Janus droplets exhibit an asymmetric structure, where one droplet has two compartments with different properties. However, food-grade Janus droplets are rarely reported. In this work, food-grade Janus droplets composed of alcohol-soluble protein and alginate were fabricated for the first time by the one-step in-situ method. Segregative phase separation and interfacial equilibrium of zein and alginate solutions were the prerequisites for the formation of food-grade Janus droplets. Segregative phase separation occurred when the concentration of zein and alginate solutions was increased. The zein in the aqueous phase synergistically reduced the oil-water interfacial tension with polyglycerol polyricinoleate (PGPR), but the alginate weakened the interfacial ability of PGPR, resulting in an increase of oil-water interfacial tension. Therefore, the interfacial tension difference between zein/oil and alginate/oil could be regulated by changing the concentration of zein and alginate solutions, which was beneficial to the interfacial equilibrium. The droplet size of food-grade Janus droplets could be adjusted by the concentrations of zein and alginate solutions. In addition, the Janus droplet structure could be further controlled by the volume ratio of zein and alginate solutions. The destabilization of food-grade Janus droplets was dominated by coalescence and sedimentation. The construction of food-grade Janus droplets is expected to provide a structural basis for the construction of food-grade Janus particles and promote the development of food technology.

The ability to control the mobility and function of droplets is fundamental to developing open surface microfluidics. Despite notable progress in the manipulation of droplets, the existing strategies are still limited in functionalizing droplets. Herein, the coupling of droplet motion and functionalization elicited by an invisible charge wall is reported. The charged superamphiphobic surface is overlapped with a conductor to induce free charge, creating the invisible charge wall at the overlapping boundary. The charge wall can trap droplets and polarize them into Janus charged state. It is found that the trapping degree and the charge distribution in the Janus charged droplet depend on the original surface charge on the superamphiphobic surface. The invisible charge wall can also be established at diverse boundary curvatures, allowing to design pathways for droplet manipulations. Furthermore, the enrichment of protein and nanomaterial in the manipulated Janus charged droplet is demonstrated. The strategy provides a potential microfluidic platform with orthogonal functionalities.

The behavior of neck breakup and the prediction of droplet volume during Janus droplet generation are investigated experimentally. The generation processes of Janus droplets can be divided into four distinct stages: the uniform extension stage, the accelerated extension stage, the radial necking stage and the rapid breakup stage, while the first two stages represent the filling stage of the droplet tip. Under varying continuous phase flow rates, the diameter of the droplet neck has the uniform evolution with time, and the droplet interface profiles exhibit self-similar characteristics. Differences in the physical properties of the two dispersed phases result in asymmetric contraction at the upper and lower interfaces of the Janus droplet neck, but this influence is reduced near the breakup time of the droplet in the way that the neck contraction tends to synchronize. The volume prediction model is proposed based on the local capillary number of the continuous phase, which demonstrates that the droplet volume consistently decreases as the continuous phase flow rate increases.

Phase separation technology has attracted extensive scientific interest because of its intriguing structure changes during the phase separation process. Phase separation inside emulsion droplets in continuous surroundings has been well studied in recent years. Many investigations have also been conducted to study the droplet phase separation phenomena in noncontinuous surroundings. However, studies on the phase separation phenomena and the spreading behavior of suspended droplets at the air–liquid interface were rarely reported. In this study, PEGDA-glycerol suspended Janus droplets with a patchy structure were produced by utilizing solvent evaporation-induced droplet phase separation at the air–liquid interface. By altering the glycerol/PEGDA volume ratio, the initial proportion of ethanol, and the concentration of surfactants, suspended droplets with different morphologies can be achieved, which include filbert-shaped droplets (FSDs), half lotus seedpod single-phase Janus droplets (HLSDs), lotus seedpod single-phase Janus droplets (LSDs), lotus seedpod-shaped droplets (LSSDs), multiple-bulge droplets (MBDs), and half gourd-shaped droplets (HGSDs). A patchy structure was generated at the air–droplet interface, which was attributed to the Marangoni stresses induced by nonuniform evaporation. Furthermore, a modified spreading coefficient theory was constructed and verified to illustrate the phase separation at the air–droplet interface, which was the first research to predict the phase separation phenomena at the air–liquid interface via spreading coefficients theory. Moreover, we studied the factors that led to the droplets being able to float by designing the combined parameters, including three interfacial tensions and the equilibrium contact angles. Therefore, a simple and versatile strategy for creating suspended Janus droplets has been developed for the first time, which holds significant potential in a variety of applications for material synthesis, such as the electrospinning solution behavior when sprayed from the nozzle into the air.

In living systems, highly efficient biological micromotors are fascinating and crucial to the maintenance and regulation of normal functions. Inspired by this, solid colloid motors with controlled movements were recently developed for diverse applications. However, to meet the requirements of more elaborate functionalities, the development of droplet-based micromotors, which feature with appealing advantages such as deformability, encapsulation capability, and biocompatibility, is demanding. Herein, responsive Janus droplets with intrinsic magnetic anisotropy were fabricated, taking advantage of the traditional one-step vortex mixing that guarantees large-scale production. Furthermore, the size range of the droplets can be easily extended continuously from hundreds of micrometers down to tens of nanometers. What is more appealing, directed in situ group motions that include alignment, rotation, and transfer of the Janus droplets prepared were successfully realized and precisely controlled by using an external magnetic field. These collective motions induced excellent performances in pollutant adsorption and separation, switchable conductivities, and the size grading. Such scalable, simple, and controllable strategy can expand the application of Janus emulsions to complicated fields of microreactors, microsensors, and environmental regulation.
