Food additives are added to products to enhance their taste, and preserve flavor or appearance. While their use should be restricted to achieve a technological benefit, the contents of food additives should be also strictly controlled. In this study, E-nose was applied as an alternative to traditional monitoring technologies for determining two food additives, namely benzoic acid and chitosan. For quantitative monitoring, support vector machine (SVM), random forest (RF), extreme learning machine (ELM) and partial least squares regression (PLSR) were applied to establish regression models between E-nose signals and the amount of food additives in fruit juices. The monitoring models based on ELM and RF reached higher correlation coefficients ( R 2 s) and lower root mean square errors (RMSEs) than models based on PLSR and SVM. This work indicates that E-nose combined with RF or ELM can be a cost-effective, easy-to-build and rapid detection system for food additive monitoring.

The antidiabetic and antioxidant activities of the ethyl acetate-soluble extract (MFE) of mulberry fruit (Morus alba L.) were investigated. In vitro , MFE showed potent α-glucosidase inhibitory activity and radical-scavenging activities against DPPH and superoxide anion radicals. In vivo , MFE could significantly decrease fasting blood glucose (FBG) and glycosylated serum protein (GSP), and increase antioxidant enzymatic activities (SOD, CAT, GSH-Px) in streptozotocin (STZ)-induced diabetic mice. Bioactivity-guided fractionation of the MFE led to the isolation of 25 phenolic compounds, and their structures were identified on the basis of MS and NMR data. All the 25 compounds were isolated from mulberry fruit for the first time. Also, the α-glucosidase inhibitory activity and antioxidant activity of the phenolics were evaluated. Potent α-glucosidase inhibitory and radical-scavenging activities of these phenolics suggested that they may be partially responsible for the antidiabetic and antioxidant activities of mulberry fruit.

A simple, inexpensive and sensitive kinetic spectrophotometric method was developed for the simultaneous determination of three anti-carcinogenic flavonoids: catechin, quercetin and naringenin, in fruit samples. A yellow chelate product was produced in the presence neocuproine and Cu(I) – a reduction product of the reaction between the flavonoids with Cu(II), and this enabled the quantitative measurements with UV–vis spectrophotometry. The overlapping spectra obtained, were resolved with chemometrics calibration models, and the best performing method was the fast independent component analysis (fast-ICA/PCR (Principal component regression)); the limits of detection were 0.075, 0.057 and 0.063 mg L −1 for catechin, quercetin and naringenin, respectively. The novel method was found to outperform significantly the common HPLC procedure.

A novel liquid-phase microextraction based on the ferrofluid was successfully applied for the extraction and determination of four phenolic compounds (bisphenol-A, bisphenol-AF, tetrabromobisphenol-A and 4-tert-octylphenol) in milks and fruit juices. In this study, a range of alkyl (C 4 –C 10 ) alcohols as the carrier liquid were used for the preparation of ferrofluids. The study showed that an appropriate chain length of alkyl alcohol may improve the extraction efficiency and maintain the integrity of ferrofluids during extraction, so 1-heptanol (C 7 ) was selected as the optimal carrier liquid. Specifically, the effects of various parameters on the extraction of phenolic compounds were investigated and optimized. Under the optimized conditions, the limits of detection were between 0.35 and 0.66 μg L −1 . The intra-day and inter-day precision (RSD %) for the analytes at 10 and 50 μg L −1 were in the range of 3.2–6.7 % and 2.9–7.1%, respectively.

Oil body (OB) is composed of phospholipids, proteins and neutral lipids. However, the changes of these components in walnut OB (WOB) during walnut growth have not been studied. In this paper, CLSM, TEM and LC-MS/MS were used to observe and quantify the microstructure, accumulation level and biochemical composition of WOB during the growth of walnut (Wen 185 cultivar). The results showed that WOB accumulated near the cell wall on day 60 and then toward the center of cell until it occupied the entire cell on day 88. Afterwards, the WOB began to grow and fuse. Analysis of the chemical composition of WOB indicated that phosphatidylcholine, phosphatidylethanolamine, phosphatidylglycerol, phosphatidylinositol, and phosphatidylserine and oleosins, caleosins, and steroleosins made up the WOB membrane. The core of the WOB consisted of 22 free fatty acids and monoacylglycerol, diglyceride, triglyceride. Phosphatidylcholine, triglyceride and oleosin contents continued to increase. The contents of phosphatidylglycerol, unsaturated fatty acids, caleosins and steroleosins continued to decline. The content of phosphatidylethanolamine, phosphatidylinositol and phosphatidylserine remained basically unchanged. These findings provided a basis for understanding the dynamic pattern of WOB bioaccumulation in walnut kernel at different developmental stages.

The aim of this study was to investigate the effects of grape seed extract (GSE), acerola cherry extract (ACE), and blueberry extract (BBE) on the physicochemical properties and structure of the yellow croaker surimi gel. In addition, molecular docking and molecular dynamics (MD) simulation were utilized to study the binding mechanism of yellow croaker's fibrillin and fruit extracts. Surimi gel with 1.5% GSE, ACE, and BBE had the highest water holding capacity, hardness, chewability, cohesion, breaking force, breaking distance, gel strength, and densest 3D network structure, according to the experiment's findings. Nevertheless, the cross-linking of proteins in surimi was blocked with the further increase of fruit extract (1.5%–2.0%), and the existing network of surimi was weakened or even destroyed. Three fruit extracts had little effect on the secondary structure of the surimi gel. Besides, hydrophobic and disulfide bonds are the main chemical bonds of croaker surimi. Molecular docking showed that B-type procyanidine (BP) interacted with ASN-183, SER-571, ASP-525, ARG-350, LYS-188, GLU-349, CYS-353, and other active amino acids in croaker protein. Moreover, it can form strong hydrogen bond interaction with ASN-183, SER-571, ASP-525, and ARG-350 at the active sites of protein. The BP- Larimichthys crocea protein system's MD simulation was carried out, and calculations for the simulation's root mean square deviation, root mean square fluctuation, radius of gyration, solvent accessible surface area, and hydrogen bonds were made. It was found that these indices can demonstrate that the BP binding contributes to the stability of the yellow croaker structure.

Developing a robust catalyst for CO 2 reduction reaction (CO 2 RR) is critical to achieving a closed carbon cycle. Yet, the process of CO 2 RR still faces enormous challenges, in part because of the lack of highly active, stable, as well as cost-effective electrocatalysts. In this work, we reported an effective and sample strategy to immobilize nickel phthalocyanine (Ni-Pc) molecules on the fruit-peel-derived carbon framework surface (denoted as Ni-Pc/CF and carbon framework denoted as CF) with exceptional CO production performances. Dispersed Ni-Pc molecules on the carbon materials are verified by transmission electron microscopy (TEM), X-ray diffraction (XRD), X-ray photoelectron spectroscopy (XPS), and Raman measurements. The obtained Ni-Pc/CF catalyst shows that the high faradaic efficiency (FE) exceeds 95.0 % over a potential of −0.7 to −0.9 V ( vs reversible hydrogen electrode (RHE), V RHE ), the maximum FE (99.1 %) can close to 100 % at −0.8 V, and the excellent stability over a 10 h reaction period. This work offers valuable insights into the immobilization of stabilized, highly dispersed molecule catalysts on carbon materials surfaces for selective reduction of CO 2 to CO.

Antioxidant activity is an important feature for evaluating fruit quality and tolerance to biotic or abiotic stresses. Moreover, antioxidant activity is involved in chilling injury (CI) response and postharvest quality in fruit. Chemical elicitors can induce systemic acquired resistance in fruit against pathogens, which could partially replace synthetic fungicides. Recently, researchers have found that preharvest sprays with chemical elicitors can improve antioxidant activity, reduce CI, and maintain quality in harvested fruit. In this review, we summarize that preharvest elicitors spray improve antioxidant activity in harvested fruit by promoting antioxidant components biosynthesis as well as antioxidant ability in vitro. Moreover, preharvest elicitors spray alleviates CI in fruit by regulation of membrane lipid metabolism and reactive oxygen species metabolism. In addition, preharvest elicitors spray maintains fruit quality by modulation of respiration and ethylene release. Finally, this review points out the issues existing and proposes an outlook on preharvest elicitors spray to maintain postharvest fruit quality. Keywords:fruit;preharvest elicitor spray;antioxidant activity;chilling injury;postharvest quality

Cellulose sponges with compressibility and resilience are an ideal packaging material for fruits with fragile skin. Here, a soft and elastic all-cellulose sponge (CS) with a hierarchical cellular structure was fabricated, where the long molecular chain cellulose constructed major pores, the cellulose at nanoscale acted as an elastic nanofiller to fill the gaps of long molecular chain cellulose fibers and constructed minor pores. With these two kinds of pores, this structure can absorb strain hierarchically. The sponge can protect fruits from mechanical damage when dropped or repeated vibration. Furthermore, the CS modified with chlorogenic acid (C-CGAS) had excellent antibacterial and antifungal abilities. Therefore, C-CGAS could extend the storage time of strawberries to 18 days without any microbial invasion, which is the longest storage time reported thus far. This study provides a new idea for the preparation of polymer sponges and a new design for the development of antimicrobial packaging materials.

The fruits of Rubus chingii Hu have high medicinal and nutritional values. However, the metabolite profiles of R. chingii , especially the alterations during different development stages of fruit, have not been comprehensively analyzed, hindering the effective utilization of the unique species. In this study, we comprehensively analyzed the metabolites of R. chingii fruit at four developmental stages using systematic untargeted and targeted liquid chromatography-mass spectrometry metabolomics analysis and identified 682 metabolites. Significant changes were observed in metabolite accumulation and composition in fruits during the different developmental stages. The contents of the index components, kaempferol-3-O-rutinoside and ellagic acid, were the highest in immature fruit. The analysis identified 64 differentially expressed flavonoids and 39 differentially expressed phenolic acids; the accumulation of most of these differentially expressed metabolites decreased with the developmental stages of fruit from immaturity to maturity. These results confirmed that the developmental stages of fruit are a critical factor in determining its secondary metabolite compositions. This study elucidated the metabolic profile of R. chingii fruit at different stages of development to understand the dynamic changes in metabolites.

Fruit color is a decisive factor in consumers’ preference. The bright red color of litchi fruit is associated with its high anthocyanin; however, poor fruit coloration is a major obstacle in litchi plantation. The role of spraying mineral nutrient salts such as KH2PO4, KCl, K2SO4, and MgSO4 on litchi pericarp pigmentation was examined by a field trial, and the relation between human visual color preference versus pericarp pigments and hue-saturation-brightness (HSB) color parameters was investigated. K2SO4-sprayed litchi fruit gained the maximum popularity for its attractive red color. Spray of K and Mg salts decreased the buildup of yellowish pigments, but increased the accumulation of red ones, with the exception of slightly reduced anthocyanins in KH2PO4-sprayed fruit, by regulating the activities of enzymes involved in anthocyanidin metabolism and decreasing pericarp pH, leading to varied pericarp pigment composition. K2SO4 spray generated the highest percentage of cyanidin-3-glucoside over all pigments in pericarp. Correlation analysis shows the percent of cyanidin-3-glucoside, superior to anthocyanin concentration and HSB color parameters, was a reliable indicator to fruit color preference. This work demonstrates that spray of suitable mineral salt can regulate pericarp pigment profile, and is an effective approach to improve fruit pigmentation and promote its popularity.

Xuan-Mugua is a Chinese traditional fruit and is mainly preserved by air drying. To explore the effect of temperature on the drying property and quality of the fruits, they were sliced and dried at 60-90 °C. The results indicated that the drying time shortened from 150 to 80 min with the increasing temperature and the minimal time was found at 90 °C. The total phenolic content and antioxidant activity generally decreased by 5.09-18.27% at higher temperature (90 °C) and their maximums respectively appeared at 60 and 80 °C. Compared with the medium temperatures (60 and 70°C), the phenolic profiles changed obviously at higher temperatures (80 and 90 °C), and a transformation of chlorogenic acid was detected; besides, with the increasing temperature, the main phenolics including catechin and chlorogenic acid respectively decreased by 29.3% and 18.4%. Taking the above findings together, 70 °C should be the proper temperature to dry Xuan-Mugua fruits.
