Sudan dyes are strictly prohibited from being added to edible products as carcinogens and tetracycline hydrochloride (TC) remaining in animal-derived food may cause harm to the human body. Therefore, it is necessary to establish a high-sensitivity, simple and convenient method for the detection of Sudan dyes and TC in foods for safety purposes. In this work, multifunctional blue fluorescent carbon dots (B-CDs) were prepared by a one-step hydrothermal synthesis using glucose as the carbon source. The results show that the fluorescence intensity of B-CDs was significantly affected by the acidity of the solution and can be quenched by Sudan I, IV and TC through selective studies. Interestingly, the fluorescence quenching intensities of B-CDs have a good linear relationship with the concentration of Sudan I and IV at pH = 3–7. The wide range of pH is beneficial to broaden the application of B-CDs in a practical samples analysis. The method has been successfully applied to real food samples of tomato paste, palm oil and honey, and the detection limits are 26.3 nM, 54.2 nM and 31.1 nM for Sudan I, Sudan IV and TC, respectively. This method integrates Sudan dyes and TC into the same multifunctional B-CDs, which shows that the sensor has a great potential in food safety detection.

Graphical Citric acid (CA) and N-[3-(trimethoxysilyl)propyl]ethylenediamine (TPED) were dissolved in formamide to prepare carbon dots (CDs) by a microwave-assisted method. The obtained CDs were further modified with 3,5-dichloro-2-hydroxybenzaldehyde. The modified CDs (G-CDs) showed a new emission peak at 520 nm and a weaker emission peak at 450 nm; thus, a new ratiomeric fluorescence (RF) probe was obtained. The RF probe could be used for sensitively and selectively monitoring of amaranth AM and Fe 3+ . In this work, a new carbon quantum dots (CDs) was prepared though microwave assisted approach using citric acid anhydrous (CA) and N-[3-(Trimethoxysilyl)propyl] ethylenediamine (TPED) as raw materials. However, the CDs was not effective in actual sensing applications, so further modification of CDs was done by 3,5-Dichloro-2-hydroxybenzaldehyde (it was named as G-CDs). Fortunately, the modified CDs (G-CDs) has good selectivity for Fe 3+ and amaranth. Studies confirmed that Fe 3+ could quench the fluorescence of G-CDs by forming a complex, while the fluorescence quenching mechanism of G-CDs by amaranth (AM) mainly belonged to the internal filtering effect (IFE). A detection limit of 20.8 nM for Fe 3+ and 43.8 nM for AM were achieved. Moreover, the as-developed G-CDs probe was also successfully used to detect Fe 3+ and amaranth in real samples, and compared with their results by the standard method, hinting that the accuracy and reliability of the probe were highly satisfactory.

Food safety concerns regarding Sudan Red, a carcinogenic dye, necessitate effective detection methods. This study introduces S, P co-doped blue-emitting carbon dots (BSP-CDs), synthesized via a one-pot hydrothermal method using asparagine as the carbon source. BSP-CDs exhibit excellent optical properties, environmental stability, and selective fluorescence quenching due to the inner filter effect. These properties were utilized to develop a sensitive and rapid “on-off” fluorescence sensing system for Sudan Red detection. The sensor demonstrated a linear detection range of 50–175 μM and a detection limit of 2.11 μM, with high accuracy and recovery rates in real-world water samples. This work offers a green, economical, and highly reproducible approach for Sudan Red monitoring, with significant implications for food safety and environmental protection.

In this work, a very sensitive electrochemical sensor for Sudan I was established based on nanohybrids of graphene-ZnSe quantum dots . Positively charged cetyltrimethyl-ammonium bromide (CTAB) functionalized graphene was used as a template-directed building block to self-assemble negatively charged ZnSe quantum dots (QDs). The hybrids of ZnSe-CTAB-graphene exhibited strong enrichment effect on Sudan I and gave superior electrocatalytic activity towards the oxidation of Sudan I. Applying differential pulse voltammetry (DPV), the peak current of Sudan I is proportional to its concentration in the range from 0.004 to 2.0 μM and 2.0 to 15.0 μM. This report is the first on applying graphene-ZnSe hybrids for electrochemical sensing.

Triphenylamine functionalized polyhedral oligomeric silsesquioxane (POSS@TPA) was prepared using the Friedel-Crafts reaction with tris(4-bromophenyl)amine (TPA) as the functional monomer and polyhedral oligomeric silsesquioxane (POSS) as the framework. The as-prepared POSS@TPA has a stable structure and accomplished pore performance, allowing for the selective adsorption of Sudan I and result in the fluorescence quenches of POSS@TPA. Thus, the POSS@TPA could be used as sensors to fluorescence detect 0.12–7.4 mg/L Sudan I, with a detection limit of 0.091 mg/L. Moreover, the POSS@TPA have good reuseability can be reused more than 5 cycles after washing. Noteworthily, the response time of POSS@TPA for determination was as short as 1 min. Furthermore, the sensor was effectively used to determine Sudan I in cakes with excellent recoveries (86.4–108.8 %) and relative standard deviations (2.5–4.9 %). The results matched those of high-performance liquid chromatography (HPLC). Our work shows great potential in terms of the rapid detection of food safety.

As a synthetic pigment, Sudan red is commonly used as a food additive and is harmful to the human kidney and can even cause cancer. In this work, we developed a one-step strategy to synthesize lignin-based hydrophobic deep eutectic solvents (LHDES), which were fabricated via methyltrioctylammonium chloride (TAC) as hydrogen bond acceptor and alkali lignin as hydrogen bond donor. LHDES with different mass ratios were synthesized and the mechanism of formation was determined by different characterization techniques. The synthetic LHDES was used as the extraction solvent to establish a vortex-assisted dispersion-liquid microextraction method for the determination of Sudan red dyes. The practicality of LHDES was evaluated by applying it to the detection of Sudan Red I in real water samples (seawater, river water) and duck blood in foodstuffs, and the obtained extraction rate reached up to 98.62 %. The method is simple and effective for the determination of Sudan Red in food.

The preparation of long-wavelength emitting carbon dots (CDs) with good antibacterial function and biosensing ability through element doping method is the hotspot of present researches. This paper reports the rapid synthesis of nitrogen and phosphorus co-doped long wavelength-emitting CDs (N, P-CDs, λ em = 530 nm) under low reaction temperature (30 min, 60 °C). This method used glucose, polyethyleneimine and phosphoric acid as raw materials, and each raw material worked multi-functionally during the synthesis process. The impacts of raw materials and reaction parameters upon optical properties of prepared N, P-CDs have been studied, and the synthesis mechanism has been discussed. Meanwhile, N, P-CDs were used as antibacterial material with minimum inhibitory concentrations against Staphylococcus aureus and Escherichia coli at 7.5 μg·mL −1 and 0.5 mg·mL −1 respectively. The prepared CDs were also used to realize fluorescence imaging of S. aureus , and work as fluorescence probe to detect Sudan Red I with limit of detection at 43 nM.

In this paper, we exploit an innovative strategy to reuse waste rubber tires as a low-cost source for the fabrication of a high-value material, fluorescent carbon dots (CDs). In the hydrothermal condition, ammonium persulphate is utilized to oxidize the tires and offer nitrogen atom for doping, to produce CDs with a high quantum yield (QY) of up to 23.8%. Such a QY is outstanding among the reported waste-derived CDs. It is found that the fluorescence of CDs can be remarkably quenched by Sudan I–IV with negligible interference from other substances. The corresponding linear ranges are 0.5–60, 0.5–60, 1–70, and 1–70 μM, and limits of detection are 0.17, 0.21, 0.53, and 0.62 μM for Sudan I, II, III, and IV, respectively. Systematic investigations reveal that the fluorescence quenching mainly stems from the inner filter effect. Moreover, the CD-based sensor shows an excellent applicability for the assay of Sudan dyes in chili powder sample.

Quantum dots functionalization has been proven to be a simple modification strategy for improving the electroanalytical performance of two-dimensional electrode materials by increasing the specific surface area and active reaction sites. Herein, a new electrochemical sensing platform was fabricated by SnO2 quantum dot-functionalized Ti3C2 MXene (Ti3C2-SnO2QDs) for the highly sensitive detection of Sudan I in food. Ti3C2-SnO2QDs were prepared via in situ synthesis, which can control the nucleation and growth of SnO2QDs, resulting in the well-dispersed SnO2QDs with 2–3 nm size on the intersheet surface of MXene. Moreover, the formation of Ti3C2-SnO2QDs can effectively restrict the aggregation of Ti3C2 and improve the stability of SnO2QDs in aquatic environment. The prepared nanocomposite can be used as an improved modified material to further increase the electrocatalytic performance and electrochemical signal of Sudan I on the surface of a glassy carbon electrode. Under optimized conditions, the proposed analytical method displayed a linear dependence for Sudan I concentration ranging from 0.008 to 10 μM with a detection limit of 0.27 nM (S/N = 3) by electrochemical cyclic voltammetry. This sensor with excellent selectivity, reproducibility and accuracy was quantitatively validated in commercial ketchup and chili powder. This Ti3C2-SnO2QDs-based Sudan I sensor is expected to expand the application of MXene nanocomposites in electrochemical analysis and is envisioned as a promising candidate for monitoring illegal food additives in real food samples.

A simple method based on magnetic molecularly imprinted polymers (MMIPs) for the separation of Sudan dyes from chilli powder samples has been developed. The MMIPs were synthesized as follows: the Fe 3 O 4 nanoparticles were encapsulated with a SiO 2 shell and functionalized with CH CH 2 , then the polymers were further fabricated by surface-imprinted polymerization using Sudan IV as template molecule, methacrylic acid as functional monomer, and ethylene glycol dimethacrylate as cross-linking agent. The prepared MMIPs were characterized by scanning electron microscope, Fourier transform infrared spectrometry and physical property measurement system. The isothermal absorption experiment, kinetics absorption experiment and selectivity of MMIPs were tested. The analytes were determined by high performance liquid chromatography. Under the optimal conditions, the limits of detection of the four Sudan dyes are 6.2, 1.6, 4.3 and 4.5 ng g −1 , respectively. The precision expressed as relative standard deviation ranging from 4.8% to 9.1% was obtained. In all three fortified levels (25, 250 and 2500 ng g −1 ), recoveries of Sudan dyes were in the range of 79.9–87.8%.

We report that the intensity of the blue fluorescence of copper nanoclusters coated with polyethyleneimine (PEI) is strongly reduced in the presence of the food dyestuffs Sudan I-IV. This finding was exploited in a label-free fluorescence assay for these Sudan dyes both in ethanol and aqueous solutions. The PEI-capped nanoclusters have an average diameter of 1.8 nm and are displaying, under 355 nm excitation, a blue emission at 480 nm that matches the absorption bands of the Sudan dyes. The clusters are stable in solution for at least 1 month. Under optimum conditions, this assay can be applied to the quantification of the dyes Sudan I, II, III, and IV, respectively, in the 0.1−30, 0.1–30, 0.1–25, and 0.1–25 μM concentration ranges, and the detection limits (3σ/slope) are 65, 70, 45, and 50 nM, respectively. The capability of reducing the fluorescence of the PEI-capped copper nanoclusters is directly related to the number of the functional groups in that Sudan III and IV give lower detection limits. This analytical scheme exhibits a remarkably high selectivity for the Sudan dyes over potentially interfering substances. The method was successfully applied to determine Sudan I, II, III, and IV in hot chilli powder.

Ensuring food safety necessitates rapid and reliable food contaminant detection methods. Here, we present a novel approach that integrates electrochemical sensors with machine learning to detect Sudan Red I in food. Our study showcases a modified stainless steel needle (SSN) electrode adorned with silver nanoparticles (AgNPs) and investigates three distinct convolutional neural network (CNN) architectures: Inception V1, ResNet-50, and SqueezeNet V1.1. This combination aims to predict the sensor response accurately. The AgNPs/SSN electrode displays heightened electrochemical activity towards Sudan Red I, offering a linear detection range of 0.1–20 μM and an exceptional 10 nM detection limit. Notably, the Inception V1 and ResNet-50 networks exhibit superior predictive capability compared to SqueezeNet V1.1. Our interdisciplinary approach establishes a rapid, sensitive, and dependable detection system for food contaminants. By fusing electrochemical sensors with machine learning, we propel the development of intelligent detection systems with significant implications for food safety enhancement. Graphical abstract
