Advancement of a multifunctional composite coating encapsulating CGA-Zn2+ MPN nanoparticles for enhanced postharvest fruit preservation

Wei Liu,Lin Wang,Jingcheng Hao

Fresh fruits and vegetables, rich in vitamins and essential nutrients, play an essential role in supporting human health. However, the perishability during transit and storage causes rapid degradation; consuming spoiled items poses significant health risks. Extending the shelf life of fresh produce has therefore become a key challenge for the food industry. In this study, a multifunctional composite coating was developed by integrating chlorogenic acid–zinc ion (CGA-Zn 2+ ) metal–phenolic network (MPN) particles into a polymer matrix composed of sesbania gum (SG) and biguanide-modified chitosan (Bi-Ch). Cherry tomatoes were used as the model fruit to investigate the coating's preservation effect. The CGA-Zn 2+ MPN particles provided strong antioxidant properties, which worked in combination with the antibacterial activity of Bi-Ch, enabling the coating to offer both protective and bioactive functions. The addition of MPN particles significantly improved the antioxidant capacity of the coating, increasing it from 64.83 % to 97.31 %. Moreover, the coating showed enhanced antibacterial performance. Preservation results confirmed that this composite coating effectively extended the shelf life of cherry tomatoes to 9 days at least while maintaining their quality. Cytocompatibility assays validated its safety for food applications. As a biocompatible, readily removable intervention, this approach offers considerable promise for enhancing fresh fruit stability throughout supply chains—mitigating waste and bolstering food safety.

Sustainable multifunctional packaging films based on chitosan and food waste-derived carbon nanodots for fruit preservation

Ying Ren,Dan Chen,Shiyu Lin,Xiaoping Fan,Liming Cao

Chitosan (CS), an abundant and biodegradable natural polymer, represents a highly valuable alternative to non-biodegradable packaging materials. But it is limited by unsatisfactory mechanical, barrier, and antibacterial properties. Food waste is rich in active ingredients. Using them for food preservation not only facilitates a closed-loop of resource utilization but also reduces dependence on traditional preservatives, providing a more eco-friendly and sustainable solution. In this study, nitrogen-doped carbon dots (N-CDs) were synthesized from orange peel waste via a green hydrothermal method. Sustainable multifunctional composite films were prepared by compounding N-CDs with chitosan (CS). The results showed that adding N-CDs enhanced the mechanical properties, UV protection, water barrier, antibacterial activity, and antioxidant capabilities of the composite films. Furthermore, the films also exhibited good humidity-responsive fluorescent sensing capability, making them suitable for smart humidity monitoring. When used for fruit preservation, the composite films could effectively extend the shelf life. This study of multifunctional packaging films composed of seafood waste (CS) and fruit waste (N-CDs) providing an easy approach for the high-value utilization of food waste and the sustainable development of food packaging materials.

Effects of Different Pretreatments to Fresh Fruit on Chemical and Thermal Characteristics of Crude Palm Oil

Minmin Tang,Qiuyu Xia,Brendan J. Holland,Hui Wang,Yufeng Zhang,Rui Li,Hongxing Cao

This study selected 5 methods, including boiling, hot air drying, high-pressurized steam, freezing, and microwave radiation to pretreat fresh oil palm fruit before solvent extraction of the oil. Using fresh fruit as a control, the pretreatment methods were compared for the effects on the activity of the 2 main enzymes in the fruit and some physicochemical properties of the crude palm oil. The results indicated, although all the 5 pretreatments could inactivate lipase and peroxidase in the treated flesh significantly ( P < 0.05), the high-pressurized steam was the most effective. There were also differences in the unsaturated fatty acid contents of the 6 oils. The crude oil from frozen fruit contained significantly more vitamin E (37829.33 ppm) than previously reported. Microwave radiation was shown to significantly decrease the free fatty acid content and the peroxide value, while increasing the oxidative stability index. Thermal behaviors of the oils were significantly different to each other with the exception a few parameters ( P < 0.05).

Bioactive Components, Untargeted Metabolomics and Bioinformatics of Chaenomeles speciosa Fruit on Uric Acid-Lowering Activity Assessment

Mingzhen Zhang,Cong Liu,Yan Zhang,Zhangyaoyu Yuan,Shi Chen,Huihui Zhang,Xianju Huang,Lvyi Chen,Zhinan Mei,Yuebin Ge

Chaenomeles speciosa(Sweet) Nakai (CF), a traditional food in East Asia and a recent addition to clinical dietary recommendations, has demonstrated potential for managing hyperuricemia. However, its bioactive components and therapeutic mechanisms remain largely unexplored. In this study, we used an integrative approach incorporating serum pharmacochemistry, metabolomics, bioinformatics, molecular docking, and in vitro/vivo validation to investigate CF’s effects and mechanisms in hyperuricemia. In hyperuricemic mice, CF significantly reduced serum uric acid, creatinine, and blood urea nitrogen (BUN) levels, improved kidney histopathology, and restored redox balance by increasing antioxidant enzyme activities (SOD and GSH-Px) while lowering malondialdehyde (MDA) levels. Metabolomic analysis revealed that CF modulated pathways associated with oxidative stress, including purine metabolism, arachidonic acid metabolism, and α-linolenic acid metabolism, to reverse hyperuricemia-associated metabolic perturbations. Correlation analysis between differential metabolites and serum-absorbed constituents identified androsin, cynaroside, and salicin as potential bioactive compounds. These compounds showed high predicted binding affinities to COX-1, PGE2, and XOD in molecular docking, and these interactions were validated by in vitro assays, where the compounds effectively suppressed inflammatory cytokine production and inhibited XOD activity. Overall, CF exerts anti-hyperuricemic and renoprotective effects through coordinated regulation of purine metabolism, inflammation, and oxidative stress, supporting its potential as a functional food or complementary therapy for hyperuricemia-related conditions.

Daorui Pang,Lijun You,Tong Li,Lin Zhou,Dongxiao Sun-Waterhouse,Rui Hai Liu

The objectives of this study were to investigate the phytochemical profiles and antioxidant activities of four cultivars of star fruit (Averrhoa carambola). The free, bound and total phenolic contents of the four cultivars were 162.5–286.8, 6.4–19.7, and 174.5–293.1 mg gallic acid equivalents per 100 g fresh weight (FW), respectively. The free, bound and total flavonoid contents were 100.7–234.0, 1.1–7.8, and 104.4–235.1 mg catechin equivalents per 100 g FW, respectively. The cellular antioxidant activity (CAA) values with or without a phosphate buffered saline wash protocol ranged from 25.80 to 63.29 and from 32.41 to 68.96 μmol quercetin equivalents per 100 g FW, respectively. The Taiguo cultivar had the highest phytochemical content and antioxidant activity among the four cultivars tested. High performance liquid chromatography analysis revealed the presence of gallic acid, syringic acid, p-coumaric acid, epicatechin, isoquercetin and procyanidin B2 in Averrhoa carambola. The type of cultivars influenced the phytochemical profile and extractability, antioxidant activity, and ultimately health-promoting potential of star fruit.

Aqueous Esterification of Cellulose with Amino Acids Enables Biomass-Based Pickering Emulsion Coatings for Fruit Preservation

Guitao Du,Han Yu,Wenjiao Ge,Xiaohui Wang

Postharvest fruit losses remain a persistent challenge for sustainable food systems, while many coating technologies still rely on synthetic additives or solvent-intensive processes. Here, we report a fully sustainable route to interfacial cellulose stabilizers for edible Pickering emulsion (PE) coatings. Cellulose was modified via aqueous ball-milling-assisted esterification using valine, isoleucine, and phenylalanine as modifiers, yielding three nanocellulose families with tunable substitution degree and enhanced hydrophobicity. Among these samples, valine-modified cellulose exhibited the highest degree of substitution and the strongest hydrophobicity, which is attributed to its superior water solubility and esterification efficiency. The optimized formulation reached a water contact angle of 82.4° and formed stable soybean-oil emulsions with a mean droplet size of 14.47 μm. To integrate bioactivity, quercetin was directly dissolved in the oil phase to produce antioxidant-functionalized PEs with high encapsulation efficiency (up to 88.56%). Under synergistic antioxidant and moisture-retention effects, the coating reduced mass loss by 49.7% in fresh-cut apples and 60.5% in strawberries, accompanied by significantly delayed browning and maintained sensory acceptability and edibility. Overall, this study establishes an all-biomass preservation platform that links aqueous cellulose esterification to interfacial engineering, antioxidant delivery, and practical postharvest protection, offering a scalable strategy for next-generation food-contact coatings.

Efficient Preparation of Amino-Cellulose Nanofibers through Click-like Amino-Yne Functionalization for Antibacterial Fruit Preservation

Tang Chong,Chen Huangjingyi,Liu Xiaorui,Ullah Muhammad Wajid,Liu Liang,Yu Juan,Fan Yimin

A rapid and efficient strategy for preparing amino cellulose nanofibers (A-CNFs) via click-like amino-yne functionalization was developed. Cellulose was initially swelled in a catalytic deep eutectic solvent (DES), followed by partial alkynylation with propiolic acid and amination with ε-poly- L -lysine. The optimization of reaction conditions resulted in a process that could be completed in just 7 h at 80 ° C. Antibacterial assays showed that 0.4 wt % A-CNF dispersion inhibited Escherichia coli and Staphylococcus aureus growth by 98.96% and 99.99%, respectively, with complete inhibition achieved at 0.6 wt %. When integrated with poly(vinyl alcohol) (PVA), the 1% A-CNF/5% PVA coating film displayed superior barrier properties, with water vapor and oxygen transmission rates of 160.5 g·m −2 ·day −1 and 5.462 × 10 −5 cm 3 ·m −2 ·day −1 ·Pa −1 , respectively. Practical application on cherry tomatoes’ preservation demonstrated a 35.7% delay in decay over 14 days at ambient temperature. This study offers an efficient and sustainable solution for active food packaging, highlighting the potential of A-CNFs in fruit preservation.

Alpha-ketoglutaric acid alleviates litchi fruit browning and senescence via enhancing antioxidant capacity and energy homeostasis

Yuemin Yang,Rufang Deng,Mengting Liu,Xinguo Su,Yueming Jiang,Xuewu Duan,Guoxiang Jiang,Ting Li

AKG treatment delays postharvest senescence and pericarp browning in litchi fruit. • AKG upregulates genes linked to oxidative stress defense and energy metabolism. • AKG mitigates oxidative stress via enhanced antioxidant activity and reduced ROS accumulation. • AKG sustains energy homeostasis by activating TCA cycle flux. Litchi fruit are highly susceptible to browning during ambient storage, which results in a marked reduction in commercial value. This study investigated the regulatory effects and underlying mechanisms of α-ketoglutaric acid (AKG) on postharvest browning and senescence in litchi fruit. AKG treatment significantly reduced the browning index, delayed pigment degradation, and preserved cell membrane integrity. Moreover, AKG treatment alleviated the accumulation of reactive oxygen species (ROS) and enhanced antioxidant capacity. In parallel, AKG elevated the activities of key enzymes involved in the tricarboxylic acid (TCA) cycle, maintained high ATP levels and energy charge, and thereby provided sufficient energy to support ROS scavenging and cellular repair processes. Consequently, AKG synergistically improved both antioxidant capacity and energy metabolism. Transcriptomic analysis further revealed that AKG modulated the expression of genes associated with oxidoreductase activity, transmembrane transporter function, glycosyltransferase activity, and organic acid transmembrane transporter activity. Specifically, AKG downregulated genes involved in browning and lignin synthesis ( LcGOLS2 , Lc4CL3 , LcLAC14 ), ethylene signaling regulators ( LcEIN4 , LcERF4 , LcERS1 ), and senescence regulators ( LcNAC083 , LcNAC090 , LcNAC100 , LcWRKY75 , LcMYB73 ), while upregulating stress-responsive genes ( LcTIFY9 , LcbZIP44 and LcbHLH123 ). Collectively, these findings demonstrate that AKG delays postharvest browning and senescence in litchi by modulating ROS metabolism, enhancing TCA cycle-mediated energy production, and suppressing the expression of senescence-related genes.

CsERF113 and CsERF7 antagonistically modulate citrus fruit abscission by regulating CsSAMDC1/2/3-mediated spermidine biosynthesis

Lele Chu,Xiangming Shang,Bachar Dahro,Xi Zeng,Wenqiang Hu,Chunlong Li,Ji-Hong Liu

Summary Ethylene exerts a divergent role in modulating plant organ abscission. Spermidine (Spd) shares a common precursor for de novo biosynthesis with ethylene, but the antagonistic role between them in the regulation of plant organ abscission remains largely elusive. Here, RNA-sequencing of abscission zones from ethylene-treated sweet orange ( Citrus sinensis L.) fruit led to the identification of two ethylene-responsive factors (ERFs), CsERF113 and CsERF7. CsERF113 functioned in promoting fruit abscission and suppressed Spd accumulation, whereas CsERF7 exhibited an opposite trend. CsERF113 and CsERF7 were verified to act as a transcriptional repressor or an activator of CsSAMDC1 / 2 / 3 encoding S -adenosylmethionine decarboxylase (SAMDC), an enzyme responsible for Spd biosynthesis, by binding directly to their promoters in an ethylene-dependent manner. Moreover, CsSAMDC1 / 2 / 3 functioned to inhibit fruit abscission by promoting Spd synthesis. Interestingly, CsERF7 and CsERF113 transcriptionally repressed each other to modulate the ethylene-mediated downregulation of CsSAMDC1 / 2 / 3 , forming an antagonistic regulatory circuit that could be negatively orchestrated by exogenous Spd. Taken together, our results uncover that CsERF113 and CsERF7 integrate the ethylene signal to antagonistically regulate CsSAMDC1 / 2 / 3 -mediated synthesis of Spd and fruit abscission. This study provides important insights into understanding the molecular mechanisms by which ethylene and Spd antagonize to modulate fruit abscission.

Deep learning-assisted chemiresistive sensor arrays for postharvest maturity identification via fruit-emitted mixed gas monitoring

Lichong Yang,Jingwen Dong,Hongyu Li,Jiayi Li,Long Li,Di Wu,Pingwei Liu,Xuequn Shi,Xiaojing Chen,Kunsong Chen

Target gas selection was based on the GC–MS test of mango fruit during storage. • A 4-sensor array consisted of Pd-SnO 2 exhibited good performance for target gases. • The TabPFN model was used for mixed gas detection based on the sensor array. • The sensing mechanism was explained by characterization and DFT calculations. • Mango maturity identification was achieved by the sensor-algorithm integrated system. Plants maintain continuous gaseous exchange with their surroundings, and the volatile organic compounds (VOCs) they emit can act as indicators of plant physiological status. As an important plant organ, fruit maintains active physiological metabolism, including during the postharvest stage. Therefore, the detection of volatile compounds in postharvest fruits can be used to evaluate the quality and monitor their spoilage during storage and transportation. However, current gas detection instruments are mostly benchtop devices that are bulky and costly, making them unsuitable for practical industrial applications. Thus, developing gas-based rapid maturation assessment technologies for fruits is growing increasingly essential. In this study, we developed an intelligent monitoring system for fruit ripening process monitoring, with mangoes chosen as the research subject. Specifically, ethylene, ethanol, ethyl acetate and dipentene were identified as four target gases based on the detection results of VOCs released by mangoes during storage via solid-phase microextraction combined with gas chromatography–mass spectrometry. To detect these signals, a 4-sensor array was constructed using SnO 2 nanospheres functionalized with palladium nanoparticles, leveraging resistance variations to capture the dynamics of gases. Density functional theory calculations and comprehensive characterization were employed to elucidate the sensing mechanism. The Tabular Prior-data Fitted Network, a Transformer-based deep learning model, was used to analyze four target gases and their multicomponent mixtures. This method achieved high-precision classification (94.8%) for the gases and their mixtures, as well as accurate concentration regression (R 2  = 0.839) for the target components. Finally, the system was integrated into a portable platform, enabling the on-site identification of mango maturity across different storage durations. This work establishes a robust framework for sensor design and intelligent fruit quality monitoring. Download: Download high-res image (194KB) Download: Download full-size image

Smartphone-assisted molecularly imprinted fluorescent hydrogel microneedles for on-site screening of patulin on fruit surfaces

Keyu Sun,Ziwuzhen Wang,Shuhong Ye

Patulin (PAT) is a hazardous mycotoxin frequently detected in fruits and fruit-derived products, requiring rapid, portable, and visual strategies for on-site food safety screening. Herein, a gelatin methacryloyl (GelMA)/quantum dot-loaded molecularly imprinted polymer (QDs@MIP) hydrogel microneedle platform was developed by integrating molecular imprinting-based recognition, quantum dot fluorescence transduction, and microneedle-assisted surface sampling. QDs@MIP particles, prepared using QDs as fluorescent probes and molecularly imprinted polymers as selective recognition layers, were embedded into GelMA microneedles. Multiscale characterization confirmed successful QDs@MIP construction and preservation of red fluorescence after imprinting and microneedle encapsulation. The obtained microneedles exhibited well-defined arrays, uniform fluorescence distribution, rapid swelling, elastic gel-network behavior, and reliable compressive resistance, enabling conformal attachment and in situ sampling on fruit surfaces. Under optimized conditions, PAT binding and enrichment were accompanied by fluorescence attenuation at approximately 662 nm and a visible color transition under 365 nm UV-vis irradiation. Smartphone-assisted red-green-blue (RGB) analysis converted the fluorescence variation into quantitative signals, with the R/G ratio serving as the analytical parameter for visual PAT determination, achieving a limit of detection (LOD) of 0.009 μg L −1 and a limit of quantification (LOQ) of 0.1 μg L −1 . The method provided recoveries of 82.0–112.0% across multiple fruit matrices and showed strong agreement with UPLC–MS/MS analysis. Moreover, the microneedles exhibited enzymatic and soil degradation potential and no obvious in vitro cytotoxicity. This work provides a portable, sustainable, and user-friendly strategy for rapid on-site screening of PAT in fruits.

Interfacial soft-hard locking of Pickering emulsions in marine biomass for enhancing fruit and vegetable preservation

Xijia Zhang,Hongbin Pu,Da-Wen Sun

ChNC-PGA complexes created Pickering emulsions with soft-hard interfacial locking. • ChNC:PGA ratio governed wettability, charge behaviour, and eugenol retention. • Emulsion interfaces determined dispersion and compatibility within the DC film matrix. • Optimized films balanced mechanical strength, oxygen barrier, and sustained bioactivity. • Active marine biomass-based matrices effectively preserved broccoli and strawberries during storage. Stable incorporation of hydrophobic bioactives into marine biomass-based matrices remains a major challenge for functional food preservation. Here, we report a novel strategy based on the proposed soft-hard interfacial organisation of Pickering emulsions, stabilised by chitin nanocrystals (ChNCs) and propylene glycol alginate (PGA), to construct a structurally stable active matrix for enhancing fruit and vegetable shelf life. The ratio of ChNC to PGA modulated interfacial properties including droplet size, wettability, surface charge, and bioactive retention, which in turn determined emulsion dispersion and compatibility within the matrix. The optimized system (15 wt% stable emulsion) exhibited high tensile strength, moderate elasticity, low oxygen permeability, and controlled swelling. Notably, after 7 d of storage, it retained >96% contact phase inhibition against Escherichia coli and Staphylococcus aureus , while effectively preserving broccoli and strawberries. This study suggests that the proposed ChNC-PGA interfacial organisation may provide a feasible route to engineer improved bio-based matrices for food preservation, providing a rational strategy for sustainable and functional food protection.
