Ammonia-Responsive Colorimetric Film of Phytochemical Formulation (Alizarin) Grafted onto ZIF-8 Carrier with Poly(vinyl alcohol) and Sodium Alginate for Beef Freshness Monitoring

Jianing Zhang,Junjun Zhang,Xinai Zhang,Xiaowei Huang,Jiyong Shi,Remah Sobhy,Ibrahim Khalifa,Xiaobo Zou

In this study, we devised a photothermally stable phytochemical dye by leveraging alizarin in conjunction with the metal–organic framework ZIF-8 (AL@ZIF-8). The approach involved grafting alizarin into the microporous structure of ZIF-8 through physical adsorption and hydrogen-bonding interactions. AL@ZIF-8 significantly enhanced the photostability and thermostability of alizarin. The nanoparticles demonstrate substantial color changes in various pH environments, showcasing their potential for meat freshness monitoring. Furthermore, we introduced an intelligent film utilizing poly(vinyl alcohol)-sodium alginate-AL@ZIF-8 (PA-SA-ZA) for detecting beef freshness. The sensor exhibited a superior water contact angle (52.34°) compared to the alizarin indicator. The color stability of the film was significantly enhanced under visible and UV light (ΔE < 5). During beef storage, the film displayed significant color fluctuations correlating with TVB-N (R2=0.9067), providing precise early warning signals for assessing beef freshness.

Alizarin complexone modified UiO-66-NH2 as dual-mode colorimetric and fluorescence pH sensor for monitoring perishable food freshness

Xiaoyu Du,Gan Wu,Xilin Dou,Zhaoyang Ding,Jing Xie

Food prone to spoilage has a huge food safety hazard, threatening people’s health, so early detection of food spoilage is a continuous and urgent need. Herein, we developed a dual-mode response sensor, alizarin complexone@UiO-66-NH 2 , which can accurately detect pH. The sensor demonstrated significant changes in color from pale yellow to deep pink, while the fluorescence shifted from light blue to blue violet. Moreover, both UV absorption and fluorescence intensity showed a linear correlation with pH raging from 4.5 to 7.5. These results indicate that the sensor effectively responds to pH, making it suitable for detecting the freshness of perishable food. To put this into practice, we integrated the sensor with cellulose-based filter paper to determine the freshness of shrimp and beef, which was proved to be effective in assessing freshness. In the future, it can be combined with intelligent colorimetric and fluorescence instruments to achieve visual detection.

Jianing Zhang,Junjun Zhang,Lei Zhou,Nurmymeti Yasen,Abudulekemu Abudinaibi,Xiaowei Huang,Xiaodong Zhai,Zhihua Li,Jiyong Shi,Remah Sobhy,Ibrahim Khalifa,Xiaobo Zou

Intelligent films are essential for real-time monitoring of food spoilage. However, the application is often limited by challenges such as hydrophilicity and color instability. In this study, two high hydrophobic bilayer indicators based on sodium alginate-polyvinyl alcohol/chitosan-zein with alizarin grafted onto ZIF-8 carrier (AL@ZIF-8) were fabricated using the casting method and electrospinning, respectively. Molecular docking simulations confirmed the successful grafting of AL@ZIF-8 onto the film substrates. The performance of films was compared and the effectiveness in monitoring freshness indicators was evaluated. The cast film had a precisely controlled thickness due to self-assembly performance, resulting in superior mechanical properties (TS = 10.64 MPa, EB = 43.764 %). In comparison, the nanofiber films demonstrated higher UV-blocking ability (ΔE < 4), faster spoilage response, and greater safety (Cell viability >80 %). Importantly, the nanofiber films exhibited higher sensitivity in monitoring beef freshness, with a color change pattern strongly correlating with spoilage (R 2  = 0.8976).

Stretchable, antifatigue, and intelligent nanocellulose hydrogel colorimetric film for real-time visual detection of beef freshness

Kejin Yu,Lina Yang,Siyu Zhang,Ning Zhang,Mengxi Xie,Miao Yu

The use of biopolymers as matrices and anthocyanins as pH-sensing indicators has generated increasing interest in freshness detection. Nevertheless, the weak mechanical properties and color stability of biopolymer-based smart packaging systems restrict their practicality. In this study, a nanocellulose hydrogel colorimetric film with enhanced stretchability, antifatigue properties, and color stability was prepared using soy hull nanocellulose (SHNC), polyvinyl alcohol (PVA), sodium alginate (SA), and anthocyanin (Anth) as raw materials. This hydrogel colorimetric film was used to detect beef freshness. The structure and properties (e.g., mechanical, thermal stability and hydrophobicity) of these hydrogel colorimetric films were characterized using different techniques. Fourier-transform infrared spectroscopy revealed the presence of hydrogen and ester bonds in the hydrogel colorimetric films, whereas scanning electron microscopy revealed the fish scale-like and honeycomb network structure of the hydrogel colorimetric films. Mechanical testing demonstrated that the SHNC/PVA/SA/Anth-2 hydrogel colorimetric film exhibited excellent tensile properties (elongation = 261 %), viscoelasticity (storage modulus of 11.25 kPa), and mechanical strength (tensile strength = 154 kPa), and the hydrogel colorimetric film exhibited excellent mechanical properties after repeated tensile tests. Moreover, the hydrogel colorimetric film had high transparency, excellent anti-UV linearity, thermal stability and hydrophobicity, and had displayed visually discernible color response to pH buffer solution and volatile NH 3 by naked eyes, which was highly correlated with the TVB-N and pH values. Notably, the release of anthocyanin in distilled water decreased from 81.23 % to 19.87 %. The designed SHNC/PVA/SA/Anth hydrogel colorimetric films exhibited potential application as smart packaging film or gas-sensing labels in monitoring the freshness of meat products.

Preparation of Ag-enhanced PANI/SnO2 ammonia sensor and its application in beef freshness detection

Jian Mao,Chu Chen,Hongyan Zhang,Haiyang Zhang

In this study, a high-performance ammonia (NH 3 ) gas sensor based on silver nanoparticles (AgNPs)-modified polyaniline (PANI)/tin dioxide (SnO 2 ) composite (Ag/PANI/SnO 2 ) was fabricated via a hydrothermal method. Gas-sensing performance evaluations revealed that incorporating PANI reduced both the response and recovery times of SnO 2 to NH 3 at room temperature. This phenomenon is attributed to the p-n heterojunction formed at the PANI/SnO 2 interface, which enhances charge carrier separation and mobility, thereby facilitating rapid modulation of the depletion layer width and the potential barrier height. Additionally, the integration of AgNPs significantly amplified the sensor's response to NH 3 , owing to the provision of additional oxygen free radicals (O 2 - (ads) ) that promote adsorption and reaction with NH 3 molecules. Compared to pristine SnO 2 , the Ag/PANI/SnO 2 composite exhibited a remarkable reduction in response time from 15.72 s to 1.18 s and in recovery time from 3.75 s to 1.23 s for 1000 ppm NH 3 . The response value increased by 382.07 times from 13.5 to 5158, representing a significant enhancement over pristine SnO 2 . Moreover, experiments showed that Ag/PANI/SnO 2 can be used to detect beef freshness based on monitoring the concentration of NH 3 generated from the reaction between microorganisms and amino acids on the beef surface during spoilage, thereby expanding the application scope of NH 3 sensors.

pH-responsive color indicator film based on sodium carboxymethylcellulose and natural acid buffering matrix for real-time beef sub-freshness monitoring

Shouyan Zhu,Huimin Wu,Rongrong Ma,Xiaoying Wang,Qin Wu

The good water solubility and film-forming properties of sodium carboxymethylcellulose (CMC–Na) render it an excellent matrix for a pH-responsive color indicator film, but its basic character inhibits its direct application. Natural acids can be used to solve this problem, but the buffering system formed in these processes may decrease the sensitivity and improve the heterogeneous compound distribution of the film. Previous studies have tried to address this problem by adjusting the species and amounts of the acids. However, the underlying mechanism has not been comprehensively clarified. Herein, a CMC–Na and CaCl2 mixture was used as the matrix for a pH-responsive color indicator film, alizarin (AZ) was used as the pH indicator, cinnamaldehyde (CMA) was used as an ultraviolet (UV) shielding agent, and natural acids were used as pH-controlling agents. Three protic acids with distinct numbers of acidic protons and pKa, acetic acid (monoacid), tartaric acid (diacid) and citric acid (triacid), were compared to elucidate the effect of these properties on the matrix pH, dye dispersion, and film response. The results showed that tartaric acid can be a good candidate in solving the problem on a basic CMC–Na matrix owing to its good performance in adjusting the film color and the sensitive color response of the resulting film at pH 6.0–7.0. The hydrogen bonds, hydrophobic interactions and chelation reactions formed among the compounds improve the mechanical property and oxygen barrier performance of the film, which are also beneficial to the homogeneous distribution of AZ and CMA, leading to a uniform color response and good UV-shielding performance. This film displays excellent color response quality in beef sub-freshness detections, suggesting its high sensitivity in “point-of-care” detections of real meat samples via naked eyes.

Intelligent films based on dual-modified starch and microencapsulated Aronia melanocarpa anthocyanins: Functionality, stability and application

Xiuli Wu,Xiangxuan Yan,Jianwen Zhang,Xuexu Wu,Qing Zhang,Bingqian Zhang

This study aims to enhance the physical properties and color stability of anthocyanin-based intelligent starch films. Three dual-modified starches, namely crosslinked-oxidized starch (COS), acetylated distarch phosphate (ADSP), and hydroxypropyl distarch phosphate (HDSP), were utilized as film matrices. Aronia melanocarpa anthocyanins were incorporated through three different pre-treatments (free, spray-drying microencapsulation, and freeze-drying microencapsulation) to assess the prepared films' functionality, stability, and applicability. The results indicate that the ADSP film exhibited an approximately two-fold increase in elongation at break (EAB) compared to native starch film. Specifically, the ADSP film's water contact angle (WCA) reached 90°, demonstrating excellent flexibility and hydrophobicity. Scanning electron microscopy (SEM) revealed stronger interactions between anthocyanins and the film matrix after microencapsulation. Furthermore, after 30 days of exposure to 37 °C heat and light radiation, the freeze-dried anthocyanin-based intelligent film (FDA film) exhibited minimal fading, displaying the highest stability among the tested films. Notably, during beef freshness monitoring, the intelligent films underwent significant color changes as the beef deteriorated. In conclusion, the developed FDA film, with its outstanding stability and responsive pH characteristics, holds immense potential as a novel packaging material for food applications.

Chitin nanofiber reinforced chitosan aerogel intelligent packaging for real-time monitoring of beef freshness

Jiayi Xue,Longwei Jiang,Ruoran Qin,Tiantian Liu,Hui Li,Haoqiang Wang

In this study, intelligent chitosan-curcumin aerogels were developed for real-time beef freshness monitoring. The incorporation of negatively charged chitin nanofibers (CN, 0–7 g/100 g, based on chitosan weight) controlled ice crystal growth during freezing, precisely tuning the aerogel microstructure. The 5 g/100 g CN aerogel (CS-CN5) had a uniform porous network and a compressive strength that was 118 % greater than that of the CN-free aerogel. Additionally, CS-CN5 demonstrated structural advantages such as high porosity (> 98 %) and low density (<0.02 g·cm −3 ). CS-CN5 exhibited excellent water (14.1 g/g) and oil (42.6 g/g) absorption, highlighting its potential as a food pad. This material demonstrated strong ammonia sensitivity, reusability, antioxidant stability, and antibacterial activity. Compared with films of the same composition, aerogels presented a more pronounced visual color response to beef spoilage. Owing to their porous structure, aerogels facilitate the release of antimicrobial and antioxidant agents, thereby contributing to the extension of beef shelf-life to a certain extent. This structural modulation strategy significantly enhances aerogel properties for food packaging applications.

UV−Curable choline chloride and bromophenol red covalent functionalized chitosan antibacterial and pH−sensitive hydrogels

Xiaojia Wang,Hongyu Zhu,Yina Yang,Guoqiao Lai,Xiongfa Yang

Food safety and food freshness issues have become important concerns for consumers and hydrogels with high antibacterial efficiency, low toxicity and pH−sensitive colorimetric intelligence are one of candidates to meet the requirement of food package and food spoilage monitoring. Nevertheless, hydrogels prepared only by assembling the ingredients with non−covalent interactions through time−consuming molding process usually encounter drawbacks such as relatively poor mechanical properties, stability and thermal stability, which always restrict their further applications. To overwhelm these shortcomings, UV−curable choline chloride (ChCl) and bromophenol red (BR) covalent functionalized antibacterial and pH−sensitive cross−linked hydrogels (UV−hydrogels) were developed in this paper. The UV−hydrogels possessed good thermal stability because the initiated thermal decomposition temperature (T d5 ) is in the range of 135.8–184.7 °C. The DMA analysis revealed that the UV−hydrogels are with good mechanical properties because the elongation at break is in the range of 117–525% and the tensile strength is in the range of 0.8–2.7 MPa. The UV−hydrogels with BR groups exhibited naked eye visible color variation from yellow to dark blue-green with the variation of the pH values from 2 to 14. The antibacterial efficiency of the UV−hydrogels against S . aureus , E . coli and M . albican increased with the increment of covalent−grafted ChCl amount. Cytotoxicity assay demonstrated that the UV−hydrogels are low toxicity against L929 cells. The experiment of monitoring freshness of beef denoted the UV−hydrogels have potential application in animal–derived high protein food packaging and freshness monitoring.
