A novel cationic flocculant of konjac glucomannan-graft-poly-(2-methacryloyloxyethyl)trimethyl ammonium chloride (KGM-g-PDMC), was successfully synthesized by using acidic ammonium cerium (IV) nitrate (CAN) as initiator in homogeneous aqueous solution. The graft copolymer was characterized using Fourier-transform infrared (FT-IR) spectroscopy, 1 H nuclear magnetic resonance ( 1 H NMR), thermogravimetric analysis (TGA) and elemental analysis. The influences of degree of substitution (DS) of KGM, concentration of NaCl and pH value on turbidity removal rate of the cationic flocculant were investigated. The results demonstrated that the flocculant exhibited excellent flocculating ability in the presence of salt and a wide range of pH (1 < pH < 9). With DS of 0.2, the turbidity removal rate of flocculant to 0.1% kaolin suspension could reach more than 90% at pH 7.0. The flocculation mechanisms were investigated by screening effect and means of zeta potential. Holding the positive charge, the KGM-g-PDMC could efficiently remove the negatively charged contaminants such as kaolin suspension.

High-performance nanofiber membranes with simultaneously satisfactory water resistance and active and rapid degradation characteristics have received growing attention in food packaging. However, the agglomeration of a konjac glucomannan (KGM) aqueous solution may occur in high concentration, and it is difficult to prepare uniform nanofibers by electrospinning technology. This study presented a green approach for fabricating nanocomposite nanofiber membranes via electrospinning with konjac glucomannan (KGM) and cellulose nanocrystals (CNCs) as raw materials. Citric acid (CA) was added as a green cross-linker to the aforementioned matrix, resulting in enhanced physicochemical properties. We investigated the effects of incorporation of various CNC contents (2.0–8.0 wt %, based on the entire solution’s weight) and CA contents (0.2–0.6 wt %, based on the weight of KGM) on the microstructure and rheological behavior of the electrospun nanofibers. Results demonstrated that esterification interactions occurred in the nanofiber membranes between the molecular chains of KGM, CNC, and CA. Moreover, the nanocomposite membranes were subjected to esterification using stearic acid and loaded with curcumin for enhancing their water resistance and antibacterial and biodegradable properties. Further investigations confirmed that the nanocomposite membranes exhibited considerable pH-sensitive variations, turning from pink-red to deep red when the pH was increased from 7 to 13. The nanocomposite membranes exhibit exceptional potential as multifunctional components in advanced active packaging systems.

Flexible hydrogel-based sensors show great potential but face challenges in dehydration for long-term storage and customization for various deformation measurements. This work reports a strategy for preparing hydrogel sensors by creating dry sensor films with different properties, which are rehydrated and laminated for specific applications. A polyhydroxyalkanoate (PHA) nanofiber membrane, produced via microfluidic bubble spinning and combined with conductive MXene, achieved a Young's modulus of 46.59 MPa. A biomass polysaccharide hydrogel made from konjac glucomannan, xanthan gum, and sodium alginate (SA) encapsulated the PHA/MXene membrane. The Young's modulus and load testing of the hydrogel sensors can be adjusted by varying SA concentration. The gel-encapsulated films can be dried for long-term preservation. For applications, the dried layers with different SA concentrations were rehydrated and assembled according to load requirements. Crosslinking between Ca 2+ ions and SA's carboxyl groups ensures stable interlayer bonding. Numerical simulations showed that the laminated sensor, combining soft and hard layers, responds well to various external forces. The laminated sensor captured multiple electrical signals to differentiate shear and compressive loads, which is a challenge for traditional flexible devices. This study presents a customizable laminated sensor that can be tailored to specific measurement ranges, enhancing hydrogel-based sensing technologies.

Damage to the integrity of the preservation coating on the fruit surface will seriously affect the shelf life of the fruit. In this work, the strong hydrogen bond interaction between xanthan gum (XG) and konjac glucomannan (KGM) could form hydrogel films with self-healing properties. The introduction of gallic acid (GA) was beneficial to further improve the antioxidant activity and UV shielding performance of the composite films. Surprisingly, the mechanical properties and gas (water vapor, O 2 and CO 2 ) barrier properties of the KGM film crosslinked by XG were significantly improved. The experiment of banana preservation showed that the composite coating could effectively delay the water loss and browning of bananas, slow down the decomposition of pectin and starch in the flesh, and extend the shelf life of bananas for >6 days. Therefore, this multifunctional coating is an excellent packaging material and has a very broad application prospect in the field of food preservation.

A novel supramolecular polysaccharide composite [KGM + DB18C6] was prepared from konjac glucomannan (KGM) and dibenzo-18-crown-6 (DB18C6) using ceric ammonium nitrate as initiator. The products were characterized by FTIR , TG , DSC , UV–Vis, XRD, solid-state 13 C NMR, and SEM. Due to the introduction of crown ether, [KGM + DB18C6] showed good adsorption performance for Cu 2+ in aqueous, and the maximum adsorption capacity was 194 mg/g under the optimal adsorption condition. The adsorption kinetics of [KGM + DB18C6] on Cu 2+ could be described by the pseudo-second-order kinetic model. The adsorption isotherms of [KGM + DB18C6] on Cu 2+ followed the dual-site Langmuir-Freundlich model. In addition, high recoveries of Cu 2+ (from 82.65 to 88.47%), and low relative standard deviation (below 5.00%) were obtained by applying the product in real samples, indicating that [KGM + DB18C6] was a good absorbent for removing Cu 2+ in wastewater.

This paper aims at providing a new strategy for developing konjac glucomannan-based antibacterial films with excellent performances. Here, novel nanocomposite films based on photodynamic and photothermal synergism strategy were developed by incorporating graphite carbon nitride nanosheets/MoS 2 nanodots (CNMo) into konjac glucomannan (KGM) matrix. Scanning electron microscope , transmission electron microscope, high resolution transmission, high angle annular dark field and element mapping confirmed the successful fabrication of CNMo. The steady and dynamic rheological behavior as well as the good stability of film-forming solution showed that the intermolecular hydrogen bonding was formed. The influences of CNMo content on the structural, mechanical and thermal properties as well as hydrophobicity of KGM films were investigated. This film has a broad-spectrum antibacterial activity . It could prolong the shelf life of cherry tomatoes . Moreover, hemolysis and cells experiment confirm that this film is safe. This strategy is expected to broaden the application of antibacterial packaging.

In this 13-week study, the potential effects of oxidized konjac glucomannan (OKGM) on ICR mice's metabolic health and gut microbiota were investigated and contrasted with enzyme-hydrolyzed KGM (EKGM) at a same molecular weight. Mice were fed diets containing 0 %, 2.5 %, 5.0 %, and 7.5 % of OKGM for 13 weeks. Results indicated that OKGM induced no adverse effects, with overall health, body weight gain, food consumption, and clinical pathology parameters being comparable to the control group. The no-observed-adverse-effect-level for OKGM was determined at 7.5 % in the diet, corresponding to 10.21 and 12.01 g/kg/day for male and female mice, respectively. OKGM intake positively regulated gut microbiota, characterized by a reduction in the relative abundance of Firmicutes , an increase in Bacteroidetes , and an enhanced presence of Lactobacillus , particularly Lactobacillus reuteri . In comparison, EKGM differently modulated the microbiota, notably increasing Muribaculaceae . These findings suggest that OKGM has the potential to be a functional food additive.

Neutral polysaccharide konjac glucomannan (KGM), characterized by its exceptional high viscosity, was selected to enhance the stability of rice protein (RP) with poor water solubility. This enabled the preparation of a high-protein, fluid RP/KGM mixtures through thermal processing (100 °C, 30 min), offering a safe and convenient diets for elderly individuals with dysphagia. The results revealed that adding 0.5% KGM was sufficient to provide excellent stability for RP dispersions (5%, 10%, 15%, w/v). Shear rheology results revealed that, regardless of RP content, the yield stress and apparent viscosity at a shear rate of 50 1/s for heated RP/KGM mixtures significantly increased with rising KGM content (from 0.5% to 1.5%), corresponding to ranges of 0.12∼42.0 Pa and 0.49∼12.3 Pa s, respectively, as well as thixotropy, viscoelasticity, and cohesiveness. Similarly, the extensional viscosity (from 1 to 6 Pa s) of heated RP/KGM mixtures increased significantly with rising KGM content, while the contribution of RP was minor. However, lubricity assessments found that the high viscosity of KGM caused the friction coefficient of heat-treated mixtures to increase markedly with polysaccharide content in the elastic-hydrodynamic regime. According to the IDDSI framework, mixtures containing 0.5% and 1% KGM fall within level 2∼3 and level 3∼4, respectively. Samples containing 1.5% KGM may cause airway obstruction due to excessive viscosity, yield stress, and cohesiveness, and thus may not be suitable for elderly individuals with dysphagia. These findings lay the foundation for designing protein-rich, convenient-to-consume, easy-to-swallow liquid foods using RP/KGM mixtures.

As an excellent textural regulator as well as health promoter, Konjac glucomannan (KGM) demonstrates promising potential for the development of functional foods. This study proposes that deacetylation-induced aggregates of KGM, with enhanced amphiphilicity and altered morphological properties, exhibit potential in stabilizing oil-in-water emulsions. Deacetylated KGM aggregates (DKs) were prepared via alkaline-thermal treatment, and the deacetylation degree could be regulated by alkali concentration. Analysis of Zeta-potential, deacetylation degree, and FT-IR spectra collectively confirm that KGM aggregation is driven by the removal of acetyl groups. Physical properties of DKs were characterized by visual appearance, microscopic morphology, rheological behavior, and three-phase contact angle. Results reveal that appropriate deacetylation (27.26 %) induces molecular-scale aggregation of KGM, which enhances amphiphilicity while preserving the viscosity of DKs suspensions. Emulsification assays indicate distinct interfacial stabilizing mechanism between KGM and DKs. Attributed to higher viscosity and better interfacial adsorption, DK-6 (27.26 % deacetylation) suspensions could ensure the long-term stability, thermal stability, and NaCl tolerance of emulsions. By clarifying the emulsifying potential of DKs, this study offers novel perspectives for developing polysaccharides-based food emulsifiers.

The effects of stearic acid (SA) and lauric acid (LA) with different concentrations on the structure and physicochemical properties of konjac glucomannan (KGM)/chitosan (CTS)/Zein (KCZ) film were systematically investigated in this paper. The rheology results suggested that the apparent viscosity of the KCZ film solution was significantly enhanced after adding fatty acids (FAs), and all the film-forming solutions were typical non-Newtonian pseudoplastic fluids. Hydrogen bond interactions were formed among KGM, CTS, Zein, and FA molecules. KCZ-FA films had higher crystallinities than KCZ film, and their crystallinities increased with the increase in FA concentrations. Microstructure indicated that adding FAs significantly affected the surface morphologies and roughness of KCZ film. KCZ-LA films exhibited much rougher surfaces than KCZ-SA films when FA concentrations were the same. Moreover, the incorporation of FAs significantly (p< 0.05) decreased the transmittance of KCZ film. KCZ-FA films exhibited higher hydrophobicities and water vapor barrier properties than KCZ film due to their significantly (p< 0.05) higher water contact angle, lower water solubility, water content, and vapor permeability values. The thermal stabilities, color attributes, and mechanical properties of KCZ film were also improved after adding appropriate concentrations of FA. Therefore, KCZ-FA films with excellent performances are promising food packaging materials in the future.

A pH and temperature dual-responsive KGM/P(NIPAM-CA) hydrogel drug carrier was prepared by using natural polysaccharide konjac glucomannan (KGM), pH-sensitive monomer crotonic acid (CA), and temperature-sensitive monomer N-isopropylacrylamide (NIPAM). The effect of mass ratio of NIPAM to KGM on the properties of KGM/P(NIPAM-CA) hydrogels was studied by a range of testing methods. The drug loading and release properties of KGM/P(NIPAM-CA) hydrogel were investigated using 5-fluorouracil (5-FU) as a model drug. Results show that KGM/P(NIPAM-CA) exhibits good swelling and mechanical properties determined by its composition. As a drug carrier KGM/P(NIPAM-CA) hydrogel demonstrated a maximum encapsulation efficiency of 30.17% and a maximum drug loading capacity of 54.41% for 5-FU at 25°C. In simulated colonic fluid (SCF) at 25°C, the cumulative drug release rate of KGM/P(NIPAM-CA) reached 58.86% within 48 hours, which was 1.8 times higher than that in simulated gastric fluid (SGF). Furthermore, the hydrogel demonstrated biocompatibility, with a hemolysis rate of less than 3% and a cell viability exceeding 90%. These results establish KGM/P(NIPAM-CA) as a promising, biocompatible platform for stimuli-responsive, colon-targeted drug delivery.

Konjac glucomannan/κ-carrageenan (KGM/KC) composite hydrogels often fail to meet industrial requirements due to their weak mechanical properties, while nanofillers are potential materials to address this challenge by taking advantage of their nano-size and filling effects. Herein, carboxylated cellulose nanocrystals (C–CNCs) were chosen as nanofillers to regulate the properties of KGM/KC composite hydrogels, with focus on the effect of C–CNCs concentration on the morphological and physicochemical properties. Meanwhile, an in-depth exploration of the possible mechanisms was also underlying. C–CNCs were well dispersed within the KGM/KC composite matrix, which positively enhanced the mechanical strength, as well as increased the apparent viscosity and modulus of the composite hydrogel greatly when the C–CNCs concentration was 10 % (w/w). This is mainly ascribed to the enhancement of hydrogen bond interaction among the KGM, KC, and C–CNCs, which were verified by Fourier transform infrared spectroscopy. Additionally, the results of low-field nuclear magnetic resonance confirmed the presence of C–CNCs in the hydrogel matrix reduced the water mobility of the hydrogel, which improved the freeze-thaw stability of the composite hydrogel. The fitting of the Power law model (R 2 > 0.98) showed that the swelling mechanism of KGM/KC composite hydrogels belonged to Fickian diffusion, and the swelling behavior could be regulated by adjusting the C–CNCs concentration. However, the excessive C–CNCs might weakened the interaction of composite hydrogels, which partially explains the reversal of the reinforcement effects seen at the lower additions of C–CNCs inclusion. These results provide a basis for the development and design of KGM/KC-based products with desirable attributes.
