Impact of pulsed electric field pretreatment on protein and its binding with sodium ions in brined beef

Yuchen Guo,Tian Chen,Songmei Hu,Jianping Yue,Xiaobo Yu,Xinglian Xu,Minyi Han

This study investigates the effects of pulsed electric field (PEF) pretreatment on the protein properties of a beef matrix following brining, specifically focusing on the interaction between Na + ions and proteins. We examined the impact of PEF pretreatment at varying field strengths (2, 3, and 4 kV/cm) for 60 s on NaCl diffusion and the secondary and tertiary structures of proteins in beef samples brined for 150 min. Results indicated that the highest NaCl content of 2.65 % (4 kV/cm) was considerably greater than the 2.32 % observed in the control group. PEF pretreatment altered the interaction between Na + ions and proteins, enhancing the mobility of Na + . While the effects of PEF on protein composition and denaturation were insignificant, an increase in field strength resulted in a significant rise in β-sheet content and a corresponding decrease in random coil content ( P  < 0.05). Additionally, the increase in surface hydrophobicity and decrease in fluorescence intensity suggested that PEF pretreatment led to protein unfolding and an increase in the thermal denaturation temperature of the meat. Furthermore, the PEF-pretreated samples exhibited a tighter protein gel network during temperature sweeps and improved springiness. In conclusion, PEF pretreatment altered the protein structure and enhanced Na + mobility in meat.

Novel Janus membrane with unprecedented osmosis transport performance

Shenghua Zhou,Zhu Xiong,Fu Liu,Haibo Lin,Jianqiang Wang,Tiantian Li,Qiu Han,Qile Fang

Low energy consumption in water desalination is highly demanded. Herein, we show that the Janus porous membrane, which comprises a superhydrophobic SiO2 coating on a superhydrophilic polyvinylidene fluoride (PVDF) membrane, exhibits unprecedented osmotic water permeability (2.88 L m−2 h−1 bar−1) and near-complete reverse salt rejection (Js/Jw = 0.007 g L−1) far beyond the-state-of-art thin-film composite (TFC) membranes. The appropriate SiO2 seeding allows the hydrophilic PVDF fibrils to stretch out of the top tip of the microspheres to form a one-way valve, serving as nano-structured water channels while the superhydrophobic side, by trapping air, functions as the active layer to repel reverse salt diffusion. The hydrophilic microsphere partially covered by F-SiO2 is regarded as a micro-osmosis unit. Both external and internal concentration polarization are well diminished, with the superhydrophobic side facing towards the draw solution. This intriguing result deepens our understanding of unidirectional mass transfer through the Janus nano-channels in fluid osmosis.

Cucurbit[6]uril builds a water channel for improving the water/salt selectivity of polybenzimidazole

Chenchen Zhang,Si Chen,Yi Zhao,Jianqiang Meng

Polybenzimidazole (PBI) has garnered significant interest in desalination due to its exceptional chemical stability and mechanical strength , but suffers from poor water permeability. In this work, different contents of hydroxylated Cucurbit [6]uril (CB [6] were added to PBI to build a “water transport channel”. The effects of CB [6] addition on the chemical structure and surface morphology were analyzed by FTIR, SEM, and Zeta potential , respectively. Based on the solution-diffusion model, the effect of CB [6] on the water/salt transport properties of PBI membranes was thoroughly investigated. The results show that appropriate CB [6] doping can enhance water sorption of PBI through the special “outer hydrophilic and inner hydrophobic cavity” structure, and boost water diffusion with the channeling effect of the hydrophobic CB [6] cavity. While the complexation between the carbonyl group in CB [6] and Na + ions slightly increased salt sorption, the specific cavity structure of CB [6] can significantly decrease salt diffusion by blocking salt ions and increasing transport path tortuosity. The cavity effect of CB [6] was further confirmed by hybridizing CB [6] with biphenylsulfonyl-substituted PBI when the cavity can be occupied. Therefore, the introduction of CB [6] improves the water/salt diffusion selectivity and then the permeability selectivity of PBI. Notably, the PBI@CB [6] membrane with a 0.25 wt% CB [6] loading exhibited a 40-fold increase in water permeability coefficient compared to pure PBI, while experiencing only a slight decrease in salt permeability coefficient, water/salt selectivity almost exceeding the empirical upper bound line of polymers. This work provides a theoretical foundation for the development of high-performance desalination membranes based on macrocyclic molecules such as CB [6].

SiC coating: An alternative for the protection of nuclear graphite from liquid fluoride salt

Xiujie He,Jinliang Song,Jie Tan,Baoliang Zhang,Huihao Xia,Zhoutong He,Xingtai Zhou,Mingwen Zhao,Xiangdong Liu,Li Xu,Shuo Bai

SiC coating is produced on a nuclear graphite (NG) substrate using chemical vapor deposition at 1150   °C to protect it from molten salt diffusion . Infiltration studies, performed in molten FLiNaK salt under an argon atmosphere at 5   atm, show that uncoated NG exhibits significantly higher weight gain than SiC-coated NG. The continuous and compact SiC coating exhibits excellent infiltration resistance in liquid fluoride salt as confirmed by synchrotron radiation X-ray microbeam fluorescence.
