The current study was to better understand the potential factors affecting aflatoxin B1 (AFB1) accumulation varies between different grains. The nutrient composition and contents of defatted substrates were determined; additionally, according to the nutrient content of the substrates, the effects of starch, soluble sugars, amino acids, and trace elements on AFB1 production and mycelial growth in Czapek-Dox medium were examined. These results verified that removal of lipids from ground substrates significantly reduced the substrate’s potential for AFB1 production by Aspergillus flavus. Maltose, glucose, sucrose, arginine, glutamic acid, aspartic acid, and zinc significantly induced AFB1 production up to 1.7- to 26.6-fold. And stachyose more significantly promoted A. flavus growth than the other nutrients. Thus, this study demonstrated that, combined with the nutrients content of grains, in addition to lipids, sucrose, stachyose, glutamic acid, and zinc might play key roles in various grains that are differentially infected by A. flavus. Particularly, two new nutrients (arginine and stachyose) of the grains we found significantly stimulate AFB1 production and A. flavus growth, respectively. The results provide new concepts for antifungal methods to protect food and animal feed from AFB1 contamination.

Growing populations and climate change pose great challenges to food security. Humankind is confronting a serious question: how will we feed the world in the near future? This study presents an out-of-the-box solution involving the highly efficient biosynthesis of artificial starch and microbial proteins from available and abundant agricultural residue as new feed and food sources. A one-pot biotransformation using an in vitro coenzyme-free synthetic enzymatic pathway and baker’s yeast can simultaneously convert dilute sulfuric acid-pretreated corn stover to artificial starch and microbial protein under aerobic conditions. The β-glucosidase-free commercial cellulase mixture plus an ex vivo two-enzyme complex containing cellobiose phosphorylase and potato α-glucan phosphorylase displayed on the surface of Saccharomyces cerevisiae , showed better cellulose hydrolysis rates than a commercial β-glucosidase-rich cellulase mixture. This is because the channeling of the hydrolytic product from the solid cellulosic feedstock to the yeast mitigated the inhibition of the cellulase cocktail. Animal tests have shown that the digestion of artificial amylose results in slow and relatively small changes in blood sugar levels, suggesting that it could be a new health food component that prevents obesity and diabetes. A combination of the utilization of available agricultural residue and the biosynthesis of starch and microbial protein from non-food biomass could address the looming food crisis in the food–energy–water nexus.

With the extensive application of nanotechnology, metal nanoparticles (MNPs) have been widely used, thus are universally detected in the environment. This has caused increasingly concerns due to their toxicity and the potential health risks they pose to humans. In this work, the concentrations and particle size distributions of MNPs and concentrations of associated metal ionic species in shellfish seafood (clams and oysters) were investigated using single particle inductively coupled plasma mass spectrometry (sp-ICP-MS) and inductively coupled plasma mass spectrometry (ICP-MS). The MNPs in the clam and oyster tissues were extracted via an alkaline digestion method with a recovery rate of 95.9% (for gold nanoparticles (AuNPs)). Then total concentrations of 41 metal elements were measured in the two types of seafood, of which 20 were selected for sp-ICP-MS analysis. The results showed that 5 types of MNPs were detectable in clams (Y, La, Ce, Pr, Gd) and 5 types of MNPs were detectable in oysters (Y, La, Ce, Pr, Nd). Size distributions of MNPs in clams and oysters were in the range of 35–55 nm and 30–65 nm, respectively. Nanoparticle concentrations in clams and oysters ranged from 0.6 to 37.7 ng/g and 4.2–19.7 ng/g, and accounted for 3.4%–50% and 5.5%–46% of the total metal content, respectively. Based on this analysis, the health risks of metals in the two kinds of seafood were evaluated by comparing the Provisional Tolerable Weekly Intake (PTWI) with limits recommended by the World Health Organization (WHO)/Food and Agriculture Organization (FAO). These results provide important information about the presence of metal nanoparticles in seafood and, to the best of our knowledge, this is the first time that the nanoparticles of rare earth elements have been detected and reported in bivalve mollusc tissues.
