Preparation and Properties of Microcrystalline Cellulose/Fish Gelatin Composite Film

Ling Pan,Peng Li,Yubo Tao

As a natural macromolecule-based biomaterial, fish gelatin is used in medical materials for its low pathogen infection risk. However, because of poor mechanical properties, its application has been limited. In this study, microcrystalline cellulose-reinforced fish gelatin (FG/MCC) composite films were prepared with a biological cross-linking agent (genipin) under ultrasonic treatment. SEM micrographs showed that the smooth microstructure of FG film became increasingly disordered with the addition of MCC. The infrared spectrum analysis (FTIR) demonstrated the existence of hydrogen bond interaction between MCC and FG. Compared with the pure FG film, the tensile strength (TS) and modulus of elasticity (MOE) of composite films with MCC were improved, and the elongation at break (EAB) and swelling ratios (SR) were decreased. Ultrasonic treatment could further improve TS, MOE, and SR. When the composite film was prepared with 15% MCC and treated with ultrasound, the TS and MOE increased by 115% and 227%, respectively, while the EAB decreased by 35% and the SR decreased by 4% in comparison with pure FG films. Thermo-gravimetric analysis (TGA) showed that the FG/MCC composite films were stable below 100 °C. The above results indicate that the FG/MCC films have optimistic application prospects in the biomedical field.

Physical properties and release kinetics of electron beam irradiated fish gelatin films with antioxidants of bamboo leaves

Tao Huang,Zhongxiang Fang,Huizhu Zhao,Dalun Xu,Wenge Yang,Wenwen Yu,Jinjie Zhang

The effect of electron beam irradiation (EBI) on the physical properties of fish gelatin (FG) films with antioxidants of bamboo leaves (AOB) was investigated. The results indicated that EBI had a positive effect on the tensile strength , denaturation temperatures, opacity values and microstructure of FG-AOB films. The highest values of mechanical and thermal properties as well as opacity were observed at irradiation dosages of 5 and 7 kGy. Nevertheless, EBI decreased contact angle and raised water vapor permeability of the films at higher relative humidity (90-100%), suggesting the re-organisation of hydrophilic groups on the films surface. The infrared spectroscopy and microstructure results showed that proper irradiation dosages could produce cross-linking bonds between FG and AOB and form compact structures, contributing to the decrease of AOB release rates. Therefore, irradiated FG-AOB films showed good mechanical and thermal properties, which suggested that they have the potential to be developed as biodegradable food packaging material.

Comparison of gelling properties and flow behaviors of microbial transglutaminase (MTGase) and pectin modified fish gelatin

Tao Huang,Huizhu Zhao,Yaoyan Fang,Jinpei Lu,Wenge Yang,Zhaohui Qiao,Qiaoming Lou,Dalun Xu,Jinjie Zhang

The gelling and structural properties of microbial transglutaminase (MTGase) and pectin modified fish gelatin were compared to investigate their performances on altering fish gelatin properties. Our results showed that within a certain concentration, both MTGase and pectin had positive effects on the gelation point, melting point, gel strength, textural, and swelling properties of fish gelatin. Particularly, low pectin content (0.5%, w/v) could give fish gelatin gels the highest values of gel strength, melting temperature, and hardness. Meantime, flow behavior results showed that both MTGase and pectin could increase fish gelatin viscosity without changing its fluid characteristic, but the latter gave fish gelatin higher viscosity. Both MTGase and pectin could increase the lightness of fish gelatin gels but decreases its transparency. More importantly, fluorescence and UV absorbance spectra, particle size distribution, and confocal microscopy results indicated that MTGase and pectin could change the structure of fish gelatin with the formation of large aggregates. Compared with MTGae modified fish gelatin, pectin could endow fish gelatin had similar gel strength, thermal and textural properties to pig skin gelatin.

Sustainable and Transparent Fish Gelatin Films for Flexible Electroluminescent Devices

Xiaopan Zhang,Tengyang Ye,Xianghao Meng,Zhihui Tian,Lihua Pang,Yaojie Han,Hai Li,Gang Lu,Fei Xiu,Hai-Dong Yu,Juqing Liu,Wei Huang

In the past decades, various alternating current electroluminescent (ACEL) devices, especially the flexible ones, have been developed and used in flat panel display, large-scale decorating, logo display lighting, optical signaling, etc. Transparent plastics are usually used as substrates in ACEL devices; however, they are undegradable and may cause serious environmental pollution. Herein, we have developed a flexible transient ACEL device based on transparent fish gelatin (FG) films. The FG films were made from fish scales, which are sustainable, cost-efficient, and eco-friendly. These films could dissolve in water within seconds at 60 °C and degrade completely within 24 days in soil. The transmittance of these FG films was up to 91.1% in the visible spectrum, comparable to that of polyethylene terephthalate (PET) (90.4%). After forming a composite with silver nanowires (Ag NWs), the Ag NWs-FG film showed a transmittance up to 82.3% and a sheet resistance down to 22.4 Ω sq–1. The fabricated ACEL device based on the Ag NWs-FG film exhibited high flexibility and luminance up to 56.0 cd m–2. The device could be dissolved in water within 3 min. Our work demonstrates that the sustainable, flexible, and transparent FG films are a promising alternative for green and degradable substrates in the field of flexible electronics, including foldable displays, wearable devices, and health monitoring.

Active polylactic acid/tilapia fish gelatin-sodium alginate bilayer films: Application in preservation of Japanese sea bass (Lateolabrax japonicus)

Jingwen Chen,Yinxuan Li,Yifen Wang,Salimata Yakubu,Haibing Tang,Li Li

Most edible films/coatings including those made of gelatin cannot be used independently as packaging films. In this study, active fish gelatin-based bilayer packaging films were developed and applied to preserve Japanese sea bass. The coating method was applied to produce polylactic acid/tilapia fish gelatin-sodium alginate bilayer film (PLA/FGSA). β -cyclodextrin inclusion complexes of cinnamaldehyde ( β -CD-CI) and thymol ( β -CD-Ty) were added into the gelatin-based layer of the PLA/FGSA to obtain active bilayer films (PLA/FGSA-CI and PLA/FGSA-Ty). This combination improved the oxygen and water vapor barrier abilities of the films, compared with PLA and edible gelatin-based monolayer films. Both active bilayer films possessed strong antibacterial and antioxidant activities . PLA/FGSA-Ty film showed the most effective inhibition against the growth of Pseudomonas .spp and H 2 S-producing Shewanella , generation of total volatile basic nitrogen (TVB-N) and thiobarbituric acid reactive substances (TBARS) of fish meat. These results indicate the active bilayer films are promising in the preservation of seafood.

A double-network fish gelatin/sodium alginate composite hydrogel as a carrier for the sustained release of a soy-derived osteogenic peptide

Jinpeng Gong,Boya Liu,Tao Huang,Lu Wei,Yupeng Ma,Hao Chen,Jing Gan,Junbo Ge

Osteoporosis, a prevalent metabolic bone disease, poses a significant challenge for bone repair in aged populations. Soy-derived osteogenic peptide (SOP) holds promise but its clinical translation is hampered by rapid enzymatic degradation and poor oral bioavailability, representing a major challenge that necessitates the development of a protective delivery system. To address this, we developed a novel composite hydrogel based on fish gelatin and sodium alginate (SA/FG) as an oral delivery vehicle to overcome these limitations. Systematic characterization revealed that the SA/FG formulation offers distinct advantages: the incorporation of an optimal amount of SA significantly enhanced the mechanical strength and stability of the hydrogel, addressing the common weakness of single-network gelatin hydrogels, while maintaining a high water content (~90%) and a superior rehydration capacity (83.65% in distilled water). In a glucocorticoid-induced zebrafish osteoporosis model, the SOP-loaded SA/FG hydrogel significantly increased skull bone mass by 120.17% and improved larval swimming behavior, markedly outperforming the free SOP group. This study presents the first report of an SA/FG composite hydrogel for effective oral delivery of an osteogenic peptide. The system demonstrates great potential as a functional food or supplement for preventing and treating osteoporosis, offering an innovative strategy to enhance peptide stability and bioavailability through a biocompatible, double-network carrier.

Preservative effects of fish gelatin coating enriched with CUR/βCD emulsion on grass carp (Ctenopharyngodon idellus) fillets during storage at 4 °C

Xinyu Sun,Xiaoban Guo,Mingyu Ji,Jiulin Wu,Wenjin Zhu,Jianhua Wang,Cui Cheng,Li Chen,Qiqing Zhang

This study investigated the effects of a novel edible coating combining fish gelatin with curcumin/β-cyclodextrin (CUR/βCD) emulsion on the quality of grass carp fillets (GCFs) during storage at 4 °C. For all samples, the quality parameters, including weight loss, pH, total volatile basic nitrogen (TVB-N), peroxide value (PV), thiobarbituric acid (TBA) value, SDS-PAGE, free amino acids (FAA), microbiological (total viable counts (TVC), Pseudomonas counts, yeasts and molds, and H 2 S-producing bacteria), color and sensorial characteristics, were tested periodically. The coatings containing CUR/βCD emulsions exhibited better preservative effects than gelatin/βCD coating. Therefore, fish gelatin coating enriched with CUR/βCD emulsion can be used as an effective way to maintain the quality of GCF and extend its shelf life during storage at 4 °C.

Fabrication and characterization of fish gelatin/soluble soybean polysaccharide edible blend films through complex coacervation

Yiwei Wang,Jie Liu,Yidan Ding,Xuejing Zheng,Yongchao Jiang,Keyong Tang

Complex coacervation of polysaccharides and proteins is a liquid-liquid phase separation that can occur when they are oppositely charged in aqueous solution. In the present work, soluble soybean polysaccharide (SSPS) and fish gelatin (FG) edible blend films were prepared through pH-induced complex coacervation. The optimal SSPS-to-FG mass ratio (1:3) and pH (5.0) conditions for complex coacervation was determined by measuring the maximum turbidity of SSPS/FG mixtures. The effect of SSPS-FG coacervates on microstructure and properties of SSPS/FG blend films were investigated. Results indicated that the film surface roughness and water contact angle were increased due to the presence of coacervates, while the water vapor permeability and Young's modulus were decreased. The SSPS/FG films containing coacervates had similar optical properties, tensile strength, heat seal ability and water sensitivity but improved thermal stability than the coacervate-free SSPS/FG films. When curcumin was incorporated into SSPS/FG films as an active ingredient, the complex coacervates effectively delayed the release of curcumin from the blend films into lipophilic food simulants. Thus, SSPS/FG blend films fabricated by complex coacervation could serve as potential substrates for developing active food packaging materials with satisfactory properties.

Release of Cinnamaldehyde and Thymol from PLA/Tilapia Fish Gelatin-Sodium Alginate Bilayer Films to Liquid and Solid Food Simulants, and Japanese Sea Bass: A Comparative Study

Jingwen Chen,Yinxuan Li,Wenzheng Shi,Hui Zheng,Li Wang,Li Li

This study aimed to develop an active biodegradable bilayer film and to investigate the release behaviors of active compounds into different food matrices. Cinnamaldehyde (CI) or thymol (Ty) was encapsulated inβ-cyclodextrin (β-CD) to prepare the activeβ-CD inclusion complex (β-CD-CI/β-CD-Ty). The tilapia fish gelatin-sodium alginate composite (FGSA) containingβ-CD-CI orβ-CD-Ty was coated on the surface of PLA film to obtain the active bilayer film. Different food simulants including liquid food simulants (water, 3% acetic acid, 10% ethanol, and 95% ethanol), solid dry food simulant (modified polyphenylene oxide (Tenax TA)), and the real food (Japanese sea bass) were selected to investigate the release behaviors of bilayer films into different food matrixes. The results showed that the preparedβ-CD inclusion complexes distributed evenly in the cross-linking structure of FGSA and improved the thickness and water contact angle of the bilayer films. Active compounds possessed the lowest release rates in Tenax TA, compared to the release to liquid simulants and sea bass. CI and Ty sustained the release to the sea bass matrix with a similar behavior to the release to 95% ethanol. The bilayer film containingβ-CD-Ty exhibited stronger active antibacterial and antioxidant activities, probably due to the higher release efficiency of Ty in test mediums. Keywords:biodegradable bilayer film;tilapia fish gelatin;β-cyclodextrin inclusion complex;release kinetics;food simulants;active activities

A fish-gelatin-modified multifunctional hydrogel with “salt-in-water” for dendrite-free flexible zinc-ion batteries

Wen-Long Cheng,Zi-Qiang Cheng,Zi-Zi Hu,Ming-Ming Hu,Guang-Xian Liu,Lin-Feng Yuan,Yan-Hui Fu,Xiao-Mei Sha,Zong-Cai Tu

Aqueous zinc-ion batteries (ZIBs) have emerged as promising next-generation energy storage solutions due to their high safety. Hydrogel electrolytes have garnered intensive interest for their applications in flexible ZIBs, combining mechanical flexibility with dendrite-suppression capabilities. However, conventional hydrogels suffer from three critical limitations: insufficient mechanical robustness, interfacial instability, and excessive salt dependence. Herein, we report a novel fish gelatin (FG)-modified polyacrylamide (PAM) hydrogel electrolyte fabricated via a facile protein chain network repair strategy. The optimized FG/PAM hydrogel electrolyte with 1 M ZnSO 4 exhibits superior mechanical properties, enabling ZIBs with flexible dendrite-free and prolonged lifespan. Specifically, the FG-modified hydrogel achieved a compressive strength exceeding 1078 kPa under 90 % compression and showed strong adhesion to diverse substrates. Electrochemically, the FG/PAM electrolyte exhibits excellent corrosion resistance and zinc-nucleation regulation capabilities, delivering a stable coulombic efficiency (CE) of 99.26 % and cycling stability over 2238 h. These results highlight the FG/PAM hydrogel in addressing mechanical integrity, interfacial compatibility, and long-term cyclability, providing a viable pathway for advanced flexible energy storage devices.

Glycosylation on the Antifreeze and Antioxidant Capacities of Tilapia Gelatin Hydrolysates

Ying Liu,Zongcai Tu,Qiuyu Lu,Shengnan Zhan,Ru Jia,Zhaohui Qiao,Huamao Wei,Tao Huang

The antifreeze and antioxidant capacities of tilapia (Oreochromis mossambicus) gelatin hydrolysates were investigated, after glycosylation with saccharides of varying molecular weights, to enhance their functional properties to widen its commercial application in frozen aquatic products. Glycosylation was conducted by mixing gelatin hydrolysates with ribose, glucose, maltose, and dextran (20 kDa) at a 1:1 mass ratio; the glycosylation products had a pH of 10 and were incubated at 80 °C for 1 h. The results showed that the glycosylation degree ranked as: ribose > glucose > maltose > dextran. The mass spectrometry analysis showed that 17, 32, and 5 glycosylation sites were identified for ribose, glucose, and maltose, respectively, suggesting a molecular weight-dependent effect. Spectroscopic analyses, including ultraviolet and infrared spectroscopy, revealed that the gelatin hydrolysate structure was expanded, with chromophores in hydrophilic environments; a blue shift in the amide A and II bands confirmed that the amino group was involved. Fluorescence spectroscopy showed conformational changes with a red shift at 303.4 nm and a reduction in intensity. Antifreeze activity, such as catalase freezing protection and shrimp surimi protein stability, and antioxidant activity, including radical scavenging and metal ion chelation, were significantly improved. Ribose exhibited the strongest effects, followed by maltose and glucose. These results demonstrate the potential of glycosylation to improve gelatin hydrolysates for functional applications.

Edible Films Based on Fish Gelatin and Soluble Soybean Polysaccharide Enriched with Tea Polyphenol for Active Food Packaging

Jie Liu,Zhongfeng Song,Yiwei Wang,Ying Pei,Keyong Tang

The increasing demand for environmentally friendly alternatives to conventional plastic packaging has driven interest in the development of biodegradable edible films with functional properties. In this work, edible blend films were developed based on fish gelatin (FG), soluble soybean polysaccharide (SSPS), and tea polyphenol (TP) for active food packaging applications. The FG/SSPS/TP films were prepared by solvent casting and characterized in terms of their structural, mechanical, optical, thermal, and barrier properties. FTIR, SEM, and XRD analyses revealed TP-induced morphological and structure changes in the biopolymer matrix. The incorporation of TP significantly enhanced the antioxidant activity and UV-shielding properties of the films, while also modifying their flexibility and surface hydrophilicity. The packaging performance of FG/SSPS/TP films was evaluated using beef tallow as a model food product. Compared to neat FG/SSPS and polyethylene films, the FG/SSPS/TP films effectively suppressed lipid oxidation of the samples during storage. The results demonstrated that the prepared FG/SSPS/TP films possess strong potential for use as edible and active packaging materials for food products.
