Selenium (Se) is an essential microelement for humans and a beneficial element for plants. Recently, biofortification with Se has emerged as a key strategy to increase crop Se content. Nonetheless, Se species matters a lot as inorganic Se species is mostly toxic to human health. In this study, we investigated the effects of different forms and mode of Se application on Se accumulation and speciation in rice. The results showed that root application of Se remarkably increased Se accumulation, photosynthetic rate, biomass accumulation and tolerance to cadmium stress in rice as compared to foliar application. However, the stimulatory effects of Se varied depending on the Se species used for root feeding. At vegetative stage, root application of Se-(Methyl) selenocysteine caused the highest water extractable Se content in leaves with major contribution from organic Se species such as Se-amino acid and non-amino acid organic Se. Further investigation at reproductive stage revealed that foliar application of sodium selenite (Na 2 SeO 3 ) resulted in the highest total Se content in rice seeds which was largely attributed to inorganic Se. In contrast, the root application of Na 2 SeO 3 led to the maximum accumulation of organic Se compounds which are advantageous to human health. Moreover, the root application of Se increased antioxidant capacity and selectively enhanced amino acids and essential element content in rice grain. This study deepens our understanding of the Se species in Se-enriched rice and suggests that root application of Se may ensure the safe intake of Se through rice.

Selenite(IV) and selenate(VI) are the major forms of Se in aquatic ecosystem . In this study, Pseudorasbora parva were exposed to 10, 200 and 1000 μg L −1 selenite and selenate for 28 days. Selenium accumulation, antioxidant enzyme levels, glutathione concentrations, lipid peroxidation and histology were evaluated in livers following exposure. Our results showed that Se(IV) and Se(VI) caused different accumulation patterns in the liver, with a more rapid accumulation of Se with Se(IV) treatment. Both Se species increased hepatic lipid peroxidation after 14 and 28 d (~ 30%). Among the antioxidants examined, the activity of SOD (except day 28) and the cellular levels of GSH were induced by 72–137% at lower concentrations, while the activity of GST was at least 24% lower than that of the control at 200 and 1000 μg L −1 for both Se species at all sampling points. Both forms of Se reduced the hepatosomatic index at 1000 μg L −1 after 28 d. In addition, marked histopathological alterations (10–31%) were observed in the liver of P. parva after exposure to both Se species, with higher frequency in the Se(IV) exposed fish. Liver local necrosis was observed only in the liver of fish exposed to 1000 μg L −1 of Se(IV) (~ 20%). Our results suggest that the ecological impacts of dissolved Se in this freshwater species may also contribute to overall toxicity.

Selenium (Se) fortification is essential for meeting nutritional requirements and preventing Se deficiency-related diseases. This study evaluated the effects of sodium selenite (Na 2 SeO 3 ) and selenomethionine (SeMet) on mung bean sprouts (MBS) by investigating Se accumulation, distribution, and protein physicochemical properties. The findings indicated that the Se accumulation efficiency of SeMet treatment was 3.22 times that of Na 2 SeO 3 treatment. Furthermore, both treatments achieved an organic Se conversion rate exceeding 95%. Distribution analysis revealed that 72.39% to 78.50% of organic Se was incorporated into proteins, while 6.28% to 6.93% was bound to polysaccharides. The order of organic Se accumulation in protein components was albumin > glutelin > globulin > prolamin. Additionally, Se enrichment enhanced Se accumulation in low molecular weight protein (25-33 kDa) and promoted protein synthesis, but decreased the cysteine and methionine content. These changes led to an increase in β-turn, disulfide bonds, and surface hydrophobicity, while reducing the accessibility of sulfhydryl and pigment groups. Consequently, the oil absorption capacity and foaming capacity of the protein were enhanced. The results provide a foundation for the utilization of Se-enriched MBS protein as a functional food ingredient.

In this study, four Se species including selenite [Se (VI)], selenate [Se (VI)], potassium,2-selenocyanatoacetate (PSeCA), and selenium ore powder (SeOP) were used for biofortification of Pleurotus geesteranus to obtain Se-enriched mushroom. Based on their effects on mycelium growth of P. geesteranus Jinxiu, [Se (VI)] in the concentration range of 100–1000 μg/kg and other three Se species in the range of 100–2000 μg/kg were adopted in spawn running and fruiting body growth stage, with their effects on production yield and elements accumulation evaluated. The results revealed that PSeCA treatment (200 μg/kg) had the highest fruiting body production (290.61 g/bag), followed by 2000 μg/kg of SeOP treatment (286.24 g/bag). SeMet revealed to be dominant species detected in mushroom, with [Se (VI)] exhibited the highest biological efficiency among the four Se species, and 2000 μg/kg of PSeCA treatment exhibited the highest Se content (10.25 mg/kg) in terminal phase of fruiting body. The results suggested that high concentration of PSeCA would be more favored for the Se biofortification. Moreover, Se treatment could greatly alter the mineral elements content of fruiting bodies, both synergistic and antagonistic relationships on accumulation of mineral elements were observed for each tested Se species.
