天冬酰胺合成酶是广泛存在于生物体内的一类氨基转移酶，催化谷氨酞胺的氨基向天冬氨酸转移。当植物处于氨毒时天冬酞胺的形成是一种解毒反应。 测定原理：AS催化L-天冬酰胺水解成L-天冬氨酸和氨，利用奈氏试剂检测氨增加的速率，即可计算其酶活性。
Asparagine synthetase is a class of aminotransferases widely existing in organisms, catalyzing the transfer of the amino group from glutamine to aspartate. When plants are under ammonia toxicity, the formation of asparagine serves as a detoxification reaction. Assay principle: AS catalyzes the hydrolysis of L‑asparagine to L‑aspartate and ammonia. The rate of ammonia production is detected using Nessler's reagent, from which the enzyme activity can be calculated.
