Hazardous substances such as acrylamide (AA) are easily produced by the Maillard reaction during coffee roasting. By adding l -cysteine ( l -Cys), the production of AA was inhibited whereas the profiles of the newly formed compounds remain unclear. To elucidate the influence of l -Cys addition on the main characteristic compounds of Yunnan Coffea arabica , investigations using LC-MSⁿ-IT-TOF, FTIR and assays of in vitro antioxidant and xanthine oxidase (XO) inhibitory activities were carried out. The result revealed that the most characteristic compounds represented by the chlorogenic acid analogs (CGAs) were critical to hazards formation during the Maillard reaction. Adding l -Cys before roasting enhanced coffee quality by reducing harmful intermediates such as 5-hydroxymethylfurfural (5-HMF) while increasing bio-potentials. New compound N6 which was formed by the addition of l -Cys and CGAs, together with the flavonoids generated through polymerization and simple phenols derived from thermal cleavage, were mainly contributed to the above potential.

Curcumin, a polyphenolic compound, demonstrates neuroprotective potential through its antioxidant, anti-inflammatory, and anti-amyloid activities. To enhance its delivery, we fabricated poly(lactic-co-glycolic acid) (PLGA) nanoparticles encapsulating curcumin and stabilized them with chitosan. Successful formulation was confirmed by FTIR, XRD, and SEM analyses. Zeta potential measurement confirmed a surface charge reversal from -28.1 mV (uncoated PLGA) to + 14.7 mV after chitosan coating. The nanoparticles exhibited favorable drug loading (4.09 ± 0.02 % to 5.67 ± 0.01 %) and encapsulation efficiency (14.33 ± 0.08 % to 19.85 ± 0.04 %), and provided a sustained release profile (>24 h) enhanced by chitosan. The curcumin encapsulated PLGA-chitosan nanocarriers demonstrated potent antioxidant activity (>80 % DPPH scavenging at 0.75 mg/mL) and no significant cytotoxicity against PC12 cells at concentrations up to 80 μg/mL. In HCT116 cells, the chitosan coating enhanced cellular uptake and cytoplasmic distribution. Crucially, the nanocarriers promoted PC12 cells differentiation, resulting in a high proportion of neurite-bearing cells. These findings indicate that the designed chitosan-coated PLGA nanoparticles are a promising delivery system for promoting neuronal differentiation.

Bamboo nodes and internodes exhibit markedly distinct structural and functional characteristics, and variations in their lignin–carbohydrate complexes (LCCs) directly affect bamboo processing and utilization. In this study, the structural features and antioxidant activities of LCCs extracted from bamboo nodes and internodes were systematically compared. The results demonstrated that node LCCs possessed higher molecular weights (2853–3529 g·mol −1 ), pronounced enrichment of syringyl (S) units, higher levels of p -coumarate ( p CA) modification, and more abundant phenyl glycoside linkages, resulting in highly condensed and thermally stable lignin–polysaccharide networks. In contrast, internode LCCs contained higher proportions of guaiacyl (G) units and ferulate (FA) linkages, exhibited more uniform structural features, and were more susceptible to thermal decomposition. Antioxidant assays further revealed that LCC-Ac displayed IC 50 values of 0.57–0.58 mg·mL −1 against DPPH radicals and 3.88–5.74 μg·mL −1 against ABTS radicals, which were significantly lower than those of the other LCC fractions. Overall, this study elucidates the structure–function relationships of LCCs from bamboo nodes and internodes, providing a theoretical basis for understanding bamboo cell wall recalcitrance and for the development of bamboo-based functional materials.

Tea polyphenols (TPs) are promising natural bioactive compounds; however, their practical application is hindered by poor stability and low bioavailability. To address this challenge, we synthesized TP–iron nanoparticles (TP-Fe NPs) through coordination-driven self-assembly. Comprehensive characterization (SEM, TEM, FTIR, and XRD) confirmed the successful formation of stable TP-Fe NPs, primarily mediated by phenolic hydroxyl and carbonyl groups. Among TP-Fe NPs, the TP3-Fe1 NPs exhibited superior performance, achieving DPPH and ABTS radical scavenging rates of 65.71% and 89.64%, respectively, and inhibition rates of 91.44% against E. coli and 88.67% against S. aureus . Furthermore, TP3-Fe1 NPs demonstrated excellent biocompatibility, showing no significant cytotoxicity to L929 cells at 0.01–0.1 mg/mL. These findings highlight the potential of TP3-Fe1 NPs as a safe and effective material with dual functionality for antioxidant and antibacterial applications.

BACKGROUND Phyllanthus emblica L. is a medicinal and edible plant renowned for its potent antioxidant and anti-inflammatory activity. However, the digestive stability, bioaccessibility, and intestinal protective effects of its polyphenolic components remain unclear. This study aimed to evaluate systematically the in vitro digestion behavior, antioxidant capacity, and anti-colitis potential of P. emblica extract (PE). RESULTS The bioaccessibility of total phenolics in PE was 92.03%, indicating high digestive stability, whereas the bioaccessibility of flavonoids was 42.69%, indicating partial degradation during digestion. Liquid chromatography coupled with quadrupole time-of-flight mass spectrometry (LC-Q-TOF-MS) identified 3- O -galloylmucic acid and gallic acid as the dominant and stable phenolics throughout all digestive phases. Phyllanthus emblica L. retained strong antioxidant capacity across the oral, gastric, and intestinal stages. In a zebrafish model of trinitrobenzenesulfonic acid (TNBS)-induced inflammatory bowel disease, PE significantly ameliorated intestinal injury, reduced gut lumen expansion, inhibited neutrophil recruitment, and restored goblet cell numbers. Gene expression analysis showed a dose-dependent downregulation of pro-inflammatory cytokines ( tnf-α, il-1β, il-6) ( P < 0.05). CONCLUSION Phyllanthus emblica L. extract exhibited high digestive stability and polyphenol bioaccessibility while maintaining antioxidant activity. Its pronounced anti-inflammatory and mucosal-protective effects in vivo provided evidence supporting the potential application of P. emblica as a functional food ingredient for intestinal health and inflammatory bowel disease prevention. © 2025 Society of Chemical Industry.

Nephelium lappaceum L. is a tropical fruit with a characteristic hairy appearance, whose peel is used to reduce fever and diarrhea, while its leaves are employed to mitigate headaches. These advantages are mostly attributed to the accumulation of phenolic-related compounds in N. lappaceum . To investigate phenols accumulation and transformation in N. lappaceum peel, leaves and branches, this study investigated the major metabolites and their antioxidant and xanthine oxidase (XO) inhibitory activities. The results showed that the characteristic metabolites in peel, leaves and branches reflected a conversion process from simple phenols (C 6 ) to phenylpropanoids (C 9 ), and then to flavonoids (C 12 ). The peel extract exhibited the highest antioxidant activity, driven by its predominant simple phenols, gallic acid ( Ph7 ). The branch extracts displayed the strongest XO inhibitory activity, primarily attributed to the flavonoids: kaempferol 7- O - α - L -rhamnopyranoside ( Fl9 ), miquelianin ( Fl34 ) and procyanidin B2 ( Fl8 ). This study provides new directions for precisely utilization of N. lappaceum by-products.

Growing environmental awareness has driven a heightened focus on natural bioactive food packaging materials. In this study, a chitosan/mung bean starch (CS/MBS) composite film incorporated with tarragon polyphenols (TGP) was developed, and the effects of TGP concentration on the film's structural and functional properties were systematically investigated. The films were further evaluated for their ability to preserve the postharvest quality of blueberries. The results showed that the incorporation of TGP increased film thickness (0.082–0.089 mm), opacity (1.32–1.88 mm −1 ) and swelling degree (377.02–414.28 %) while significantly enhancing barrier and mechanical performance. At 5 % TGP content, the film exhibited the highest oxygen permeability, water resistance, and tensile strength, with oxygen permeability (0.54 × 10 −3 g mm·m −2 ·d −1 ·kPa −1 ) decreased by 86.5 % and tensile strength (1.69 × 10 3 Pa) increased by 33.63 % relative to the control. Furthermore, the incorporation of TGP markedly enhanced the films' antioxidant and antibacterial properties. Structural and thermal analyses confirmed that hydrogen bonding between TGP and the polysaccharide promoted uniform dispersion and increased structural compactness. On day 8, the blueberry preservation experiments demonstrated that CS/MBS-TGP films effectively inhibited microbial growth (3.4–4.01 log CFU/g) and decay, reduced weight loss by 18.8–24.9 %, and alleviated softening. Additionally, the films maintained titratable acidity (0.61–0.69 %) and total soluble solids (13.68–13.76 %), while enhancing the antioxidant defense capacity of blueberries by 1.88–4.12 times. Overall, the CS/MBS-TGP composite film, derived from renewable tarragon waste and natural polysaccharides, exhibited excellent bioactivity and represents an economical and sustainable strategy for extending the shelf life of perishable foods.

Fruits and vegetables are highly susceptible to storage conditions; therefore, the long-term preservation of fresh produce without cold-chain storage remains a remarkable challenge to food security. Herein, we synthesis a multifunctional, edible coating based on sodium alginate (SA) reinforced with nanocellulose fibers (NCFs) and chitosan (CS). The results showed that the monomers were crosslinked by hydrogen, ester bonds, and electrostatic interactions in the composite coating. Meanwhile, SA/NCFs/CS exhibited excellent mechanical properties (elongation: 101 %; tensile strength: 88.92 MPa; toughness: 6.59 MJ/m 3 ). Additionally, the composite coating displayed excellent antioxidant (96.33 %), antibacterial (99.02 %) and biocompatibility (99.99 %). The preservation experiment showed that, at 4 °C, the composite coating could extend the shelf life of bananas and strawberries to 12 days. It thus facilitates the long-term preservation of various fruit types and reduces the costs associated with cold-chain transportation. Thus, this study offers a novel perspective for developing multifunctional, edible preservation materials, providing a sustainable and effective alternative to traditional cold-chain-dependent storage methods.

Ischemic stroke, a critical neurological disorder resulting from abrupt cerebral blood flow interruption, remains a leading cause of global mortality and chronic disability. Despite advancements in reperfusion therapies, many survivors still suffer significant neurological deficits, primarily attributed to ischemia-reperfusion injury-induced oxidative stress and neuroinflammation. To address these challenges, we designed cerium-curcumin hybrid nanoparticles (Ce-Cur NPs) by leveraging the coordination interaction between redox-active cerium ions and curcumin’s β-diketone moiety. These Ce-Cur NPs were engineered to alleviate ROS-mediated secondary injuries and promote neural repair by leveraging their remarkable ROS scavenging capabilities, which mimic enzymatic activities to effectively neutralize superoxide and hydroxyl radicals. Furthermore, M1 polarized macrophage-derived membranes were employed to enhance the targeted delivery of Ce-Cur NPs to ischemic regions, while transferrin receptor (TfR)-activated peptides enabled efficient receptor-mediated transcytosis across the blood-brain barrier. In vivo studies using a middle cerebral artery occlusion (MCAO) model demonstrated that TfR-M 1 -Ce-Cur NPs successfully localized to the ischemic brain, significantly reduced infarct volume, and preserved neuronal integrity. Enhanced neurogenesis and improved functional recovery were observed, underscoring the therapeutic potential of Ce-Cur NPs as a versatile platform for ischemic stroke treatment. This approach provides a robust and evidence-based solution to enhance clinical outcomes for patients with ischemic stroke.

Cellulose aerogel shows a promising application prospect in the building insulation field because of its environmentally friendly nature and superior thermal insulation performance, whereas it still confronts the inherent drawbacks of unsatisfactory strength, high flammability, and inferior UV-shielding capacity. In the present study, we synthesized a lignin-derived water-soluble flame-retardant cross-linker (LG). Subsequently, we constructed high-strength and multifunctional cellulose composite aerogels based on TEMPO-oxidized cellulose nanofiber and LG through a freeze-drying technique followed by a baking-cross-linking process. The composite aerogel (LG70) achieved outstanding flame retardancy with an LOI value of 30.1% and a UL-94 rating of V-0. Moreover, it self-extinguished and maintained its structural integrity when sprayed with a butane torch. Its specific modulus reached as high as 30.7 MPa/(g/cm3) while maintaining a lightweight feature (15.98 mg/cm3). LG70 exhibited a low thermal conductivity of 23.8 mW/(m·K) comparable to that of commercial polyurethane foam, showing high application potential in the building insulation field. Moreover, it possessed a high DPPH· scavenging rate (70.5%) and an ultrahigh ultraviolet protection factor (6354.5). This work provides not only a new idea for the synthesis and application of lignin-derived flame retardants with high water solubility and reactivity but also a new insight into addressing the inherent drawbacks of cellulose aerogel using biomass resources.

Diabetic skin lesions, as one of the most common complications of diabetes, present chronic nonhealing wounds that face dual challenges of antibiotic-resistant bacteria threat and insufficient microenvironment regulation due to hyperglycemic conditions, bacterial infections, and multiple pathological factors (e.g., hypoxia and reactive oxygen species (ROS) accumulation and growth factor deficiency). This study develops a microneedle (MN) system integrated with copper nanocluster-decorated magnesium silicate nanoparticles (denoted as MS@Cu MNs), which enables efficient diabetic wound healing via a synergistic multimechanism strategy. Leveraging the unique enzyme-mimetic activity of copper nanoclusters (CuNCs) and the angiogenic properties of magnesium silicate nanoparticles (MS NPs), the engineered MS@Cu nanocomposites demonstrate: 1) broad-spectrum antibacterial efficacy (sterilization rate >99.9%), 2) microenvironment regulation via simultaneous hypoxia mitigation, ROS scavenging, and angiogenesis promotion, and 3) enhanced fibroblast proliferation and migration through PI3K-AKT signaling pathway activation. The MN system using γ-polyglutamic acid (γPGA) as a matrix exhibits both superior mechanical strength and excellent biodegradability. In vivo studies demonstrated accelerated closure of infected diabetic wounds in animal models, with histological analysis revealing robust mature collagen deposition and tissue regeneration. This study develops an integrated strategy for chronic diabetic wound management, combining potentiated antibacterial activity with targeted microenvironment remodeling.

This work combined multi-scale characterization with molecular dynamics (MD) simulations to investigate how hydroxyl group number of polyphenol molecules regulate self-assembly of polyphenol-diacylglycerol (DAG)-β-cyclodextrin (β-CD) ternary complexes and formation of resulting oil-in-water (O/W) Pickering emulsions using p-hydroxybenzoic acid (PHBA), protocatechuic acid (PCA), and gallic acid (GA) as models. XRD and ATR-FTIR confirmed hydrogen bonding dominated the complex process. Increasing hydroxyl groups reduced particle size and induced β-CD transition from cage- to channel-type structure in the complexes. Interfacial rheology and SAXS revealed that PCA-DAG-β-CD emulsions exhibited the fastest self-assembly rate with excellent resistance of interface layer to deformation. MD simulations confirmed weak hydrogen bonding and poor interfacial adsorption for PHBA-DAG-β-CD, while GA preferred to form GA-β-CD complexes in aqueous phase due to high hydrophilicity. PCA showed the most favorable self-assembly dynamics and strongest interfacial adsorption. PCA-50 % DAG-β-CD emulsion had the smallest oil droplets (3.9 ± 1.2 μm), the highest stability and excellent oxidative stability. This study highlights that stable Pickering emulsions require balancing hydrogen-bonding strength with polyphenol partitioning at the interface, providing mechanistic insight for designing DAG-based emulsions with polyphenols.
