Dihydroflavonol reductase catalyzes the reaction of dihydroflavonols and NADPH to generate anthocyanin precursors. NADPH exhibits a characteristic absorbance peak at 340 nm. The activity of dihydroflavonol reductase can be determined by measuring the rate of change in absorbance at this wavelength.
