Pickering emulsifiers based on enzymatically modified quinoa starches: Preparation, microstructures, hydrophilic property and emulsifying property

Liang Zhang,Ting Xiong,Xian-Fen Wang,Dong-Ling Chen,Xu-Dong He,Chen Zhang,Chunsen Wu,Qian Li,Xiangli Ding,Jian-Ya Qian

Quinoa starch was developed as a new kind of Pickering emulsifier by enzymatic modification. The morphological structure, crystalline structure, lamellar structure, fractal structure, particle size distribution, contact angle, emulsion index (EI), and emulsion micromorphology were studied to explore the relationship between structure characteristics, hydrophilic property, and emulsifying properties of enzymatically modified (EM) quinoa starches. With the increasing enzymatic hydrolysis time in the test range of 0–9 h, particle size of EM quinoa starch decreased, and the broken starch and contact angle of EM quinoa starch increased; the EI value of emulsions with EM quinoa starch increased, and the oil droplet size of emulsions with EM quinoa starch decreased. It suggested that both the smallest particle size and the closest extent of the contact angle to 90° derived the best emulsifying property of EM-9. The EM quinoa starch had higher emulsifying capacity at higher oil volume fraction (Φ) (50%) than at lower Φ (20%), proving that the EM starch has potential to be used as Pickering emulsifiers in higher oil products, such as salad dressing.

Surface modification of sodium hyaluronate with ferulic acid to enhance its application performance

Qianjie Zhang,Pingli Wang,Dongmei Zhang,Shilian Zheng,Wanping Zhang

Hyaluronic acid (HA) is a mucopolysaccharide alternately linked by glucuronic acid and n -acetylglucosamine, which is usually used as a moisturizer in cosmetics. In this study, HA derivative (FA-HA) was prepared by modifying sodium hyaluronate with ferulic acid (FA). The chemical and morphological structure of FA-HA were characterized by UV, FTIR, 1 H-NMR, DLS and TEM. The results showed that FA was grafted onto HA chains via ester bonds and self-assembled into nanoparticles in aqueous solution. The introduction of FA endowed the nanoparticles with antioxidant function. The FRAP value of 10 mg/mL FA-HA was 1.985 mM, and the clearance rate of O 2 − , DPPH + and ABTS + could reach 83.13%, 88.86% and 99.48% respectively. Moreover, FA-HA can be used as Pickering emulsifiers to stabilize the emulsion. The results showed that the size of emulsion droplets decreased as the concentration of FA-HA increased. When the mass ratio of oil to water was 7/3, the emulsion droplets were the smallest. The addition of sodium chloride will increase the size of emulsion droplets, destroying the stability of the emulsion. In addition, FA-HA was also universal and was capable of emulsifying alkanes, esters, and natural oils, which was expected to be applied in the cosmetics and food fields.

Oppositely Sensitive pH-Responsive Surfactants Derived from Polymer-Grafted Carbon Dots

Tianhao Zhang,Junjie Fan,Wenxiu Qiu,Xinyu Yuan,Jianwen Hu,Haotian Gao,Wenqing Xie,Chunling Li,Shuangqing Sun,Songqing Hu

This study reports the development of two pH-responsive Pickering emulsifiers utilizing carbon dots (CDs) as the core component. Both emulsifiers were fabricated via a post-synthetic method, involving the grafting of poly[2-(dimethylamino)ethyl methacrylate] (PDMAEMA) onto the surface of CDs to create CD-based emulsifier. Notably, despite employing an identical synthetic route, the two CD-based emulsifiers exhibit markedly distinct pH-responsive behaviors. The findings demonstrate that both CD-based emulsifiers effectively stabilize Pickering emulsions, and their emulsification and demulsification behaviors can be precisely controlled by adjusting the pH, displaying excellent reproducibility in their pH-responsive performance. To elucidate the underlying reason for this differing pH-responsiveness, the concept of hydrophilic-lipophilic balance (HLB) was introduced. The analysis of the HLB values of the two CD-based emulsifiers revealed that their hydrophilic-lipophilic properties exhibit opposite trends under differing pH conditions, contributing to their contrasting pH-responsive behaviors. This study not only lays a fundamental basis foundation and offers guidance for further research and applications of CD-based smart-responsive emulsifiers but also presents novel insights into design and development of more intelligent and functional emulsifying agents. Moreover, owing to the enhanced fluorescence characteristics of CDs, these pH-responsive emulsifiers hold significant potential for interdisciplinary applications, such as oil and gas exploration and fluorescent labelling.

Effect of comonomer on the Cu-BDC/Poly(NMA-coSAS) foams templating from CO2-in-water emulsion: Adsorptive and bacteriostatic applications

Zhen Yang,Liqin Cao,Yongmao Qian

Herein, Cu-BDC/poly( N -methylol acrylamide- co -sodium allyl sulfonate) [Cu-BDC/P(NMA- co -SAS)] macroporous foam was synthesized templating from CO 2 -in-water (C/W) high internal phase emulsions (HIPEs), and using Cu-BDC as Pickering emulsifier . The features of the macroporous monolith, such as structure and void diameter, can be adjusted by changing the emulsion composition . The resultant macroporous foams have a low bulk density (0.317 g cm −3 ), high porosity (79.60 %), suitable pore volume (3.956 cm 3  g -1 ), and pore size ranging from 5.46 μm to 36.47 μm. The maximum swelling degree of 20.7 g/g for the composite foam was obtained when a high MBAM dosage of 12.5 wt% was used. Moreover, adsorption behavior and antibacterial property of the composite foam with 5.0 wt% Cu-BDC were investigated. The results proved that the obtained foam could behave as a potential multi-functional antibacterial material.

Multi-responsive Pickering emulsifiers: a comprehensive study on the emulsification–demulsification behavior of modified chitosan-coated Fe3O4 nanocomposites

Jianwen Hu,Mingshuo Chi,Runna He,Junjie Fan,Haotian Gao,Wenqing Xie,Kunxiu Dai,Shuangqing Sun,Songqing Hu

The surface characteristics of stimuli-responsive Pickering emulsifiers can be modified by external environmental triggers, making them highly versatile in various applications. In this study, we report three novel organic–inorganic composite structure emulsifiers. These emulsifiers were designed with a core of magnetic Fe3O4 particles, surrounded by a protective silica layer, and coated on the exterior with three distinct types of modified chitosan (CS). Experimental results demonstrate that these emulsifiers can stabilize emulsion systems consisting of liquid paraffin and deionized water at a concentration of 0.5 wt%. The unique properties of the modified CS coatings allowed for the controlled demulsification of two types of emulsions by adjusting the proton concentration. Additionally, these emulsifiers exhibited magnetic-responsive demulsification under the control of an external magnetic field. The findings of this study provide valuable insights into the design and construction of multi-responsive chitosan-based magnetic Pickering emulsifiers with controllable properties.

Pickering emulsification of pyrrolidone-based block copolymer aggregates: Effects of copolymer composition and oil

Chunhui Li,Shuozhen Cheng,Jinfeng Dong,Xuefeng Li

A series of block copolymers poly ( N -2-(methacryloyloxy) ethyl pyrrolidone)- b -poly (benzylmethacrylate) (PNMP 39 - b -PBzMA n ) were developed. These amphiphilic copolymers formed diversified aggregates in water, depending on the degree of polymerization n of the PBzMA segment. There presented the n -induced morphological transition from spherical micelles to vesicles via wormlike micelles. Moreover, PNMP 39 - b -PBzMA n aggregates were excellent dual function emulsifiers, showing similarity with both particles and surfactants simultaneously. The emulsification of PNMP 39 - b -PBzMA n aggregates was affected significantly by the degree of polymerization n of the PBzMA segment and oil. However, the effect of oil was more remarkable in comparison with that of n , in which the compatibility between oil and the hydrophobic PBzMA segment was critical. In general, O/W and W/O emulsions were formed for oils with poor and good compatibility to the PBzMA segment such as nonpolar alkanes and toluene, respectively. In these cases, PNMP 39 - b -PBzMA n aggregates were remained in water in the alkane/water systems, whereas they were transferred into the toluene phase according to the similarity-intermiscibility principle. For isopropyl myristate, a polar oil with the intermediate compatibility to the PBzMA segment, PNMP 39 - b -PBzMA n in water were transferred into the oil phase partially. Accordingly, emulsifiers in water and oil benefit the formation of O/W and W/O emulsions, respectively, as observed in the alkane/water and toluene/water systems. As a result, O/W and W/O emulsions were generated by PNMP 39 - b -PBzMA n with relatively small and large n , respectively. For PNMP 39 - b -PBzMA n with the intermediate n , W/O/W multiple emulsions were formed attributing to the synergistic emulsification of PNMP 39 - b -PBzMA n in water and oil.

Multiresponsive Behavior of the Pickering Emulsifier and Its Application for Collecting Small Oil Droplets in Water

Jing Li,Keran Li,Qin Zhang,Lifei Peng,Xiaoping Zhu

Responsive Pickering emulsions, with unique nanoparticle interfaces and sensitivity to external stimuli, significantly enhanced the stability and applicability of Pickering emulsions. Multifunctional composite material poly((2-(dimethylaminoethyl methacrylate)-b-(acrylate cyclodextrin))/Fe3O4 nanoparticles, namely P(DMAEMA-b-A-CD)/Fe3O4, with both multiresponsive characteristics and emulsifying capabilities had been designed to remove small oil droplets from water. Using the reversible addition–fragmentation chain transfer (RAFT) method, diblock polymers P(DMAEMA-b-A-CD) were grown in a controlled manner on the surface of Fe3O4. The Fe3O4 core showed responsiveness to a magnetic field, and the block copolymers prepared via the RAFT method demonstrated reactivity to both pH and CO2. The P(DMAEMA-b-A-CD)/Fe3O4 nanoparticles exhibited the capability to form Pickering/Oxford emulsions with exceptional stabilization properties. It could be observed that the introduction of CO2, acid, and a magnetic field led to the breakage of the emulsion, while the emulsion could be restabilized by removing the CO2 and the magnetic field or by adding alkali. Measurements of interfacial tension, ζ-potential, and contact angle demonstrated that the emulsification/breakdown mechanisms associated with pH and CO2/N2 were related to the surface wettability of the nanoparticles. In addition, the emulsifier had an excellent cycling capacity with at least 10 cycles by CO2/N2. Additionally, P(DMAEMA-b-A-CD)/Fe3O4 nanoparticles exhibited excellent stability in oil phases with large polarity differences and various real oil phases with different viscosities. Importantly, the P(DMAEMA-b-A-CD)/Fe3O4 nanoparticles could serve as functional materials for efficiently separating small oil droplets from water through the application of a magnetic field. Therefore, P(DMAEMA-b-A-CD)/Fe3O4 nanoparticles held promising potential as materials with economic and commercial value for oil–water separation applications.

Hot-water soluble fraction of starch as particle-stabilizers of oil-in-water emulsions: Effect of dry heat modification

Zhenhuan Peng,Minghua Wu,Qichao Liao,Nanwei Zhu,Yue Li,Ying Huang,Jianyong Wu

Dry heat treatment (DHT) ranging from 130 to 190 °C was employed to modify corn starch . The hot-water soluble fraction (HWS) of the DHT-modified starch was isolated, and its capacity and mechanism for stabilizing O/W emulsions were investigated. Corn starch underwent a significant structural transformation by DHT at 190 °C, characterized by a 7.3 % reduction in relative crystallinity, a tenfold decrease in weight-average molecular weight from 95.21 to 8.11 × 10 6  g/mol, and a degradation of over one-third of the extra-long chains of amylopectin (DP > 36) into short chains (DP 6–12). These structural modifications resulted in a substantial formation of soluble amylopectin , leading to a sharp increase in the HWS content of corn starch from 3.16 % to 85.06 %. This augmented HWS content surpassed the critical macromolecule concentration, prompting the formation of HWS nanoaggregates. These nanoaggregates, with an average particle size of 33 nm, functioned as particle stabilizers, ensuring the stability of the O/W emulsion through the Pickering mechanism. The O/W emulsion stabilized by HWS nanoaggregates exhibited noteworthy centrifugal and storage stability, with rheological properties remaining nearly unchanged over a storage period of 180 days. Given its straightforward preparation process, the HWS of DHT-modified starch could be a promising natural emulsifier .

Diblock Copolymer Nanoparticles Bearing Phenols: Potential Stimuli-Responsive Pickering Emulsifiers with Antioxidant and Antibacterial Activities

Jiani Peng,Yong Gao

Core–shell structure diblock copolymer nanoparticles carrying phenolic groups in the core domain were prepared through the combination of RAFT-mediated dispersion polymerization and the hydrolysis of postpolymerization in this study. Poly(2-(dimethylamino)ethyl methacrylate)23 (PDMAEMA23) was first synthesized through RAFT-mediated solution polymerization, which was then utilized as macro-CTA to mediate the dispersion polymerization of 4-tert-butoxystyrene (tBOS) in isopropanol/water (8:2, v/v) mixtures. PDMAEMA23-PtBOSx diblock copolymer nanoparticles with different morphologies, including spheres, worms, and vesicles, were produced. Subsequently, the selected PDMAEMA23-PtBOS490 vesicles underwent hydrolysis in an acidic environment. During the hydrolysis, tBOS repeat units were partially converted into 4-vinylphenols (VPl), affording polymer nanoparticles bearing phenolic groups in the core domain, accompanied with a gradual morphological transition from vesicles to spheres. The content of VPl units in the core domain could be flexibly adjusted by varying the hydrolysis time. The as-prepared diblock copolymer spheres demonstrated a unique combination of stimuli-responsive emulsifying performances and intrinsic antioxidant activity, as well as antibacterial effectiveness.
