The solubilities of salts, refractive indices, and pH values of the equilibrium liquid phases in the quaternary system LiCl–LiBO2–Li2B4O7–H2O at 323.15 K were investigated by the isothermal dissolution method for the first time. The dry-salt diagram of the quaternary system consisted of one invariant point, three univariant curves and three crystallization fields corresponding to LiCl·H2O, LiBO2·2H2O, and Li2B4O7·3H2O. The solution refractive indices and pH values change regularly with the changing of concentration. Combining the equilibrium constants for different boron species, the distributions of six boron species in the mixed solution in the systems LiCl–LiBO2–H2O, LiBO2–Li2B4O7–H2O, and LiCl–Li2B4O7–LiBO2–H2O were calculated with the total boron concentration and pH values. The main boron species in the mixed solution of the quaternary system are B3O3(OH)4–, B4O5(OH)42–, B(OH)3, and B5O6(OH)4–. The boron species distributions are mainly affected by the pH values and the concentration of total boron and LiCl in the solution. The results of phase diagram and boron species distribution in the quaternary system can supply foundation data for separating lithium borate from brines.

In this study, we propose three methods of acidic pH shifting of egg yolk granules (EYGs) to investigate effects of EYGs structure on properties of EYGs-salted ovalbumin (SO) gels. Different pH parameters affect protein unfolding behavior, as well as assembly of high-density lipoprotein (HDL) and phosvitin during acidification. The main mechanism was a change in the microenvironment of hydrophobic amino acid residues and new hydrogen bonds, which induced the reassembly. Besides, low-content EYGs increased the mixed gel network structure density, cohesiveness (0.12–0.14) and chewiness (29.46–49.11). While mixed gels with high content EYGs had higher hardness and recovery rate, and were more tightly bound to water molecules. EYGs-4-6 exhibited greater hydrogen bonding forces, which could lead to a more rigid network and greater potential for use as an active filler. Our study tracked the trajectory of pH-shifting preparations of reassembled EYGs while providing new insight into nutritional value of SO gel.

W/O/W emulsions can be used to encapsulate both hydrophobic and hydrophilic bioactive as nutritional products. However, studies on protein stabilized gel-like W/O/W emulsions have rarely been reported, compared to the liquid state multiple emulsions. The purpose of this study was to investigate the effect of different oil–water ratios on the stability of W/O/W emulgels fabricated with salt-soluble proteins (SSPs) ofSipunculus nudus. The physical stability, structural characteristics, rheological properties, and encapsulation stability of vitamin C and β-carotene of double emulgels were investigated. The addition of W/O primary emulsion was determined to be 10% after the characterization of the morphology of double emulsion. The results of microstructure and rheological properties showed that the stability of W/O/W emulgels increased with the increasing concentration of SSPs. Additionally, the encapsulation efficiency of vitamin C and β-carotene were more than 87%, and 99%, respectively, and still could maintain around 50% retention of the antioxidant capacity after storage for 28 days at 4 °C. The aforementioned findings demonstrate that stable W/O/W emulgels are a viable option for active ingredients with an improvement in shelf stability and protection of functional activity.Keywords:W/O/W emulgels;Sipunculus nudus;salt-soluble proteins;vitamin C;β-carotene;co-encapsulation

Solid polymer electrolytes (SPEs) have great potential to be used in high-safety lithium-ion batteries (LIBs). However, it is still a significant challenge for SPEs to develop high ionic conductivity, high mechanical strength, and good interior interfacial compatibility. In this work, a ketone-based all-solid-state electrolyte (PAD) resulting from allyl acetoacetate (AAA), diacetone acrylamide (DAAM), and poly(ethylene glycol) diacrylate (PEGDA) was prepared by UV-inducing photopolymerization. The abundant ketone groups endow the prepared PAD all-solid-state electrolyte with strong dissociation of lithium salts and weak coordination interactions between ketone groups and Li+. Depending on the unique properties of the ketone groups in the electrolyte system, the prepared polymer electrolytes show a high lithium-ion transference number of 0.87 and a wide electrochemical window of 4.95 V. Furthermore, the PAD electrolyte also exhibits superior viscoelasticity, which is beneficial for good contact with electrodes. As a result, the assembled LFP/PAD/Li cells with PAD electrolytes show good cycle performance and rate performance. Concretely, the all-solid-state symmetric lithium cells with the PAD electrolyte can achieve stable lithium plating and stripping at 0.05 mA cm–2 for over 1000 h at 60 °C. This work highlights the advantages of ketone-based electrolyte as a polymer electrolyte and provides a design method for advanced polymer electrolytes applied in high-performance solid lithium batteries.
