大豆异黄酮是黄酮类化合物，是大豆生长中形成的一类次级代谢产物，是一种生物活性物质。由于是从植物中提取，与雌激素有相似结构，因此大豆异黄酮又称植物雌激素。大豆异黄酮的雌激素作用影响到激素分泌、代谢生物学活性、蛋白质合成、生长因子活性，是天然的癌症化学预防剂。 本实验采用95%乙醇进行提取，利用染料木素作为标品，进行紫外260nm进行检测吸光值，采用单波长法进行含量计算。
Soy isoflavones are flavonoids, a class of secondary metabolites formed during the growth of soybeans, and are biologically active substances. As they are extracted from plants and share a similar structure with estrogen, soy isoflavones are also known as phytoestrogens. The estrogenic effects of soy isoflavones influence hormone secretion, metabolic biological activity, protein synthesis, and growth factor activity, making them natural cancer chemopreventive agents. In this experiment, 95% ethanol is used for extraction, with genistein serving as the standard. The absorbance is measured under UV light at 260 nm, and the content is calculated using the single-wavelength method.
