Pectin is widely used in the food and pharmaceutical industries. However, data on sweet potato pectin extraction and structural property analyses are lacking. Here, for the high-value utilization of agricultural processing waste, sweet potato residue, a byproduct of sweet potato starch processing, was used as raw material. Ammonium oxalate, trisodium citrate, disodium hydrogen phosphate, hydrochloric acid and citric acid were used as extractants for the pectin constituents, among which ammonium oxalate had a high extraction rate of sweet potato pectin, low ash content and high molecular weight. Structural and gelation analyses were conducted on ammonium oxalate-extracted purified sweet potato pectin (AMOP). Analyses showed that AMOP is a rhamnogalacturonan-I-type pectin, with a molecular weight of 192.5 kg/mol. Chemical titration and infrared spectroscopy analysis confirmed that AMOP is a low-ester pectin, and scanning electron and atomic force microscopy demonstrated its linear molecular structure. Gelation studies have revealed that Ca 2+ is the key factor for gel formation, and that sucrose significantly enhanced gel hardness. The highest AMOP gel hardness was observed at pH 4, with a Ca 2+ concentration of 30 mg/g, pectin concentration of 2%, and sucrose concentration of 40%, reaching 128.87 g. These results provide a foundation for sweet potato pectin production and applications.

Hazardous synthetic dyes have emerged as an imperative issue of water contamination . This investigation focused on the development of a green flotation-based dye removal (FBDR) system to remove trace crystal violet (CV). A natural protein derived from sweet potato waste which was a readily available and low-cost agro-industrial residual was utilized as the collector and frother , due to its biodegradability and nontoxicity. In the first-stage of FBDR, an inclined foam channel with hydrophobic surface was employed to continuously recover sweet potato protein (SPP). Its recovery percentage and volume ratio reached 84.7 ± 4.2% and 7.2 ± 0.4, respectively. Enriched SPP (10.4 ± 0.5 g/L) was then collected by isoelectric precipitation and freeze drying. Encouragingly, SPP induced the desirable foaming and stable bubbles of the solution. Analytical tests, including SEM , FTIR, UV–vis spectra, and fluorescence measurements, confirmed that the SPP-CV complex was formed mainly through the hydrophobic force . In the second-stage, an excellent CV removal was generated with the collection of SPP. The removal efficiency and enrichment ratio of CV were 95.8 ± 4.5% and 9.2 ± 0.4, respectively. The kinetic study indicated that the removal rate markedly increased with increasing air flowrate . In conclusion, this investigation demonstrated the waste protein could be an effective, inexpensive and eco-friendly alternative for classical collector and/or frother, and provided new insights into the disposal of dye wastewaters.

Root rot caused by Rhizopus stolonifer significantly diminished the yield and quality of sweet potatoes. Currently, the control of root rot predominantly relied on toxic chemical pesticides, with a notable lack of effective alternative strategies. Microbial volatile organic compounds (VOCs) are regarded as an environmentally friendly and safe method for controlling postharvest diseases. This study investigated the in vitro and in vivo effects of VOCs produced by the Nocardiopsis dassonvillei MI-S24 strain against R. stolonifer . The results demonstrated that VOCs exhibit strong antifungal activity against various pathogenic fungi. They significantly inhibited hyphal growth (91.85 %) and spore germination of R. stolonifer while inducing morphological changes. Furthermore, during storage at 28 °C for 20 days, VOCs fumigation effectively mitigated the incidence of postharvest sweet potato root rot. It enhanced the activity of CAT, POD, SOD, PPO, and PAL enzymes by 84.62 %, 38.19 %, 47.98 %, 84.52 %, and 19.50 % respectively in sweet potatoes, safeguarded soluble sugars and starch from degradation, and preserved overall quality. Analysis of volatile components coupled with antifungal validation revealed that 2-methyl-3-(methylthio) furan and 2-undecanol exhibited significant antifungal activity against R. stolonifer . Further research indicated that VOCs affected cell membrane integrity in R. stolonifer , stimulated reactive oxygen species (ROS) accumulation, reduced antioxidant enzyme activity, elevated malondialdehyde levels, induced oxidative damage, and disrupted ATP synthesis as well as TCA cycle processes by diminishing mitochondrial membrane potential alongside succinate dehydrogenase activity, ultimately leading to mitochondrial dysfunction. This study presents a novel biological strategy aimed at preventing and controlling soft rot disease in postharvest sweet potatoes.

Sweet potato [Ipomoea batatas (L.) Lam] is grown as important cash and food crop worldwide and has been shown to exhibit allelopathic effects on other plants. However, its metabolome has not been studied extensively, particularly with respect to the production of phytotoxic bioactive secondary products. In this study, the chemical composition of petroleum ether extract of sweet potato was characterized, and the morphological and physiological effects of some individual components against four invasive alien weeds Bidens pilosa L., Galinsoga parviflora Cav., Lolium multiflorum Lam., and Phalaris minor Retz. were determined. Twenty-one components were identified by GS-MS, constituting 96.08% of petroleum ether extract in sweet potato. The major components were palmitic acid (PA) (17.48%), ethyl linoleate (EL) (13.19%), linoleic acid (LA) (12.55%), ethyl palmitate (EP) (11.77%), ethyl linolenate (ELL) (8.29%) oleic acid (5.82%), ethyl stearate (4.19%), and 3-methylphenol acetate (3.19%). The five most abundant compounds exhibited strong inhibition activity against the four invasive weeds tested. The highest inhibition rates were seen for LA, followed by PA and EP, respectively. Catalase (CAT), malondialdehyde (MDA), and peroxidase (POD) content of L. multiflorum were increased by the three allelochemicals, i.e., LA, PA and EP, but superoxide dismutase (SOD), chlorophyll-a and chlorophyll-b levels declined. Overall, the combined impact of all five compounds could be quite effective in suppressing the invasive weeds of concern.

Aiming to investigate the role and mechanism of the effect of water on the structural, physicochemical, and in vitro digestible properties of starch during irradiation processing. This work used water pretreatment of sweet potato starch (12%, 25%, 50%, 75% and 100% water content) and then modification by E-beam (6, 12 and 24 kGy). The results showed that E-beam treatment preserved the polarization cross, growth rings, crystal types and FT-IR patterns of sweet potato starch. Also, E-beam induced the water molecule activation and free radical production, thus promoting starch degradation. Moreover, the short-range ordered structure, relative crystallinity, molecular weight, long-chain proportion, ΔH, viscosity and swelling power of starch decreased with increasing E-beam irradiation dose. In contrast, the short-chain proportion, solubility, and resistant starch content were improved. In addition, a synergistic effect was found between the water pretreatment and E-beam, i.e., the higher the water content of the starch, the deeper the modification by E-beam. Results obtained in this study can partially elucidate the role of water content in E-beam-modified starch and provide a basis for E-beam treatment of starch-based foods under different water levels.

The biocontrol activity and chemical composition of the volatile organic compounds (VOCs) produced by Pseudomonas chlororaphis subsp. aureofaciens SPS-41 were investigated. The VOCs inhibited mycelial growth and spore germination in Ceratocystis fimbriata, which causes black rot disease in sweet potato tuber roots (TRs) and showed wide-spectrum antifungal activity against several plant pathogenic fungi. A microscopic examination of C. fimbriata cells suggested morphological changes and a loss of cellular contents. Different inoculation strategies significantly affected the antifungal activity of the VOCs. In the volatile profile of SPS-41, the most abundant compound, 3-methyl-1-butanol, followed by phenylethyl alcohol and 2-methyl-1-butanol showed strong inhibition toward C. fimbriata. The weight loss rate and disease severity of the TRs were significantly reduced in response to the VOCs emitted by SPS-41. The results suggest that the VOCs produced by P. chlororaphis subsp. aureofaciens SPS-41 might constitute an attractive biological fumigant for controlling black rot disease in sweet potato TRs.

Black spot disease caused by Ceratocystis fimbriata is destructive to the production, transportation, and storage of sweet potato. The antifungal effects of Bacillus tequilensis XK29 against C. fimbriata through volatile organic compounds (VOCs) were evaluated in this study. The activated carbon assay proved that XK29 could exert antibiotic effects through volatiles. By optimizing the wheat seed weight, inoculation method, concentration, volume, and time, the antifungal activity of XK29 was significantly improved. XK29 fumigation inhibited spore formation and germination and changed the cell morphology of C. fimbriata. During the storage of sweet potato tuber roots, XK29 effectively controlled black spot disease and reduced the weight loss and malondialdehyde content. Metabolomic analysis revealed that 21 volatile compounds were released from XK29. Isovaleric acid, isobutyric acid, and 2-methylbutanoic acid effectively inhibited the growth of C. fimbriata. These results indicate that B. tequilensis XK29 has a good potential to be developed as a microbial fumigation agent.

Ozonation is an efficient method for improving the technical performance of some starches, but the feasibility of its use for sweet potato starch remains unknown. The effects of aqueous ozonation on the multi-scale structure and physicochemical properties of sweet potato starch were explored. Structurally, ozonation did not generate significant alterations at the granular level (size, morphology, lamellar structure, and long-range and short-range ordered structures), but led to tremendous changes at the molecular level, including converting hydroxyl groups to carbonyl and carboxyl groups and depolymerizing starch molecules. These structural changes resulted in prominent alternations in the technological performance of sweet potato starch, such as increases in water solubility and paste clarity and decreases in water absorption capacity, paste viscosity, and paste viscoelasticity . For these traits, their amplitudes of variation elevated when the ozonation time was extended and peaked at the longest ozonation time (60 min). The greatest changes in paste setback (30 min), gel hardness (30 min), and the puffing capacity of the dried starch gel (45 min) were observed at moderate ozonation times. In summary, aqueous ozonation is a new method for fabricating sweet potato starch with improved functionality.

This study investigated the effect of different curdlan (CUD) concentrations on the frozen sweet potato starch vermicelli (FSPSV) during 10 freeze-thaw (FT) cycles. The results showed that CUD efficiently mitigated the quality deterioration of FSPSV at all levels during FT cycles, with a more pronounced effect observed at higher concentrations. Notably, the 1.20% CUD sample at FT-10 still exhibited superior textural properties compared to the control at FT-0. The SEM and FTIR results illustrated that CUD displayed intense interactions with SPS to form a denser gel network structure and thus improved the freeze-thaw stability of FSPSV by decreasing the freezable water content, total relaxation time, and porosity of FSPSV by 16%, 47%, and 66%, respectively. In addition, analysis of the CUD-SPS-water ternary system further revealed the contribution of CUD in establishing a more robust gel system to ameliorate the adverse effects of ice crystals, with the notable improvement in the average particle size and peak viscosity of SPS, reducing the Tan σ value and phase transition time of SPS gel from 0.58 and 181.67 min to 0.29 and 142.67 min, respectively. Our results suggested that CUD may provide new insights into its application in frozen starch-based food.

In order to investigate the varied effects of repeated annealing treatment (RANN) and continuous annealing treatment (CANN) on the structural, physicochemical, and digestibility properties of the sweet potato. The 75% starch-water suspensions were prepared and incubated at 65 °C for 8 cycles and 96 hr. The results exhibited that RANN and CANN did not influence the starch granules and polarization cross obviously. The crystal type of RANN and CANN starches still maintained A-type, while the relative crystallinity increased. The solubility, swelling power, peak viscosity and breakdown of RANN and CANN starches decreased, but the gelatinization transition temperatures, trough viscosity, final viscosity, setback, and pasting temperatures of starches increased after annealing treatments. Furthermore, RANN and CANN decreased the RS and RS + SDS contents with the increase of annealing cycles and time. The RANN was more effective in modification of the crystallinity, solubility, swelling power, pasting, gelatinization transition temperatures and enthalpy, and digestibility of starch before four times compared with the CANN ones. By and large, RANN may be a potential way for modification of structural, physicochemical and digestibility properties. Practical Application The described RANN and CANN starch provide new ideas for the study of modified starch. Furthermore, this study revealed the mechanism of annealing treatment and it was concluded that the repeated annealing treatment could provide a new potential way for the modification of starch.
