Corrosive iron pipes in drinking water distribution systems favor biofilm growth. A high protein-to-polysaccharide ratio could reduce the adhesion of biofilm on the pipe wall; however, the effects of the protein-to-polysaccharide ratio on disinfection by-product (DBP) formation are unclear. To investigate this issue, this study used bovine serum albumin (BSA) and sodium alginate (SA) to simulate proteins and polysaccharides in extracellular polymeric substances (EPSs), respectively, and systematically examined the effects of different protein-to-polysaccharide ratios on the generation of DBPs during chlorination disinfection. BSA promoted the formation of regulated DBPs, including trihalomethanes (THMs) and haloacetic acids (HAAs), as well as emerging DBPs such as haloacetonitriles (HANs), but SA did not obviously affect DBP formation. BSA also increased turbidity, enhanced particle dispersion, and led to the formation of a greater number of smaller iron particles. In contrast, SA promoted particle aggregation and sedimentation, resulting in reduced turbidity. Particle characterization further demonstrated that BSA exhibited stronger binding with iron particles than SA. Notably, from a toxicological perspective, BSA led to higher levels of cytotoxicity and genotoxicity due to the increased formation of DBPs. Thus, this study identified a new risk that a high protein-to-polysaccharide ratio increases the formation of DBPs promoted by the iron particle interface, besides the risk of microorganism release from pipe wall into bulk water.

Hyporheic zone (HZ) systems have a natural purification capacity, and they are commonly used to provide high quality drinking water . However, the presence of organic contaminants in HZ systems in anaerobic environments causes the aquifer sediments to release metals (e.g., Fe) at levels above drinking water standards, which affects the quality of groundwater. In this study, the effects of typical organic pollutants (dissolved organic matter (DOM)) on Fe release from anaerobic HZ sediments were investigated. Ultraviolet fluorescence spectroscopy , three-dimensional excitation-emission matrix fluorescence spectroscopy, excitation–emission matrix spectroscopy coupled with parallel factor analysis and Illumina MiSeq high-throughput sequencing were used to determine the effects of the system conditions on Fe release from HZ sediments. Compared with the control conditions (low traffic and low DOM as a baseline), the Fe release capacity was enhanced by 26.7 % and 64.4 % at low flow rate (85.8 m/d) and high organic matter concentration (1200 mg/L), which was consistent with the residence-time effect. The transport of heavy metals under different system conditions varied with the influent organic composition. The influent organic matter composition and fluorescence parameters (the humification index, biological index and fluorescence index) were closely related to the release of the Fe effluent, while these factors had less influence on Mn and As. From 16S rRNA analysis of the aquifer media at different depths at the end of the experiment, under low flow rate and high influent concentration conditions, reduction of Fe minerals by Proteobacteria , Actinobacteriota , Bacillus , and Acidobacteria promoted the release of Fe. These functional microbes play an active role in the Fe biogeochemical cycle in addition to reducing Fe minerals to promote Fe release. In summary, this study reveals the effects of the flow rate and influent DOM concentration on the release and biogeochemistry of Fe in the HZ. The results presented herein will contribute to a better understanding of the release and transport of common groundwater contaminants in the HZ and other groundwater recharge environments.

Shortage of soluble Fe in seawater is a limiting condition for benthic seaweeds growth. Utilizing steelmaking slag as the Fe source for seaweeds growth has been proposed. Aiming to find a cost-effective method to promote Fe release, we investigate the effect of adding municipal green wastes. By conducting leaching experiments in freshwater, a sharp improvement in Fe release was observed with the addition of tangerine peel together with steelmaking slag. The flavonoids supplied from the tangerine peel, vicenin-2, apigenin, hesperidin, vitexin, hesperetin and diosmin were observed to have a promotion effect on Fe release. Formation of stable flavonoid-Fe(II) chelates changes the thermodynamic property of Fe(II) in water and disturbs the equilibrium between Fe(II) in slag and Fe(II) in water, which promotes Fe release from slag. These results demonstrate the feasibility to develop a technology for Fe supply in seawater by utilizing the mixture of steelmaking slag and municipal green wastes.

In this study, the degradation of myoglobin both in solution and in tuna muscle by cold plasma (CP) was investigated through ultraviolet–visible and fluorescence spectroscopy analysis, and the effect of the degradation products on lipid oxidation in washed turbot muscle (WTM) was explored. Results showed that heme in myoglobin was degraded upon CP treatment, from which a fluorescent product was formed and iron was released. The degradation products promoted lipid oxidation in WTM during cold storage, in which the released iron played an important role. Results of gas chromatography-ion mobility spectrometry analysis showed that the contents of 37 volatile compounds in WTM were increased by heme degradation products induced lipid oxidation, including 20 aldehydes, 9 alcohols, 5 ketones and 3 furans. This study provides a new insight to the mechanism of lipid oxidation in CP-treated fish during cold storage, as well as guidance for preserving myoglobin-containing foods with CP.

Ferritin is a universal macromolecule protein that stores iron and regulates iron oxidative deposition and release. The physicochemical properties of ferritin can be affected by coexisting bioactive substances. This study investigated the effects of two phenolic acid analogs (caffeic acid and tanshinol) on the physicochemical properties of soybean ferritin. The results indicated that Fe(III) interacted with caffeic acid or tanshinol to form phenolic acid-Fe(III) complexes, and interacted with ferritin to form a ferritin-phenolic acid-Fe(III) complex with hydrogen bonds , which affected the ferritin structure of the complexes to a different extent due to their different structures. Caffeic acid and tanshinol facilitated iron oxidative deposition and release by promoting the Fe(II)-oxidation reaction and increasing Fe(III)-release from ferritin, while caffeic acid exhibited a more pronounced effect. In addition, caffeic acid protected ferritin from degradation by free radicals during the release of iron. Caffeic acid displayed a higher Fe(II) chelating ability and a higher hydroxyl radical ( • OH) scavenging ability owing to the conjugated structure compared to tanshinol. These findings elucidated the mechanism for the interaction among ferritin, iron, and polyphenols, and provide a theoretical basis for applying ferritin in protein-ligand interactions and iron supplementation of food .
