The research on the application of ultrasound in food processing has been increasing in recent years. In particular, using ice-bath temperature-controlled ultrasound (IBU) to minimize the effects of thermal aspects has been the main focus. However, this approach does not maximize the utilization of energy. Therefore, this study aims to compare the effect of non-temperature-controlled ultrasound (NTU) and temperature-controlled ultrasound (TU), with IBU on the structure and properties of zein. To further explore the role and mechanism of thermal effects in ultrasound processes. Firstly, particle size, zeta potential, hydrophobicity, and thermal stability of zein nanoparticles prepared using various ultrasound-assisted methods were characterized. Compared to the particle size in the IBU group, the NTU group consistently had smaller particles under the same power conditions (e.g., 197 nm versus 176 nm at U1). The particle size in the TU group changes depending on the temperature (e.g., from native 225 nm down to 185 nm). As for the denaturation temperatures, the NTU group (88.9 °C) was significantly higher than that of the IBU (75.76 °C) and TU groups (e.g., 76.9 °C at treatment temperatures of 30 °C). In all, IBU reduces the thermal stability, while NTU treatment enhances it. Furthermore, UV, fluorescence, and CD spectra results indicate that both NTU and TU groups significantly reduce the α-helix structure by unfolding and exposing more internal hydrophobic groups of zein than the IBU group. These results indicate that the effects of ultrasound on zein are closely related to the heating source during the ultrasonic process. IBU could be utilized to maximize the reduction of denaturation levels, but NTU may exhibit superior performance such as protein modification, reducing particle size, or enhancing stability in industrial production.

Bubble formation plays an important role in industries concerned with mineral flotation, food, cosmetics, and materials, which requires additional energy to produce the liquid–gas interfaces. A naturally observed fact is, owing to the effect of surface tension, a bubble film tends to retract to reduce its surface area. Here we show a “reverse” phenomenon whereby a drop is transformed into a bubble using acoustic levitation via acoustic resonance. Once the volume of the cavity encapsulated by the buckled film reaches a critical value V * , resonance occurs and an abrupt inflation is triggered, leading to the formation of a closed bubble. Experiments and simulations both reveal that V * decreases with increasing acoustic frequency, which agrees well with acoustic resonance theory. The results afford enlightening insights into acoustic resonance and highlight its role in manipulating buckled fluid–fluid interfaces, providing a reference for fabricating unique core–shell-like materials.

BACKGROUND Partially replacing NaCl with KCl under ultrasound can improve muscle quality and reduce oxidative degeneration of myofibrillar proteins in semi-dried large yellow croaker ( Larimichthys crocea ). Myosin, the most important protein in myofibrillar protein, plays an important role in muscle quality. Hence, the present study aimed to investigate the effect of replacing NaCl with KCl on the physicochemical properties of myosin derived from large yellow croaker under ultrasound. Furthermore, the application potential of ultrasound to low sodium salt products was evaluated. RESULTS The results showed that ultrasound treatment reduced the aggregation and particle size of myosin. By contrast, at high salt concentrations, myosin oxidation was inhibited and protein aggregation increased. This led to an increase in particle size and a decrease in stability and surface hydrophobicity of myosin. Interestingly, KCl increased myosin solubility and promoted protein unfolding, the excess of which exposed some active sites, leading to oxidative destruction of the proteins. In the present study, the chromophore and surface hydrophobic groups of myosin were exposed as a result of the KCl-mediated unfolding of the α -helices of myosin after the partial replacement of NaCl with KCl. This improved the structural stability of myosin and reduced its oxidative damage. CONCLUSION The findings of the present study show that the presence of NaCl and KCl in the system was more conducive to protecting the key role of myosin in the muscle tissue compared with NaCl alone. Additionally, the study provides insights into the mechanism of K + and Na + action on myosin under ultrasound, along with a theoretical basis for the application of ultrasound in low sodium salt products. © 2025 Society of Chemical Industry.

We investigate the effect of ultrasound on the evaporation and crystallization of sessile NaCl solution droplets which were positioned in traveling or standing wave ultrasound field. The experimental results indicated that the ultrasound field can significantly accelerate the evaporation rate of the sessile droplets and refine the crystal grains. By adjusting the distance between the sessile droplets and the ultrasound emitter, it is found that, in traveling wave ultrasound field, the sessile droplet evaporation time and the time for the appearance of NaCl grains exhibited a fluctuating increase as the droplet-emitter distance increased. While in the standing wave ultrasound, the sessile droplet evaporation rate increases with the increasing droplet-emitter distance. Overall, the traveling wave ultrasound field has a stronger effect on grain refinement of the sessile droplets than the standing wave ultrasound field. The grain refinement is attributed to the decrease of critical nucleation radius caused by ultrasound energy and the increase of the nucleation rate caused by the accelerated evaporation rate. In addition, the breakage of grains caused by ultrasonic cavitation would also lead to grain refinement.

Ciprofloxacin (CIP), as a common antibiotic used in human clinical and livestock farming, is discharged into natural water bodies and its concentration has increased in the last years. Its stable chemical structure is difficult to remove by conventional techniques. Residual ciprofloxacin in the environment has become an emerging micropollutant that promotes the generation of resistance genes of bacteria and endangers ecosystem balance and human health. Removal of ciprofloxacin from water by the system of ultrasound/electric field/sodium persulfate (US/E/PS) was investigated. Firstly, CIP degradation affects by different oxidation methods, such as ultrasonic oxidation, electro-oxidation, and persulfate oxidation, and their four combined oxidation methods (ultrasound-activated persulfate oxidation, electro-activated persulfate oxidation, ultrasound-enhanced electro-oxidation, and ultrasound-enhanced electro-activated persulfate oxidation), on the target contaminants were compared. Secondly, the influences of parameters on the CIP degradation by an ultrasound-enhanced electro-activation-persulfate reaction system were investigated. Thirdly, the possible free radical species in the ultrasound-enhanced electro-activation-sulfate reaction system were identified and the dominant free radical species in the system were analyzed. Finally, the samples of CIP in the US/E/PS system were tested by liquid mass spectrometry, and the possible intermediate products and degradation path were speculated. The results indicate that the US/E/PS system is of great potential application value in the removal of organic pollution and environmental purification. Keywords:ultrasound;antimicrobial drug;degradation;ciprofloxacin

Ultrasonic treatment has attracted much attention because of its physical and chemical effects that are distinct from those of chemical agents. In particularly, high-frequency ultrasound is known as an effective method because the theoretical resonance frequency of the gas vesicles in Microcystis aeruginosa is in the high frequency range (>100 kHz), which causes gas vesicles collapse and changes the settleability of the algal cells. In this work, the effects of the ultrasonic frequency, acoustic power density and duration on enhancing coagulation to remove turbidity in algae-laden water were studied. In order to explain the mechanism, the morphology of algae cells, the changes in extracellular organic substances, the zeta potential and the formation of hydroxyl radicals were analyzed systematically. Finally, Zeta potentials and flocs morphology after adding PAC were investigated to verify the mechanism. The results showed that the frequency exhibited fewer effects than power and duration on coagulation. SEM images showed that there were more severe cellular damages at 430 and 740 kHz than other frequencies. Sonication could cause the collapse of gas vesicle inside the cell, which was due to the instantaneous high pressure generated by the ultrasonic cavitation instead of the resonance. Furthermore, sonication would result in an increase in proteins in extracellular organic matter (EOM) with continuous ultrasonic irradiation, indicating that a small amount of proteins could promote coagulation and that the accumulation of proteins would inhibit coagulation. Free radical content testing showed that the production of excessive free radicals was often accompanied by a deterioration of the coagulation. The proper mechanical effects were the main mechanism of ultrasonic enhanced coagulation. Thus, it was recommended that the appropriate ultrasonic condition was the one that resulted in a small amount of protein leakage and little generation of free radicals, which occurred at 740 kHz and 0.02 W/mL in approximately 5 min, and would significantly enhance the turbidity removal rate in algae-containing water from approximately 80–90%.

A study on the transformations of six arsenic species (arsenocholine (AsC), arsenobetaine (AsB), dimethylarsinic acid (DMA), monomethylarsonic acid (MMA), arsenite (As(III)), and arsenate (As(V))) was carried out in aqueous solution by ultrasonic treatment. The transformations of arsenic species increased with time. As the ultrasonic power or temperature was increased, transformations of arsenic species were at first enhanced and then decreased. AsC, AsB, As(III) were the most unstable at 600 W and 20 °C. DMA and MMA were stable; AsC was partially transformed to AsB, trimethylarsinic oxide (TMAO), and the more toxic tetramethylarsonium ion (TMA+); AsB was partially transformed to TMAO; and As(III) was easily oxidized to As(V). The reduction of As(V) to As(III) was only observed when the temperature was over 60 °C. The ultrasound treatment conditions with relatively stable arsenic species were 150 to 300 W, 40 to 80 °C, and 0 to 10 min. The relatively stable (150 W, 10 min, 80 °C) and unstable (600 W, 60 min, 20 °C) ultrasonic condition were applied to mushrooms and the transformations of AsC, AsB, and As(III) were observed. Currently, ultrasound-assisted extraction methods have only focused on the extraction efficiency of arsenic species and ignored their transformations. This study may serve as a guide for improving extraction efficiency without minimal transformation of the arsenic forms to reflect the actual contents in edible mushrooms. The study also provides a theoretical basis for making an accurate risk evaluation of human exposure by taking account of possible arsenic transformations during processing prior to consumption.

In this study, complexes of chlorogenic acid (CA) with starch from different sources were prepared by thermal treatment (70 °C, 20 min) and ultrasound (450 W, 20 kHz, 25 °C, 20 min). Both ultrasound and thermal treatment are effective methods for preparing starch-CA complexes, but the two treatments have different effects on different starches. Characterization of the complexes prepared using the two methods showed that thermal treatment and ultrasound reduced the crystallinity of starch to some extent, with thermal treatment having a greater effect. Thermal treatment also reduced the amount of double-helix structures in starch. In contrast, ultrasound was relatively mild and had less effect on starch granular structure. However, these two methods promoted the binding of CA, thereby increasing the crystallinity of starch and forming a more ordered and compact structure, which, to some extent hindered the enzymatic degradation of starch. Moreover, the RDS of starch-CA complexes were reduced to different degrees, with the most significant changes in U (PS-CA) and T (CS-CA), which were reduced by 5.96 % and 4.55 %, respectively.

AlH 3 is a promising hydrogen storage material, but poses an explosion risk when suspended in air. Herein, a low-cost and environmentally friendly composite explosion suppressant is prepared using ultrasound coupled cooling crystallization and applied to suppress AlH 3 explosions. Ultrasound-induced cavitation inhibits crystal agglomeration, resulting in fine KH 2 PO 4 crystals growing on the SiO 2 surface by heterogeneous nucleation, which significantly improves the suppression effect. The decomposition products of KH 2 PO 4 react with the flame radicals in the system to generate stable products, interrupting the chain reaction of flame radicals effectively. Furthermore, the complex mesoporous structure of SiO 2 absorbs flame radicals and increases the collision probability between the radicals and the pore walls, thus suppressing flame propagation. Our research provides an important theoretical support for the safe application of light metal hydrogen storage materials.

Ultrasound enhanced evaporating crystallization has been proposed to solve the problems of low crystallization yield and uneven particle size in the evaporating crystallization process of ammonium sulfate solution at atmospheric pressure. The effects of key operating parameters, including the ultrasound power, stirring speed, pH value, and ultrasound time, on the yield of ammonium sulfate product and the duration of solid–liquid transformation time are studied. The results show that the ultrasound crystallization can increase the ammonium sulfate yield by 52.9 %, reduce the solid–liquid transformation time of ammonium sulfate by 10 %, and obtain ammonium sulfate products with higher crystallinity and more uniform particle size. Ultrasound promotes the crystallization of ammonium sulfate by enhancing the transfer of heat in the solution and reducing the supersolubility of the ammonium sulfate solution from 937.5 g/L to 833.33 g/L. This study provides experimental justification for the use of ultrasound in atmospheric evaporative crystallization.

As one of the five basic tastes, umami has the advantages of making the overall taste of food more harmoniously. Although various umami substances in food have been isolated and identified, in recent years, there are limit studies on the processing technology for improving food umami. Therefore, it is necessary to explore novel efficient umami improvement technologies to meet the urgentment of the food industry. This experiment was designed to study the effect of 0.1% (w/w) sodium bicarbonate (NaHCO 3 ) combined with different power (0, 120, 180, 240, and 300 W) ultrasound treatment on the taste and flavor of chicken broth. Results demonstrated that the chicken broth under the power of 120 W ultrasound treatment combined with 0.1% (w/w) NaHCO 3 was the most umami, and contained the largest amount of IMP. The chicken broth under the treatment of 180 W ultrasound combined with 0.1% (w/w) NaHCO 3 has better flavor and sensory evaluation as the umami improved. In summary, 180 W ultrasound combined with 0.1% (w/w) NaHCO 3 pretreatment is a simple and low-cost processing technology, which is inclined to apply in industry. Practical Applications Compared with the traditional umami improvement method, ultrasound can significantly reduce the cost of food umami-enhancing with the characteristics of high safety, environmental protection, low operating cost, and high instantaneous efficiency. Sodium bicarbonate is an inorganic salt. Moderate intake is beneficial to the body. It can help neutralize stomach acid and supplement sodium for the body. In this study, low-power ultrasound combined with low-concentration of sodium bicarbonate solution was used to cook chicken soup, and the umami taste was improved to a large extent, which provided a novel method for industrial application.

Hypoxia is a common feature of malignant tumors, which can accelerate tumor growth and reduce the sensitivity of chemotherapy and sonodynamic therapy by activating the hypoxia-inducible factor (HIF) signaling pathway. In HER2-positive gastric cancer, HER2 overexpression enhances HIF-1α synthesis, exacerbating hypoxia and impairing sonodynamic therapy. It also reduces trastuzumab-mediated antibody-dependent cytotoxicity, significantly compromising therapeutic outcomes. Herein, pyropheophorbide-conjugated lipid (pyropheophorbide-lipid, PL) and trastuzumab were fabricated into targeted nanoparticles (TP NPs) for loading perfluorobromooctane (PFOB) carrying oxygen (TPPO NPs), thus enabling oxygen self-supplied sonodynamic and antibody therapies. In vitro experiments showed that antibody targeting significantly increased the cellular uptake of sonosensitizers, and the controlled release of oxygen was dependent on ultrasound parameters, greatly enhancing the killing effects of SDT and antibody therapy. In vivo animal experiments showed that TPPO NPs-mediated enhanced permeation and retention (EPR) effects, along with antibody targeting, improved the enrichment of sonosensitizers in tumors. Notably, ultrasound-triggered topical delivery of oxygen significantly alleviated tumor hypoxia and further improved the efficacy of SDT and antibody therapy. Given the good biosafety profile of TPPO NPs, this system holds great promise for future clinical applications in gastric cancer.
