The misuse of antibiotics has caused serious impacts on food safety and human health, making it crucial to develop rapidly and highly sensitive methods for detecting trace nitrofuran antibiotics (NFs). In this study, phosphorus, nitride-doped carbon nanosheets (PN/CNs) were synthesized using a simple hydrothermal method based on graphitic carbon nitride . This prepared material showed excellent water solubility and stable optical properties . A new fluorescence sensing platform based on PN/CNs was constructed for the highly sensitive detection of four NFs. This sensitivity was mainly attributed to the fluorescence resonance energy transfer (FRET) mechanism. The limits of detection for nitrofurazone , nitrofurantoin , furazolidone and furaltadone were determined to be 13.41, 15.24, 16.37 and 19.94 nM, respectively. The high sensitivity and selectivity of PN/CNs for these four NFs were thoroughly evaluated by the Stern-Volmer equation and FRET quenching efficiency. This proposed method exhibited high sensitivity and can be successfully applied to detect NFs in fish.

A significant surge has occurred in the utilization of the active films sourced from biopolymers, which help to improve the preservation period of foods. In this study, a chitosan-quercetin (Chit-Quer) active packaging film with excellent adhesion, tensile properties, and shape memory was developed, which are conducive to enhancing the sealing and stability of packaging, and are able to adapt to complex shapes and irregular surfaces. The incorporation of quercetin resulted in a rougher and more porous structure of the Chit-Quer composite film with enhanced hydrophilicity and reduced swelling index. The addition of quercetin increased the antimicrobial activity of the composite film to over 90 %. Furthermore, both the oxidized and reduced states of quercetin significantly improved the film’s oxidative resistance. The reduced Chit-Quer film showed the strongest free radical scavenging ability, reaching 80 % within just 5 min, which was a tenfold improvement over the pure chitosan film. In addition, the Chit-Quer film can be completely degraded in about 70 days. Based on the colorimetric alteration of the Chit-Quer film in different pH environments, we further demonstrate that it can be served as an intelligent packaging film for the instant monitoring of crucian carp spoilage. These results indicate that the developed Chit-Quer film is expected to have a substantial impact in the realm of active food packaging, providing more efficient and sustainable protection for food preservation and safety.

BACKGROUND Memory impairment, a hallmark manifestation of neurodegenerative disorders exemplified by Alzheimer's disease, constitutes a critical global public health challenge requiring urgent therapeutic innovation. The present study aims to systematically investigate the potential mechanisms of fish scale collagen peptides (FSCP) in enhancing cognitive function through behavioral experiments, detection of hippocampal biochemical indicators and histopathological observation. Concurrently, liquid chromatography-tandem mass spectrometry analysis and in silico methods were utilized to screen active peptide fragments with potential auxiliary effects on memory improvement. RESULTS The results of our study demonstrated that mice treated with a medium dose of FSCP via gavage exhibited optimal behavioral performance. Moreover, the number of Nissl bodies in the CA1 and CA3 regions increased to (114.83 ± 8.74) and (71.67 ± 5.79), respectively. Hippocampal pathology was improved, Acetylcholine levels were elevated, Acetylcholinesterase ctivity was decreased and hippocampal oxidative stress was reduced in the mice. Among the digested products of FSCP, the tripeptides PPP, GGL, GLL and MAP were found to exhibit higher relative abundance and activity scores. CONCLUSION These results demonstrate that mice treated with a medium dose of FSCP via gavage exhibited the most substantial improvement in memory function. Bioactive peptides such as PPP and GGL are promising to provide a new source for the development of drugs for assisted memory improvement. © 2025 Society of Chemical Industry.

Rapid and quantitative detection of malachite green (MG) in aquaculture products is very important for safety assurance in food supply. Here, we develop a point-of-care testing (POCT) platform that combines a flexible and transparent surface-enhanced Raman scattering (SERS) substrate with deep learning network for achieving rapid and quantitative detection of MG in fish. The flexible and transparent SERS substrate was prepared by depositing silver (Ag) film on the polydimethylsiloxane (PDMS) film using laser molecular beam epitaxy (LMBE) technique. The wrinkled Ag NPs@PDMS film exhibits high SERS activity, excellent reproducibility and good mechanical stability. Additionally, the fast in situ detection of MG residues on fish scales was achieved by using the wrinkled Ag NPs/PDMS film and a portable Raman spectrometer, with a minimum detectable concentration of 10 -6 M. Subsequently, a one-dimensional convolutional neural network (1D CNN) model was constructed for rapid quantification of MG concentration. The results demonstrated that the 1D CNN quantitative analysis model possessed superior predictive performance, with a coefficient of determination (R 2 ) of 0.9947 and a mean squared error (MSE) of 0.0104. The proposed POCT platform, integrating a transparent flexible SERS substrate, a portable Raman spectrometer and a 1D CNN model, provides an efficient strategy for rapid identification and quantitative analysis of MG in fish.

Surface-enhanced Raman spectroscopy (SERS) was combined with stoichiometric analysis to synthesize a AuNPs@MIL-100 (Fe) SERS substrate. This high-performance, and low-cost metal–organic framework-based SERS nano sensor is capable of detecting malachite green (MG) residues in fish. The minimum detectable concentration of MG in standard solutions is 0.1 μg/L, while in fish samples, the detection range spanned from 0.003–0.088 μg/kg. The partial least squares regression (PLSR) and support vector machine regression (SVR) were applied to model the SERS data, enhancing both the precision and reliability of the detection. The results show that compared with the traditional linear regression and PLSR models, the prediction accuracy of the SVR model is an improvement with higher stability. MG standard solutions and three fish samples can be analysed directly or after simple extraction. This method can be used to detect trace harmful substances in different aquatic products. Graphical

In this study, covalent organic frameworks (COFs) were grown in situ on magnetic nitrogen-doped graphene foam (MNGF), and the resulting composite of COFs-modified MNGF (MNC) was wrapped by molecularly imprinted polymers (MNC@MIPs) for specifically capturing SAs. A magnetic solid phase extraction (MSPE) method for SAs was established using MNC@MIPs with good magnetic responsiveness. The adsorption performance of MNC@MIPs was superior to that of non-molecularly imprinted polymers (MNC@NIPs), with shorter adsorption/desorption time and higher imprinting factors. A high-efficiency SAs analytical method was developed by fusing HPLC and MNC@MIPs-based MSPE. This approach provides excellent precision, a low detection limit, and wide linearity. By analyzing fish samples, the feasibility of the approach was confirmed, with SAs recoveries and relative standard deviations in spiked samples in the ranges of 77.2–112.7 % and 2.0–7.2 %, respectively. This study demonstrated the potential use of MNC@MIPs-based MSPE for efficient extraction and quantitation of trace hazards in food.

The biotoxicity of perfluoroalkyl and polyfluoroalkyl substances (PFASs) to aquatic organisms has been widely concerned. However, studies on toxic effects of PFASs are usually evaluated directly by using laboratory exposure rather than laboratory validation based on data obtained in the field. In this study, wild catfish ( Silurus meridinalis ) was explored on the relationship between PFASs bioaccumulation and lipid disorders. Nine and thirteen lipid metabolites were significantly associated with perfluorooctane sulfonate (PFOS) and 6:2/8:2Cl-PFESA (trade name F-53B) exposures, respectively; and the correlated lipid metabolites were the fatty acid (FA) and conjugates, FA esters, steroids, and glycerophosphate subclasses. The effects of PFASs on lipid metabolism of fish and its mechanism were further analyzed through exposure experiments. Zebrafish ( Danio rerio ) of different sexes underwent PFOS and F-53B exposures for 21 days at 100 ng/L and 100 μg/L. By determining gene expression levels, hepatic lipid contents, and histopathological change, the adverse effects order on lipid metabolism in male or female was 100 μg/L F-53B > 100 μg/L PFOS > 100 ng/L F-53B > 100 ng/L PFOS; the stress response in male was more intensive than that in female. PFOS and F-53B activated the peroxisome proliferator-activated receptor pathway, promoting the processes of FA and total cholesterol (T-CHO) transport, FA β -oxidation, FA synthesis, and finally induced FA and T-CHO transportation from blood into liver, then accelerated FA to FA ester transformation, and CHO into steroids. Laboratory experiments confirmed the field analysis. This study innovatively explored the adverse effects of PFOS and F-53B on lipid metabolism and their mechanisms at field and laboratory levels, highlighting concerns regarding PFASs health risks.

Facile detection of malachite green (MG), a toxic dye, in aquaculture is urgently demanded for environment and food safety. Herein, we design a novel fluorescent probe, namely red emissive Se,N,Cl-doped carbon dots (CDs), to accurately determinate MG. CDs are prepared by hydrothermal treatment of selenourea and o-phenylenediamine in HCl solution. This material exhibits excitation-independent dual emissions at 625 and 679 nm, with a high quantum yield of 23.6%. A selective and sensitive fluorescent sensor toward MG is established based on inner filter effect, because both the excitation and emission light of CDs can be strongly absorbed by MG. The fluorescence quenching of CDs is linear to the MG concentration over the range of 0.07–2.50 μM with a low detection limit of 21 nM. Trace-level analysis of MG in fish tissue is successfully explored, demonstrating the great potential of the proposed sensor for MG monitoring in aquatic products.

Synergistic bacteriostatic action represents a potent strategy for combating microbial contamination in the food industry. This study investigated the synergistic bacteriostatic effect of epigallocatechin gallate (EGCG) and indole-3-carboxaldehyde (I3A). Results showed a pronounced synergistic action of EGCG and I3A against diverse food spoilage microorganisms, most notably Pseudomonas aeruginosa ( P. aeruginosa ), with a fractional inhibitory concentration index (FICI) of 0.25. Further research revealed that EGCG disrupted the cell wall and cell membrane of P. aeruginosa , while supplementing I3A significantly boosted the concentration of intracellular reactive oxygen species, thereby inflicting cellular damage. Moreover, the EGCG-I3A treatment inhibited the biofilm formation of P. aeruginosa in a dose-dependent manner, with the effectiveness increasing with the quantity of I3A added. Metabolomic study revealed a perturbation in glutathione and taurine metabolic pathways post synergistic treatment, compromising redox homeostasis. This synergistic treatment also downregulated uracil, proline, and glutamate metabolites, thereby suppressing Quorum Sensing (QS) and biofilm-associated expression within P. aeruginosa . Additionally, the combination significantly inhibited P. aeruginosa growth in fish meat. In essence, this study underscored the synergistic bacteriostatic efficacy of EGCG and I3A, highlighting its potential application in food preservation.

Sea bream has gained widespread popularity for its succulent flesh and high nutritional value. However, inadequate control of packaging conditions during storage and transportation renders this high-protein fish particularly susceptible to spoilage. Therefore, this paper proposes a high-precision, flexible ammonia sensing system (FASS) with temperature decoupling for detecting fish freshness, so as to enhance food quality and safety. The FASS primarily comprises a flexible ammonia sensing unit, a temperature decoupling unit, back-end circuitry, and a power supply module. Utilizing processes such as magnetron sputtering and laser direct writing, the ammonia sensing unit and temperature decoupling unit were fabricated on a PET substrate and the PANI/MXene gas-sensitive materials were successfully prepared through PANI polymer modification. During gas-sensing response testing, the ammonia sensing unit exhibited a response/recovery time of 49/307 s for 10 ppm ammonia, with a sensitivity of 18.102 % ppm −1 within 2–10 ppm. With the combination of the temperature decoupling unit, a three-dimensional fitting surface was constructed for the gas response of the ammonia sensing unit, temperature, and ammonia concentration within the 0–30 °C range, achieving a goodness-of-fit of 0.99 and enabling precise ammonia concentration detection across a broad temperature and humidity range. Finally, the reliability of the FASS application was validated during fish meat storage. By integrating a Bi-LSTM model for temporal prediction of ammonia concentrations, an RMSE of merely 0.073 ppm was achieved.

In this work, a novel fluorescence method based on an orange-emissive carbon dots (O-CNDs) was for the first time reported for the rapid and ultrasensitive determination of malachite green (MG). The O-CNDs were simply produced via a one-pot hydrothermal treatment of rhodamine B. The detection mechanism was based on the interaction between O-CNDs and MG, where the fluorescence of O-CNDs was suppressed by MG via a combined effect of inner filter effect (IFE) and dynamic suppressing. Under the optimum sensing conditions, the O-CNDs were found to display rapid reaction time (1.0 min), high selectivity and excellent sensitivity with two linear concentration ranges of 0.01–0.1 and 0.1–10.0 μmol L −1 , and the corresponding detection limits were as low as 0.08 and 0.93 nmol L −1 , respectively. The developed fluorescence method was successfully applied for the determination of MG in fish samples, including silver carp, blackfish, blunt-snout bream, common carp and grass carp, with satisfactory results; the recoveries were in a range of 96.0–104.8 % and the relative standard deviations (RSDs) below 4.54 %. The results of this study validated the great potential of O-CNDs as an effective fluorescence sensing agent for MG monitoring in aquatic samples.

Osteoporosis is a widespread skeletal disorder associated with reduced bone formation and increased fracture risk. Peptide-based therapeutics offer demonstrate anabolic potential for osteoporosis management but are limited by instability and rapid clearance. In this study, a dual-network hydrogel composed of fish gelatin (FG) and κ-carrageenan (κ-CG) was developed as a biocompatible carrier for a soybean-derived osteogenic peptide (SOP). The FG/κ-CG system exhibited provided mechanical integrity, hydration balance, and thermal stability, thereby enabling sustained peptide protection and controlled release. In a glucocorticoid-induced zebrafish osteoporosis model, oral administration of the SOP-loaded gel effectively restored bone mineralization to a level comparable with alendronate treatment. These findings suggest that the FG/κ-CG-SOP hydrogel provides a stable and bioactive platform for osteogenic peptide delivery and represents a promising nutritional or therapeutic approach for osteoporosis management.
