Although protein-polysaccharide complexes have shown tremendous potential in stabilizing high internal phase Pickering emulsions (HIPPEs), it is unclear whether coacervates have the same potential to be used as effective Pickering stabilizers. In this study, HIPPEs were prepared by ovalbumin (OVA)-pectin (PE) coacervates during the transition from coacervates to complexes. The results showed that enhanced OVA-PE interactions significantly affected the wettability and surface-tension reduction ability of the OVA-PE coacervates. At pH 2, the coacervate-stabilized HIPPEs exhibited smaller oil droplet sizes (21.3±2.3 μm), tighter droplet packing, and finer solid-like structures through the bridging of droplets and the generation of stronger gel-like network structures to prevent coalescence and lipid oxidation. The gastrointestinal digestion results proved that the OVA-PE coacervates promoted lipid hydrolysis and improved the bioaccessibility (from 19.7±0.7% to 36.5±2%) of curcumin-loaded HIPPEs. Our work provides new ideas for the development of biopolymer particles as effective Pickering stabilizers in the food industry.

Significant progress has been made in wet adhesives for low salinity water, but exploration of general ionic adhesives for natural seawater is less developed because the high salinity could weaken interfacial bonding and shields electrostatic interactions, resulting in adhesion failure. Thus, the design of adhesives for natural seawater represents challenges less resolved. Herein, a cationic polyelectrolyte (PECHIA) containing imidazolacetonitrile unit was explored to prepare adhesives enabled by natural seawater. By combining the ion shielding effect with the “cation-dipole” interactions between PECHIA chains, aqueous solution of the PECHIA underwent coacervation and self-crosslinking in natural seawater, allowing for underwater adhesion to various substrates in seawater. The instantaneous lap-shear and tensile adhesion strengths are 47 and 119 kPa, respectively, while the cured adhesive shows ∼739 kPa tensile adhesion in natural seawater. The design of PECHIA enables wet adhesives viable for applications in the diversified scenarios of natural seawater.

Heteroprotein complex coacervate (HPCC) is a liquid-like protein concentrate produced by liquid–liquid phase separation. We revealed the protein dynamic exchange and thermodynamic mechanism of β-conglycinin/lysozyme coacervate, and clarified the effect of HPCC on protein structure and activity. β-conglycinin and lysozyme assembled into coacervate at pH 5.75–6.5 and assembled into amorphous precipitates at higher pH. As the pH dropped from 8 to 6, the number of binding sites of the complex decreased in half, and the desolvation degree corresponding to the entropy gain was greatly reduced, conducing to the formation of coacervates rather than precipitates. The coacervates achieved the unique dynamic exchange by exchanging proteins with the diluted phase, making the uniform distribution of proteins in coacervates. The lysozyme activity was completely retained in β-conglycinin/lysozyme coacervates. These results proved that β-conglycinin-based heteroprotein complex coacervate is a feasible method to encapsulate and enrich active proteins in a purely aqueous environment.

This paper reports the formation of coacervates by the electrostatic interaction of poly (diallyldimethylammonium chloride) (PDDA) and adenosine triphosphate (ATP) in aqueous solution, examining its formation conditions, stability, and efficiency in separation. The ideal concentration for creating coacervate droplets in pure water, HEPES buffer, and NaCl solution was determined to be 20 mM of PDDA and ATP. Enhancing the stability of coacervates was achieved by incorporating phospholipid vesicles on their surface, presenting a novel strategy for building cell models. Ostwald Ripening was employed to comprehend the growth mechanism of the coacervates, while the Hofmeister Ion Series and Schulze-Hardy's rule were utilized to elucidate the stability differences in solutions containing NaCl, Na 2 SO 4 , and MgCl 2 . These coacervates were stable at concentrations below 90 mM NaCl, 200 mM Na 2 SO 4 , and 30 mM MgCl 2 , respectively. We also explored the specific separation of dyes and tetracycline hydrochloride (TC) in the coacervates. Separation efficiencies of 92.98% for methylene blue (MB), 94.19% for methyl orange (MO), and 85.94% for TC, were achieved by the coacervates, which can be attributed to the synergistic effects of hydrophobicity, electrostatic forces, and π-π interactions. The proposed coacervates have great potential in cell mimicry and water treatment.
