An active packaging film prepared from aqueous two-phase Pickering emulsion and chitosan for fruit preservation

Jiayan Zhang,Changyong Cai,Yuxiao Hu,Zhijian Tan

Aqueous two-phase Pickering emulsions (ATPPEs) are advantageous because they are biocompatible and environmentally friendly. Developing active packaging films using ATPPE with antimicrobial, antioxidant, and sustained-release properties is an effective strategy to extend food shelf life. In this study, an ATPPE stabilized by cellulose nanocrystals (CNC) was prepared using a polyethylene glycol (PEG)/dextran (Dex) aqueous two-phase system (ATPS), encapsulating epigallocatechin gallate (EGCG) as a bioactive component. An active packaging films based on chitosan and EGCG-loaded ATPPE were prepared and characterized, which revealed that the ATPPE is highly biocompatible with the chitosan matrix. And the prepared composite film provides protection and sustained release for EGCG, as well as excellent mechanical, barrier, antibacterial and antioxidant properties. This composite film significantly inhibited the spoilage of bananas and tomatoes, extending their shelf life to 8 and 12 d, respectively. Hence, the developed active packaging film is a promising material for fruit preservation.

Ultrafast response and recovery in advanced H2 sensing: Self-assembled fruit-leaf-like PdO/WO3 nanostructures

Jintao Wu,Yanghai Gui,Kuan Tian,Shuaishuai Zhao,Dongjie Guo,Huishi Guo,Xiaoyun Qin,Xiaomei Qin,Yao Guo

As hydrogen is widely used as a clean energy source, the hazards of its flammable and explosive properties are gradually emphasized. Therefore, it is imminent to develop a hydrogen sensor with high response, fast detection speed and low detection limit. In this paper, a PdO/WO 3 composite with fruit-leaf-like structure was synthesized by in-situ hydrothermal and self-assembly impregnation method, and its H 2 sensing performance was investigated. The results show that the self-assembled loading of PdO can greatly improve the H 2 sensing performance of WO 3 , in which the PdO/WO 3 -1 sensor exhibits a very high response value (338.7) and a very short response/recovery time (1 s/4 s) at 120°C to 100 ppm H 2 . The enhanced sensor performance is mainly due to the catalytic effect of the noble metal PdO on H 2 and the synergistic effect between WO 3 and PdO. The growth rhythm of PdO nanoparticles and the effect on the H 2 sensing performance of PdO/WO 3 composites were also explained by varying the concentration of PdCl 2 solution. The density functional theory calculation proves that the hydrogen sensing performance is improved after the combination of PdO and WO 3 . This study provides a feasible solution for the development of high-performance WO 3 -based H 2 sensors.

Studies on acid resistance mechanism of Saccharomyces cerevisiae HJ-U17 during fruit fermentation with high acidity

Wenyu Cui,Jin Liu,Lin Zhu,Mandlaa,Ziyu Sun,Zhongjun Chen

In recent years, the wine industry has demonstrated an increasing preference of fruits having high acidity. To enhance fermentation capacity and improve the quality of fruit wines, it is crucial to select Saccharomyces cerevisiae that are resistant to acidity and understand their mechanisms of acid resistance. The present study employed mutagenesis to obtain the wine yeast strain S . cerevisiae HJ-U17, which demonstrated favorable fermentation during the processing of high acidity sea buckthorn raw materials. The acid resistance mechanism underlying its performance was elucidated through comprehensive analysis encompassing cellular physiology and omics approaches. Our findings revealed a positive correlation between acid tolerance and factors such as cell membrane integrity, unsaturated fatty acid content, superoxide dismutase activity, and catalase activity. Conversely, acid tolerance showed a negative correlation with reactive oxygen species content. Transcriptomic data analysis unveiled enhancements in energy metabolism, fatty acid chain elongation, synthesis of palmitoleic acid and oleic acid, amino acid metabolism, oxidative stress response, and cell wall remodeling as the level of acid tolerance improved. Additionally, the participation of autophagy further augmented the strain's ability to withstand acidity. This study laid a foundation for the application of acid-resistant S . cerevisiae as the starter of fruit wine with high acidity.

Emulsion Gel Packaging System with Sustained Release and Synergistic Antibacterial for Prolonging Fruit and Vegetable Preservation

Xue Zhang,Pengrui Zhao,Jialin Jia,Junkang Yang,Huajie Liu,Tao He,Tao Zhang,Wenna Wu

Menthol and thymol, as natural antiseptics, have the advantages of nontoxicity and broad-spectrum antimicrobial activity, which solves the problems of antibiotic resistance and toxicity of metal antiseptics. However, their practical applications face the challenges of chemical instability and difficult solubility in water. In this study, menthol and thymol were tactfully physically combined, forming hydrophobic deep eutectic solvent (HDES), which were then encapsulated via an emulsion system to address their instability and hydrophobicity. Then, 2-hydroxyethyl acrylate was added and polymerized into a covalent network to fabricate a HDES-loaded heterogeneous gel, featuring sustained-release characteristics for the preservation of perishable fruits. The combination of emulsion encapsulation and gelation improves the stabilization of menthol and thymol, allowing for delayed release and providing materials with a 34-day antibacterial cycle. Additionally, the emulsion gel presents tensile strain as high as 2250%, making it appropriate as practical packaging materials. Through cherry, tomato, and broccoli preservation tests, it is found that compared with the monomer such as thymol, menthol, and the deep eutectic mixture, the emulsion gel presented the best antibacterial activity, enabling the preservation days to significantly increase. We calculated that it was probably due to the HDES and cross-linking network displaying a synergistic effect. This design will provide a perspective for the preservation of perishable fruits and vegetables.

Dextran as an elicitor of phenylpropanoid and flavonoid biosynthesis in tomato fruit against gray mold infection

Laifeng Lu,Lifeng Ji,Ruixi Shi,Shuhua Li,Xi Zhang,Qingbin Guo,Changlu Wang,Liping Qiao

Alpha-1,3-glucan is often synthesized on the surface of pathogenic filamentous fungi cell walls to block pathogen-associated molecular patterns (PAMPs) generation by host plant enzymes and the subsequent immune system response of the plant. Here, Botrytis cinerea susceptibility was assessed in tomato fruit to determine whether the fruit could recognize this camouflage and mount an immune response to it. The results showed that local mechanical wounds treated with dextran and laminarin, except amylopectin, could locally and then systemically activate disease resistance against B. cinerea infection in tomato fruit. Dextran treatment effectively elicited fruit callose deposition and phenylpropanoid and flavonoid biosynthesis to a greater extent than α-glucanase activity relative to the mock group surface wounds. Enzymatic hydrolysis of this polysaccharide provided some help in improving host disease resistance. Taken together, these results demonstrate that tomato fruit can perceive α-1,3-glucan as a kind of PAMPs but have limited ability to degrade it.

Antimicrobial packaging films based on MOF nanozymes engineered via biomineralization and bimetallic hybridization for fruit preservation

Xia Xu,Wenjing Zhang,Shiliang Jia,Yufeng Chen,Xuxia Zhou,Yuting Ding

The increasing prevalence of microbial contamination in the food industry has necessitated the development of advanced antimicrobial packaging materials. In this study, we developed a novel metal-organic framework (MOF)-derived nanozyme, CS/ZIF-67-Cu, synthesized through the biomimetic mineralization of chitosan (CS), followed by heterometallic hybridization. This structural configuration significantly enhanced the enzyme-mimetic activity and antimicrobial performance of the nanozymes. CS/ZIF-67-Cu efficiently generated reactive oxygen species (ROS) in situ and exhibited potent antimicrobial effects. By incorporating CS/ZIF-67-Cu into carboxymethyl cellulose (CMC), we engineered CMC@MOF composite films with enhanced antimicrobial efficacy, improved hydrophobicity, and superior UV–visible barrier properties. Preservation experiments on cherry tomatoes confirmed that the CMC@MOF films effectively inhibited microbial proliferation on the fruit surface, thereby significantly extending the shelf life. Because of its excellent biocompatibility and potent ROS-mediated antimicrobial efficacy, CS/ZIF-67-Cu has emerged as a highly efficient dual-functional nanozyme with oxidase- and peroxidase-like catalytic properties, demonstrating its potential for practical food preservation applications.

Role of the plum cuticle layer in influencing fruit texture and permeation during the salting process

Dongjie Liu,Haoyu Zhou,Hua Huang,Qin Wang,Dehui Lin,Shuxiang Liu,Wen Qin,Gengsheng Xiao

‘Tuogu’ and ‘Bingtang’ plums display unique textural responses to salt curing, manifesting in volume reduction, surface wrinkling, and alterations in color and texture, alongside ongoing material exchange. Over a seven-day salting period, ‘Tuogu’ plums lost 14.9 % of their moisture, compared to ‘Bingtang’ plums' 24.8 %, with salt permeability rates of 5.0 % and 5.2 %, respectively. Cuticle analysis revealed that the dominant component of the cutin monomers in both fruits was fatty acids, accounting for over 90 %, while the wax composition was predominantly very long-chain alkanes and triterpenoids, also constituting over 90 %. ‘Tuogu’ plums, with their rich waxes and dense, thick cuticle, showed enhanced barrier properties against material exchange, whereas ‘Bingtang’ plums, with their abundant cutin monomers, exhibited increased elasticity and material exchange capacity.

Tracking the gastrointestinal fate and prebiotic effect of ellagic acid-rich fruit byproducts: A comprehensive evaluation

Zhike Xie,Feng Chen,Pei Li,Yawen Xiao,Zheng Ruan

This study demonstrated the potential of ellagic acid-rich fruit byproducts, particularly pomegranate peel, as functional ingredients. During digestion, pomegranate peel exhibited superior antioxidant activity owing to its high phenolic content. Twenty-four phenolic compounds were released, with pomegranate peel maintaining higher bioactivity than chestnut and walnut peels. In vitro colonic fermentation with urolithin A-producing microbiota revealed that pomegranate peel stimulated butyrate synthesis (11.94 mM) and urolithin A production (6.31 μM), highlighting the prebiotic role of ellagic acid. Gut microbiota modulation by pomegranate peel increased Bacteroide s and Bifidobacterium (a potential key for ellagic acid conversion) while suppressing Alistipes . Functional analyses confirmed its effect on carbohydrate, lipid, and amino acid metabolism. In contrast, chestnut and walnut peels exhibited lower bioactivity and microbial selectivity. These findings positioned pomegranate peel as a superior ingredient for gut health and microbial metabolism optimization, offering targeted nutritional benefits over conventional byproducts.

Polysaccharide network protection strategy enhances photodynamic stability: Unlocking new applications of edible pigments in fruit preservation

Bingzhi Li,Yiqi Wang,Linpin Luo,Liang Zhang,Yiya Ping,Bangfeng Fu,Wetao Zhang,Lei Liu,Jianlong Wang

Edible antibacterial packaging films, due to their excellent biosafety and environmental friendliness, exhibit significant application potential in food preservation. However, current edible antibacterial films primarily rely on natural bacteriostatic compounds, which are limited by high dosage requirements, inconsistent performance, and narrow antibacterial spectra, making it challenging to effectively control microbial contamination. To address these challenges, we introduced erythrosine B (ERY), an FDA-approved pigment with strong photodynamic inactivation performance, combined with gellan gum (GG) to develop a novel edible photodynamic antibacterial film. Under light irradiation, ERY can rapidly generate reactive oxygen species (ROS) at a concentration as low as 5 μg/mL, thereby killing 100 % of bacteria and significantly inhibiting fungal growth. Notably, the gel network of GG serves a dual purpose by restricting ERY molecular movement and creating a protective barrier, effectively mitigating photodegradation of ERY caused by excessive ROS, thus enhancing the photostability of ERY. Experimental results demonstrate that, under identical light intensity, GG-ERY (GGE) exhibits negligible photobleaching after 30 min, showing an 8.26-fold improvement in inhibition efficacy compared to ERY, facilitating the sustained production of ROS. Owing to its efficient and long-lasting antibacterial performance, the GGE film extends the postharvest storage period of grapes to 14 days, representing a 1.75-fold increase compared to the control group. This study not only significantly enhances the antibacterial efficacy of edible films but also provides novel insights into the application of edible pigments in photodynamic antibacterial and food preservation.

Preparation of chitosan/ fennel seed essential oil/ starch sodium octenyl succinate composite films for apple fruit preservation

Haitao Long,Yang Bi,Lumei Pu,Weibing Xu,Huali Xue,Guorui Fu,Dov Prusky

Although studies have reported on the preparation of composite films and its application, the preparation and application for fruit preservation of composite film with fennel seed essential oil (FEO) are unknown. In this study, six types of composite films (F1–F6) were prepared with chitosan/FEO/starch sodium octenyl succinate (SSOS). The physicochemical, antifungal and preservation properties were investigated. The water content, water vapor permeability and elongation at break of the films increased with the glycerol, but the density and tensile strength decreased. Fourier infrared spectroscopy showed that there was a hydrogen bond existed between the film components. The film surface was smoother with higher content of FEO and glycerin. The films exhibited strong antifungal activity against Botrytis cinerea , Trichothecium roseum , and Penicillium expansum . Among them F3, SSOS/glycerol/FEO/chitosan was 1:0.2:1:0.5, had the best antifungal performance. The F3 coating also reduced the lesion diameter of apple fruit inoculated with the three fungi. The F3 coating decreased respiration rate and weight loss, and maintained the firmness and peel lightness of fruit during storage. The findings of this work provide a new insight for exploration of composite film with fennel seed essential oil and its application for fruit preservation.

Screening of multifunctional fruit carbon dots for fluorescent labeling and sensing in living immune cells and zebrafishes

Zhu Weisheng,Gao Xiangfan,Yu Xiaokan,Li Qisi,Zhou Yuan,Qiu Hao,Xing Bengang,Zhang Zhijun

Nine kinds of carbon dots (CDs) were synthesized by using fruits with different varieties as carbon sources; meanwhile, the fluorescence characteristics, quantum yield, and response ability to different metal ions and free radicals were systematically studied. These CDs showed similar excitation and emission spectral ranges ( λ ex ≈ 345 nm, λ em ≈ 435 nm), but very different fluorescence quantum yield (QY), in which orange and cantaloupe CDs have the highest QY around 0.25 and green plum CDs showed the lowest quantum yield around 0.1. Interestingly, the fluorescence of all of these CDs can be significantly quenched by hydroxyl radical (•OH) and iron ion (Fe 3+ ); however, these CDs showed very different response characteristics to other metal ions (e.g., Co 2+ , Ni 2+ , Cu 2+ , Ce 3+ , Mn 2+ , Ag + , and Fe 2+ ). Through in-depth analysis, we found some interesting patterns of the influence of carbon sources on the fluorescence characteristics of CDs. Finally, by using white pitaya CDs as fluorescence probe, we realized sensing of Fe 3+ and •OH with limits of detection (LOD) of 19.4 μM and 0.7 μM, respectively. Moreover, the CDs were also capable for sensitive detection in immune cells and even in zebrafishes. Our work can provide valuable guidance for the rational design of functional CDs for biological applications. Graphical abstract
