An accurate yet rapid assessment of pungency and color values is pivotal for the commercial processing of pepper, underscoring the critical need for high-throughput detection techniques. This study investigates a rapid method for determining the pungency and color value of paprika via LED–induced fluorescence spectroscopy. A simultaneous detection instrument was developed with a proposed fluorescence correction method to reduce the impact of excitation light reflected by the sample. The corrected spectra could improve the performance of pungency prediction. The best pungency model achieved a R c 2 of 0.941, R cv 2 of 0.935, RMSEC of 6813.41 SHU and RMSECV of 6959.97 SHU. The best color value model achieved an R c 2 of 0.862, R cv 2 of 0.822 RMSEC of 1.233 and RMSECV of 1.402. This study offers a practical solution for simultaneous quality assessment suitable for industrial deployment, with the potential to extend this methodology to diverse cultivars.

A simple method based on magnetic molecularly imprinted polymers (MMIPs) for the separation of Sudan dyes from chilli powder samples has been developed. The MMIPs were synthesized as follows: the Fe 3 O 4 nanoparticles were encapsulated with a SiO 2 shell and functionalized with CH CH 2 , then the polymers were further fabricated by surface-imprinted polymerization using Sudan IV as template molecule, methacrylic acid as functional monomer, and ethylene glycol dimethacrylate as cross-linking agent. The prepared MMIPs were characterized by scanning electron microscope, Fourier transform infrared spectrometry and physical property measurement system. The isothermal absorption experiment, kinetics absorption experiment and selectivity of MMIPs were tested. The analytes were determined by high performance liquid chromatography. Under the optimal conditions, the limits of detection of the four Sudan dyes are 6.2, 1.6, 4.3 and 4.5 ng g −1 , respectively. The precision expressed as relative standard deviation ranging from 4.8% to 9.1% was obtained. In all three fortified levels (25, 250 and 2500 ng g −1 ), recoveries of Sudan dyes were in the range of 79.9–87.8%.

Molecularly imprinted polymers grafted on to the surface of carboxyl-modified multiwalled carbon nanotubes were developed using methacrylic acid as a functional monomer and trihydroxymethylpropyl trimethylacrylate as a crosslinker for application to rhodamine B determination. The synthesis, characteristics, and evaluation of the molecularly imprinted polymer are described. The apparent morphology of the polymers was characterized by scanning electron microscopy. To evaluate the binding ability of the molecularly imprinted polymers, equilibrium binding experiments were conducted and revealed the maximal binding capacity to be 561.54 µg g−1. The introduction of nanomaterials into the polymer composite made important contributions to the affinity enhancement and recognition properties of the molecularly imprinted polymers. Moreover, the polymers were preliminarily applied as an adsorbent for separation and extraction of Rhodamine B from dried chili powder samples, based on solid phase extraction technology. The calibration curve was linear in the range of 0–7 µg mL−1. For all tested samples, recoveries were reliable and in the range of 101.75–109.73%. The relative standard deviation ranged from 6.43–14.32%, which demonstrated that the polymer has potential for preconcentration of Rhodamine B from chili powder samples.

Magnetic molecularly imprinted polymers (MMIPs) have become a hotspot owing to the dual functions of target recognition and magnetic separation. In this study, the MMIPs were obtained by the surface-initiated reversible addition fragmentation chain transfer (RAFT) polymerization using Sudan I as the template. The resultant MMIPs were characterized by transmission electron microscope, Fourier transform infrared spectroscopy, X-ray photoelectron spectroscopy, vibrating sample magnetometer, and X-ray diffraction. Benefiting from the controlled/living property of the RAFT strategy, the uniform MIP layer was successfully grafted on the surface of RAFT agent-modified Fe 3 O 4 @SiO 2 nanoparticles, favoring the fast mass transfer and rapid binding kinetics. The developed MMIPs were used as the solid-phase extraction sorbents to selectively extract four Sudan dyes (Sudan I, II, III, and IV) from chili powder samples. The recoveries of the spiked samples in chili powder samples ranged from 74.1 to 93.3% with RSD lower than 6.4% and the relative standard uncertainty lower than 0.029. This work provided a good platform for the extraction and removal of Sudan dyes in complicated matrixes and demonstrated a bright future for the application of the well-constructed MMIPs in the field of solid-phase extraction.

A novel solid-phase extraction chip embedded with array columns of molecularly imprinted polymer-coated silanized graphene oxide (GO/SiO 2 -MISPE) was established to detect trace rhodamine B (RB) in chili powder. GO/SiO 2 -MISPE monolithic columns for RB detection were prepared by optimizing the supporting substrate, template, and polymerizing monomer under mild water bath conditions. Adsorption capacity and specificity, which are critical properties for the application of the GO/SiO 2 -MISPE monolithic column, were investigated. GO/SiO 2 -MIP was examined by scanning electron microscopy (SEM) and Fourier transform-infrared spectroscopy. The recovery and the intraday and interday relative standard deviations for RB ranged from 83.7% to 88.4% and 2.5% to 4.0% and the enrichment factors were higher than 110-fold. The chip-based array columns effectively eliminated impurities in chili powder, indicating that the chip-based GO/SiO 2 -MISPE method was reliable for RB detection in food samples using high-performance liquid chromatography. Accordingly, this method has direct applications for monitoring potentially harmful dyes in processed food.

A poly(butyl methacrylate- co -ethylene dimethacrylate) monolithic column was fabricated and used as a novel sorbent for online solid-phase extraction coupled to liquid chromatography with tandem mass spectrometry for the simultaneous determination of Sudan I–IV in chili pepper powder. The prepared columns were characterized by scanning electron microscopy, nitrogen adsorption-desorption, and pressure drop measurements. Online solid-phase extraction was performed on the synthesized monolithic column using 10 mM ammonium acetate solution as the loading solution with the aid of an online cleanup chromatography system. The desorption of Sudan I–IV was achieved with acetonitrile as the eluting solution at the flow rate of 0.5 mL/min. The extracted analytes were subsequently eluted into a C 18 analytical column for chromatographic separation using a mixture of 10% acetonitrile/90% formic acid (0.5%) solution as the mobile phase. Under the optimized conditions, the developed method had linear range of 1.0–50 μg/kg, a detection limit of 0.3 μg/kg, and a quantification limit of 1.0 μg/kg for each analyte. The intraday and interday recoveries of Sudan I–IV in chili pepper powder samples ranged from 94.8 to 100.9% and 94.9 to 99.4%, respectively. The intraday and interday precision were between 3.37–7.01% and 5.01–7.68%, respectively.

An up-conversion molecularly imprinted ratiometric fluorescent probe with a monodisperse nuclear-satellite structure and its test strip are designed which can avoid fluorescent background interference to detect Sudan I in chili powder highly selective and sensitive. The detection mechanism is based on the selective recognition of Sudan I by imprinted cavities on the surface of ratiometric fluorescent probe and the inner filter effect between Sudan I molecules and the emission of up-conversion materials (NaYF 4 :Yb,Tm). Under optimized experimental conditions, the response of fluorescent ratio signals (F 475 /F 645 ) of this test strip show a good linear relationship in the range 0.02–50 μM Sudan I. The limits of detection and quantitation are as low as 6 nM and 20 nM, respectively. Sudan I is selectively detected in the presence of fivefold higher concentrations of interfering substances (imprinting factor up to 4.4). Detection of Sudan I in chili powder samples show ultra-low LOD (44.7 ng/g), satisfactory recoveries (94.99–105.5%) and low relative standard deviation (≤ 2.0%). This research offers a reliable strategy and promising scheme for highly selective and sensitive detection of illegal additives in complex food matrix via an up-conversion molecularly imprinted ratiometric fluorescent test strip. The pungency and flavor experience of peppers determines their economic benefits and consumption; thus, a systematic sensory evaluation of peppers is essential to monitor their production. Here the Scoville heat units (SHUs) of powders and oils of seven commercial peppers in China (i.e., Indian, Erjintiao, Shizhuhong, Zidantou, Xinyidai, Mantianxing and Denglong) were derived based on concentrations of capsaicin and dihydrocapsaicin. Then, the pungency and sensory profiles of pepper products were investigated by 11 trained panelists. The potential indicators for predicting perceived pungency in peppers were found based on correlation analysis. The Indian pepper stood out for its highest SHU (85909), bright redness, peppery, and bitterness, but lacked herb/woody flavor. But other species had more varied flavor profiles and gentler mouth-feelings. SHU and capsaicin were more recommended in predicting the perceived pungency in pepper powder and pepper oil. This study offers a framework for evaluating the sensory characteristics of pepper products.

In this study, we developed novel copper-doped biomass carbon quantum dots (Cu-CQDs) utilizing cantaloupe peel and copper nitrate as precursors. Compared to undoped biomass carbon quantum dots (CQDs), the Cu-CQDs demonstrated a stronger electrochemiluminescent (ECL) signal when reacting with K 2 S 2 O 8 . By employing the synthesized Cu-CQDs as a luminescent reagent, we collaborated with the polymer donor PM6 to construct an innovative solid-state ECL sensor for the trace detection of Rhodamine B (RhB). The solid-state ECL sensor was developed using a layer-by-layer modification approach, sequentially modifying the electrode surface with the polymer donor PM6, Cu-CQDs, and chitosan (CS). The layered structure of the polymer donor PM6 serves as a carrier for Cu-CQDs, enhancing their effective concentration on the electrode surface. Additionally, its electron-donating properties facilitate electron transfer within the sensor system. Chitosan (CS), characterized by its viscosity, was modified as the outermost layer, further enhancing the stability and ECL intensity of the sensor. RhB exhibited a significant quenching effect on the ECL signal of the constructed sensor, with the quenching value being proportional to the logarithm of RhB concentration in the range of 5.0 × 10 −8 to 5.0 × 10 −13 M. This sensor was successfully applied to the detection of RhB in chili samples, providing an effective platform for food safety monitoring.

Internal standard molecule 4-mercaptobenzoic acid (4-MBA) embedded Au core-Ag shell nanorods (Au-MBA@Ag NRs) were prepared by a seed-mediated growth method, then loaded on octahedral MIL-88B-NH2 to obtain a novel ratiometric SERS substrate of Au-MBA@Ag NRs/PSS/MIL-88B-NH2 (AMAPM) for detecting rhodamine 6G (R6G) in chili powder. The porous structure and excellent adsorption ability of MIL-88B-NH2, allowed for increased loading of Au-MBA@Ag NRs, thereby shortening the distance between adsorbed R6G and the “hot spot” resulting from local surface plasmon resonance (LSPR) of Au-MBA@Ag NRs. Based on the SERS characteristic peak ratio of R6G to 4-MBA, the ratiometric SERS substrate displayed improved accuracy and excellent performance for R6G detection, with a wide linear range of 5–320 nM and a low detection limit of 2.29 nM as well as fine stability, reproducibility and specificity. The proposed ratiometric SERS substrate offered a simple, fast and sensitive sensing strategy for R6G detection in chili powder, which demonstrated potential applications in food safety and the analysis of trace analytes in complex matrices.
