Under acidic conditions, citric acid reduces Cr⁶⁺ to Cr³⁺, forming a chromium citrate chelate. This product exhibits a characteristic absorption peak at 545 nm. By measuring the change in absorbance at this wavelength, the citric acid content in the sample can be quantitatively determined.
