Determination of five alternaria toxins in peppermint by dispersive solid-phase extraction coupled with ultra-high performance liquid chromatography-tandem mass spectrometry based on MOF-808-TFA

Minhai Liu,Yan Zhang,Rui Cheng,Ting Tan,Lan Guo,Fan Liu,Yiqun Wan

An efficient and rapid ultra-high performance liquid chromatography-tandem mass spectrometry (UHPLC-MSMS) method was developed for simultaneous determination of 5 alternaria toxins (ATs) in edible and medicinal plant - peppermint using MOF-808-trifluoroacetic acid (MOF-808-TFA) as the adsorbent. Characterization methods such as scanning electron microscopy (SEM), X-ray diffraction (XRD), X-ray photoelectron spectroscopy (XPS) and N 2 adsorption-desorption demonstrated that the synthesized MOF-808-TFA had a regular ortho-octahedral configuration and high specific surface area. Under the optimal conditions, the 5 ATs showed good linearity (R 2  ≥ 0.9993) in their respective concentration ranges. The limits of quantifications (LOQs) of the method ranged from 0.21 to 0.48 μg/L, and the recoveries were 77.8–118.2 %, with the relative standard deviations (RSDs) less than 8.9 %.

Improving the stability of EGCG in the emulsified oil droplets by regulating the rheological properties of O/W emulsion

Zhenfeng Xie,Yi Wu,Xin Lu

In this study, we encapsulated epigallocatechin gallate (EGCG) in emulsified oil droplets of protein-stabilized emulsions for the first time, with the participation of peppermint essential oil (PEO). Gum arabic (GA) and sodium caseinate (SC) were sufficiently crosslinked to construct the oil-water interface of the emulsion, improving the stability of EGCG in the emulsified oil droplets. When SC and 4 g/kg GA were mixed for 12 h before emulsification, the protein adsorption at the oil-water interface was significantly enhanced. Compared with the SC-stabilized emulsion, the retention of EGCG in the emulsion stabilized by mixing SC and 4 g/kg GA for 12 h increased about 2 and 33 times, respectively, after thermal treatment (30 min at 90 °C) and storage 10 weeks at 4 °C. Moreover, the emulsion stabilized by SC and 4 g/kg GA was resistant to the ionic strength of 0–0.6 mol/L and had predominantly elastic characteristics in the rheological properties. This indicates that the stability of active ingredients in emulsified oil droplets can be improved by regulating the rheological properties of the oil-in-water emulsion. The study is of great value for the efficient encapsulation and stability improvement of hydrophilic active ingredients in emulsified oil droplets based on emulsion systems.

Controllable prepared PDMS/SiO2/PVDF membrane for the separation of gaseous peppermint aromatic water

Qin Liu,Yan Wang,Zhi Guo,Siyuan Wu,Wancheng Li,Chuanrun Li,Bo Wu

One of the main challenges in oil–water separation of traditional Chinese medicines (TCM) is to obtain essential oils from the aromatic water of TCM. In this study, silicon dioxide/polyvinylidene fluoride (SiO 2 /PVDF) membranes were prepared using nonsolvent induce phase separation. Then polydimethylsiloxane (PDMS) was coated to obtain PDMS/SiO 2 /PVDF membranes. Separated essential oils and water from aromatic water in the gaseous state by vapor permeation membrane separation technology. The relationship between membrane structure and membrane separation effect was investigated. Response surface methodology was used to develop a quadratic model for the separation factor, membrane permeation separation index and membrane preparation process. The optimal process parameters for the membrane separation were 12.31% (mass) concentration of PVDF solution, 9.6% (mass) of N,N -dimethylacetamide in the solidification bath, and 0.2 g hydrophobic nano-SiO 2 incorporation, with a separation factor of 14.45, and a membrane flux of 1203.04 g·m –2 ·h –1 . Compared with the PDMS/PVDF membranes, the separation factor and membrane flux were increased by 68.59% and 3.46%, respectively. Compared with the SiO 2 /PVDF membranes, the separation factor and membrane flux were increased by 478% and 79.33%, respectively. Effectively mitigated the limitations of traditional polymer membrane material performance affected by the “trade-off” effect. Attenuated total internal reflection-Fourier transform infrared spectroscopy, contact angle, scanning electron microscopy and energy dispersive spectroscopy were used to characterize the PDMS/SiO 2 /PVDF membranes, and gas chromatography was used to characterize the permeate. In addition, the contents of L -menthol, L -menthone, menthyl acetate and limonene in the permeate, conformed to the European Pharmacopoeia standards . This study provided an effective preparation strategy of a feasible hydrophobic powder polymer membrane for the separation of essential oils from gaseous peppermint aromatic water.

Development and Characterization of Novel Active Chitosan Films Containing Fennel and Peppermint Essential Oils

Ting Liu,Jingfan Wang,Fumin Chi,Zhankun Tan,Liu Liu

The effects of fennel essential oil (FEO) and peppermint essential oil (PEO) on chitosan-based films were evaluated in this study. The results showed that the addition of FEO and PEO slightly increased the density and thickness, while significantly decreasing the moisture content, water swelling, and solubility properties. The color values (L,a,b, ΔEand whiteness index (WI)) of the composite films containing FEO and PEO changed obviously with a tendency toward yellowness, which was beneficial in resisting food decomposition caused by ultraviolet light. The differential scanning calorimetry (DSC) and fourier-transform-infrared (FTIR) results indicated that the addition of FEO and PEO affected the structure of the chitosan films, while the interaction between the chitosan and polyphenols in FEO and PEO established new hydrogen bonds and improved the thermal stability. The environmental scanning electron microscopy (ESEM) illustrated that the surfaces of the composite films containing FEO and PEO were smooth, but the cross-section was rougher than in pure chitosan film. Furthermore, the composite films containing FEO and PEO exhibited prominent antioxidant activity. In short, the novel active chitosan-based films with incorporated FEO and PEO present broad application prospects in fresh-cut meat or vegetable packaging. Keywords:active packaging;composite film;fennel essential oil;peppermint essential oil;antioxidant activity

Synthesis of Peppermint Oil-Loaded Photosensitized β-Cyclodextrin Microcapsules and Their Application in Health-Protective Textile Coatings

Meng Xiaoyu,Zhao Huiru,Zhao Ajiao,Shi Xuan,Qiu Hua,Chen Kunlin

Functional textiles featuring odor adsorption, controlled release, and antibacterial properties have attracted considerable interest for applications in personal care and environmental purification. To address the limited stability and durability of native β-cyclodextrin (β-CD) in health-protective textile coatings, a chemically modified β-CD was synthesized using DPT as a functionalizing agent. The successful chemical modification of β-CD was validated through Fourier Transform Infrared (FT-IR) and Proton Nuclear Magnetic Resonance ( 1 H NMR) spectroscopy. These microcapsules were then applied to fabric coatings, endowing the textiles with multifunctional properties, including odor control and ultraviolet (UV) protection. The results demonstrated that increasing the modified β-CD content from 10 to 25% improved the adsorption rate of trans-2-nonenal from 23.97 to 64.48% at room temperature. Under UV irradiation, brominated diphenylthiophene acts as a photosensitizer that generates reactive radicals and enhances molecular activity, effectively degrading trans-2-nonenal via radical attack and photooxidation reactions. Additionally, the treated fabrics also exhibited significantly enhanced UV-shielding performance, achieving an UPF value of 73.5, which remained at 40.29 even after 30 abrasion cycles. These findings indicate the potential of modified β-CD microcapsules in creating durable, multifunctional textiles with superior sensory and protective capabilities. Graphical

The preparation of peppermint oil/2-hydroxypropyl-β-cyclodextrin/chitosan composite microcapsule and their prolonged retaining ability

Ge Xue-hui,Du Yu-han,Huang Xiaolian,Mo Liangji,Wang Hongxing,Qiu Ting

In this paper, the peppermint oil/HP-β-CD (2-hydroxypropyl-β-cyclodextrin)/chitosan composite microcapsules were prepared. The release ability of these microcapsules was improved for peppermint oil through the combination of molecular encapsulation by HP-β-CD and physical encapsulation by chitosan shell. First, stable peppermint oil/HP-β-CD pre-emulsion was prepared by stirring, based on which the optimal conditions were determined for producing the pre-emulsions with the highest encapsulation efficiency. Then, the pre-emulsion was moved into the flow-focusing microfluidic device as the inner phase and was cut into droplets by chitosan aqueous solution as the middle phase and the octanol as the outer phase to obtain templated emulsions. They were collected using a Petri dish with n-octane coagulation bath containing glutaraldehyde and 2 wt% span80 to be cured into microcapsules. The crosslinking time and the ratio of HP-β-CD in the templated emulsions were adjusted to investigate their impact on the microcapsule structures and correspondingly the capability of the microcapsules to retain peppermint. It was found out that the extended crosslinking time and the addition of HP-β-CD can improve the capability of the composite microcapsules to retain peppermint oil. It provides a straightforward method to produce composite microcapsules. Besides, the microcapsules with improved retaining ability were obtained by combing molecular and physical encapsulation, thus laying a foundation for the exquisite, efficient and polylaminate protection of the volatile perfume or other physically or chemically active components.

Structure regulation of PDMS coating on PTFE membrane surface to achieve efficient separation of gaseous peppermint aromatic water

Qin Liu,Xin Liu,Bo Wu,Changge Wang,Tiantian Li,Wancheng Li,Yun Huang,Yao Li,Haiyang Yan,Chuanrun Li

This study harnessed polydimethylsiloxane (PDMS)-coated polytetrafluoroethylene (PTFE) composite (PDMS/PTFE) membranes for the separation of peppermint aromatic water in vapor state. The effects of the PDMS coatings’ morphology structure on the separation performance of the membrane were investigated. The vapor permeation process, selective-permeation mechanism, and membrane stability were explored. Results showed that the separation effect of the membranes depended on the degree of polymerization of PDMS coating. Almost no water molecules can pass through the membrane during the 6 h separation process, and the separation factor was as high as 668. The main pharmacodynamic components in the separated permeate were L-menthol, L-menthone, and menthyl acetate, accounting for 49.16 %, 26.3 %, and 5.46 %, respectively, which conformed to the standard of the European Pharmacopoeia . The parameters of membrane separation showed that the maximum permeability coefficients of L-menthol, L-menthone, menthyl acetate, and water were 40.80, 20.28, 4.211, and 0.3945, respectively, at 105 °C and 65 kPa. This finding indicated that the large difference in permeability coefficient was the key to the excellent selectivity of the PDMS/PTFE membrane for separating volatile pharmaceutical components and water molecules in the peppermint aromatic-water system.

Preparation of zein-lecithin-EGCG complex nanoparticles stabilized peppermint oil emulsions: Physicochemical properties, stability and intelligent sensory analysis

Hujun Xie,Fangfang Ni,Jian Gao,Chengzhi Liu,Jieyu Shi,Gerui Ren,Shiyi Tian,Qunfang Lei,Wenjun Fang

Peppermint oil emulsions were prepared by using zein-lecithin-EGCG (Z-L/E) complex nanoparticles as emulsifiers. The preparation conditions of emulsions were optimized via measuring the particle size, surface tension and stability of emulsions, and peppermint oil of 3% (particle size = 375 nm, polydispersity index (PDI) = 0.45), the zein:lecithin ratio of 4:1 ( w/w ) (particle size = 396 nm), and the zein:EGCG ratio of 10:1 ( w/w ) (surface tension = 47.32 N/m) was the optimal condition. The rapid stability analysis showed that the instability mechanism of emulsions was ascribed to creaming and stratification, and the stability mechanism of emulsions was explored, indicating that the complex nanoparticles adsorbed on the surface of oil droplets to give Pickering emulsions. Electronic tongue experiments showed that the Z-E/L 4:1 stabilized emulsion was distinguished from the other three samples due to its good stability. The electronic nose experiment could distinguish the emulsions with different droplet sizes.

Microcapsules of a cinnamon, peppermint, and lemon essential oil mix by spray drying: Preparation, characterization and antibacterial functions

Yue Zhang,Shiyu Yang,W. James Hardie,Xue Li,Muyan Xiao,Tao Huang,Tao Xiong,Mingyong Xie

Plant essential oils (EO) are increasingly used as food preservatives due to their antibacterial and antioxidant activities . For such applications, EO are commonly microencapsulated to overcome their poor stability, low solubility and dominant aromas. But, typically, individual EO act against only a narrow range of bacterial species. Therefore, in this study, we aimed to develop a microencapsulated preservative using a combination of three EO and to determine its anti-bacterial action against three common food contaminants, viz. Escherichia coli , Salmonella and Staphylococcus aureus , and one, usually, beneficial species, viz. Lactoplantibacillus plantarum . The EO of cinnamon ( Cinnamomum cassia ), peppermint ( Mentha haplocalyx ) and lemon ( Citrus limon) were combined in the proportions, 1.0 : 1.8: 2.4, respectively and were encapsulated in gelatin-chitosan by spray drying. The particle size, zeta potential , moisture content, and encapsulation rate of the essential oil microcapsules (EOM) were measured. With increasing EOM exposure time, the concentrations of E. coli , Salmonella , S. aureus and L. plantarum decreased by 3, 3, 4, and 5 orders of magnitude, respectively. Cell apoptosis accompanied loss of membrane integrity and permeability, inhibition of lactate dehydrogenase activity and disruption of organic acid metabolism. Gram-positive bacteria ( S. aureus and L. plantarum ) were more susceptible to those effects of EOM than Gram-negative bacteria ( E. coli and Salmonella ). It also demonstrates that in applications as preservatives for probiotic foods requiring live L. plantarum , EOM comprising cinnamon, peppermint or lemon EO should be avoided.

Green Process for Purification of Menthol from Peppermint Essential Oil based on In-Situ Formation of Deep Eutectic Solvents

Mengtao Jin,Yu Wang,Lingqi Shen,Xuerong Yang,Peiyu Yan,Zuguang Li,Guohua Zhu

This paper aims to achieve efficient selective separation and green purification of menthol using green deep eutectic solvents (DESs). Taking peppermint essential oil as the research object, a green process based on in-situ formation of DESs is proposed to achieve efficient purification of menthol. Taking menthol in peppermint essential oil as a hydrogen bond donor (HBD), eight quaternary ammonium salts and quaternary phosphonium salts were screened as hydrogen bond acceptors (HBA), and tetrabutylammonium chloride (TBAC) was determined as the optimal HBA component. The hydrogen bonding between menthol hydroxyl and TBAC anion was confirmed by FT-IR and 1 H NMR characterization. After optimizing the conditions such as HBA type, n-hexane dosage, molar ratio, and vortex number, under the optimal conditions, the extraction recovery of peppermint essential oil reached 88.62% ± 0.82%, and the menthol purity was 91.16% ± 0.93%. Compared with the original peppermint essential oil, the menthol purity was significantly improved. The recycling experiment showed that TBAC has good reusability, a simple and green purification process, and good application prospects.

Fabrication of PGFE/CN-stabilized β-carotene-loaded peppermint oil nanoemulsions: Storage stability, rheological behavior and intelligent sensory analyses

Hujun Xie,Yutong Zhang,Mengna Cao,Chengzhi Liu,Yuezhong Mao,Gerui Ren,Zunyi Wu,Sheng Fang,Shiyi Tian,Di Wu

High stability nanoemulsions emulsified by combination of tripolyglycerol monostearate (PGFE) and casein (CN) were fabricated for loading functional components of peppermint oil and β-carotene, and the physicochemical properties, storage stability and sensory characteristics were explored. The β-carotene-loaded peppermint oil nanoemulsions exhibited fine physical stability when the mass ratio of PGFE/CN was less than 0.5. The β-carotene nanoemulsions were pseudoplastic fluid since the flow behavior index was lower than 1, based on the Herschel-Bulkley model. Intelligent sensory analyses clarified that electronic sensory evaluation methods, including colorimeter, electronic nose and electronic tongue, are convenient and effective to distinguish various nanoemulsions with different ratios of mixing emulsifiers. The formation mechanism of nanoemulsions was further explored to reveal the important role of hydrogen bonding and electrostatic interactions to yield nanoemulsions.

Constructing a biodegradable carrageenan based food packaging film according to the synergistic strategies between peppermint essential oil and thymol

Xing Wu,Jingya Zhou,Zeng Liu,Jia Liu,Shu He,Wei Shao

The research and development trend of food packaging is changing from synthetic polymers to eco-friendly materials such as polysaccharides and other hydrocolloids , aiming to solve the problem of pollution from plastic wastes. In this work, a biodegradable food packaging noted KC/PT film was constructed using konjac glucomannan (KGM)/carrageenan (CAR) composite as the matrix and peppermint essential oil (PO)/thymol (THY) with synergistic effect as the reinforcements. The KC/PT film showed great mechanical properties, UV-blocking activity, increased water contact angle and reduced water vapor permeability. Due to the synergistic effect between PO and THY, the KC/PT film showed excellent antioxidant performance and antibacterial behavior against Escherichia coli ATCC 25922, Listeria monocytogenes ATCC 19115 and Staphylococcus aureus ATCC 6538. The antibacterial mechanism was further illustrated. The prepared KC/PT film, as a unique packaging film, not only successfully extended the shelf life of strawberry to 16 days at 4 °C, but also well expressed its environmental friendliness that it could nearly degrade after 47 days in natural soil conditions. Most importantly, the film exhibited good stability in terms of mechanical properties, antioxidant activity and antibacterial performances after 4 months storage. Therefore, the film the KC/PT film has great potentials in the field of food packaging area.
