Zanthoxylum armatum DC Prodr. pericarp (ZAP) is an important spice because of its unique odor and taste. ZAP oil was obtained by supercritical carbon dioxide extraction. To characterize potent odorants in ZAP oil, volatiles were isolated by headspace solid-phase microextraction and solvent-assisted flavor evaporation. Gas chromatography–mass spectrometry–olfactometry analyses identified a total of 32 odor-active compounds, and their flavor dilution (FD) factors, ranging from 2 to 4096, were measured by aroma extract dilution analysis. To further determine their contributions to the characteristic odor of ZAP oil, 24 odorants with FD factors ≥8 were quantitated, and their odor activity values (OAVs) were calculated. Sixteen compounds with OAVs ≥1 contributed to the characteristic aroma profile of ZAP oil. Linalool had the highest FD factor, concentration and OAV, and its chiral structure was identified as S -(+)-linalool.

Pathogenic plant oomycetes cause devastating damage to fruits and vegetables worldwide. Plant essential oils (EOs) are known to be promising candidates for the development of fungicides. In this study, we isolated twelve EOs fromTetradium ruticarpum,Tetradium daniellii,Tetradium fraxinifolium,Zanthoxylum armatum,Ruta graveolens, andCitrus medicaleaves and fruits. We then investigated their chemical composition and antifungal activity against phytopathogenic oomycetes. Our results demonstrated thatZ. armatumfruit essential oil (ZFO) in particular substantially inhibited the mycelial growth ofPhytophthora capsici. Similarly, ZFO also strongly suppressed spore production and germination ofP. capsici, and the application of ZFO significantly reduced disease symptoms caused byP. capsiciin pepper. Furthermore, results from microscopic and biochemical studies indicated that ZFO damaged the ultrastructure and destroyed the membrane integrity ofP. capsici, leading to the leakage of the cellular contents and ultimately causing cell death. It was concluded that ZFO could enhance the activities of defense-related enzymes in pepper fruits, which may also be responsible for the inhibition of phytophthora disease. Moreover, linalool andD-limonene were proven to be the primary effective components of ZFO. Our results collectively indicate that ZFO could be a potential candidate for the management of disease caused byP. capsici. Keywords:Phytophthora capsici;antifungal activity;Zanthoxylum armatumfruit essential oil;action mechanism

This study pioneers the covalent immobilization of Zanthoxylum armatum peroxidase (ZADTP) onto magnetic agarose phenylboronic acid microspheres (MAM@PA) for phenol-contaminated water remediation. Under optimized immobilization conditions (pH 8.0, 25°C, enzyme concentration 1.0 mg/mL, 90 min), the system achieved a loading capacity of 38.50 mg/g with 80.21 % activity retention. Characterization via SEM, FTIR, XRD, and VSM confirmed uniform enzyme distribution on the carrier surface without disrupting its crystalline structure, while superparamagnetic properties enabled efficient magnetic separation. Compared to free ZADTP, the immobilized enzyme demonstrated enhanced stability across broad pH (5.0–8.0) and temperature (20–70°C) ranges, superior storage stability, and strong tolerance to metal ions. It retained 78 % activity after 5 reuse cycles and 68 % activity post 50-day storage at 4°C. Catalytic evaluations revealed phenol degradation efficiencies of 93.67 % (2 mM) and 81.67 % (10 mM), with post-treatment solutions exhibiting significantly reduced cytotoxicity (LO2 cell viability: 97.66 %). In conclusion, the ZADTP@MAM@PA immobilized enzyme demonstrates great potential for application in water remediation and ecological environment improvement.

FriedTengjiaooil is commonly used for seasoning spicy dishes, and both fresh and driedTengjiaoare used in its preparation. However, the flavor differences between friedTengjiaooils prepared from these two types of raw materials have not yet been studied. The aim of this study was to compare and analyze the flavor differences between fresh friedTengjiaooil (FFTO) and dried friedTengjiaooil (DFTO). In this study, molecular sensory science was employed to reveal the flavor differences between the two at the molecular level. FFTO had a stronger pepper and spice aroma, while DFTO exhibited a more marked oily aroma. A total of 82 volatile compounds were identified via SAFE-GC-MS (solvent-assisted flavor evaporation–gas chromatography–mass spectrometry). Based on AEDA (aroma extract concentration analysis), 36 aroma-active compounds with FD ≥ 27 were accurately quantified. Following the AEDA, OAV analysis, and recombination experiments and omission tests, linalool and β-caryophyllene were identified as key flavor compounds in FTOs. α-thujone, 3-buten-1-yl isothiocyanate, citronellal, linalyl acetate, and 3-phenylpropionitrile were key flavor compounds in FFTO, andβ-pinene,α-terpinene,β-phellandrene, and 3-ethyl-2,5-dimethylpyrazine were key flavor compounds in DFTO. Finally, chiral analysis suggests that the ratio of linalool enantiomers may be the potential cause of the flavor differences between FFTO and DFTO. This study provides theoretical guidance for the industrial production of FTO.

The compounds of N-Methylanhydrotetrahydroberberrubine A, dictamnine and eudesmin were the primary bioactive components in the roots of Zanthoxylum armatum DC ( Z . armatum ). To clarify the pharmacokinetics and distribution of these three compounds, an ultra-fast liquid chromatography-tandem mass spectrometry (UFLC-MS/MS) was employed to determine the contents of these three compounds in rat plasma and seven tissues. The separation was achieved on a Kinetex XB–C18 100A column (2.1 × 50 mm, 2.6 μm, Phenomenex). The optimized mobile phase system was set with 0.1‰ formic acid aqueous solution (A) and acetonitrile (containing 0.1‰ formic acid) (B) with a programmed elution of 0.00 to 0.50 min, 2% B; 0.51–4.00 min, 30%–60% B; and 4.01–5.00 min, 2% B. All analytes were measured with optimized multiple reaction monitoring (MRM) in the positive ion ESI mode. Berberine hydrochloride was selected as the internal standard (IS). The MS/MS transitions of N-Methylanhydrotetrahydroberberrubine A, dictamnine, eudesmin and IS were 339.9135.1, 200.1 → 129.1, 387.4 → 369.0 and 337.1 → 321.1, respectively. The lower limits quantification (LLOQ) of the three analytes was 0.5–20 ng/ml. The linear ranges were 0.5–400 ng/ml for N-Methylanhydrotetrahydroberberrubine A and dictamnine and 20–4000 ng/ml for eudesmin. The present analysis showed that the two alkaloids were quickly absorbed, with T max in 0.167–0.292 h, and eudesmin was absorbed in 2.5 h. Moreover, all compounds were found at high concentrations in the gastrointestinal track. These results are helpful for further investigation of the clinical application of Z . armatum .

Huajiao ( Zanthoxylum bungeanum Maxim. and Zanthoxylum armatum DC.) is a traditional Chinese spice with a unique flavor and taste. In this study, the extractions from four cultivars of Huajiao were prepared using steam distillation (SD), Soxhlet extraction (SE), and ultrasound-assisted extraction (UE), and the functional compounds were determined by ultra-performance liquid chromatography (UPLC), gas chromatography–mass spectrometry (GC–MS) and E -nose. The UE extract possessed the highest concentration of both scent components and numbing agents, meanwhile, it was more stable. The SD extracts showed a marked rise in acidic chemicals and the least concentration of volatile organic compounds and numbing agents. Sixteen important biomarkers were found using Variable Importance Projection (VIP) in the Orthogonal Partial Least Squares Discriminant Analysis (OPLS-DA) model, and twelve important odorants were chosen based on their Odor Activity Value (OAV). UE was deemed to a superior extraction method in preserving numb taste and aromatic scent. This study offered a valuable foundation for future research on the aroma differences of Huajiao , and it could function as a theoretical guideline for flavor extraction and subsequent seasoner processing.

Botrytis cinerea is a phytopathogenic fungus that utilizes multiple infection pathways and is known for causing gray mold on crops. This fungal infection results in the deterioration of crop quality and substantial economic losses. ZH-5 , a phenolic acid compound derived from the methanol extract of the twigs of Zanthoxylum armatum DC., exhibited significant inhibitory effects on the mycelial growth, spore germination, and germ tube elongation of B. cinerea in in vivo experiments. The EC 50 of ZH-5 was determined to be 58.96 mg L −1 , which surpassed the effectiveness of commonly used carbendazim and was comparable to the plant-derived pesticide eugenol. Our study focused on investigating the mechanisms underlying the antifungal activity of ZH-5 . Our findings have demonstrated that ZH-5 has the ability to disrupt the integrity of cellular structures, including mitochondria. This disruption affects energy metabolism and induces oxidative stress, ultimately ZH-5 might be interfere with cellular activity or inhibit growth. In summary, we reported that ZH-5 demonstrated efficacy as a plant-derived compound against B. cinerea , making it a potentially valuable environmentally-friendly chemical agent for the management of gray mold.
