ACP is an enzyme that catalyzes protein hydrolysis under acidic conditions. It is mainly used in alcohol fermentation, beer brewing, fur softening, fruit wine clarification, soy sauce fermentation, feed processing, and other applications.
Determination principle: Under acidic conditions, ACP catalyzes the hydrolysis of casein to produce tyrosine. Under alkaline conditions, tyrosine reduces the phosphomolybdic acid compound to form tungsten blue, which has a characteristic absorption peak at 680 nm. ACP activity is calculated by measuring the increase in absorbance.
