Understanding the thermal behavior of emulsions with complex structures was crucial for wider applications. However, the correlations between the structural units and emulsion properties at different temperatures are poorly understood. Herein, W/O emulsions stabilized by oleogels and nanoparticles were studied during thermal process, and dynamic interactions among the structural units occurred at micro-, meso-, and macroscales. Results revealed that the thermal behavior of W/O emulsions shifted from stable (25–50 °C) to sub-stable (50–60 °C), and unstable states (60–80 °C). Microstructural analysis confirmed that the particles desorbed from the interface and dissolved in the oil phase after heating, causing water droplet coalescence in the emulsions. This was attributed to the enhanced hydrophobic interactions between the particle dispersions and the oleogel, as the contact angle and interfacial tension were decreased during heating. At the mesoscale, the T 2 values of oleogels and nanoparticle dispersion were increased more than three times from 25 °C to 80 °C, leading to the higher mobility of protons in emulsions. At the macroscale, the viscoelastic modulus of emulsions at higher temperature were higher, together with less energy dissipated by friction and increased nonlinear response. Furthermore, the temperature-induced transformation of emulsion stability can be reversibly controlled at least three times. Insights into the complex behavior of emulsions across different temperature stages can inspire the design of emulsions for specific applications.

Polyacrylamide and its derivatives are widely used in oilfields due to their efficient viscosity building and drag-reducing properties. At present, the commonly used products of polyacrylamide include two types: polymer powder and polymer emulsions. However, the low dissolution rate of powdered products and the instability of polymer emulsions limit their application. Here, we constructed a pH-sensitive inverse polymer emulsion of poly(acrylamide-co-acrylic acid-co-2-acrylamide-2-methylpropyl sulfonic acid), showing a phase separation and phase inversion from W/O to O/W at pH < 6 and pH > 8 due to a pH-switchable surfactant N,N-dimethylcyclohexylamine/Oleic acid complex (DM–OA). The demulsification or phase inversion of the W/O polymer emulsion can release the polymer that was originally in the aqueous phase, and the released polymer can quickly dissolve in water to perform its function of viscosity building and friction reduction. Therefore, this pH-sensitive modified-polyacrylamide polymer emulsion shows a fast dissolution rate with a dissolution time of about 1 min and a long storage stability. The utilization of stimuli-responsive surfactants to construct pH-responsive water-soluble polymer W/O emulsions provides a new approach to the preparation of water-soluble polymer emulsion additives that can be quickly dissolved and stored for long periods of time in water-treatment, papermaking and oil recovery fields.

Double emulsions (e.g., O/W/O and W/O/W emulsions) have important applications in healthy food development for food industry. Herein, we prepared O/W/O and W/O/W emulsions by two-step emulsification method only using two food grade emulsifiers (Octenyl succinate starch ester (OSA starch) and polyglycerol polyricinoleate (PGPR)), respectively. The optimal process parameters (in external emulsion and internal emulsion) for the preparation of O/W/O and W/O/W emulsions were systematically studied. It is noteworthy that the facile conversion of the two O/W/O and W/O/W emulsions could be achieved by changing the order of emulsifier addition. The double emulsions can be used for co-loading of plant-derived selenium-enriched peptide (Se-peptide) and vitamin E (V E ) with efficient loading rates, and the emulsions of encapsulated Se-peptide and V E have good antioxidant properties. The results of fuzzy numerical sensory evaluation and electronic nose showed that both emulsion systems were effective in masking the odor of Se-peptide.

This study reported a novel approach to stabilize W/O emulsions with nanoparticles and oleogel from ethylcellulose (EC), and the emulsions were applied for multiple delivery. Microstructural observations revealed that EC nanoparticles were distributed within the water droplets and at the interface, and EC oleogel was in the continuous phase. Storage modulus and viscosity were higher, and thixotropic structural recovery rates were lower, in the emulsions with more EC nanoparticles. Both EC nanoparticles and oleogels worked to stabilized the emulsions upon freeze-thawing, as only minor water or oil was released. Upon heating, some EC nanoparticles transited from the interface to the oil phase, and water droplets were aggregated. The interface was recreated when the samples were re-emulsified. When curcumin and anthocyanin were incorporated, both bioactives had improved light stability. During in vitro study , curcumin was mostly released at the early stage of intestinal digestion, while anthocyanin was released at later stage.

The emulsion separation of oily wastewater is always a challenge topic in both fundamental research and practical application. In this paper, polyvinyl alcohol formaldehyde composite sponges (PVF/PVF) with hierarchical pore structure were established by physical absorption/chemical crosslinking and hydrophobic modification via introducing hydrophobic long alkyl chain. As a result, pore size was adjusted from 74.8 µm of pristine PVF to less than 20 µm of hydrophobic PVF, the water contact angle was 120° for final as-prepared sponges, i.e. size sieving and surface wettability could meet the need of emulsion separation. As-prepared sponges could separate W/O (water-in-oil) emulsion efficiently only under the action of gravity, with a maximum flux of 2.9 × 10 5 L m -2 h −1 bar −1 and separation efficiency nearly 100 %. More importantly, the as-prepared sponges displayed excellent reusability, which could be recovered by simply washing. These composite sponges, which were obtained by a simple method and low cost, could be easily scaled up in practical production process, providing an outstanding candidate material for efficient W/O emulsion separation.

The CaCO3 encapsulated liposome with pH sensitivity is an efficient carrier for the delivery of chemotherapeutic drugs. Herein, we provided an innovative method that take advantage of a W/O emulsion to prepare CaCO3 encapsulated liposomes for the delivery of curcumin. The liposomes with both CaCO3 and curcumin encapsulated (LCC) showed high sensitivity to reduced pH (the environment of lysosomes). Due to the inherent pH sensitivity of CaCO3, LCC swelled and released the encapsulated curcumin rapidly in acidic medium. The lysosome escape capability and promoted accumulation of curcumin in the cytosol from LCC was verified with respect to that of curcumin loaded liposomes (CLIPO). Despite the similar cytotoxicity within curcumin preparations in vitro at high concentration, LCC exhibited optimal antitumor effect in an azoxymethane (AOM)/dextran sodium sulfate (DSS)-induced colorectal cancer model, which was attributed to the long circulation time and efficient intracellular delivery of curcumin from LCC. It is suggested that the solubility and cytosolic delivery of curcumin are greatly improved by LCC, which accounts for the increased pharmacodynamic effect of curcumin. Thus, the CaCO3 encapsulated liposomes developed in this study is an ideal carrier for the hydrophobic drugs in potential clinical application.

Efficient separation of water-in-oil (W/O) emulsions is essential for wastewater treatment, yet conventional electrospun membranes often suffer from poor mechanical properties, large inter-fiber pores and structural instability. Here, we propose a coaxial electrospinning strategy that combines a PVDF/CNC core with a PDMS shell to construct a hierarchical superhydrophobic membrane. The incorporation of CNC induces nonsolvent-driven microphase separation during electrospinning, generating spindle- and nanosphere-like surface structures while reinforcing the fibrous network. Meanwhile, the PDMS shell contributes to inter-fiber connectivity and enhances surface hydrophobicity. These synergistic effects result in an interlocked porous architecture that supports gravity-driven separation of W/O emulsions. At 4 wt% CNC, the membrane achieves a water contact angle of 158°, an average pore size of 1.93 μm and a flux of 2890 L m −2 h −1 , while maintaining over 94 % separation efficiency over 20 cycles. This work provides a sustainable strategy for tailoring structures for effective W/O emulsion separation.

In this study, W/O emulsions incorporated with various proportions of two hydrocolloids , namely, methylcellulose (MC) and hydroxypropyl methylcellulose (HPMC), were prepared. The shear viscosity, microstructure, and lipolysis of the W/O emulsions before and during in vitro digestion in the dynamic (DIVHS) and semi-dynamic gastrointestinal models were evaluated and compared. The shear viscosity of both emulsions increased with the addition of MC and HPMC content up to a certain limit (0.5–2%), whereas it significantly decreased at a higher addition level (4%) due to the increased flocculation and coalescence in higher cellulose ethers. The HPMC emulsions (2 wt % in aqueous phases) showed higher viscosity and larger droplet size than the equivalent MC emulsions before and during simulated digestion, accompanied by the lower extent of lipolysis. These results are in line with the formation of a more compact and stronger gel structure in HPMC emulsions, which could retard lipase adsorption at the W–O interface. For both emulsions at the same concentration (40 wt%), a higher extent of free fatty acid (FFA) release was found during digestion in the dynamic system (HPMC ꞊ 62%, MC ꞊ 72%) compared to that in the semi-dynamic model (HPMC ꞊ 58%, MC ꞊ 70%). This behavior was supported by the smaller droplet size of emulsions digesta collected from the dynamic system having a larger surface area. Overall, the present study suggested that the dynamic DIVHS system was more effective in enzymatic hydrolysis of the W/O emulsions investigated than the semi-dynamic model under the current experimental conditions. This work had provided valuable insights into the modulation of the structural and digestive properties of W/O emulsions by the addition of MC and HPMC, which could be meaningful for the development of healthier emulsion-based food products ( e.g ., margarine and spreads) with reduced lipid digestibility.

Dimethyl disulfide (DMDS), a promising alternative fumigant, has been highly desirable for excellent management of soil pests and diseases. However, high volatility and moderate toxicity of this sulfide limit its application. To address these issues, a novel controlled release formulation of DMDS was proposed employing multiple emulsions and polyurea microcapsules (DMDS@MEs-MCs). The successful combination of the two technologies was revealed by confocal laser scanning microscopy, scanning electron microscopy, thermogravimetric analysis, and Fourier transform infrared. According to the multiple encapsulation structure, the encapsulation efficiency decreased by only 3.13% after thermal storage, compared with a 15.21% decrease of microcapsules made with only a monolayer film. DMDS@MEs-MCs could effectively control the release of active ingredient, which increased applicator and environmental safety during application. Moreover, it could be facilely used by spraying and drip irrigation instead of a special fumigation device. The innovative formulation exhibited better control efficacy on soil pathogens (Fusarium spp. and Phytophthora spp.) and root-knot nematodes (Meloidogyne spp.) than DMDS technical concentration (DMDS TC). In addition, it did not inhibit seed germination after 10 days when the plastic film was removed from the fumigated soil. This method appears to be of broad interest for the development of safe and handy fumigant application.

The Janus nanoparticles stabilized Pickering emulsions showed great application potential in various fields, including enhanced oil recovery (EOR). In this study, the amphiphilic Janus-SiO 2 nanoparticles (Janus-C12) are successfully synthesized by the Pickering emulsion method and characterized by Fourier transform infrared spectroscopy (FT-IR), thermogravimetric analysis (TGA), ζ-potential and contact angle measurements. The phase inversion from oil-in-water (O/W), multiple oil-in-water-oil (O/W/O) emulsion, to water-in-oil (W/O) emulsions was observed with the delicate control for the modification degrees of Janus-C12. The possible emulsification mechanisms for various Janus-C12 stabilized emulsions were proposed. The multiple O/W/O emulsion stability in harsh conditions and the influence factors (nanoparticles concentration, water/oil volume ratio and NaCl concentration) were studied systematically. Moreover, the Janus-C12–79% stabilized multiple O/W/O Pickering emulsions exhibited excellent EOR performance (additional oil recovery of 27.2%) in core flooding tests, and the possible EOR mechanism was explored via microscopic visualization experiments.

Homoarm and heteroarm core cross-linked star (CCS) polymers based on poly(N,N-dimethylacrylamide) (PDMA) as the high-polarity arm and poly(2-methoxyethylacrylate) (PMEA) as the low-polarity arm were efficiently prepared via reversible addition-fragmentation chain transfer (RAFT) polymerization in a dispersion polymerization system. PDMA and PMEA arm polymers exhibited similar conversion rates, such that their composition in the heteroarm CCS polymers was easily controlled by the feed ratio in the synthesis. The ability to control the arm composition allowed facile tuning of the polarity of the CCS polymers. Heteroarm CCS polymers self-assembled in water to form aggregates and their size was related to the composition and polarity of the CCS polymers. The composition and polarity of the CCS polymers significantly affected the emulsifying behaviour of the CCS polymers as emulsifiers. Oil-in-water (o/w) emulsions were favoured for CCS polymers with relatively high polarity and lowering the polarity of CCS polymers to a certain degree enhanced the stability of the emulsions. Multiple emulsions, both o/w and water-in-oil (w/o), were gradually produced when the polarity of CCS polymers was gradually lowered and the oil fraction in the emulsion samples was gradually increased, and at the same time the emulsions also became increasingly less stable.
