The aim of this work was to prepare soluble dietary fibers (SDFs) from insoluble dietary fiber of navel orange peel (NOP-IDF) by mixed solid-state fermentation (M-SDF) and to investigate the influence of fermentation modification on the structural and functional characteristics of SDF in comparison with untreated soluble dietary fiber (U-SDF) of NOP-IDF. Based on this, the contribution of two kinds of SDF to the texture and microstructure of jelly was further examined. The analysis of scanning electron microscopy indicated that M-SDF exhibited a loose structure. The analysis of scanning electron microscopy indicated that M-SDF exhibited a loose structure. In addition, M-SDF exhibited increased molecular weight and elevated thermal stability, and had significantly higher relative crystallinity than U-SDF. Fermentation modified the monosaccharide composition and ratio of SDF, as compared to U-SDF. The above results pointed out that the mixed solid-state fermentation contributed to alteration of the SDF structure. Furthermore, the water holding capacity and oil holding capacity of M-SDF were 5.68 ± 0.36 g/g and 5.04 ± 0.04 g/g, which were about six times and two times of U-SDF, respectively. Notably, the cholesterol adsorption capacity of M-SDF was highest at pH 7.0 (12.88 ± 0.15 g/g) and simultaneously exhibited better glucose adsorption capacity. In addition, jellies containing M-SDF exhibited a higher hardness of 751.15 than U-SDF, as well as better gumminess and chewiness. At the same time, the jelly added with M-SDF performed a homogeneous porous mesh structure, which contributed to keeping the texture of the jelly. In general, M-SDF displayed much excellent structural and functional properties, which could be utilized to develop functional food. Keywords:navel orange peel;soluble dietary fiber;mixed solid-state fermentation;structural and functional properties;jelly

In this study, β-cyclodextrin-encapsulated navel orange essential oil (NOEO) microcapsules were integrated into a chitosan (CS)/zein-stabilized Pickering emulsion. This formed an edible composite coating with dual sustained-release functionality. It is worth noting, in order to improve the antibacterial and antioxidant properties of chitosan, p-coumaric acid (PCA) was grafted onto chitosan. Fourier transform infrared spectroscopy confirmed successful PCA grafting onto chitosan. Hydrogen bonding potentially existed among coating components. Scanning electron microscopy verified NOEO's stable presence within the composite film. The NOEO emulsion exhibited a 4.8 μm average particle size with excellent physical stability. Compared to pure CS coating, the composite coating demonstrated a 30.3% improvement in waterproof performance. Antibacterial inhibition diameters reached 14.3 mm against both Escherichia coli and Staphylococcus aureus, and 15.3 mm against Alternaria alternata. Antioxidant capacity increased to 88.2%. Sustained-release experiments showed microcapsules enhanced essential oil release efficiency by 31%. Applied to cherry tomatoes, the coating effectively delayed senescence and decay while maintaining product quality during 16-day storage at 25 °C.The composite coating material developed in this study exhibits dual advantages of environmental benignity and economic feasibility, demonstrating promising potential for applications in postharvest quality maintenance of horticultural produce.

Porous carbon-based composite phase change materials (CPCMs) have received widespread attention from researchers for their stable shape and considerable latent heat storage capacity. Here, using navel orange peel-based porous carbon (BPC) as the support carrier, nano-Ag as the surface modification material and polyethylene glycol (PEG) for the phase change medium, a novel PEG/BPC-Ag (Ag@CPCM) was fabricated by vacuum impregnation. Surprisingly, the experimental results indicated that nano-Ag modified the BPC could make the Ag@CPCM have stronger photo-thermal conversion ability, higher thermal conductivity and better thermal reliability. Significantly, the addition of nano-Ag increased the thermal conductivity of navel orange peel-based CPCMs to 0.639 W/m K (Ag@CPCM) from 0.313 W/m K (PEG/BPC), and its relative enthalpy efficiency η raised to 107.2 % from 104.8 %, and its photo-thermal conversion efficiency θ increased to 94.7 % from 77.2 %. Furthermore, the prepared novel CPCMs maintained its original phase change properties after 100 thermal cycles of testing, which demonstrated that the prepared CPCMs possessed favorable thermal stability and reusability . Overall, the Ag@CPCM materials have great potential for applications such as thermal management and solar energy storage.

Numerous previous studies have reported the extraction of flavonoids from orange peels, but a green and efficient approach suitable for the large-scale industrial production of flavonoids with versatile and excellent biological activities is still lacking. To tackle this issue, two easily accessible extraction methods, namely heat reflux (HR) and ultrasonication (US), coupled with four solvents (95% ethanol, 70% aqueous ethanol solution, methanol, and ethyl acetate), were used in the present study to extract flavonoids from navel orange peel, followed by chemical profile and biological activity (antioxidant, antibacterial, antiglycation, and enzyme inhibition) evaluation of all extracts obtained. The highest total phenolic content (TPC, 336.56 μmol GAE/g), total flavonoid content (TFC, 1194.31 μmol QE/g), flavonoid glycosides content (FGs, 461.82 mg/g), and the best antioxidant (IC 50 = 21.35 mg/L for ABTS assay) and α-glucosidase inhibition (IC 50 = 49.38 mg/L) activities, were found in the extract obtained by HR using ethyl acetate (EtOAc HR). However, the extract obtained by US with ethyl acetate (EtOAc US) contained the highest content of polymethoxyflavones (PMFs, 152.07 mg/g), and showed the most potent antiglycation (IC 50 = 71.26 mg/L), antibacterial (MIC = 0.078 mg/mL against MRSA), and acetylcholinesterase inhibition (AChE, IC 50 = 179.19 mg/L) activities compared to the other extracts. Furthermore, Pearson's correlation analysis was performed. This study provides simple and cost-effective methods for the preparation of orange peel extracts rich in flavonoids and versatile in biological activities, which will greatly contribute to the valorization of orange peel in food, pharmaceutical, and cosmetic industries .

Dietary fiber (DF) is a carrier of abundant bound polyphenols (BP). The present work was to investigate the release characteristic and mechanism of BP from the insoluble dietary fiber of navel orange peel (NOP-IDF) by mixed solid-state fermentation (SSF) with Trichoderma reesei and Aspergillus niger . The optimized fermentation conditions were set as follows: inoculation ratio of T. reesei to A. niger 3:1, delayed inoculation time 28 h and initial pH 6.5. The compositions of BP were identified and quantified by UPLC-ESI-QTOF-MS/MS and HPLC-ESI-QQQ-MS/MS, then the biotransformation pathways were partially speculated. Moreover, cellulase, xylanase and β -glucosidase activities were strongly correlated with the BP content. The SEM showed the cell wall and the crystalline structure of the NOP-IDF was effectively decomposed. Furthermore, mixed SSF significantly enhanced in vitro antioxidant activities of BP. In summary, our study demonstrated that mixed SSF was a feasible method for the BP release.
