Baijiu represents the pinnacle of traditional Chinese culinary culture. The influence of Baijiu is evident in various literary works, rituals and banquets, dishes and healthcare, and numerous other areas. The reduction of substances plays a pivotal role in the flavor, aroma, and quality control of Baijiu. Therefore, the present work focuses on Baijiu and the reducing substances in it. In this study, CDs@ZrFe-MOF and three distinct catalase nanase substrates (ABTS, OPD, and TMB) were employed to create fluorescence and colorimetric dual-mode sensor arrays. The oxidation of the enzyme substrate into the appropriate oxidation substrate is facilitated by CDs@MOF in the presence of H₂O₂. The reducing substance effectively inhibits the formation of the oxidation substrate, resulting in alterations in fluorescence and UV intensity. The dual-mode sensor array was found to be effective in detecting 15 different types of reducing chemicals. Furthermore, the colorimetric and fluorescence sensor array demonstrated exceptional detection capability in detecting 19 different types of Luzhou-flavor liquor samples, achieving a 100% accuracy rate. This study will provide an accurate and rapid method for differentiating Baijiu.

Glyphosate (Gly) overuse threatens public health and ecosystems, necessitating highly sensitive detection. This work developed a novel ratiometric fluorescent probe, CDs@Cu-MOF/TMTA-COF, by integrating carbon dots (CDs), metal organic frameworks (MOFs), and covalent organic frameworks (COFs). We encapsulated CDs within Cu-MOF in-situ grown onto sp 2 ‑carbon conjugated TMTA-COF. Gly binding to Cu 2+ causes MOF structural collapse, releasing CDs and enhancing its fluorescence at 425 nm. Simultaneously, Gly inhibits competitive absorption and acceptor-photoinduced electron transfer process between TMTA-COF and Cu-MOF, increasing COF fluorescence at 550 nm. This dual-signal change enables ratiometric Gly detection from 0.2 to 40 μM, with a detection limit of 0.07 μM. This probe was successfully used to measure Gly in soil, Yellow River water and soybean (recoveries: 95.3–104.1 %). Additionally, the back propagation neural network further enables fast detection of Gly. This work demonstrates the potential of MOF/COF hybrids for fluorescence sensing for pesticide analysis and paves the way for intelligent sensing platforms.
Nanomaterial selection is critical for photoelectrochemical (PEC) sensing. In this report, a novel cathodic photoelectrochemical (PEC) strategy was proposed for the detection of doxorubicin hydrochloride (Dox) and gentamicin sulfate (CN). The photocathode was synthesized by noncovalently coupling cadmium sulfide (CdS) to the porphyrin-derived metal–organic framework (CdS@PCN-224). This type of assembly created a pleasant interface for the combination of doxorubicin hydrochloride and gentamicin sulfate, resulting in a good CdS@PCN-224 donor–acceptor system. When compared to a single optoelectronic material, its photocurrent is enhanced by unprecedented nine times. This research could pave the way for the realization of PCN-224’s enormous potential in PEC sensing.
