糜蛋白酶，又称胰凝乳蛋白酶，是胰腺分泌的一种蛋白水解酶，能迅速分解变性蛋白质。糜蛋白酶的功能与胰蛋白酶相似，但是具有分解能力强、毒性低和不良反应小等优点。临床上糜蛋白酶用于痰液稀化，对脓性和非脓性痰液均有效；也用于创伤手术后伤口愈合，如白内障摘除。糜蛋白酶催化 ATEE 水解，产物在 237 nm 有特征光吸收；通过测定237 nm光吸收增加速率，来计算糜蛋白酶活性。
Chymotrypsin, also known as pancreatic chymotrypsin, is a proteolytic enzyme secreted by the pancreas that rapidly breaks down denatured proteins. Its function is similar to that of trypsin but offers advantages such as stronger proteolytic capacity, lower toxicity, and fewer adverse reactions. Clinically, chymotrypsin is used for sputum liquefaction, effective for both purulent and non-purulent sputum, as well as for promoting wound healing after trauma or surgery, such as cataract extraction. Chymotrypsin catalyzes the hydrolysis of ATEE (N-acetyl-L-tyrosine ethyl ester), and the product exhibits a characteristic absorption peak at 237 nm. The activity of chymotrypsin is calculated by measuring the rate of increase in absorbance at 237 nm.
