The brain serves as the central hub for both our physiological and psychological activities, and current research on the human brain mostly relies on electroencephalography (EEG) method. Hence, we have developed a flexible nanozymes/iridium-titanium dioxide (SAN/Ir-TiO
2
) dry electrode for collecting EEG signals. Due to the hygroscopic nature of SAN nanozymes, they facilitate the maintenance of skin moisture balance. Additionally, the combination of iridium nanoparticles with a titanium dioxide nanotube array enables rapid electron transfer, resulting in an average impedance of 14.2 kΩ in the no-hair region and 19.9 kΩ in the hair region for the electrode. Moreover, in experiments involving blinking, clenching teeth, and alpha wave blocking, signal collection correlation between SAN (single atom nanozymes)/Ir-TiO
2
and traditional Ag/AgCl electrodes is 97.1% to 99.5%, and the signal collection correlation between electrodes from the market and traditional Ag/AgCl electrodes is 95.5% to 99.2%. In Steady-State Visual Evoked Potential (SSVEP) experiments with a 9-channel cap, stimulation frequencies ranging from 7.5Hz to 14Hz were recorded and subjected to frequency domain analysis. Within the range of 7.5Hz to 14Hz, the signal-to-noise ratio ranged from 7.5 to 14.1db, surpassing the performance in other regions. In an 8-command SSVEP classification experiment, the train accuracy and online accuracy were as high as 92.8% and 92.8% respectively, demonstrating the feasibility of using SAN/Ir-TiO
2
dry electrodes for Brain-Computer Interface (BCI) technology.

The commonly employed wet and semi-dry electroencephalogram (EEG) electrodes require the use of conductive media, resulting in issues such as reduced comfort, detached conductive coatings, and limitations in long-term wearing. In this study, we present a user-friendly dry EEG electrode made from conductive leather for long-term EEG monitoring. The conductive leather was obtained by in-situ synthesis of polypyrrole inside the goat leather, which could be further used as an EEG electrode. When positioned on the forehead, the interface impedance between the leather electrode and human skin complied with the international standard for EEG electrodes. The material's exceptional breathability enabled prolonged electrode wear. These leather electrodes facilitated precise monitoring of eye movement signals and α-wave activities in a relaxed state, laying the groundwork for extending their application to other brain regions. Furthermore, leather electrodes exhibited excellent performance even in the presence of sweat interference, thus confirming their advantages for long-term EEG monitoring. The leather dry electrode featuring superior wearability, portability, and long-term stability is expected to bring significant implications for future wearable technologies and monitoring devices.

Citrus flavors are globally popular in food industry, yet research on the perceptual preferences of various citrus flavors is limited. Based on the subjective sensory evaluation, this study introduces a novel sensory analysis approach, using electroencephalography (EEG), to objectively measure the sensory and cognitive responses to nine citrus flavors, including d -limonene, concentrated (H-) and original essential oils of sweet orange (SEO), bergamot EO (BEO), lemon EO (LEO), and grapefruit EO (GEO). Results revealed that δ (0.5–4 Hz) and α (8–13 Hz) waves activity predominated in brain responses to citrus flavor, with greater activity observed in frontal and central regions compared to other areas. Sniffing citrus EOs triggered more complex and dynamic electrical activity than d -limonene, indicated by higher power density across all frequency bands (0.1-30 Hz). Interestingly, while the original citrus EOs were associated with higher self-reported acceptability, the concentrated forms elicited greater brain responses. Specifically, H-SEO and L-LEO eliciting significantly greater δ and α wave activity in the prefrontal region than their original forms ( P < 0.05). A preliminary correlation was observed between brain laterality in α waves power and acceptability scores of citrus flavor, with δ waves power in the prefrontal region further demonstrating an effective reflection of self-reported acceptability scores for SEO and LEO stimuli. This is the first EEG-based study to compare brain responses to different citrus flavors, providing important implications for the food industry in optimizing product formulations and enhancing consumer experiences.

Three types of tastants are known as perceptually associated with umami taste: monosodium glutamate (MSG), disodium succinate (WSA), and disodium inosine monophosphate (IMP). While these tastants were confirmed to be perceptually similar in a sensory study, they could be discriminated (p < 0.05) by electroencephalogram (EEG) analysis on a time scale of 5–6 s. In comparison of the EEG responses of the participants, the brain could partly distinguish (p < 0.05) between different sensory intensities of MSG, WSA, or IMP. The EEG data indicated that the brain is partially sensitive to perceiving different sensory intensities (L, low; M, medium; and H, high) of the same umami stimuli; i.e., for MSG in μV2/Hz, L, 2.473 ± 0.181; M, 3.274 ± 0.181; and H, 3.202 ± 0.181. However, brain responses of perceptually equi-umami intensities could partially be discriminated, suggesting that the brain could partially discriminate (p < 0.05) MSG, WSA, and IMP, despite similar sensory intensities. Moreover, umami tastants were also found to significantly enhance (p < 0.05) the α wave activity, with the most responsive being at 10 Hz, particularly in the frontal and parietal and occipital regions of the brain (p < 0.001). This study shows the potential of EEG to investigate brain activity triggered by umami stimuli.

Noninvasive brain–computer interfaces (BCIs) show great potential in applications including sleep monitoring, fatigue alerts, neurofeedback training, etc. While noninvasive BCIs do not impose any procedural risk to users (as opposed to invasive BCIs), the acquisition of high-quality electroencephalograms (EEGs) in the long term has been challenging due to the limitations of current electrodes. Herein, we developed a semidry double-layer hydrogel electrode that not only records EEG signals at a resolution comparable to that of wet electrodes but is also able to withstand up to 12 h of continuous EEG acquisition. The electrode comprises dual hydrogel layers: a conductive layer that features high conductivity, low skin-contact impedance, and high robustness; and an adhesive layer that can bond to glass or plastic substrates to reduce motion artifacts in wearing conditions. Water retention in the hydrogel is stable, and the measured skin-contact impedance of the hydrogel electrode is comparable to that of wet electrodes (conductive paste) and drastically lower than that of dry electrodes (metal pin). Cytotoxicity and skin irritation tests show that the hydrogel electrode has excellent biocompatibility. Finally, the developed hydrogel electrode was evaluated in both N170 and P300 event-related potential (ERP) tests on human volunteers. The hydrogel electrode captured the expected ERP waveforms in both the N170 and P300 tests, showing similarities in the waveforms generated by wet electrodes. In contrast, dry electrodes fail to detect the triggered potential due to low signal quality. In addition, our hydrogel electrode can acquire EEG for up to 12 h and is ready for recycled use (7-day tests). Altogether, the results suggest that our semidry double-layer hydrogel electrodes are able to detect ERPs in the long term in an easy-to-use fashion, potentially opening up numerous applications in real-life scenarios for noninvasive BCI.

In the field of food, the sensory evaluation of food still relies on the results of manual sensory evaluation, but the results of human sensory evaluation are not universal, and there is a problem of speech fraud. This work proposed an electroencephalography (EEG)-based analysis method that effectively enables the identification of umami/non-umami substances. First, the key features were extracted using percentage conversion, standardization, and significance screening, and based on these features, the top four models were selected from 19 common binary classification algorithms as submodels. Then, the support vector machine (SVM) algorithm was used to fit the outputs of these four submodels to establish TastePeptides-EEG. The validation set of the model achieved a judgment accuracy of 90.2%, and the test set achieved a judgment accuracy of 77.8%. This study discovered the frequency change of α wave in umami taste perception and found the frequency response delay phenomenon of the F/RT/C area under umami taste stimulation for the first time. The model is published at www.tastepeptides-meta.com/TastePeptides-EEG, which is convenient for relevant researchers to speed up the analysis of umami perception and provide help for the development of the next generation of brain–computer interfaces for flavor perception.

Flexible electronics have been rapidly advancing and have garnered significant interest in monitoring physiological activities and health conditions. However, flexible electronics are prone to detachment in humid environments, so developing human-friendly flexible electronic devices that can effectively monitor human movement under various aquatic conditions and function as flexible electrodes remains a significant challenge. Here, we report a strongly adherent, self-healing, and swelling-resistant conductive hydrogel formed by combining the dual synergistic effects of hydrogen bonding and dipole–dipole interactions. The hydrogel has a commendable linear operating range (∼200% strain, GF = 1.44), stability of electrical signals for 200 cycles, excellent conductivity (2.18 S m–1), self-healing properties (∼30 min), and durable underwater adhesion stability. The conductive hydrogel can be developed into a flexible electronic sensor for detecting motion signals, such as joint flexion and swallowing, as well as for real-time underwater communication using Morse code. Additionally, the integration of this polymer with a low contact impedance facilitates real-time, high-fidelity detection of electroencephalogram (EEG) signals, serving as a flexible electrode. It is believed that our hydrogel will have good prospects in future wearable electronics.

Micro-electrocorticography (micro-ECoG) with superior temporal and spatial resolution plays a critical role in precise brain mapping and decoding of brain activities. However, due to inevitable device-brain displacement in cerebrospinal fluid, the weak physical attachment of micro-ECoG devices on the cortical arachnoid tissue cannot ensure a stable neural interface to achieve durable and reliable ECoG recording over time. Herein, a robust neural interface is explored using a bio-adhesive hydrogel patch for stable chronic ECoG recording. To overcome the challenges in dimensional instability of hydrogels, such as swelling and shrinkage, which would impede the safe integration of micro-ECoG devices on fragile cortical surface, a non-deformable hydrogel patch is developed through rational design with balanced molecular chain topology to resist dimensional changes. The multifunctional non-deformable hydrogel demonstrates desired merits including rapid wet-tissue adhesion (within 30 s), anti-postoperative adhesion, excellent biocompatibility, ease of surgical handling, and scalability for large-scale production. Compared to conventional swelling or contractile hydrogels, the non-deformable hydrogel patch on a cortical surface can effectively inhibit fibrous capsule formation and glial cell recruitment. Furthermore, long-term recordings from micro-ECoG devices integrated with non-deformable hydrogel patches demonstrate excellent stability and high-fidelity electrophysiological signals, making it a promising advancement for chronic, durable, and reliable neural interface applications.

Understanding neural pathways and cognitive processes involved in the transformation of dietary fats into sensory experiences has profound implications for nutritional well-being. This study presents an efficient approach to comprehending the neural perception of fat taste using electroencephalogram (EEG). Through the examination of neural responses to different types of fatty acids (FAs) in 45 participants, we discerned distinct neural activation patterns associated with saturated versus unsaturated fatty acids . The spectrum analysis of averaged EEG signals revealed notable variations in δ and α-frequency bands across FA types. The topographical distribution and source localization results suggested that the brain encodes fat taste with specific activation timings in primary and secondary gustatory cortices . Saturated FAs elicited higher activation in cortical associated with emotion and reward processing. This electrophysiological evidence enhances our understanding of fundamental mechanisms behind fat perception, which is helpful for guiding strategies to manage hedonic eating and promote balanced fat consumption .

Electroencephalography (EEG) devices have witnessed significant advancements in the field of medicine and brain-computer interface. However, wet electrodes widely used in hospitals and clinics require filling with conductive paste, and the installation and removal processes are complex, posing challenges in daily EEG monitoring. Herein, we prepared a novel organic conductive hydrogel with a dual physically cross-linked network by facilely combining the thermally reversible phase transition of gelatin with an amphiphilic zwitterionic [2-(methacryloxy) ethyl] dimethyl-(3-propyl sulfonic acid) ammonium hydroxide in a glycerol-water binary solvent system. The hydrogel exhibits outstanding tensile strength (0.66 MPa) and elongation (525.7 %), very low skin-electrode contact impedance (3.54 kΩ at 10 Hz), and remarkable moisture retention (72 h). It demonstrates good adhesion to various substrates and can transform from a liquid sol at high temperatures to a solid gel at low temperatures (phase transition temperature of 43.6 ℃). Therefore, this hydrogel can penetrate the hair in the gel dissolving state, and firmly adhere to the scalp after solidification, forming a tight electrode-skin contact interface. This provides an effective strategy for long-term daily use in EEG monitoring.

Hydrogels emerge as a promising electrode material for scalp electroencephalogram monitoring, which stands as a pivotal technique in neuroscience, enabling real-time monitoring of brain activity. However, conventional hydrogel-enabled electrodes suffer from low scalp compliance, high scalp-electrode impedance, and inferior interfacial stability. Here, we propose an injectable eutectogel-enabled electrode for high-quality, long-term scalp electroencephalogram monitoring. This gelatin-based eutectogel exhibits temperature-controlled reversible phase transitions, enabling rapid in-situ gelation on the scalp and forming a robust self-adhesive interface. It demonstrates exceptional mechanical durability (1000 cycles at 100% strain), robust adhesion (0.7 N cm −1 on human epidermis and 1.7 N cm −1 on Ag/AgCl electrode), and outstanding anti-drying properties (negligible water loss after 7 days). Additionally, the eutectogel shows superior healing properties, antibacterial properties, and recyclability. Furthermore, it exhibits remarkably low scalp-electrode contact impedance (<20 kΩ at 16 Hz). The eutectogel is injected on the human scalp with dense hair for high-fidelity electroencephalogram recording, enabling long-term monitoring. Its practical applications include monitoring visual evoked potentials, steady-state visual evoked potentials, somatosensory evoked potentials, slow vertex response, auditory brainstem response, multi-channel cognitive electroencephalogram during various daily activities, and event-related potentials P300 signals. The eutectogel-enabled electrode provides a versatile and reliable solution for long-term electroencephalogram monitoring in diverse clinical and research settings.

Long-term epidermal electrophysiological (EP) monitoring is crucial for disease diagnosis and human–machine synergy. The human skin is covered with hair that grows at an average rate of 0.3 mm per day. This impedes a stable contact between the skin and dry epidermal electrodes, resulting in motion artifacts during ultralong-term EP monitoring. Therefore, accurate and high-quality EP signal detection remains challenging. To address this issue, a new solution—the hairy-skin-adaptive viscoelastic dry electrode (VDE) is reported. This innovative technology is capable of bypassing hair and filling into the skin wrinkles, leading to long-lasting and stable interface impedance. The VDE maintains a stable interface impedance for a remarkable period of 48 days and 100 cycles. The VDE is highly effective in shielding against hair disturbances in electrocardiography (ECG) monitoring, even during intense chest expansion, and in electromyography (EMG) monitoring during large strain. Furthermore, the VDE is easily attachable to the skull without requiring any electroencephalogram (EEG) cap or bandage, making it an ideal solution for EEG monitoring. This work represents a substantial breakthrough in the field of EP monitoring, providing a solution for the previously challenging issue of monitoring human EP signals on hairy skin.
