The interaction mechanism between surfactants and polymers has important guiding significance in the field of high-performance fluid design. However, research on the interactions between biological surfactants and microbial polysaccharides remains limited. In this paper, the effect of xanthan gum on the interfacial properties of an acidic sophorolipid solution, such as surface tension, viscosity, rheology and foam properties, was systematically studied by means of experimental and theoretical methods. The results showed that the addition of 0.1 wt% xanthan gum had little effect on the critical micelle concentration of acidic sophorolipid, and increased the contact angles of the aqueous solution with PTFE and PP. At the same time, the interaction between acidic sophorolipid and xanthan gum reduced the bulk viscosity of the xanthan gum solution. Furthermore, the shear-thinning characteristics of the mixed system did not change, but the yield value gradually decreased with increasing acidic sophorolipid concentration. Significantly, the addition of xanthan gum slightly reduced the foaming property of acidic sophorolipid but significantly improved the stability of the foam. Foam counting and image analysis showed that xanthan gum not only made the foam small and evenly distributed, but also inhibited the aggregation of foam effectively as acidic sophorolipid concentration increased. Finally, in order to reveal the molecular mechanism underlying the interaction between xanthan gum and acidic sophorolipid, DFT calculations were used to simulate their interaction. The results indicated that robust hydrogen bonding interactions involving carboxyl and hydroxyl groups exist between acidic sophorolipids and xanthan gum, thereby contributing to the enhancement of foam stability. These findings would provide useful references for biosurfactant applications in complicated formulations across diverse fields.

In this study, epigallocatechin gallate (EGCG) and sophorolipid (SPL) were employed to enhance the water-solubility and stability of wheat gliadin nanoparticles, as well as the delivery properties. The incorporation of EGCG and SPL increased the nanoparticle size to some extent but also introduced additional negative charges. Investigation of non-covalent interactions revealed that hydrogen bonding, hydrophobic interactions, and electrostatic interactions were key contributors to the behavior of the nanostructures. The OH, C H and N H groups in wheat gliadin were involved in the reaction earlier than the C O groups. These interactions modified the structure of wheat gliadin. Molecular docking studies indicated that EGCG and SPL bind to distinct sites, with van der Waals forces, π–Sigma interactions, and other forces complementing the primary binding interactions. Loading experiments demonstrated that resveratrol-loaded EGCG-SPL-wheat gliadin nanoparticles exhibited the highest loading efficiency, superior stability, and a clear trend of controlled release in vitro digestion tests.

In this study, two polysaccharides [sodium alginate (ALG) and sodium carboxymethyl cellulose (CMC)] were selected to establish zein/sophorolipid/ALG (ALG/S/Z) and zein/sophorolipid/ALG (CMC/S/Z) nanoparticles to encapsulate 7,8-dihydroxyflavone (7,8-DHF), respectively. The results showed that polysaccharide types significantly affected performance of ternary nanoparticles, including CMC/S/Z possessed lower polydispersity index, particle size and turbidity, but higher zeta potential, encapsulation efficiency and loading capacity compared to ALG/S/Z. Compared to zein/sophorolipid nanoparticles (S/Z), both ALG/S/Z and CMC/S/Z had better stability against low pH (pH 3~4) and high ionic strengths (150~200 mM NaCl). Hydrophobic effects, electrostatic interactions and hydrogen bonding were confirmed in ternary nanoparticles fabrication via Fourier-transform infrared spectroscopy. Circular dichroism revealed that CMC and ALG had no evident impact on secondary structure of zein in S/Z, but changed surface morphology of S/Z as observed by scanning electron microscope. Encapsulated 7,8-DHF exhibited an amorphous state in ternary nanoparticles as detected by X-ray diffraction and differential scanning calorimetry. Furthermore, compared to S/Z, ALG/S/Z, and CMC/S/Z remarkably improved the storage stability and bioaccessibility of 7,8-DHF. CMC/S/Z possessed a greater storage stability for 7,8-DHF, however, ALG/S/Z exhibited a better in vitro bioaccessibility of 7,8-DHF. This research provides a theoretical reference for zein-based delivery system application.Keywords:Zein;7,8-dihydroxyflavone;sophorolipid;polysaccharide;ternary nanoparticles

To prevent premature drug release from nanoparticles, it is vital to design and prepare controlled and site-specific drug release systems. We investigated a new controllable drug release mesoporous carbon nanoparticle (MCN)-based nano-system with the advantages of enhanced permeability and retention effect (EPR) to target tumors followed by the NIR-induced heat-triggered release of a chemotherapeutic drug to show anti-tumor effects. The pores of MCN with photo-thermal effects were filled with the chemotherapeutic agent doxorubicin (DOX) and the phase change material (PCM) 1-tetradecanol was used as a gatekeeper to trap DOX inside the pores of the mesoporous carbon nanoparticles and the release of DOX inside tumor cells was triggered using NIR irradiation. The surface of MCN was coated with natural sophorolipid (SLPD) to obtain nanoparticles (DOX-PCM@MCN-SLPD) with good biocompatibility, dispersibility and stability in aqueous solutions. The MCN-based nano-system had the ability to load 24% DOX trapped with the PCM before coating with SLPD. It was observed that the release of DOX was temperature-dependent above the melting point of PCM. Once DOXPCM@MCN-SLPD was delivered into MCF-7/ADR cells, the release of DOX was triggered by MCN-borne photo-thermal effects under NIR irradiation. The amount of DOX inside the tumor was visualized via confocal laser scanning microscopy, which showed a higher amount of DOX at a higher temperature compared to that at normal body temperature, further confirming the minimization of premature drug release at 37 °C.
