The effects of high temperature steam (HTS) treatment on liquid prepared from the leaves of Zanthoxylum bungeanum Maxim (ZBOL) were studied with by comparing other three treatment methods. After HTS treatment, the microbial content met the standard requirements, the ratios of the phytochemical content were all higher than 84.5%, the antioxidant activities had decreased by <9.57%, no obvious changes were observed in the sensory characteristics, and the results were all better than other treatments. Furthermore, ZBOL showed excellent chemical stability in assays in terms of the use of high temperature (60 ± 2°C) and strong illumination (4,500 ± 500 lx), and prediction and verification tests determined the shelf life of ZBOL to be 12 months (25°C). In summary, HTS was demonstrated to be an efficient treatment method of ZBOL, and these results can be used for the utilization of Z. bungeanum leaves in an industrial setting. Practical application This work provides an efficient method for treatment of oral liquid prepared with flavonoids and antioxidants from the leaves of Zanthoxylum bungeanum Maxim (ZBOL). Herein, the quality information of ZBOL is provided, and a theoretical basis is established for the market promotion of ZBOL and the comprehensive utilization of the resources of Z. bungeanum leaves.

The inherent hydrophobicity, high volatility, instability and pungent flavor of Zanthoxylum schinifolium essential oil (ZSEO) are important issues to restrict its preservation and practical applications. To overcome these drawbacks, the ZSEO-loaded Pickering emulsions stabilized by bacterial cellulose nanofibrils/whey protein isolate (BCNFs/WPI) complexes and fortified with cinnamaldehyde (CA) were fabricated, and their physical property and functionality were characterized. When the concentration of BCNFs/WPI complexes was 0.7 wt%, the emulsions had the smallest and uniform droplet size (< 150 nm) and showed good stability over 30 d storage. Moreover, the emulsions with different CA contents (0-1.0 wt%) maintained a long-term stability with no significant droplet size change during 30 d storage. All Pickering emulsions showed a shear-thinning behavior, and their apparent viscosity and viscoelastic moduli gradually increased with the increase of BCNFs/WPI complexes contents. The presence of CA enhanced the physical stability of emulsions against environmental stresses such as acid, heat and salinity. Compared to free ZSEO, the ZSEO-loaded Pickering emulsions fortified with CA not only improved the stability of ZSEO, but also maintained or even enhanced its antioxidant and antimicrobial activity. This study would provide a promising strategy for ZSEO encapsulation and improve its stability and functionality in food applications.

The strategy of microencapsulation combining emulsification and spray drying is a facile method to improve the lipid stability and application range of spice essential oils. We hypothesized that the physicochemical and functional properties of Zanthoxylum schinifolium essential oil (ZSEO) could be improved if ZSEO microcapsules were prepared through emulsification followed by spray drying using gelatin/microcrystalline cellulose complexes as emulsifiers and maltodextrin as wall material. The oil-in-water (O/W) emulsions as a function of ZSEO content (4.5–6.5 wt%) were characterized by morphology, droplet size, and rheology analyses. Additionally, the effects of maltodextrin concentration (7–15 wt%) on the physicochemical properties, antioxidant and antibacterial activity of the ZSEO-loaded microcapsules were investigated. The obtained emulsions with 6 wt% ZSEO showed a more homogeneous droplet size distribution (< 500 nm), long-term stability and higher viscosity, which were suitable for spray-drying microencapsulation. After spray drying, the ZSEO-loaded microcapsules had a smooth spherical structure and a homogenous size of around 10 μm. The moisture content, flowability, bulk density and encapsulation efficiency of microcapsules were improved by adjusting maltodextrin contents. Moreover, the ZSEO microcapsules with different maltodextrin contents had no significant impact on antioxidant capacity, and all ZSEO-loaded microcapsules performed excellent antibacterial activity. This study provides some guidance for the microencapsulation of spice essential oils, and improves their stability and applicability in the food industry.

Staphylococcus epidermidis has been identified as a pathogen in ready-to-eat foods, and its biofilm can cause devastating chronic infections in affected hosts. For the demand of natural antibacterial reagents and overcoming their inherent properties, nanoemulsions are increasingly being used in the delivery of natural drugs. The nanoemulsion obtained by ultrasonic technology has the advantages of small droplet size , low polydispersity index (PDI), high stability and small amount of surfactant. Therefore, ultrasonic technology was used to prepare Zanthoxylum schinifolium Sieb. et Zucc essential oil nanoemulsion (ZEO-NE), a novel antibiofilm nanoemulsion with a mean particle size of 105.6 nm, polydispersity index of 0.278, and Zeta potential of − 22.3 mV. Assessment of antibacterial activity defined the minimum inhibitory concentration (MIC) and minimum bactericidal concentration of ZEO-NE against S. epidermidis as 2.5 and 5.0 mg/mL, respectively. Meanwhile, the antibiofilm assays revealed that the inhibition rate of ZEO-NE at sub-MIC levels (1/16–1/2 MIC) against S. epidermidis biofilm formation was 4.65–81.38 %. Further studies showed that sub-MIC ZEO-NE can effectively inhibit the formation of biofilms by extracellular polymeric substances and regulate gene expression of biofilm initial adhesion, formation, and quorum-sensing systems. Meanwhile, the inhibition rates of ZEO-NE (1/2–4 MIC) on preformed biofilm biomass and cell metabolic activity were 45.06–72.40 % and 30.72–62.54 %, respectively. In addition, electron microscopy analysis showed that ZEO-NE can destroy the established biofilms to a great extent. Finally, cytotoxicity evaluation experiments showed that ZEO-NE could damage human immortalized keratinocytes . These findings indicate that nanotechnology is an effective strategy to increase ZEO stability and solubility, and the prepared ZEO-NE is a viable candidate to inhibit S. epidermidis and its biofilms.

A green, novel and designable natural deep eutectic solvent-based supramolecular solvents/equilibrium solution (NADES-SUPRAS/EqS) was developed, which possesses better stability and free designability with a wider range of synthesis while compared to the typical alkyl carboxylic acid-based SUPRAS. The physicochemical properties and specific synthesis patterns of NADES-SUPRAS/EqS had been investigated. In addition, a more intelligent solvent regulated synthesis system had been developed to prepare corresponding supramolecular systems according to different polarity target phytochemicals through tailoring the components of synthetic NADES-SUPRAS/EqS. During the NADES-SUPRAS extraction of Zanthoxylum bungeanum Maxim. leaves (ZBML), 18 kinds of NADES were screened and the proportion of NADES as well as the ethanol content were varied tailor. After tailoring, all of the extracted chlorogenic acid, neochlorogenic acid, rutin, as well as 91.775 % of hyperin, 94.940 % isoquercetin and 84.405 % quercetin were distributed in the EqS phase while all of the hydroxy-α-sanshool (HAS) were distributed in the NADES-SUPRAS phase. Furthermore, NADES-SUPRAS/EqS extraction rate reached 9.741 mg/g, which were 7.604-fold, 2.352-fold, 1.141-fold, and 1.384-fold to that of water, ethanol, 70 % ethanol and methanol extraction, respectively. The excellent extraction and separation effects were due to the large number of hydrogen bonds and hydrophobic forces. Dynamic multi-stage countercurrent extraction combined with water and macroporous resin recovery enabled significant cost reductions and rapid recovery of chemical components and solvents. This novel solvent could be intelligently designed and be of great significance for the extraction of different polarity phytochemicals from plants.
