Effect of different soluble pectin in breadfruit on starch digestibility

Lili Chen,Yuan Hao,Yihan Wang,Gang Wu,Yanjun Zhang,Xu Wang

Breadfruit is rich in starch and pectin. The pectin can alter the digestion process of starch, however, the specific mechanism by which various soluble pectin impact starch digestion remains unclear. The effects of water-soluble pectin (WSP), chelating agent soluble pectin (CSP), and sodium carbonate soluble pectin (SSP) on the digestibility of breadfruit starch were characterized by means of RVA, FTIR, DSC, ITC, SEM and in vitro digestion. The results showed that the three types of pectin could inhibit starch digestion. The addition of CSP increased the resistant starch content from 8.18% to 18.07%, and the addition of SSP increased the slow-digested starch content from 22.55% to 35.24%. The three pectin have different ways in inhibiting starch digestion. They have different principles in inhibiting starch digestion. WSP binds with the dissolved amylose to form a membrane that covers the surface of the starch particles. However, CSP and SSP penetrate into the starch granule during the gelatinization process, blocking the pores on the starch particle surface, thus reducing the starch digestibility.

Investigating the effect of in vitro gastrointestinal digestion on the stability, bioaccessibility, and biological activities of baobab (Adansonia digitata) fruit polyphenolics

Balarabe B. Ismail,Mingming Guo,Yunfeng Pu,Osman Çavuş,Khadijah Abdulkadir Ayub,Ritesh Balaso Watharkar,Tian Ding,Jianchu Chen,Donghong Liu

Baobab ( Adansonia digitata ) fruit had received growing attention for its myriad nutritional and medicinal benefits, including those from its polyphenol-rich profile and powerful antioxidant activity . The current study evaluated the bioaccessibility of phenolic constituents and antioxidant capacity of baobab fruit pulp (BFP) and its byproduct, the baobab fruit shell (BFS), upon in vitro digestion. In general, the in vitro digestion reduced phenolic contents and antioxidant capacity; however, several flavonoids , particularly quercetin, proanthocyanidin, proanthocyanidins B 1 and B 2 were highly bioaccessible. Specifically, a significant increase in the bioaccessibility of proanthocyanidins (173%) in BFS was observed following gastric digestion, possibly due to hydrolysis of proanthocyanidin isomers. Moreover, a significantly higher bioaccessibility of proanthocyanidin B 2 (170%) and quercetin (304%) in BFP, and proanthocyanidin (363%) in BFS was also observed following intestinal digestion probably due to pancreatin effect on the complex food matrix or the depolymerisation of insoluble proanthocyanidin and quercetin conjugates induced by the increase in pH. A considerable α-amylase and α-glucosidase inhibition in all samples (>50% inhibition) were observed following the in vitro digestion. Hence, both BFP and BFS are good sources of bioaccessible polyphenolics that could be utilised as ingredients in functional foods.

Characterizing the phenolic constituents of baobab (Adansonia digitata) fruit shell by LC-MS/QTOF and their in vitro biological activities

Balarabe B. Ismail,Yunfeng Pu,Lihua Fan,Munir A. Dandago,Mingming Guo,Donghong Liu

Baobab ( Adansonia digitata ) fruit is a part of the baobab tree, a revered multi-purpose tree native to Africa with a myriad of potentials in providing shelter, food, medicine, clothing and as a valuable source of natural antioxidants. A massive quantity of baobab fruit shells (BFS) is generated as a waste from the baobab fruit processing representing significant economic and environmental challenges at the same time an opportunity for its valorization and commercial utilization. The present study explored the potentials of BFS as a source of phenolic compounds. For this purpose, the phenolic constituents of BFS were identified by LC-MS/QTOF analysis. Also, the Total Phenolic Chromatographic Index (TPCI), TPC, TFC, and antioxidant capacity were compared with the baobab seeds and pulp. The antidiabetic potential through α-amylase and α-glucosidase inhibitory activities was also compared with that of acarbose. The LC-MS/QTOF analysis led to the identification of 45 compounds, including quercetin, kaempferol, proanthocyanidins, phenolic acids and their derivatives, several of which had never been reported in baobab fruit. Moreover, the BFS showed higher TPC, TFC, and antioxidant capacity than the baobab seeds and pulp and inhibited α-amylase and α-glucosidase enzymes activities with much higher potency than acarbose. This research demonstrated the promising potentials of BFS as a good source of phenolic compounds that can further be utilized for food and pharmaceutical applications.
