibitory effects on AM during the extended storage of foods. In this study, impregnation solutions were prepared using Hippophae rhamnoides L (Hp) and Alkekengi officinarum Moench (Ak) fruits extracts to investigate their protective effects on roasted chicken breasts (RCB) during processing and storage (vacuum packed at 4°C and stored at 25°C for 90 days). In a 90-day storage experiment with RCB, these extracts also slowed the increase of AM in RCB. However, these extracts exhibit inadequate protective effects on RCB during long-term storage. It is needed to develop new methods for monitoring and inhibiting AM formation in RCB.

Food-derived nanoparticles are inevitably ingested with food matrices and may negatively affect digestion. In this study, the bio-distribution of carbon nanoparticles (CNPs) extracted from roasted chicken in the gastrointestinal tract was investigated. Their biological effects on the digestion of soy protein isolate (SPI) with pepsin were explored by spectroscopic, morphological, and enzymatic methods. In vitro simulated digestion results showed that the digestibility of SPI was decreased from 93.53% to 79.56% in gastric juice with 10% CNPs. The CNPs were able to significantly reduce the activity of pepsin and disrupt its secondary structure ( P < 0.05). Ultraviolet–visible spectrometry demonstrated that CNPs exhibited a physical absorption effect on pepsin and quenched its fluorescence in a static model. The results of zeta potential and atomic force microscopy proved that the CNPs formed a nanoparticle-protein corona structure with pepsin, which could affect the digestion of SPI.

The levels of flavor compounds and hazardous compounds are important indicators for evaluating high-temperature roasted food. In this paper, the effect of tea pre-marination on non-volatile compounds, volatile compounds, and hazardous compounds in roasted chicken. The results showed that the total content of key umami non-volatile compounds in roasted chicken marinated with green tea, white tea, and black tea increased by 17.43 % to 100.11 %. The content of alkenes, alcohols, aldehydes, and ketones in high-temperature roasted chicken marinated with oolong tea and yellow tea was increased. Different teas had varying inhibitory effects on hazardous compounds in high-temperature roasted chicken, while green tea exhibited the highest inhibition efficacy. The inhibition rates of green tea for ACY, 5-HMF, HCAs, and PAHs were 72.12 %, 69.87 %, 92.49 %, and 14.92 %, respectively. Flavonoids in tea may play an important role in the flavor enhancement and hazardous compounds inhibition of high-temperature roasted chicken.

Spoilage of ready-to-eat carbonado chicken during storage usually causes safety concerns and economic losses. A novel edible nanoemulsion coating with natural antimicrobial and antioxidant was applied to improve carbonado chicken shelf life. The nanoemulsion based on gelatin and chitosan incorporated a mixture of rosemary extract and ε-poly- l -lysine (ε-PL) and was fabricated by high pressure homogenization. Emulsion droplet size and ζ-potential were examined by a zetasizer, and the mean droplet sizes were 257 nm and 1122.44 nm for the nanoemulsion and a coarse emulsion, respectively. A higher ζ-potential was obtained for the nanoemulsion (+32.50 mV) than for the coarse emulsion (+26.25 mV). The rheological properties of the coating solutions showed shear-thinning behavior. Microstructure analysis of the coating showed that the nanoemulsion possessed smoother and more homogeneous surfaces without pores and with better structural integrity than those of the coarse emulsion. Ready-to-eat carbonado chicken coated with the gelatin-chitosan solution, coarse emulsion, or nanoemulsion and uncoated samples were prepared for a preservation study. Samples coated by the nanoemulsion displayed the lowest total viable bacterial counts (TVC), mold and yeast counts, TBARS values, and pH changes under 4 °C refrigeration over 16 days. The nanoemulsion-coated carbonado chicken shelf life was prolonged by at least 6 days compared to that of the control. The nanoemulsion-based edible coating , as a novel antimicrobial and antioxidant material, effectively sustained active compound release to the meat surface and is a promising technology to improve the safety and quality of ready-to-eat meat products.
