Highly-branched cyclic dextrin (HBCD) is a novel dextrin with promising applications in functional foods. In this study, the influence of HBCD on physiochemical properties of κ-carrageenan (KC) gels was determined by rheological measurements, thermal analysis, spectral analysis , micromorphology observation, and freeze-thaw cycle test. The results revealed that the addition of HBCD at a concentration of 2% (w/v) significantly enhanced the storage modulus and freeze-thaw stability of KC gels. During the gelation , HBCD prompted the uniform distribution of KC chains and facilitated the aggregation of KC helixes to form a compact network, enhancing the mechanical properties of KC gels. Meanwhile, the small pores within the compact network contributed to reduced water loss from the KC gels. Comparatively, the syneresis of KC gels with 2% HBCD was 19.80% after the first freeze-thaw cycle and 46.51% after complete cycles (five times), much lower than that observed in pure KC gels (66.50% after the first cycle and 68.15% after the fifth cycle). Furthermore, the attachment of HBCD to the network wall strengthened hydrogen-bonding interactions, thereby enhancing the thermal reversibility of KC gels. Overall, this research provides valuable insights and a theoretical foundation for the potential applications of HBCD in KC gels.

Biocompatibility hydrogel conductors are considered as sustainable bio-electronic materials for the application of wearable sensors and implantable devices. However, they mostly face the limitations of mismatched mechanical properties with skin tissue and the difficulty of recycling. In this regard, here, a biocompatible, tough, reusable sensor based on physical crosslinked polyvinyl alcohol (PVA) ionic hydrogel modified with ι-carrageenan (ι-CG) helical network was reported. Through simulating the ion transport and network structure of biological systems, the ionic hydrogels with skin-like mechanical features exhibit large tensile strain of 640 %, robust fracture strength of 800 kPa, soft modulus and high fatigue resistance. Meanwhile, the ionic hydrogel-based sensors possess a high response to strain/pressure over a wide range and could be utilized for multimodal sensing of human activity signals. Benefit from biosafety and temperature reversibility of ι-CG and PVA endow hydrogels with not only biocompatibility, but also meaningfully recyclability. The as-prepared hydrogels could be freely reconstructed into new flexible electronics and safely integrated with the human skin. It could be anticipated that the physically cross-linked ionic hydrogel conductor could expand the options for next-generation bio-based sensors.

A series of agar/κ-carrageenan mixed hydrogels with different mass ratios were prepared, and their physicochemical properties, gelling behavior and drug release performance were determined and analyzed. The results showed that the gel strength, the gelling temperature and the gel melting temperature decreased with the increase of κ-carrageenan, while the apparent viscosities increased. Optical rotation and differential scanning calorimetry (DSC) indicated that there did exist intermolecular interactions between agar and κ-carrageenan, and the detailed gelling mechanism of the mixed hydrogels was proposed, which was different from that of the previous research. Besides, agar/κ-carrageenan mixed hydrogels were used as carriers for the delivery of metformin hydrochloride (MET). The results showed that the drug loading efficiency and the sustained release capacity of agar hydrogels could be enhanced by the addition of κ-carrageenan, and the release profile was mainly dominated by the electrostatic interaction between the MET and the polysaccharides . These results indicated that κ-carrageenan had the potential to improve the physicochemical properties and drug release performance of agar hydrogel.

Kappa-carrageenan is a gel forming anionic sulfated polysaccharide used extensively in food applications. Metal ions, proteins and other polysaccharides influence its gelation . Though polypeptides are known widely for their intrinsic benefits in developing healthy food products, their effect on κ-carrageenan functional properties has not been established yet. Herein, influence of ε-polylysine (0.05, 0.1, 0.15, 0.2 and 0.3%, w/v) on the viscoelastic and thermal properties, water mobility and microstructure of κ-carrageenan gels has been carried out. The storage modulus, gel-sol transition temperature and thermal stability increase with the ε-polylysine addition along with a decrease in the water mobility. The shift in the FT-IR absorption bands of the sulfate groups coupled with the disappeared Amide II clearly accentuate the synergistic interactions between κ-carrageenan and ε-polylysine. Such changes reflect on the more regular microstructure with compact cavities filled with the polypeptide. Overall, ε-polylysine exerts favorable interaction mechanisms on the κ-carrageenan gels. The outcome has potential to open up novel research opportunities on the binary mixtures of polysaccharides and polypeptides toward developing new and healthy food products with suitable organoleptic properties for the growing population.

Natural polymers as abundant resource are excellent candidates of adsorbents for wastewater purification due to their inherent advantages such as strong affinity, biodegradability, and non-toxic. In this work, ampholytic polyelectrolyte microspheres were fabricated successfully via emulsification procedure from the homogeneous chitosan/carrageenan solution in LiOH/KOH/urea aqueous system, showing good compatibility and homogeneous network structure. In the chitosan/carrageenan blend solution, chitosan displayed the neutral feature, as a result of the dissolution caused by destruction of the native intermolecular hydrogen bonds rather than protonation of the amino groups, thus no flocculation occurred here. The experimental results demonstrated that the ampholytic microspheres were composed of positively charged chitosan and negatively charged carrageenan, and the magnetic Fe 3 O 4 nanoparticles with a mean diameter of 180 nm were embedded in the composite matrix, showing a sensitive magnetic responsiveness. The ampholytic microspheres exhibited highly efficient adsorption capacity towards both cationic and anionic dyes and heavy metal ions in wastewater, as a result of their strong electrostatic and chelating affinity. The ampholytic chitosan/carrageenan composite matrix in microspheres played a dominant role in the adsorption of pollutants, and the Fe 3 O 4 nanoparticles were mainly contributed to magnetic separation. The effects of ionic strength and pH value on adsorption behaviors indicated that the microspheres were available to be used in a harsh environment. The ampholytic microspheres could also be used as column packing for rapid and efficient dye wastewater purification. Furthermore, the microspheres could be recycled, reused, and biodegraded in soil, showing great potentials in the field of the water decontamination.

The deterioration of climate exacerbates the freshwater crisis. Solar-thermal interfacial evaporation, using sunlight as a driving energy source, is a promising approach to provide an effective solution to freshwater shortages. However, the low energy conversion efficiency and expensive evaporator manufacturing are still to be resolved. Herein, a strategy of clean water harvesting by solar-absorbing germanium@k-carrageenan (Ge@CA) evaporator demonstrating superior energy conversion is proposed. The Ge nanoparticles exhibit a significant solar absorption of 92.33% to achieve efficient solar-thermal conversion. The CA hydrogel provides three-dimensional water transmission channels to the evaporating surface. Meanwhile, the Ge nanoparticles can be fabricated by a facile ball-milling method. The CA as a cheap biomass can be easily interacted with KCl to obtain the porous hydrogel. Taking the advantages of Ge nanoparticles and CA hydrogel, the Janus-type Ge@CA hydrogel evaporator can achieve an evaporation rate of 2.88 kg m −2 ·h −1 and a solar-vapor conversion efficiency of 82.65% under 1 sun irradiation. Furthermore, the evaporator can produce thermoelectricity with the output voltage of 140.95 mV and the short-circuit current of 13.32 mA, yielding a power of 1.17 W m −2 . This reported solar device has huge potential for cutting-edge solar harvesting and usage.

The development of environmentally friendly biodegradable films is urgently required for reducing the plastic pollution crisis and ensuring food safety. Thus, here we aimed to prepare ZIF-8 that has delivery ability for gallic acid (GA) and further incorporated this material (GA@ZIF-8) into carrageenan (CA) matrix to obtain a series of CA-GA@ZIF-8 films. This design significantly improved the mechanical strength and UV barrier and reduced water vapor permeability, moisture content , and swelling rate of the CA films. CA-GA@ZIF-8 films exhibited sustainable release of GA and controlled migration of Zn 2+ up to 144 h in a high-fat food simulator. Also, the composite films performed high-efficiency antioxidant activities (83.29 % for DPPH and 62.11 % for ABTS radical scavenging activity) and 99.51 % antimicrobial effects against Escherichia coli O157:H7 after 24 h. The great biocompatibility of GA@ZIF-8 and CA-GA@ZIF-8-10 % was confirmed by hemolysis, cell cytotoxicity, and mice model. Finally, the preservation experiments showed that CA-GA@ZIF-8 films could effectively maintain freshness and reduce the growth of microorganisms and oxidation of lipids during the preservation of beef. These results suggest that CA-GA@ZIF-8 films hold promising potential for improving the quality preservation of beef.

Escherichia coli and Staphylococcus aureus are the most prevalent pathogenic bacteria, often resulting in the foodborne disease outbreaks through food spoilage and foodborne infections. To prevent and control food spoilage and foodborne infections induced by Escherichia coli and Staphylococcus aureus , the antibacterial hydrogels were fabricated using fibrinogen hydrolysate-carrageenan (AHs-C) and flavonoids (apigenin and quercetin), and the antibacterial effect of the composite hydrogels against Escherichia coli and Staphylococcus aureus was further investigated. The results of mechanical property exhibited that the composite hydrogels with 0.2 % of apigenin and quercetin (AHs-C-Ap/Que) showed the highest hardness and swelling property compared with the separate addition of apigenin or quercetin. Scanning electron microscopy and atomic force microscopy showed that the dense networks were formed in the hydrogels of AHs-C-Ap/Que., and the average roughness of AHs-C-Ap/Que. significantly increased to 30.70 nm compared with AHs-C. 1 H NMR and FTIR spectra demonstrated that apigenin and quercetin were bound to AHs-C by hydrogen bond, hydrophobic interaction and Schiff base, where the interactions between Ap/Que. and AHs-C was stronger compared with the separate addition of apigenin or quercetin. The hydrogels of AHs-C-Ap/Que. showed the highest antibacterial capacity and antibacterial adhesion against Escherichia coli and Staphylococcus aureus . The antibacterial adhesion assay showed that 99 % removal ratios for E. coli and S. aureus were observed in AHs-C-Ap/Que. hydrogels, which showed a great potential to prevent food spoilage and foodborne infections.

In this study, a composite remediation material for the enhanced reductive dechlorination (ERD) of 1,1,1-trichloroethane (1,1,1-TCA) in aqueous solution was prepared. This material was comprised of biochar as the carrier and adsorbent, and carrageenan (CG) as the embedding medium to entrap the organic carbon sources and zero-valent iron (ZVI). We determined the suitable biochar dosage and organic carbon source in the composite alongside the optimal preparation conditions. Furthermore, using an anaerobic microcosm study, we discussed the performance and possible mechanisms of the composite on 1,1,1-TCA removal in aqueous solution. From this, we found that the suitable dosage of biochar in water during the preparation of composite microspheres was 0.2% ( w / v ). Under this condition, the biochar had a strong capacity to adsorb 1,1,1-TCA with a removal efficiency of 84.2%. Soluble starch was selected as the appropriate organic carbon source, because starch-microspheres show an excellent slow-release effect in water. The optimal preparation conditions of microspheres were identified as follows: 2% CG ( w / v ) colloidal solution, 6% CaCl 2 ( w / v ) solution, and a 12-h curing time. After 25-day incubation with the composite prepared under optimized conditions, the removal efficiency of 1,1,1-TCA was 95.68%, which was 24.69% higher than that observed in the microcosm with a commercial remediation material. The scanning electron microscopy (SEM) images show that the amounts of ZVI and soluble starch inside the microsphere decreased obviously, while the biochar amount remained about the same. This indicates that 1,1,1-TCA in aqueous solution was mainly removed via soluble starch-enhanced biotic reductive dechlorination and ZVI-enhanced abiotic reductive dechlorination. The changes in microbial community structure demonstrate that the composite stimulated the activities of functional anaerobic bacteria, in particular, regarding dechlorination and fermentation abilities in the microcosm, therefore enhancing the anaerobic biodegradation of 1,1,1-TCA. This study suggests that the composite, entrapping biochar, ZVI, and organic carbon source in CG microspheres can significantly enhance the reductive dechlorination of 1,1,1-TCA in aqueous solution. We anticipate this novel remediation material could be successfully applied to the in situ ERD remediation of natural groundwater mainly contaminated with 1,1,1-TCA.

Gelatin/κ-carrageenan (Gel/KC) hydrogel has exhibited a significant potential in tissue engineering, however, there is still a need to further enhance its structural properties. This study developed a Gel/KC dual-network hydrogel with superior mechanical properties and structural stability, which was integrated with 3D printing to evaluate its ability to promote wound healing. The hydrogels with seven different Gel and KC ratios were prepared and characterized using rheological testing, thermal analysis, spectral analysis, micromorphology observation, and X-ray diffraction. The results indicated that the Gel/KC hydrogel at a ratio of 25:15 (G25/K15) exhibited optimal thermostability, shear-thinning behavior, and recovery characteristics. Further texture profile analysis and 3D printing tests revealed that G25/K15 also exhibited superior mechanical strength (1800 g) and favorable printing properties. Furthermore, in vitro studies demonstrated that the cell culture scaffold printed with G25/K15 hydrogel could integrate with skin fibroblasts and promote the generation of new myofibrillar proteins, with cell viability remaining above 80 %. In vivo studies showed that the G25/K15 hydrogel accelerated wound healing in rats with full-thickness skin defects, without observed systemic toxicity. These results suggest that the G25/K15 hydrogel may serve as an ideal material for promoting wound healing.

Benzyl isothiocyanate (BITC) is a naturally active bacteriostatic substance and κ-carrageenan (KC) is a good film-forming substrate. In the present study, a nanoemulsion incorporating BITC was fabricated with a particle size of 224.1 nm and an encapsulation efficiency of 69.2 %. Subsequently, the acquired BITC nanoemulsion (BITC-NE) was incorporated into the KC-based film, and the light transmittance of the prepared composite films was lower than that of the pure KC film. Fourier transform infrared spectroscopy and scanning electron microscopy revealed that BITC-NE was compatible with the KC matrix. BITC-NE incorporation enhanced the tensile strength of the KC-based films by 33.7 %, decreased the elongation at break by 33.8 %, decreased the water vapor permeability by 60.1 %, increased the maximum thermal degradation temperature by 48.8 %, and decreased the oxygen permeability by 42 % ( p < 0.05). Furthermore, the composite films showed enhanced antimicrobial activity against Staphylococcus aureus , Salmonella typhimurium, and Pseudomonas fluorescens . The developed KC-based composite films were applied to wrap raw beef, which significantly delayed the increase in total viable count, total volatile base nitrogen content, and thiobarbituric acid reactive substances, and prolonged the shelf-life of the raw beef by up to 10 days. These results indicated that the composite films prepared by incorporating BITC nanoemulsions into KC matrices have great antimicrobial application potential.

Fucoxanthin (FX), a natural carotenoid sourced from algae, is renowned for its strong antioxidant, anti-inflammatory, and anticancer effects, positioning it as a promising candidate for applications in functional foods and pharmaceuticals. Despite its potential, FX suffers from low oral bioavailability and is prone to degradation during digestion, hindering its effective absorption in the colon. In this study, κ-carrageenan-sodium alginate (Car-SAA) hydrogel beads were employed as an encapsulation system to investigate their pH-responsive drug release behavior and their influence on FX's oral bioavailability. The results showed that the hydrogel beads exhibited excellent mechanical properties in simulated colonic fluid (SCF), intestinal fluid (SIF), and gastric fluid (SGF). FX was gradually released in SGF and SIF, while a rapid release was observed in SCF, with a cumulative release of 74.38 ± 2.00% after 72 h for Car-SAA2.0-FX. This behavior was likely due to the swelling properties of the hydrogel, and the release kinetics were consistent with the Korsmeyer-Peppas model. Moreover, in vitro cytotoxicity assays showed that FX-loaded Car-SAA2.0 hydrogel beads had no significant impact on HaCaT cells but exhibited significant inhibitory effects on cancer cells. These findings indicated that the formulation holds promise as a colon-targeted delivery system, paving the way for future innovations in functional foods and pharmaceutical formulations.
