The novel incorporation of dragon fruit peel extract (DE), rich in anthocyanins, Zn 2+ (from Zinc Alginate) and pectin was applied to create active and intelligent food packaging composite films. These films were characterized for their microstructure and properties. Various levels of anthocyanin extracts (1 %, 3 %, and 5 %) were evaluated for their impact on the films' physical and functional properties, incorporating microstructure, mechanical strength, barrier properties, pH sensitivity, and bacteriostatic effectiveness. The films exhibited a significant antibacterial rate of up to 99.99 % against common foodborne pathogens, enhanced flame retardancy with an enhancement of 32.7 %, and a broad pH sensitivity range, indicating their adaptability to various conditions. The results demonstrated that the prepared indicator film achieved a 50 % reduction in water vapor permeability. Additionally, the mechanical properties were enhanced, with only a slight decrease of 12.2 % in tensile strength and 14.0 % in elongation at break. In tests monitoring shrimp freshness, pectin/ZA/DE films showed notable color changes correlating with shrimp quality. These specific values highlight the pectin/ZA/DE films' potential for real-world applications, suggesting that they have potential applications as smart packaging materials in the food industry.

When the barrier function of the skin tissue is destroyed, the burn wound is prone to bacterial infection and difficult to repair during the healing process. Therefore, there is an urgent need to design functional dressing materials to promote burn wound repairing. In this research, injectable hydrogel with mussel-inspired tissue adhesion was fabricated from dopamine grafted oxidized pectin (OP-DA) and hydrazide terminated polyethylene oxide (PEO-AH) as dressing material for burn wounds. The catechol moiety on the grafted dopamine (DA) enhanced the tissue adhesion of hydrogel and the wound sealing performance, which can well adhere onto the skin to cover irregular wounds for consistent sealing under body moving. On this basis, the hydrogel also showed hemostatic performance based on liver and tail hemostasis model. The hydrogel was further loaded with gallic acid (GA) to enhance the antibacterial property to E. coli and S. aureus to inhibit wound infection. Along with good biocompatibility and biodegradability, the hydrogel showed improved burn wound repairing performance to second-degree burn wound models on mice. As a result, the OP-DA/PEO-AH hydrogel showed great advantage as GA carrier in wound healing applications.

In this study, a novel nanocomposite scaffold comprising pectin, gelatin, and amoxicillin trihydrate-loaded UiO-66-NH 2 metal-organic frameworks (UiO-66-NH 2 @AMX) was fabricated for skin tissue engineering applications. UiO-66-NH 2 nanoparticles were synthesized hydrothermally and subsequently loaded with amoxicillin trihydrate. Finally, UiO-66-NH 2 @AMX nanoparticles were incorporated into pectin-gelatin scaffolds using the freeze-drying method. FE-SEM imaging confirmed the octahedral morphology of the nanoparticles before and after drug loading. FTIR analysis demonstrated successful drug incorporation via non-covalent interactions. DLS and zeta potential measurements showed that UiO-66-NH 2 nanoparticles had a mean size of 218.5 ± 14 nm and a surface charge of +44.1 ± 2.7 mV. After drug loading, the size slightly increased to 248.8 ± 19 nm, and the surface charge decreased to +32.6 ± 2.5 mV, while maintaining colloidal stability. All of the scaffolds showed porous structures with interconnected pores in SEM imaging. The incorporation of UiO-66-NH 2 @AMX nanoparticles into the pectin-gelatin scaffolds up to 3 % (w/w) increased the tensile strength and Young's modulus of the scaffolds 37.6 % and 56.7 %, respectively. Antibacterial activity was evaluated by CFU assay, where UiO-66-NH 2 @AMX containing scaffolds revealed significant bacterial reduction against E. coli and S. aureus colonies. MTT, cell adhesion, and cell scratch assays conducted on L929 fibroblasts. All of the scaffolds demonstrated >85 % cell viability after 3 days of culture. Furthermore, scaffolds with 3 % (w/w) UiO-66-NH 2 @AMX enhanced cell adhesion and increased migration rate in scratch closure assay. Overall, the results indicate that the novel nanocomposite scaffolds are promising candidates for skin tissue engineering and wound healing applications.

Cellulose nanocrystals (CNCs) is extensively applied in bio-based biodegradable materials due to its unique properties. In this paper, an efficient oxidation method was proposed for the preparation of CNCs at mild reaction conditions (room temperature, 3 h) using a sodium bisulfite (NaHSO 3 ) activated potassium permanganate (KMnO 4 ) system. Subsequently, indoleacetic acid (IAA) modified CNCs (CNCI) were prepared by reacting CNCs with IAA, and the physical and chemical properties of CNCI were investigated by scanning electron microscope (SEM), X-ray diffraction (XRD), Fourier transform infrared spectroscopy (FT-IR), thermogravimetric analyser (TGA) and X-ray photoelectron spectroscopy (XPS). The modification of CNCs broadened the applications of CNCs, and the incorporation of CNCI into pectin-based films improved the physical properties (including mechanical property, UV resistance, hydrophobicity) of pectin film (P). Besides, the obtained P-CNCI film showed good antibacterial property and it could be used for strawberry preservation. This study provided an efficient, environmentally friendly and economical method for the preparation and modification of CNCs, which showed potential applications in the manufacture of advanced functional materials.

Sodium alginate (SA) gel beads are well-known carriers for curcumin (Cur) delivery, however their insufficient release efficiency in the colon restricts their application. To address this issue, we developed composite gel beads as Cur carriers, designated as PME-NPGP+SA, which comprised SA and pectin derived from Nicandra Physodes ( Linn. ) Gaertn. , modified with pectin methyl esterase. The encapsulation of Cur within PME-NPGP+SA gel beads was successful, achieving an encapsulation efficiency of 80.67 % and a retention rate of 87.20 % over a 10-day storage period. The incorporation of PME-NPGP fraction increased both the swelling rate and the colonic degradation of the SA-Cur gel beads without compromising their hardness. In subsequent in vitro digestion simulations, the composite gel beads showed an efficient colonic release rate of Cur at 49.98 %, outpacing the 28.93 % release rate of the SA gel beads. This study lays the foundation for the efficient colonic delivery of Cur.

The principal disease impacting pepper production is Phytophthora blight , which nano‑selenium (nano-Se) controls well but has high storage requirements and low heat resistance. Varying pectin amounts yielded pectin-modified nano-Se (nano-Se@PT) with 0.1 %, 0.5 %, 1 %, and 2 % concentration. As pectin content grew, nano-Se@PT particle size reduced, zeta potential value rose, and thermogravimetric temperature climbed. The incorporation of nano-Se@PT can improve its stability and thermal resistance at 40 °C and 70 °C. Nano-Se@PT outperformed nano-Se in fungicidal and Phytophthora capsici inhibition. In vitro antifungal experiments showed that nano-Se@PT could significantly inhibit mycelium growth with an EC 50 of about 4 mg/L. The particles adsorbed on the surface of mycelium, inducing death by destroying cell membranes, mitochondria, and nuclei. Non-targeted metabolomics analysis showed that nano-Se@PT treatment disrupted the mycelium growth and metabolism and changed amino acids, nucleotides, and sugar levels. In vivo experiments, 2 % nano-Se@PT had the lowest disease index and the best preventive therapy. Rhizosphere soil microbial analysis showed that nano-Se@PT recruited beneficial microorganisms such as Bacteroides, Lactobacillus, and Bifidobacterium in pepper plants, improving their Phytophthora capsici resistance and growth. The findings suggest that nano-Se@PT might be a unique pepper disease control technique and shed light on plant fungal disease management.

ABSTRACT Studies have shown that there is a close relationship between acute myocardial ischaemia (AMI) and intestinal flora imbalance. And pectin has a protective effect on AMI and regulates intestinal flora. Raw hawthorn pectin from hawthorn (RHP) is high methoxyl pectin, which is able to protect injury induced by AMI. After stir-frying of hawthorn, pectin from stir-fried hawthorn (FHP) transformed to low methoxyl pectin, the protective mechanisms against AMI is not well-understood. In this study, the protective effects of RHP and FHP against AMI rats were explored. The results revealed that FHP regulated myocardial enzymes including CK, CK-MB and CTn-1, oxidative stress-related indicator SOD more significantly than RHP. According to the determination of proportion of different kinds of short-chain fatty acids (SCFAs) and abundance of microbiota producing SCFAs, it was speculated that RHP and FHP were fermented by these microbiota. RHP increased the proportion of acetic acid and butyric acid, while FHP increased the proportion of acetic acid in feces. Pretreatment with RHP and FHP enriched the beneficial microbiota and maintained the levels of SCFAs, which significantly increased after modeling. These results revealed that RHP and FHP played a protective role in myocardial ischaemia by regulating intestinal flora and SCFAs.

The objective of this study was to investigate the feasibility of the mixture of tremella polysaccharide (TP) and citrus pectin (CP) as an emulsifier by evaluating its emulsifying ability/stability. The results showed that the TP:CP ratio of 5:5 (w/w) could effectively act as an emulsifier. CP, owing its lower molecular weight and highly methyl esterification, facilitated the emulsification of oil droplets, thereby promoting the dispersion of droplets. Meanwhile, the presence of TP enhanced the viscosity of emulsion system and increased the electrostatic interactions and steric hindrance, therefore hindering the migration of emulsion droplets, reducing emulsion droplets coalesce, and enhancing emulsion stability. The emulsification and stabilization performances were influenced by the molecular weight, esterified carboxyl groups content, and electric charge of TP and CP, and the potential mechanism involved their impact on the buoyant force of droplet size, viscosity, and steric hindrance of emulsion system. The emulsions stabilized by TP-CP exhibited robust environmental tolerance, but demonstrated sensitivity to Ca2+. Conclusively, the study demonstrated the potential application of the mixture of TP and CP as a natural polysaccharide emulsifier.

In this research endeavor, a novel emulsion delivery system was devised to enhance the retention of the fat-soluble active substance known as benzyl isothiocyanate (BITC). Fish skin gelatin (FSG) and pectin (PEC) were chosen as complex emulsifiers and collectively referred to as FSG-PEC. The interaction between FSG and PEC was examined by turbidity, flourier transform infrared, fluorescence, ultraviolet, methylene blue, and molecular docking. Emulsification activity, emulsification stability, contact angle, appearance structure, average particle size, zeta potential, oil droplet distribution, and retention rate of the encapsulated BITC, were evaluated to determine the optimal concentration ratio of the FSG-PEC complex for effectively safeguarding BITC. The results showed that the turbidity of FSG and PEC was minimal at pH 7, indicating relative stability of the complex. The primary molecular forces between FSG and PEC were electrostatic and hydrogen bond interaction. The interfacial stability, emulsifying activity and stability of FSG-PEC complex at a 2:1 ratio surpassed those of other ratios. Consequently, this optimal ratio was utilized to prepare FSG-PEC emulsion delivery system containing BITC. The resulting emulsion, stored for 14 days at 4 °C, demonstrated compelling attributes with a particle size of 433.33 ± 1.12 nm, a potential of −32.87 ± 0.35 mV, and a BITC retention rate of 59.87 ± 0.65%. The combination of the indicators finally concluded that 2:1 was the optimal ratio to construct the FSG-PEC complex emulsion delivery system. This study constitutes an initial exploration of the interaction dynamics between FSG and PEC, providing a theoretical foundation for subsequent applications.

In combined processing modification, two or more modification procedures are integrated to improve food processing and efficiency. This study investigated the foaming characteristics and baking efficiency of liquid egg white (LEW) under the synergistic impacts of ultrasound (US) and microwave (MW) treatments, both with and without pectin. These energy-efficient technologies were chosen because of their suitability for improving the foaming characteristics of LEW. Using these emerging approaches, the results demonstrated that denaturation temperature significantly ( P < 0.05) increased from 95.3 °C to 107.3 °C and enthalpy first decreased then increased following MW treatments. The apparent viscosity, zeta potential, and surface hydrophobicity observed in M300-U-P imply enhanced molecular interactions and colloidal stability. The FTIR indicated that electrostatic interactions and hydrogen bonding might play a role in the generation of egg white proteins-pectin conjugates. The CD spectra demonstrated changes in secondary structure, transferring β-sheet and β-turn contents to α-helices and random coils. The extent of Maillard reaction was assessed by degree of glycation and significantly increased ( P < 0.05) with MW treatments and pectin. The foaming capacity of M300-U-P (263 ± 3.34%) was significantly ( P < 0.05) enhanced by 24.64% compared to U (211 ± 3.46%). All samples showed significantly higher foam stability than U (26.72 ± 0.79%), with M300-U-P achieving the highest stability (88.18 ± 0.87%). With the integration of these energy-efficient technologies, we aim to provide practical solutions that improve LEW's foaming properties. Angel cakes prepared by these treated LEW exhibit enhanced volume and textural characteristics.

Soil-borne diseases severely threaten global crop production and urgently require pesticide formulations with targeted effects to improve control efficiency. In this study, a one-pot synthesis method combined with solvent ratio screening was used to successfully prepare Pyr@ZIF-NH₂ loaded with pyraclostrobin (Pyr) achieving a high encapsulation efficiency of 97.42 % and a pesticide loading rate of 20.59 %. The Pyr@ZIF-NH 2 was modified with pectin to obtain Pyr@ZIF@P (119.4 nm), and its successful synthesis was confirmed through characterization. Pyr@ZIF@P enhanced the UV photostability of Pyr and effectively inhibited the growth of Fusarium graminearum , resulting in mycelial malformation. In vitro release studies showed significantly higher Pyr release under acidic, pectinase-rich conditions (mimicking infection sites) with cumulative releases rates of 83.1 % and 74.11 % within 72 h. Foliar application revealed that Pyr@ZIF@P improved foliar retention and promoted downward translocation compared to the commercial suspension, thereby enhancing the control of soil-borne diseases. Moreover, root deaching of Pyr@ZIF@P resulted in more substantial accumulation of active Pyr in the stem, thereby enhancing the control of Fusarium graminearum. Additionally, the zinc-based framework of Pyr@ZIF@P not only facilitates pesticide delivery but also contributes to enhanced root development in wheat seedlings. Taken together, this study presents a novel approach for controlling soil-borne diseases and supporting sustainable agricultural production.
