Date palm ( Phoenix dactylifera L.) is an important commercial crop extensively consumed as a staple food and has been applied in many ethnomedical systems. Fruit vinegar is a preservative, condiment, and beverage with a spectrum of health benefits. Studies about the preparation, chemical profiles, and bioactivities of date fruit vinegar (DFV) are fundamental requirements for industrialization production. This study focused on the lab-scaled producing conditions, chemical profiles of DFV, and its bioactivities in vitro. According to the results, a date wine containing 9.75% methanol was obtained by yeast fermenting the enzyme-hydrolyzed date juice with 23.11% ± 0.39% of total sugar content. The optimized acidic fermentation conditions were an inoculation amount of 0.02%, a fermentation temperature of 31.14°C, and an initial alcohol content of 7.78%. Total acidity and total phenolic contents of the DFV were 7.74% ± 0.29% and 1.44 mg gallic acid equivalent/mL, respectively. In total, 32 organic acids were quantitated in the unaged DFV, with acetic, L -malic, and oxoglutaric acids as the predominant compounds. A total of 930 volatiles were identified in the DFV, including 186 esters, 177 terpenoids, and 148 heterocyclic compounds. There are 18 phenolic acids presented in the DFV. In addition, 42 flavonoids were quantitated in the DFV, including catechin, taxifolin, and cynaroside. The results of free radical scavenging activities and reducing power demonstrated that the DFV displayed good antioxidant properties. The DFV also acted well on angiotensin-converting enzyme 2 inhibition. These results suggest that the DFV can be industrially developed as a dietary supplement.

Idesia polycarpa var. vestita Diels ( I. vestita ) has become a promising oil crop due to its easily digestible and highly nutritious fruit oil. However, the intense bitter taste of its fruit greatly limits its development and promotion in the food industry. Herein, five key bitter compounds from I. vestita fruit were isolated by sensory-guided fractionation and characterized using ultra-high performance liquid chromatography-quadrupole time of flight-mass spectrometer and nuclear magnetic resonance. The bitter taste of the identified compounds was subsequently validated by threshold tests and computational molecular docking. The bitterness threshold in water of idesin was the lowest (12.051 mg/L), and all bitter substances spontaneously bound to the bitter receptors hTAS2R16 and hTAS2R14, with a stronger affinity for the latter (approximately −6.5 – −9.0 kcal/mol). This is the first systematic study of bitter compounds in I. vestita fruit, providing a scientific basis for revealing the mechanism of bitterness formation and bitterness control.

In the current research, ultrasound was applied to make whey protein isolate (WPI)-gardenia fruit oil nanoemulsion. Effects of preparation conditions on physicochemical characteristics of nanoemulsions were investigated. The smallest droplet size was obtained at the oil content of 10% ( v / v ) and the WPI concentration of 0.5% ( w / v ) with ultrasound (2.4 W/mL, 12 min). Ultrasound led to a more uniform nanoemulsion with smaller droplet sizes (< 300 nm). The nanoemulsion prepared with ultrasound remained relatively stable for more than one week, while the crude emulsion prepared without ultrasound layered after 1 day storage. The nanoemulsion was more stable at lower temperature, alkaline condition and lower Na + concentration. The formation of nanoemulsions significantly reduced the generation rate and amount of POV and TBARS during the 14-day accelerated oxidation experiment, increasing the oxidation stability of gardenia fruit oil. Additionally, the nanoemulsion could encapsulate β-carotene, hesperetin and naringenin at the efficiency of 79.61%, 51.29% and 46.06%, which further improved the oil oxidation stability and retarded free fatty acids release during the stimulated digestion in vitro.

This study investigated the effect of plasma-activated liquid (PAL) including plasma-activated water (PAW) and plasma-activated buffer solution (PABS) for the reduction of chlorothalonil (CTL) and thiram (THM) pesticide residues on tomato fruit. Results revealed that the PAL obtained by using atmospheric air as the feed gas, CTL residues were decreased to 85.3% and 74.2% and THM residues decreased to 79.47 and 72.21% after treatments with PAW 10 and PABS 10 , respectively, and increasing the activation time caused a significant reduction in fungicide residues. In addition, CTL and THM residues were also decreased while increasing the activation time of PAL using Ar/O 2 as the feed gas, the concentrations of the CTL residues were decreased to 75.07 and 69.89% for PAW 10 and PABS 10 , respectively and THM residues decreased to 65.89 and 61.91% for PAW 10 and PABS 10 , respectively. Oxidation-reduction potential (ORP) and electrical conductivity (EC) were increased significantly after plasma treatment, while pH values of both solutions were decreased significantly with activation time. NO 3 − and NO 2 − concentrations of PAW increased significantly, while for PABS, NO 3 − concentration decreased but NO 2 − , with increasing the plasma activation time. Additionally, washing with PAW and PABS caused no notable negative impact on tomato fruit. Results confirmed that PAL treatments showed a significant reduction of CTL and THM fungicide residues ( p < 0.05) in tomato without affecting the quality.

The increasing resistance of plant diseases caused by phytopathogenic fungi highlights the need for highly effective and environmentally benign agents. The antifungal activities of Cnidium monnieri fruit extracts and five isolated compounds as well as structurally related coumarins against five plant pathogenic fungi were evaluated. The acetone extract, which contained the highest amount of five coumarins, showed strongest antifungal activity. Among the coumarin compounds, we found that 4-methoxycoumarin exhibited stronger and broader antifungal activity against five phytopathogenic fungi, and was more potent than osthol. Especially, it could significantly inhibit the growth of Rhizoctonia solani mycelium with an EC 50 value of 21 μg mL −1 . Further studies showed that 4-methoxycoumarin affected the structure and function of peroxisomes, inhibited the β-oxidation of fatty acids, decreased the production of ATP and acetyl coenzyme A, and then accumulated ROS by damaging MMP and the mitochondrial function to cause the cell death of R. solani mycelia. 4-Methoxycoumarin presented antifungal efficacy in a concentration- dependent manner in vivo and could be used to prevent the potato black scurf. This study laid the foundation for the future development of 4-methoxycournamin as an alternative and friendly biofungicide.

Passion fruit rind is a waste product from the beverage industry that is rich in anthocyanins that can be potentially applied as a natural colorant. However, the inherent instability of anthocyanins causes rapid discoloration. In this study, the cyanidin-3-glucoside (C-3-G) in passion fruit rind was extracted using 50% ethanol and converted into nonbleachable pigments by reaction with Oolong tea extracts and acetaldehyde. Reactions over 70 days formed high concentrations of stable nonbleachable pigments (3.07–6.68 absorbance unit [A.U.], in total) such as pyranoanthocyanins, as well as oligomeric and polymeric pigments with ethyl-linked bridges. In C-3-G and acetaldehyde reaction, positive relations were found among acetaldehyde concentration, color density, and nonbleachable pigment concentrations. As for reactions with C-3-G and Oolong tea extract combined with acetaldehyde, greater color density and greater concentrations of nonbleachable pigments (10.80–12.34, 4.25–4.40 A.U., respectively) were formed compared with acetaldehyde alone. In addition, the antioxidant capabilities of the extracts were enhanced after reaction with Oolong tea extracts. The results of this study show a useful method to enhance the stability of anthocyanins from passion fruit rind and also provide greater economic value to this waste product. Practical Application Ripened passion fruits contain a high concentration of anthocyanins in their rind. These anthocyanins can be optimally extracted by ultrasonic assisted solvent extraction to provide stable pigments by inducing acetaldehyde (a volatile compound often found in foods and beverages) into the anthocyanins. These stable pigments have a greater reddish hue in solution than the anthocyanin extracted from the rind and are more stable over a greater pH range. In addition, these stable pigments can be potentially used as colorant throughout the food and cosmetic industry to provide high economical values.

A comparison of sugar and organic acid profiles among different fruit juices (including apple, pear, peach, grape, sweet cherry, strawberry, and blueberry with various varieties) was performed to assess the possibility for authentication coupled with chemometrics. It was found that the distribution of each sugar and organic acid in juices showed some specific characteristics related to fruit species, despite the fact that great differences in the content existed among different varieties. Sucrose was the most abundant sugar in peach juice, accounting for 58.26–77.11% of the total sugar content. However, in grape, blueberry, and sweet cherry juice, glucose and fructose were the predominant sugars. Pear juice contained the highest level of sorbitol, which contributed to 15.02–43.07% of the total sugar content. Tartaric acid was detected only in grape juice among the seven species of fruit juice, with a proportion of 57.95–89.68% in the total acid content. Malic acid was the predominant organic acid in apple and sweet cherry juice, accounting for 69.92–88.30% and 97.51–98.73% of the total acid content of each species. Citric acid was the predominant organic acid in strawberry and blueberry juice, which contributed to 62.39–83.73% and 73.36–89.56% of the total acid content of each species. With the aid of principal component analysis and linear discriminant analysis (LDA), the juice samples could be successfully classified according to fruit species by using the sugar and/or organic acid composition as analytical data. Combination of sugar and organic acid composition gave the best differentiation of these seven species of juices, with a 100% correct classification rate for both the original and the cross-validation method in LDA. Adding malic/citric into the dataset of the organic acid content may also improve the differentiation effect. Furthermore, the adulteration of sweet cherry juice, blueberry juice, raspberry juice, and grape juice with apple juice, pear juice, or peach juice could also be distinguished from their corresponding pure juices based on sugar and organic acid composition by LDA.

In the present study, an integrated process for preparation of anthocyanins components from blue honeysuckle fruits using deep eutectic solvent-based negative pressure cavitation extraction (DES-NPCE) was explored rationally. Single factor optimization combined with Box-Behnken Design (BBD) were applied to confirm the influential parameters. The maximum extraction yields of total anthocyanins and main constituent cyanidin-3-glucoside (C3G) reached 6.601 mg/g and 4.839 mg/g, which were 1.197–1.565 folds of other conventional methods. Moreover, the anthocyanins products exhibited higher stability from DES-NPCE extraction than that of conventional extraction solvents , which was conducive to the preservation and utilization of anthocyanins. After enrichment with macroporous resin D101, the contents of total anthocyanins and C3G reached 25.72% and 19.05%, and the recovery yields were 81.35% and 82.24%, respectively. Furthermore, the anthocyanins products exhibited more powerful chemical and cellular antioxidant activities, which were similar or stronger than that of positive control Vc or BHT. These results revealed that the proposed process was definitely an efficient and sustainable strategy for the stabilization preparation of thermo sensitive biologically active natural products. The developed method has also proved to have sufficient potential for application in food, nutrition and pharmaceutical industries.

Papaya fruit is easily affected by low temperature, causing chilling injury (CI). In this study, the exogenous arginine was applied in the storage of postharvest papaya fruit and it was found that 0.8 mM arginine treatment significantly alleviated CI of papaya fruit. Arginine treatment promoted the accumulation of polyamines (PAs), which might be ascribed to the increased activities of arginase, arginine decarboxylase (ADC), ornithine decarboxylase (ODC), and S-adenosylmethionine decarboxylase (SAMDC). A higher accumulation of proline was found in arginine-treated papaya fruit, which may be due to increased activity of ornithine-δ-aminotransferase (OAT) and Δ 1 -pyrroline-5-carboxylate acid synthase (P5CS) and inhibited activity of proline dehydrogenase (PDH). In addition, arginine treatment increased higher nitric oxide synthase (NOS) activity and promoted the generation of nitric oxide (NO). The results of this study indicate that exogenous arginine may improve the chilling tolerance of postharvest papaya fruit by regulating arginine and proline metabolism. Practical applications In recent years, chilling injury of tropical fruits is a significant problem, including papaya. Many studies on polyamine, proline, nitric oxide, and chilling injury of fruits, but arginine, as a common precursor of polyamine, proline, and nitric oxide, are rarely studied, especially in papaya fruit. Our findings demonstrated that the exogenous arginine can regulate endogenous arginine metabolism, induce polyamine, putrescine, and nitric oxide accumulation, and coordinate to alleviate chilling injury of papaya fruit.

Epidemiological studies had indicated that the incidence of colorectal cancer is inversely correlated to the consumption of proanthocyanidins (PAs). In this study, five PAs fractions isolated from Choerospondias axillaris fruit peels with different mean degree of polymerization (mDP) were characterized and their antiproliferative effects on Caco-2 cells were investigated. MALDI-TOF-MS results indicated that PAs fractions were composed of procyanidins with DP up to 13-mers. All PAs fractions induced dose and time-dependent reductions of Caco-2 cell viability. The IC 50 values of PAs fractions with increasing mDP were 240 ± 16.0, 143 ± 9.53, 87.0 ± 3.55, 44.3 ± 4.89, and 42.8 ± 2.20 μg/mL after 24 h incubation, respectively. The observed reduction in Caco-2 cell viability was due to apoptosis via the activation of caspase-9, caspase-3, caspase-8 and the elevation of intracellular ROS generation. Moreover, the extent of the reduction in cell viability after exposure to PAs fractions was positively correlated with their mDP and galloylation. These results indicate that Choerospondias axillaris peel is a potential source of natural chemopreventive agents for the treatment of colorectal cancer.

MADS-box genes, which encode highly conserved DNA-binding transcriptional factors, can regulate developmental processes in plants. FaMADS1a has not been functionally analyzed in non-climacteric fruit to date. In this study, one strawberry ( Fragaria × ananassa ) MADS-box gene, FaMADS1a , was cloned and its tissue-specific expression profiles were analyzed. FaMADS1a expressed in petal and fruit, and its expression levels decreased significantly during fruit ripening. Multiple sequence alignments suggested that FaMADS1a protein exhibited conserved MADS_MEF2_like motif, K-box region, MADS domain, SRF-TF motif and ARG80 domain. Phylogenetic analysis revealed that FaMADS1a belonged to the SEP1/2 clade. Phytohormone abscisic acid (ABA) suppressed FaMADS1a expression but accelerated the ripening process and anthocyanin-related gene expressions, while indole-3-acetic acid (IAA) induced FaMADS1a expression with delayed ripening phenotype and reduced expressions of anthocyanin-related genes. The pBI121 vector-mediated over-expression of FaMADS1a reduced the expressions of four anthocyanin-related genes and delayed fruit ripening compared to the control. Results suggested that FaMADS1a played a negative role in anthocyanin accumulation of strawberry fruit via repressing FaPAL6 , FaCHS , FaDFR and FaANS .

Extraction optimization, purification, characterization, sulfation and antitumor activity of polysaccharides from the fruit body of Borojoa sorbilis cuter were investigated in present study. The optimal Ultrahigh Pressure extraction condition was determined as: extraction once with the solid-liquid ratio of 1:10 in 30 °C and 1500 Mpa for crude polysaccharide (BP) and experimental yield was 8.28%. Four water-soluble polysaccharides named as BP1-1, BP1-2, BP1-3 and BP1-4, with molecular weight of 35.8, 32.4, 30.1 and 27.7 kDa, were purified by DEAE Sepharose and Superdex 200 chromatography. On the basis of chemical and spectroscopic analyses, BP1-1–BP1-4 were found to be neutral β- d -galactan containing a (1 → 4)-linked backbone. S-BP1s with the DSS of 1.18, was sulfated by chloro-sulfonic acid-pyridine method. Furthermore, S-BP1s exhibited significant in vitro antitumor activity against liver cancer HepG2 and lung cancer A549 cells in a dose-dependent manner. The results indicated that S-BP1s could be potentially developed as functional antitumor drug.
