Protein-stabilized star anise essential oil nano-emulsion (SAEO-NE) was successfully prepared using an ultrasound-assisted method to address the intrinsic defects and enhance the bioavailability of star anise essential oil (SAEO). In this study, the polydispersity index (PDI), particle size, and zeta potential (ZP) of SAEO-NE were used as performance indicators, and the optimal preparation conditions were determined to be an emulsifier dosage of 5%, an ultrasonic power of 270 W, and an ultrasonic time of 15 min. Transmission electron microscopy (TEM) and dynamic light scattering (DLS) analyses revealed that the resulting nanoparticle exhibited a uniform spherical shape, with a particle size of 246.5 ± 1.35 nm and a ZP of -38.97 ± 0.45 mV. Rheological analyses further confirmed the favorable rheological characteristics of the nano-emulsion. Moreover, SAEO-NE demonstrated robust adaptability across varying salinities (100, 200, 300, and 400 mM) and pH levels (1, 3, 5, 7, 9). After storage at 4 °C for 5 weeks, the nano-emulsion maintained particle sizes below 300 nm, indicating excellent storage stability. In addition, the in vitro antioxidant evaluation showed that SAEO exhibited enhanced antioxidant activity after nano-emulsification.

Effective wound management demands advanced dressings that protect while actively supporting healing. Traditional wound dressings often fall short of meeting the complex needs of skin repair. Inspired by the regenerative abilities of starfish, we developed a bionically engineered hydrogel designed to enhance wound healing. The hydrogel is synthesized through the coassembly of dopamine-modified cellulose nanofibers, chitosan, (3-aminobenzeneboronic acid)-grafted oxidized dextran, and poly(vinyl alcohol), utilizing dynamic Schiff base and boronic ester linkages. This innovative design imparts multifunctional properties, including injectability, 3D printability, antibacterial activity, self-adhesion, self-healing, antioxidant protection, and hemostasis, which emulate the defense mechanisms and regenerative processes of starfish. These characteristics work synergistically to reduce infection and oxidative stress and improve healing efficiency. Additionally, the hydrogel incorporates mangiferin and Vitamin C, which are released in a controlled manner in response to the wound’s microenvironment (pH and reactive oxygen species), promoting tissue regeneration and reducing inflammation. In vitro tests confirmed its dual responsiveness, while finite element modeling validated the controlled release of bioactive compounds. In vivo testing on a rat full-thickness wound model showed a 100% healing rate by day 13, significantly outperforming commercial alternatives. The hydrogel’s nontoxicity and advanced healing capabilities make it a promising solution for patients with critical healing needs, offering a comprehensive integration of natural biological processes and cutting-edge engineering.

Adhere to the concept of low-carbon environmental protection and turning waste into treasure, polysaccharides from Flammulina velutipes residue polysaccharide (FVRP) has been developed and possesses diverse bioactivities, comprising antioxidant, hypoglycemic, and relieving heavy metal damage, which still has the disadvantages of high molecular weight and low bioavailability. The current work is the first to prepare a degraded polysaccharide (FVRPV) from FVRP by ultrasonic assisted H 2 O 2 -Vc technique in order to reduce its molecular weight, thereby improving its activity and bioavailability. Our results found that the molecular weight and average particle size were declined, but the monosaccharide composition and characteristic functional group types of FVRPV had no impact. The structural changes of polysaccharides analyzed by XRD, Congo Red test, I 2 -KI, SEM, and methylation analysis indicated that the surface morphology and glycosidic bond composition of FVRPV possessed longer side chains and a greater number of branches with an amorphous crystal structure devoid of a triple helix configuration, and had experienced notable alterations after ultrasonic assisted H 2 O 2 -Vc treatment. Meanwhile, the in vitro antioxidant capacity of FVRPV had significantly increased compared to FVRP, implying ultrasonic assisted H 2 O 2 -Vc technique maybe a effective method to enhance the bioactivity of polysaccharides. In addition, the content of polysaccharide, reducing sugar, and uronic acid in FVRPV was significantly decreased, but antioxidant capacity of fermentation broth was stronger by in vitro human fecal fermentation. The 16S rDNA sequencing data displayed that FVRPV can enrich probiotics and reduce the abundance of pathogenic bacteria through different metabolic pathways mediated by gut microbiota, thereby exerting its potential probiotic effects. The interesting work provides a novel degraded polysaccharide by ultrasonic assisted H 2 O 2 -Vc technique, laying a foundation for developing FVRPV as a new antioxidant and prebiotic.

The study aimed to determine the chemical structures of octadecatrienoic acid isomers produced by probiotics through the bioconversion of α-linolenic acid and to assess their antioxidant capacities. The chemical structures were identified using nuclear magnetic resonance spectroscopy (NMR) and mass spectrometry (MS), while the antioxidant capacities were evaluated in vitro and in cellular. The NMR signals obtained allowed for definitive characterization, with the main ion fragments detected being m / z 58.0062, 59.0140, 71.0141, 113.0616, 127.0777, and 181.5833. Compounds at concentrations below 40 μM maintained the antioxidant capacity of HepG2 cells by protecting endogenous antioxidative enzymes and mitochondrial membrane potential. However, doses higher than 40 μM increase oxidative damage and mitochondrial dysfunction. These results confirmed the structure of the probiotic-derived compound as trans9, trans11, cis15-conjugated linolenic acid. Additionally, appropriate doses of CLNA can alleviate oxidative stress induced by AAPH, while high doses aggravate cellular damage. These findings provide foundational information for the further exploration of probiotic-derived edible lipids.

Pomegranate seeds, a by-product of pomegranate processing, are gaining attention in food industries due to their high antioxidant activity. However, the lack of quality markers reflecting activity and spatial characteristics limits their utilization and product stability. In this research, a selective and sensitive method integrating ultra performance liquid chromatography-quadrupole time-of-flight mass spectrometry with feature-based molecular networking, and desorption electrospray ionization-mass spectrometry imaging developed to identify components and locate in-situ images of quality markers via spatial metabolomics analysis. Additionally, molecular docking analyses and 2,2-Diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging assays validated the antioxidant quality markers and elucidated correlations between these markers, regions, and activity. A total of 227 components were identified, and six were selected as quality markers for pomegranate seeds, reflecting their antioxidant activity and spatial characteristics. Consequently, this research provides an efficient method for screening food quality markers based on activity and spatial characteristics, providing insights into food quality evaluation.

Healing the wounds of abdominal wall defects characterised by severe complications represents a significant clinical challenge. Mesenchymal stem cells (MSC)-based therapies have emerged as a promising strategy for tissue regeneration. However, the low engraftment and survival rates limit their application owing to the complicated wound microenvironment and large wound areas in abdominal wall defects. Inspired by focal biointerfaces, the present research engineered a spatiotemporal delivery microenvironment-responsive therapeutic platform, termed MSC-GSM@HG, for abdominal wall repair. The constructed platform proved capable of dissolving HA-PBA/Gel-DA (HG) hydrogels in response to in vivo inflammatory responses and subsequently releasing MSC-laden gelatine and silk fibroin microspheres (GSMs). Meanwhile, the HG hydrogels can not only protect the MSCs from excessive reactive oxygen species but also exhibit haemostatic and anti-inflammatory properties. Strikingly, this microsphere-releasing hydrogel platform actively enhanced the repair of abdominal wall defects in vivo , by reducing inflammatory response, facilitating angiogenesis and promoting collagen deposition. Therefore, the microenvironment-responsive platform represents a promising strategy for MSC-based therapies for abdominal wall defects through spatiotemporal delivery mechanisms.

The potentially wide application of Phenolic acids (PAs) in industries was severely limited by their inadequate solubility and stability in polar/non-polar media. To overcome these limits, studies on the enzymatic esterification of PAs with glycerol were carried out to reach a yield of 95% of phenolic acid glycerols (PAGs) under the following reaction conditions: 1:150 molar ratio of PAs to glycerol; 25% of Lipozyme 435 relative to the weight of total substrates; 80°C, 500 rpm, 86.7 kPa and 10 h. Three resulting PAGs including caffeoyl glycerol (CG), feruloyl glycerol (FG), and p-hydroxycinnamoyl glycerol (p-HCG) were confirmed by MS, 1H NMR and 13C NMR. Among them, CG showed a comparative free radical scavenging ability to CA, indicating its potential use as a water-soluble antioxidant alternative to CA for food and cosmetic applications.

Mung bean sprouts are widely consumed as a seasonal fresh vegetable, renowned for their affordability and richness in antioxidants and bioactive compounds. This study employed ultra-high-performance liquid chromatogram-Q-Exactive HF mass spectrometry (UHPLC-QE-MS) and multivariate statistical analysis to comprehensively evaluate the chemical profile of mung bean sprouts following sulfite immersion. The findings revealed a significant alteration in the overall chemical composition of mung bean sprouts following sodium sulfite immersion. Eleven components, including four sulfur-containing compounds, were identified as characteristic markers distinguishing between non-immersed and sodium sulfite-immersed mung bean sprouts. Esterification and addition reactions were inferred to occur during sodium sulfite immersion, leading to the transformation of flavonoid and saponin sulfates. Commercial samples analysis indicated that sulfur-containing compounds were detectable in 9 of 11 commercial mung bean sprouts. Meanwhile, when sodium sulfite concentration exceeded 3.00 mg/mL and immersion time exceeded 360 min, the contents of total polyphenol and flavonoid were significantly reduced and the antioxidant activity was adversely influenced.

Recently, sustainable poly(lipoic acid) (poly(LA))-based biogels have attracted increasing interest and have been used in wearable sensing fields. However, the low stretchability and adhesion, poor self-healing, and wire transmission remain the major issues that limit the applications of poly(LA)-based gel sensors. It is urgent to develop multifunctional biogels with excellent comprehensive performance. In this work, multifunctional conductive poly(LA)-based zwitterionic biogels (denoted as PLLS gels) were fabricated by introducing hydrophilic sulfobetaine methacrylate (SBMA) through nucleophilic addition reactions with poly(LA). The addition of SBMA endowed the gels with conductivity due to the abundant anionic and cationic groups of the zwitterionic structure. The excellent biocompatibility of poly(LA) and SBMA provided the gels nontoxicity and harmlessness. As expected, the PLLS gels possessed high stretchability, adhesion, and self-healing due to the multiple dynamic bonds, including hydrogen bonds and electrostatic interactions. Besides, the gels exhibited excellent biodegradability, antioxidant, and antibacterial activities. The PLLS gels had found application as a wireless wearable sensor, which could monitor various human activities involving temperature changes, human joint movements, and voice recognition. This work not only provides a valuable strategy for constructing the sustainable gel sensors but also expands the applications of biogels to portable mobile monitoring of wireless wearable devices.

Lemon emulsion, enriched with vitamin C, organic acids, and dietary fiber, is widely utilized in food applications due to its refreshing flavor and associated health benefits. However, traditional pasteurization (PT) techniques commonly employed to prolong shelf life often lead to nutrient degradation and sensory deterioration. This study investigates the impact of a high-pressure homogenization system integrating piston-gap and microfluidic technologies (IPM-HS) on the quality and stability of lemon emulsions. Emulsions composed of fresh lemon juice, olive oil, and Tween 80 were treated at 200, 300, and 400 MPa. The IPM-HS treatment significantly enhanced turbidity (up to 1.5-fold), reduced particle size below 500 nm, and achieved effective microbial reduction, with no viable microorganisms detected at any pressure level. In addition, EAI and ESI values increased significantly with pressure, indicating enhanced emulsifying capacity and long-term physical stability. Zeta potential measurements showed more negative values after IPM-HS treatment, suggesting improved electrostatic repulsion and greater emulsion stability. The L* value increased markedly from 62.39 to 89.81 at 400 MPa, indicating a shift in color from light yellow to milky white. Emulsions treated with IPM-HS exhibited stable nanostructures with no phase separation during 30-day storage, in contrast to untreated and thermally treated controls. Moreover, total phenolic content increased from 0.49 to 0.58 mg GAE/g ( p < 0.05), and antioxidant activity was well preserved. Flavor analysis using electronic tongue and nose revealed minimal deviation from the control group. Overall, IPM-HS markedly improves emulsion stability, physicochemical quality, and nutritional retention while maintaining sensory attributes, underscoring its potential as a promising non-thermal processing technology for emulsion-based product development.

Gentiana rigescens Franch. extract have demonstrated various important bioactivities, however, their potential against photoaging has yet to be evaluated. This study explored the anti-photoaging effects of Gentiana rigescens Franch. root extract (GRFR) and stem (GRFS), along with their underlying mechanisms and bioactive components, using the UVB-induced zebrafish model. GRFS demonstrated superior anti-photoaging efficacy compared to GRFR. GRFS significantly alleviated UVB-induced tail fin damage, increasing the relative tail fin area from 31.23% to 80.92% (at 1mg/mL), and reducing ROS levels from 244.80% to 150.95%. It also inhibited lipid peroxidation, lowering malondialdehyde (MDA) levels from 202.87 nmol/g to 142.83 nmol/g. Furthermore, GRFS enhanced antioxidant enzyme activities, increasing superoxide dismutase (SOD) from 80.94 U/g to 104.06 U/g. Liquid Chromatography-Tandem Mass Spectrometry (LC-MS/MS) indicated substantial distinctions in the composition and content of major constituents between GRFR and GFRS, which may explain the differences in their anti-photoaging activities. And then network pharmacology was used to investigate possible mechanisms of GFRS, which identified five potential targets including CTNNB1, ESR1, AKT1, JUN and EGFR, as well as three key active compounds including aspartyl-phenylalanine (Asp-Phe), N-acetyl-L-phenylalanine (N-Acetyl-L-Phe), and phenylalanyl-tyrosine (Phe-Tyr). Finally, the molecular docking revealed that Phe-Tyr exhibited the strongest binding affinity for AKT1 (-8.86 kcal/mol), indicating that it may be the most potent anti-photoaging compound in GFRS. These findings suggest that G . rigescens , with its potent anti-photoaging properties, offers superior protection against UVB-induced photoaging and holds promise as a natural therapeutic agent.

Natural Monascus yellow pigments (MYPs) have potential in the food industry due to their safety, but their application is limited by low biological activity and stability. Novel MYPs complexes, Monascus yellow pigments-tannic acid (MYPs-TA), were synthesized by spontaneously incorporating TA through intermolecular co-pigmentation in this work. Structural analysis revealed that multiple interactions contributed to the formation of complexes, including hydrogen bonding, π-π stacking, and hydrophobic interactions. The MYPs-TA exhibited characteristic ultraviolet signals of both MYPs (380 nm) and TA (276 nm), and the crystalline structure of MYPs transitioned to an amorphous form. These phenomena confirmed the tight combination of MYPs and TA. Color tonality, physicochemical stability as well as antimicrobial and antioxidant activities of MYPs were significantly improved after interaction with TA. Besides, MYPs-TA exhibited optimal stability and functionality in high-temperature processed foods such as baked goods or pasteurized products. This study provides a novel approach for synthesizing functional MYPs complexes with superior stability.
